Spinach Dip1 pkg choppedspinach, 300 g1 cup Hellmans Mayo2 cup sour cream1 pkg Knorr vegetable soup mix8 oz. chopped drained chestnuts3 grn onions chopped

Chop and combine all ingredients. Refrigerate for 2 hours. Hollow out 1 large round pumpernickel bread loaf. Cut bread into cubes. Fill loaf with dip. Serve with veggies and bread cubes. Can substitute plain greek yogurt for sour cream and ½ fat mayo.

Eggplant Caviar2 lbs Eggplant (peeled and chopped)1 lrg Onion (diced)2 Tbsp. Olive oil1 tin Tomatoe Paste1 Tbsp. Red wine vinegar1 clove Garlic (chopped)1 Tbsp. Sugar (to taste)Sprinkles of salt, pepper, basil & oregano

In a large frying pan or pot, fry onion in oil until transparent. Add eggplant and other ingredients plus enough water to moisten well. Simmer covered for 45 min. Serve hot or cold with crackers to dip. Savoury. Even the kids enjoy it!

Cheese Straws2 cups � our2 cups grated cheddar cheese¾ cup butter1 tsp baking powder¼ tsp cayenne pepper½ teaspoon salt½ cup water

Preheat oven to 400 degrees F. Grease or line a baking sheet with parchment paper. Combine the � our, cheese, butter, baking powder, cayenne pepper, and salt in a bowl and mix until well combined. Add water a little bit at a time to make a very stiff dough. On � oured surface, roll pieces of the dough into just slightly thicker than pencil shaped sticks. Cut sticks into 4 – 5 inch lengths. Arrange the pieces on the baking sheet. Bake at 400 degrees F for 5 minutes or until browned.

Holiday PunchRecipe makes 40 (4 ounce) servings 4 cups cranberry juice cocktail 8 cups prepared lemonade 2 cups orange juice 1 (4 ounce) jar maraschino cherries 1 (2 liter) bottle ginger ale 1 orange, sliced in rounds

In a large punch bowl, combine cranberry juice cocktail, lemonade, and orange juice. Stir in the maraschino cherries. Refrigerate for 2 hours or more. When ready to serve, pour in the ginger ale. Garnish each glass with an orange slice.

Chestnut Appetizer1 (10 ounce) can whole chestnuts, drained2 cups soy sauce1 cup brown sugar1 pound bacon

In a small mixing bowl, combine chestnuts and soy sauce. Refrigerate for 30 minutes.Preheat oven to 450 degrees F (275 degrees C). Line a baking sheet with aluminum foil, and spray with a non-stick cooking spray.Cut bacon into thirds. Place brown sugar in a small mixing bowl. Drain chestnuts then roll them in brown sugar. Wrap each nut in a bacon strip and secure it with a toothpick. Arrange chestnut/bacon wraps on the prepared baking sheet.Bake until the bacon is crisp. Serve.

Nacho Dip250 g cream cheese250 ml sour cream2 – 3 Tbsp mayonnaise2 – 3 Tbsp salsa1 – 2 green onions1 tomato1 can shrimpGrated cheeseNacho chips

Mix soft cream cheese and sour cream together until smooth. Add mayonnaise to taste. Spread evenly in bowl; spread on a few spoons of salsa. Top with chopped green onion, tomato, shrimp and grated cheese. Chill before scooping.

Hans’ Rum Balls

Chop 300g. chocolate chips until you can see 3 distinct grades from powder to coarse. Add 4 tbsp cookie crumbles & 4 tbsp cocoa powder, (all ingredients available at Cooper’s Foods Bulk Food section). Put into a bowl; add 100 g butter and rum. Kneed into an almost solid paste. If too so� , add some cookie crumbles or put in a cool place until you can make this cute, little, tasty Rum ball. Roll in chocolate (not sugar) sprinkles while they are still warm from your hands.

