Client CORNER 2015 THE January Healthy cooking was the name of the game on December 18, 2014 when instructors Dan & Linda Gregor and Assistant Nancy Garcia from the Jamie Oliver Food Foundation came to teach a group of Clients how to make a healthy and nutritious breakfast! The class began with basic instruction on the importance of washing your hands before, during and after cooking, practicing knife safety in the kitchen, and the dangers of cross- contamination. After a detailed demon- stration of the meal to be prepared was given, it was time for the cooking to start! The meal to be prepared? “All-American Pancakes” with “Simplest Fruit Salad,” both adapted from Jamie’s Food Revolu- tion! While some mixed the ingredients for the “All-American Pancakes,” a nice, sim- ple recipe that consists of only 5 ingredi- ents, others worked on chopping up the fruit for the “Simplest Fruit Salad” that would replace syrup as the topping for the pancakes with a healthier alternative! The “Simplest Fruit Salad” mixes honey and plain yogurt to place atop your fruit slices of oranges, apples and bananas! Almond and poppy seeds can also be added for more texture and nutritional value! Once the cooks were done, they were able to enjoy their meals with a glass of nice, re- freshing fruit-infused water made from left -over peels of the oranges that went into the “Simplest Fruit Salad.” “I learned a lot about healthy ingredients,” said Client Nancy Butchko. “I loved my pancakes!” Giving Back! NEW FACES at BARC BEN (Packaging) MONTRELL Supported Employment) On December 16, 2014, three BARC buses full of members from the Bakersfield ARC Council and Clients from Access Now made their way downtown to the KGET Studios at 2120 L Street! The Clients descended upon the news studios, toys in hand, to donate to the 17 Days of Christmas toy drive! KGET teamed with the Boys and Girls Club of Kern County and the Bakersfield Homeless Center to host the toy drive which collected toys for less fortunate members of the Boys & Girls Club of Kern County and the Bakersfield Homeless Center! When the call for action went out, BARC knew that we needed to support our community by giving to this worthy cause! “We were glad to be able to give back and provide help to the less fortunate kids in the com- munity,” said ARC Council Chairman Jimmy Layton. “It made our season brighter and we hope it brightened the Holidays for the children.” Cooking up a Storm! Serves 4 (Makes 8 pancakes)

1 cup all-purpose flour

1½ tsp. baking powder

¼ tsp. salt

1 cup 1% milk

1 egg, beaten

1 tbsp. plus 1 tsp. melted butter

1. Whisk the flour, baking powder, and salt together in a mixing bowl. Add the

milk, egg, and 1 tablespoon of the melted butter and stir just until blended.

Don’t over-mix - it’s fine if there are a few lumps.

2. Heat a non-stick griddle or large frying pan over medium heat Grease the grid-

dle with the remaining butter. Using ¼ cup measure, pour the batter onto the

griddle. Cook until the bottom is golden brown and bubbles form on the top of

the pancake.

3. Flip and cook until the second side is also golden, then serve with your favorite

topping.

Serves 4

1 cup plain yogurt

2 tbsp. honey

2 oranges

2 bananas

1 apple

1 tsp. poppy seed

4 tbsp. sliced almonds

1. Stir the yogurt and honey together in a small bowl.

2. Top and tail the oranges. Stand them up on a cutting board and cut off the peel

and the white pith right down the orange. Work over a bowl to catch the juices

and cut the orange segments free, letting them drop right into the bowl.

Squeeze the juice from what’s left of the oranges into the bowl.

3. Wash the apple, cut it into quarters and cut out the core and seeds. Cut the

apples into chunks and add them to the bowl. Peel and slice the bananas and

toss them with the other fruit

4. Spoon the fruit into four bowls and spoon some of the yogurt over each.

Sprinkle the poppy seeds and almonds over the yogurt.

Santa Claus made a special stop to the BARC Campus on

December 17, 2014 to deliver presents to Clients in the

Access Now and BARC on the MOVE programs. Clients

took their picture with Santa, joined him in singing

Christmas Carols and some even participated in a Santa

Conga Line! “I liked Santa,” said Client Torben

Greenhalgh. “He was fun and gave me a good present!”

A special thank you to MOVE International for bringing

Santa to BARC and giving our Clients a “Holly Jolly”

Christmas!

Here Comes Santa Claus!

Groovin’ Into the Holiday!

The Holiday Dance on December 19,

2014 was a groovin’ good time! Clients

danced to fun and funky music and

enjoyed lots of cookies and punch

(Sugar-Free options were available for

our diabetics)! “I had fun, said Client

Ronnie Mosely. “That was some good

music! I liked the cookies too!” Thanks

to all who donated cookies and to all

who helped make the dance a success!!

A Sweet & Tempting Act of Kindness!

Sara and Atlanta Clem of Sweet Temptations Home Bakery

brought cupcakes to the classroom of two of our Access

Now groups to help them celebrate the new year. Upon

meeting one of our groups at Burger King, Sara made the

generous gesture of buying them all lunch. Wanting to

treat them even more, Sara and Atlanta brought the group

cupcakes (sugar-free cupcakes were made for the diabetics)

on New Year’s Eve for their Toast to the New Year party.

Valentine’s Day Party

Come on up to the pantry and celebrate the season of

love with free cookies and punch! Dance to music on the

patio or sign up for the Dating Game! The ARC Council

will be taking Sweetheart Pictures for $1.00 and raffling

off some wonderful prizes, including a free BARC trip! So

come take a break from the stress of work and have a

little fun! There are limited spots for the Dating Game.

Contestants must sign up in advance with Jeremiah!

Cookie donations are appreciated!

ARC Council raffles tickets are $3.00 or 2 for $5.00.

Hollywood Walk of Fame

Enjoy a day of fun and movie magic at Universal Studios

Hollywood. After an exhilarating day at Universal

Studios, we’ll spend the night down south and rest up for

our next day of fun at the Hollywood Walk of Fame.

Cost includes transportation from BARC, admission to

Universal Studios and hotel accommodations. Please

bring extra money for food and souvenirs.
