Recipe~ Cheryl Stecko, Kelowna

JELL-O COOKIES1/4 cup butter1/2 cup vegetable shortening1/2 cup sugar1 - 3 oz. pkg. Jell-O, (my favourites for theChristmas season are the lime and the raspberry)2 large eggs1 tsp. vanilla2 1/2 cups � our1 tsp. salt1 tsp. baking powder

Directions:Cream the butter, shortening, sugar and Jell-O. Add the eggs and vanilla and beat on medium speed until well mixed. Sift the � our, salt and baking powder. On slow speed, add the dry mixture, adding a little at a time. Mix well.

The dough will be fairly soft, but not sticky. You do not need to refrigerate the dough before rolling.

Preheat over 400 F. Roll dough into 1/4” ball.Press the top of the ball into a chunky coloured sugar then place on baking sheet. Take a � at bottomed glass and slightly press down on the cookie to � atten it. Bake the cookie for 6 to 8 minutes, (more on the 6 side)! Cool on rack. Store in an airtight container. You will get 30 to 36 delicious, tasty cookies.

Recipe~ Dianne Tucker, Kelowna

DELICIOUS HOME-MADECHRISTMAS MARSHMALLOWSIngredients:2 cups white sugar3 packages unflavoured gelatinepinch salt2 cups boiling water2 cups icing sugar2 teaspoons vanilla2 teaspoons baking powder

Method:Put sugar, gelatine and salt in a sauce pan. Stir in boiling water. Boil very slowly for 10 minutes. Remove from heat, add icing sugar. Stir and cool. Add vanilla.

SECRET: Beat for a significant length of time until the mixture becomes very thick.Add baking powder and beat again. Pour onto a greased (buttered) wax paper covered pan. Put wax paper over top of marshmallow mixture. Set overnight. Turn onto a cutting board. Using a hot knife, cut into squares

Roll marshmallows in any of the following:• Shredded coconut with food-colouring mixed into it e.g. red or green• Browned coconut shreds (browned in fry pan on low heat)• Icing sugar• Or just leave as is.

BUTTERSCOTCH COOKIES Ingredients:1 cup butter2 cups light brown sugar2 eggs beaten3-1/2 cups flour1/2 tsp. salt1 tsp. baking soda1/2 tsp. baking powder1 tsp. vanilla Sift flour with salt, baking soda and powder.Then mix as usual. Chill mixture overnight as dough is soft and must be cold.Make rolled or icebox cookies rolling or cutting dough thin. Place on greased cookie sheets. Bake in moderate hot oven 375-400 F. FOR XMAS COOKIES:1/2 cup glace cherries, walnuts, and raisins1/4 cup mixed peel and candied ginger.

Put all of the above ingredients through a mincer or a meat grinder. Mix well with dough.

CRANBERRY ALMOND BARK1 cup dark chocolate wafers 1 cup light chocolate wafers

Melt in a double boiler. Add:3/4 cup slivered toasted almonds3/4 cup dried cranberries

Stir and spread on a wax paper lined cookie sheet.

Drizzle with:1/4 cup white chocolate wafers that havebeen melted with 1 tsp. vegetable oil.Freeze then break into pieces.

CHRISTMAS OR SUNDAY MORNING WIFE SAVER16 slices bread, crusts removedSlices of bacon or hamCheddar cheese, grated6 Eggs3 Cups Milk, skim, 1% , etc.1/2 tsp. each: Salt, Pepper, Dry Mustard1/2 Cup each: Finely chopped Onion andGreen Pepper1-2 tsp. Worcestershire SauceDash Tobasco SauceSpecial K or Corn Flakes, crushed In a 9 x 13 inch buttered glass baking dish, put in 8 slices of bread, covering bottom completely. Cover bread with bacon or ham, then grated cheese, and cover with remaining bread. Beat eggs in a bowl. Add milk and remaining ingredients. Pour over sandwich. Cover and let set in fridge overnight. In the morning, melt 1/4 cup margarine. Cover top with corn flakes, and pour margarine over top. Bake uncovered for 1 hour at 350 degrees.Allow to sit for 10 minutes before serving. Serves 10-12.