Grapes and Baked Cheese:8 oz. fresh goat-cheese log2 tbsp. � our1/2 tsp. dried basil, crushed3 tbsps. melted butter1/3 cup chopped pecans or almondslb. seedless grapes

Slice cheese log into 1/2 inch rounds.  Combine Flour and basil.  Dredge each slice of cheese in � our mixture.  Dip slices in butter then coat with chopped nuts; press nuts lightly into cheese.  Place cheese on a plate or small tray and refrigerate 1 hour or until completely chilled.  Place on a non-stick baking sheet (line the baking sheet with parchment paper if it does not have a non-stick surface).  Bake at

400oF for 6 to 8 mins. or until nuts are crisp and cheese is warm.  Cut grapes into clusters of 6 to 8 grapes.  Serve cheese with grapes as an appetizer or dessert.  Makes 8 servings.

Hot Artichoke Dip14 oz can artichoke hearts, drained & chopped½ cup parmesan cheese1 cup mayonnaise1 garlic clove – mincedDash lemon juice

Mix all ingredients. Bake at 350° for 10 minutes. Serve with crackers

Warm Spinach & Artichoke Cups24 won ton wrappers1 can (14 oz) artichoke hearts, drained, � nely chopped1 cup Kraft 4 Cheese Italiano light shredded cheese1 pkg (300 g) frozen chopped spinach, thawed, squeezed dry1/3 cup miracle whip ¼ cup grated parmesan cheese¼ cup � nley chopped red peppers2 cloves garlic, minced

Heat oven to 350°. Place 1 won ton wrapper in each of 24 mini muf� n cups sprayed with cooking spray, with edges of wrapper extending over top of

cup. Bake 5 min. Meanwhile, combine remaining ingredients. Spoon artichoke mixture into won ton cups. Bake 12 to 14 min. or until � lling is heated through and edges of cups are golden brown. Note: for best results, spinach needs to be squeezed until very dry. The squeezed spinach should measure about 1 cup.

Black Bean and Corn Salsa1 can yellow or white corn, drained (or if you have fresh, that is even better!)1 can black beans, drained and rinsed1 can RoTel diced tomatoes and green chilis1 bunch cilantro, � nely chopped1/2 small red onion, � nely chopped2-3 green onions, � nely sliced1 red bell pepper, � nely

chopped2-3 Tbsp lime juice1 avocado, chopped (I didn’t use an avocado only because I didn’t have one on hand . . .)1/2 tsp minced garlicsmall amount of jalapeno, depending on how hot you like itdash of cumin

Mix all together in a large bowl and serve with taco chips.

Zucchini Pancake Bites(serves 8 as an hors d”oeuvre)

1 lb (500g) zucchini (about 6 medium)1tsp (5ml) salt1/2 cup(125ml) all purpose � our3 green onions1/4 cup (50ml)parsley, chopped1/2 tsp. (2ml) chilli powder1/4 tsp (1ml) freshly ground pepper2 large egg whitesvegetable oil, for fryingsmoked salmon, cooked shrimp or crab meat. for garnish

Trim zucchini and coarsely grate into a large colander set in sink.  Stir in salt and let drain at room temp. for 30 mins.  Wrap zucchini in a kitchen towel and twist towel to wring out as much liquid as possible.  Place zucchini in a large bowl and stir in � our, green onions, parsley, chili powder and pepper. Using an electric mixer, whisk egg whites in a bowl until they just hold stiff peaks.  Gently fold into zucchini mixture. In a large frying pan, heat a thin layer of oil over medium-high heat.  Working in batches, spoon about 2 tbsp.(30ml) batter into pan for each pancake, � attening slightly with back of a spoon.  Cook, turning once, until golden brown about 3 to 4 minutes total.  Transfer as cooked to a paper towel-lined plate to drain.  Pancakes can be prepared 2 hours before serving and then warmed slightly in a 325F (170) oven before � nishing. When ready to serve, place zucchini pancakes, side by side, on a serving tray.  Top with smoked salmon (or topping of your choice) and a small dollop of Herb Cream.

Herb Cream recipe:1 cup (250ml) sour cream1/4 cup (50ml) fresh basil, chopped2 tbsp. (30ml) fresh chives, chopped2 tbsp (30ml) fresh mint, chopped1/2 tsp (2ml) salt

Blend all ingredients in a blender or food processor until smooth and pale green.  Transfer to a bowl and refrigerate until ready to use.  Herb Cream can be made up to l day in advance.

