Honey is literally the product of its surroundings. The nectar that is collected by bees and which eventually becomes honey  varies significantly from one region to  another.  Factors such as plant availability,  season length, climate, topography, and soil quality will strongly affect the flavor and color of honey. Ciboreale is harvested in the Tuscany region of Italy. Nestled on the western central coast, Tuscany has a long history of  beekeeping and honey production dating  back centuries. The naturally rich Tuscan environment combined with the well developed traditions gives Ciboreale its rare and distinct characteristics.

As serendipity would have it, Francesco Riccucci was born and raised in one of the most culturally and agriculturally fertile areas of Italy. For generations, Tuscany has been the epicenter where tradition and innovation converge into perfection. From Michelangelo’s paintings to perfectly aged wines and extraordinary cuisine, Tuscany never ceases to excite the senses. Inspired by a passion for bees and exotic cuisine, Francesco launched with only two beehives and an unwavering

desire to produce the finest and purest gourmet honey possible. In keeping with Tuscan tradition, Francesco sought to replace the modern, invasive, chemically reliant harvesting techniques that produced cheap low grade honey with traditional practices. Francesco also set higher standards for Ciboreale. No invasive extractions would be used. No chemicals would be used to produce the harvest. Most importantly, bee swarms would have access to only the finest groves Tuscany has to offer.

Characteristics of Acacia Honey

Our Raw Organic Acacia honey comes from the hills of Tuscany. It has been awarded 1st place in the category at the "Roberto Franci" award in Montalcino, the most prestigious Italian Honey competition. It is very fluid and has a transparent yellowish hue. The flavor is subtle and delicate while the aroma is mild and persistent. Acacia honey has a very low sucrose content and a high fructose level, so it tends to be the primary choice for diabetics.

Flavor:  A slight floral flavor with hints of vanilla flavor and no aftertaste. It is the classic honey flavor.

Aroma:  A persistent, yet delicate floral profile.

Color: Pale yellow. Very transparent.

Physical Consistency: Due to its high concentration of fructose, Acacia is slow to crystallize and will remain in a liquid state for a long period of time.

Uses: Due to its mild flavor, Acacia is often considered the multi-purpose honey and can easily be added to liquids, doughs, and batters for a kick of sweetness. It’s delicious when paired with cheeses, especially pecorino and gorgonzola cheese. It is ideal for mixing with beverages because it sweetens without altering the taste of the drink.

Characteristics of Chestnut Honey

Chestnut honey is the classic mountain honey. Dark in color, ranging from deep amber to an almost glassy black with yellowish hues, it has a bold aromatic profile and an equally complex mysterious flavor. There is a slight tannic taste due to tannin in the tree. The flavor is very unique and not very sweet.

Flavor: Complex. Very mild sweetness. Tangy with spicy undertones followed by a slightly bitter aftertaste.

Aroma: Very aromatic, of tannin.

Color: Amber shades. Depth varies by harvest.

Physical Consistency: Fluid. It crystallizes quite slowly. Large crystal size.

Uses: Excellent with aged cheeses and with fine yogurts.  Popular Tuscan way to enjoy it: drizzled over a slice of Pecorino cheese with fresh sliced pears.  Also great to add while baking cakes, cookies, and tarts. Contributes nicely to marinades and glazes.

Characteristics of Multiflower Honey

It is the typical Tuscan honey. Produced in the foothills and harvested in the summer this honey has a fragrant bouquet reminiscent of wildflowers on a warm Toscana summer evening. The color is beautifully light golden and the flavor is a sweet combination of floral nuances with slightest hint of chestnut. This honey is the most comprehensive from a nutritional standpoint.

Flavor: Sweet and persistent.

Smell: Full bodied and distinctively sweet smelling

Color: Varies from shades golden amber to light brown.

Physical Consistency: Fluid with a tendency to crystallize; average crystal size. Uses: Excellent to spread, to sweeten herbal teas and fruit salads.

Characteristics of Ivy Honey

This unique honey tends to be rare due to the Ivy plants short bloom window. Complicating matters, Ivy honey has a high glucose content causing the honey to crystallize almost immediately after it has been loaded. To produce this honey, beekeepers must be very timely with harvesting otherwise the honey will be too hard to extract. Even after the honey has been extracted, the honey retains a unique thick viscous quality. It has a unique flavor and when first experienced is not easily forgotten.

Flavor: Sweet with a slightly toasted and bitter aftertaste.

Smell: Very Aromatic

Color: Opaque toffee-colored honey

Physical Consistency: It crystallizes immediately; viscous consistency. Thin Honey crystals.

Uses: Excellent with cheeses and with yogurt.