BOTERKOEK (MOIST SHORTBREAD LIKE)Do Not Convection Bake 3250 • 20 - 25 minutes • 3 small pie plates 1 c. sugar 1 tsp. almond flavouring1 c. butter 2 c. flour1 egg 1 tsp. baking powder Cream together sugar and butter with mixer. Add egg and flavouring. Sift flour and baking powder. Add to creamed mixture and mix well with dough hooks or by hand. Place batter in 3 small pie plates. Smooth with wet icing spreader or spatula. Bake until a light golden brown at the edges.

VARIATION FOR THICK BOTERKOEK -1 egg white 1 tsp. sugar per pan¼ cup shaved almonds per pan Thick Boterkoek (more cake like texture) - Double the recipe and divide between three small pie plates. Smooth with wet spatula, brush with egg white, sprinkle top lightly with sugar and press shaved almonds into dough. Bake at 325 for 35 minutes or until a light golden brown at the edges.

This is a recipe that is so simple

yet really loved by many. My mother-in-law gave me this recipe 46 years ago.

SPINACH SALAD WITH CANDIED PECANS, PEARS & BRIE

Preheat oven or toaster oven to 350 F. Spray a baking sheet or toaster oven pan with cooking oil.Rinse pecans with cold water. Drain, but do not let dry. In small bowl, combine icing sugar, cinnamon, allspice and nutmeg; dip pecans in mixture to coat well. Spread on prepared baking sheet. Bake for 10 minutes. Cool and chop.In large bowl, combine spinach, radicchio, pear and Brie.In small bowl, whisk together orange juice concentrate, olive oil, vinegar, garlic, honey and mustard. Pour over salad; toss to coat. Garnish with candied pecans.Serves 6.

CHOCOLATE CHIP OATMEAL COOKIESCream together: 1 cup Crisco shortening

1 cup brown sugar1/2 cup white sugar

DOUBLE CHOCOLATE ZUCCHINI LOAF

Beat eggs, honey, oil, sugar and vanilla. Combine salt, baking powder, baking soda, coffee, cocoa, flour, cinnamon, allspice and cloves.

Add to wet ingredients. Stir in zucchini, chocolate chipsand walnuts. Prepare pans and pour in batter.

Bake for 60-65 mins. at 375 F or until done. Let cool. Yields one large loaf.

FRUIT COOKIES3 cups flour 1 ½ cup white sugar 1 cup shortening

Mix the above together like pastry and add: 1 cup raisins 1 cup chopped dates 1 tsp. cinnamon 1 tsp. ginger ½ tsp. cloves pinch of salt

Mix the above and then make a hole in the center and add: ½ cup molasses 2 eggs beaten 1 tsp. soda in 1 Tbsp of hot water

Mix well in the center and then gradually mix together. Form into balls and press with fork.

Bake at 350 degrees for 12 to 15 minutes. (check for doneness - don’t over bake as will become crunchy instead of chewy and moist)

TOURTIERES1 lb. pork, minced 1 small onion, chopped,1/2 tsp. salt1 small clove garlic,minced1/2 tsp crumbled dried savory1/4 tsp ground cloves1/2 cup water1/4-1/2 cup bread crumbspastry for a two crust pie Bring pork, onion, salt, garlic, savory, cloves and water to a boil and cook uncov-ered over medium heat 20 minutes. Remove from heat, add a few spoonfuls of bread crumbs and let mixture stand uncovered 10 mins. If fat is not absorbed by the crumbs add more. Let cool. Use pastry to line tart pans or make a 9 inch pie. Pour in cooled pork mixture and cover with pastry. Bake in a 400 oven until the tops are browned. Freeze if you wish, and put frozen into a 3500 oven about 20 minutes to reheat.