Shrimp Dip 1 (8 ounce) package cream cheese, softened 2 (4 ounce) cans small shrimp, drained 1 (8 ounce) jar cocktail sauce 1 cup shredded mozzarella cheese 1/2 red bell pepper, diced 1/2 green bell pepper, diced assorted crackers for dipping

Directions: Spread cream cheese in an even layer on a serving dish or in the bottom of a glass pie pan. Combine shrimp with cocktail sauce in a bowl and spread evenly over the cream cheese layer. Sprinkle with mozzarella cheese, covering the shrimp layer as completely as possible. Sprinkle the red and green bell pepper over the cheese layer. Serve with crackers.

Cinnamon Christmas Tree Ornaments½ Cup Apple sauce½ Cup Ground Cinnamon1 Tbsp. Ground cloves1Tbsp. White liquid glue (school glue)

Mix together in bowl. Roll out ½ cm thickness (approximately). Use small cookie cutters to cut out shapes. Transfer to wax paper covered cookie sheet. Using a small straw or pin, make a hole in the top of each ornament.  Bake 150 degrees F  for approximately 2 hours. Turn to harden both sides. Decorate with glitter glue when cool. String with a ribbon or thread to hang on the Christmas tree.

Makes a nice fragrant and personal gift!

Christmas Soup1 pound kielbasa, sliced 1/4-inch thick on biasVegetable oil, as needed8 cloves garlic, minced1 pound red kidney beans, soaked at least 4 hours and up to overnight2 quarts chicken broth1 pound red potatoes, cut into 1/2-inch cubes6 ounces fresh kale, approximately 4 handfuls1/4 cup red wine vinegar1/2 teaspoon freshly ground black pepper

Place the kielbasa into a 7-quart Dutch oven and set over medium-low heat. Cook until the kielbasa has browned well and rendered its fat, approximately 15 minutes. If you do not have at least 2 teaspoons of fat, add enough vegetable oil

to make 2 teaspoons. Remove the kielbasa from the pan and set aside.Add the garlic and cook for 1 to 2 minutes, stirring constantly to prevent the garlic from burning. Add the beans and the chicken broth and cook, covered, for 45 minutes. After 45 minutes, add the potatoes, cover and cook for 15 minutes, stirring occasionally.Wash, rinse and trim the kale and tear into bite size pieces. Add the kale to the pot, cover and cook for an additional 10 minutes or just until it is tender, but not mushy. Add the red wine vinegar and black pepper and stir to combine. Evenly distribute the kielbasa between 8 soup bowls. Laddle the soup into bowls and serve

Roast Potato Salad With its smoky chipotle dressing, this two-tone salad complements many barbecued dishes.

4 Yukon Gold potatoes (about 2 lb/1 kg)3 sweet potatoes (about 2 lb/1 kg)3 tbsp vegetable oil1/2 tsp salt3/4 cup frozen or canned kernel corn1 sweet red pepper, diced2 green onions, � nely chopped

DRESSING:3/4 cup light mayonnaise1/3 cup buttermilk1/4 cup chopped fresh coriander or parsley2 tbsp lime juice2 tbsp minced chipotle peppers in adobe sauce1/2 tsp ground cumin1/4 tsp each salt and pepper

Peel and cut Yukon Gold potatoes and sweet potatoes into 1 inch cubes; place in large bowl. Add oil and salt; toss to coat. Spread on large rimmed baking sheet; roast in 425F (220C) oven, stirring once, until tender and golden, 60 to 65 minutes. Let cool.

