In Central Virginia we are extremely fortunate to be able to source almost all of our ingredients from small local farmers. Chefs Brian and Joe are passionate about supporting
such farms as they bring the best flavors to the table. In doing so we help to keep these farms, with exceptional produce and protein, thriving.
Wayside Produce hand delivers exceptional root vegetables and tomatoes. Polyface Farms provide us with some of the most pampered poultry in the country. The husband and wife
team at Meadow’s Pride Farm bring us the most delectable whole lambs.
When choosing the wines to go onto our list I have a similar frame of mind. Supporting small, family vingerons can also make for the best juice in the glass. These amazing producers have a
love and dedication to their craft. The attention to detail and care for the land that these farmers and winemakers exhibit is truly heartwarming. It is a passion of mine to educate our
guests on wines that they may have never heard of. Our list spans the globe, however we offer some of France’s best, and pay special attention to the talented producers in Virginia. Let us

Loire Valley Blanc From one of the most beautiful pasts for France come the whites that range from crisp, dry and clean to intensely rich and fruit driven.
Imagine passing through kimmeridgian hillsides, trogolodyte villages, and ancient castles.
Jura Blanc A favorite region among wine geeks. Located east of Burgundy, winegrowers in Jura produce some of the most mysterious wines in all of France. Think rustic farmland, hearty cuisine, and traditional, old-school winemaking. These are wines for a ponderous mood. You’ll find a wide variety of styles splayed out on a flor spectrum. There are “regular” white wines on one end of the spectrum; on the other end, you’ll find flor-influenced

Petit Manseng in France & Virginia “There is a lot of clay in Jurançon, and humidity. It’s very similar to here.”

We rarely see Petit Manseng outside of its home in southwest France, particularly in the Jurançon. Aside from a few scattered plantings throughout the world, if you look at Petit Manseng’s diaspora, it pretty much consists of
Virginia. Petit Manseng has open clusters that allow for airflow, which is perfect for the humid climate you’ll find in the Jurançon and in Virginia.

Sherry This category of fortified wines from Spain ranges from dry to sweet and can accompany a wide variety of foods.
Sherries have inspired the likes of Edgar Alan Poe (‘The Cask of the Amontillado’) and helped drive the early cocktail movement in the 1800s (think ‘Sherry Cobbler’). A dry sherry can be amazing with shellfish, and sweeter sherries pair well with cheeses & desserts.

Amber Wines of the World Amber wine is skin-fermented white wine. It’s a style of winemaking that once pervaded the known world, now used by only a few.
These jewel-like wines are hotly debated in the wine world. Some wine experts disdain amber wines on the assumption that skin-contact wines display aromas and flavors of wine-making technique rather than terroir. These same Amber nay-sayers usually contradict themselves when they also say that
terroir is best expressed in a traditional red ferment with heavy skin maceration, or that terroir is absent in a ‘simple’ rosé. Amber wines force us to re-examine the locus of terroir in wines made from white grapes—does terroir lie in the grape flesh? The seeds? The skins?
It could be a combination…
Amber wine is ‘oddball’ at the moment, but I long for a day when it has its proper place at the table. And this place is with foods that a traditional white wine or red wine may not quite complement, such as poultry, pork, and fatty foods like foie gras. Amber wines often have the tannin structure of a pinot noir with the lightness of being of a white wine, and this allows them to occupy an alternate universe of food pairing with dishes that require in

Rare still red wines from Champagne. Three centuries ago, this type of wine was usual in Champagne, and enjoyed by the Sun King. In the 1700s, wines like this competed with the fine pinot noirs from Burgundy. Champagne created its niche apart from Burgundy when producers there controlled a second fermentation.
marl 252 France, Champagne Horiot Rosé des Riceys ‘En Valingrain’ dry, rosé, still Pinot Noir 2013 110 This Rosé des Riceys—from the village of the same name straddling the border of Champagne and Burgundy—is made in tiny quantities by a handful of growers only in warm vintages. This has more in common with a red wine than most rosés. First, the wine is intended for cellaring; typically it is released after a long elevage.

Hervé Souhaut
Hervé Souhaut created Domaine Romaneaux-Destezet in 1993. Hervé works 5-hectares of old and ancient vines— between 50 to 100 years old. He is very fortunate to own two vineyards in the Rhône Valley just opposite the
storied hills of Hermitage in Saint Joseph. This region is widely recognized as being one of the finest areas for wine production on the planet; thanks in part to its elevation, ancient vineyard sites and the southeastern and southern exposures.
Hervé works entirely on whole grape bunches and semi-carbonic maceration. All of the vineyards are farmed organically,
and no chemicals are added in the winemaking process. His philosophy is to extract a delicate balance of tannins from the grapes, to make a wine with subtlety and finesse. Hervé prefers to make a wine that is drinkable right away, but we must say his wines
have such a fantastic level of purity and acidity, that the older bottles we have tasted have incredible potential to evolve into some of the most spectacular natural wines in existence.

Elk Cove A Vertical Offering of La Bohème Pinot Noir
La Bohème Vineyard was planted in 1985 by selecting the very best vines from Elk Cove’s
original Estate Pommard plantings. Pat and Joe Campbell named the vineyard after the family who sold them the property – and their favorite Puccini opera. This picturesque vineyard overlooks the winery and the coast range mountains and rises
to 800 feet, making it one of the highest elevation vineyard sites in the Willamette Valley. La Bohème was planted using cuttings from vines selected for small cluster size and intense flavors, hallmarks of the world’s finest Pinot Noirs. The fruit is pruned and
cluster-thinned heavily to limit yields and to maximize ripening and flavor concentration.

A producer of truly world-class cider. The style of Castle Hill rivals the best of Normandy. We are fans of these dry and complex offerings. Levity is a truly unique sparkling cider; as it is crafted in terra-cotta vessels that are
buried on property. Levity is settled and bottled before fermentation completes, producing a natural carbonation from native yeasts.
Ankida Ridge is leading the charge of producing the best Pinot Noir in Virginia. The estate features only a few acres of vines and plenty of happy animals. Dennis and Christine Vrooman are
some of the nicest winery owners you will ever come across. Stop in to taste their Burgundian-style pinot noir and chardonnay or to pet their sheep. (614)
Lovingston - ‘Gilbert’s Vineyard’ Pinotage 2015 $60 This is one of the greatest values in Virginia. This playful offering reminds us of a wild, red fruit driven Pinot Noir.

Winemaker Luca Paschina culls some very special grapes from Virginia’s red clay to make this landmark wine. We call it a ‘landmark’ wine for a few reasons: it carries the mark of the land and represents the soils of the Monticello AVA,
the label depicts a design by Thomas Jefferson of the ruins that rise up from the vineyards thus paying homage to the historic building and the echoes of Barboursville’s past, and the wine itself is something of a landmark in Virginia’s wine landscape (611)