DRESSING: Meanwhile, in bowl, whisk together mayonnaise, buttermilk, coriander, lime juice, chipotle peppers in adobe sauce, cumin, salt and pepper.In a large bowl, combine potatoes, corn, red pepper and green onions. (Make ahead. Refrigerate potato mixture and dressing in separate airtight containers for up to 2 days.)Pour dressing over salad; toss to coat. Makes 6 to 8 servings. (about 360 calories per each of 6 servings)

Greek Quinoa Salad:l cup cooked, cooled, quinoa1 cup chopped snap peas1/2 cup Feta cheese1/2 green or red pepper, sliced thin1 cup chopped tomato1 medium cucumber, diced1 small chopped onion3 chopped celery stalks1/4 cup chopped cilantro, or basil

1/2 cup dried cranberries2 tbsp. lemon juice2 tbsp. olive oilsalt and pepper2 minced garlic cloves

Cook Quinoa according to package, set aside to cool.  Chop veggies, Combine all ingredients.  Chill in refridgerator for about an hour.  Add seasoning to taste.  ENJOY!

Corn Soup1 can 14 oz cream style corn2 eggs well beaten5 cups water (or chicken stock)2 Tbsp corn starch + ¼ cup water1 stalk green onion, chopped2 tsp salt� tsp pepper

Bring water to full boil. Pour in cream style corn. Stir in corn starch & water mixture. Lower heat. Trickle the beaten egg into soup stirring constantly. Turn off heat & garnish with green onion. Serves 6

Mediterranean Asparagus TartIngredients:all-purpose � our1/2 of a 397 g pkg frozen puff pastry1/2 c. regular sour cream1/4 c. thinly sliced sun-dried tomatoes1/4 red onion sliced1 bunch asparagus1 tbsp olive oilpinches of salt & ground black pepper1/2 c. grated Emmenthal, Gruyere or white cheddar cheese

Directions:1. Preheat oven to 400F (200C). Partially � ll a large frying pan with water and bring to a boil over medium-high heat. Line a baking sheet with parchment paper. Lightly dust counter with � our and place puff pastry on top. Dust rolling pin with � our. Roll pastry into a rectangle, about 14 x 10 in. (35X25 cm) Pastry will be very thin and edges uneven. Move to lined baking sheet. Form a nar-row 1/2 in (1 cm) border by folding pastry edges over and pressing down to seal. Spread sour cream evenly over pastry. Scatter with sun-dried tomatoes and onion. Bake in centre of pre-heated oven for 10 min.2. Meanwhile, snap tough ends from asparagus and discard. Boil asparagus until tender-crisp, about 2 min. Drain. Pat dry with pa-per towels. Slice spears in half diagonally. Place in bowl. Drizzle with oil and sprinkle with salt and pepper. Toss to coat.3. After tart has baked 10 min. remove to heatproof surface. Scat-ter asparagus, then cheese overtop. Continue baking until pastry is golden, about 10 more min. Cut into rectangles to serve.

Garlic Roasted Potatoes2 lbs large potatoes, peeled¼ cup olive oil½ cup freshly squeezed lemon2 tsp oregano3 garlic cloves, � nely chopped½ cup waterSalt & pepper

Preheat over to 450°. Cut potatoes into quarters or eighths, lengthwise and place in large shallow baking dish. Add remaining ingredients and stir to coat the potatoes. Bake uncovered for 1 hour until crisp on outside and soft inside. Stir once or twice during baking and add a little more water, if necessary. Serves: 6 -7

In a saucepan pour some olive oil. Gently brown a washed sliced leek over medium heat. Reduce heat, add a potato and approx. 1 ½ lbs of pumpkin, peeled & diced fairly small. Add salt & pepper and a few fresh sage leaves and parsley. Cook slowly, add a little broth if too dry. Cook until pumpkin and potato are soft, about 30 minutes. Puree and add broth until desired consistency.

Spinach BiryaniThe holidays are the perfect time for potlucks and this Spinach Biryani side dish is always a crowd pleaser! Recipe originally from Canadian Living.

Ingredients:1 tbsp (15 mL) vegetable oil1 onion, diced2 cloves garlic, minced1 tbsp (15 mL) mild curry paste or medium curry paste1/4 tsp (1 mL) salt1/4 tsp (1 mL) pepper1 cup (250 mL) basmati rice1/4 cup (60 mL) raisins

1 cup (250 mL) sodium-reduced chicken broth4 cups (1 L) chopped fresh spinach1/4 cup (60 mL) toasted sliced almonds

Directions:In large saucepan, heat oil over medium heat; cook onion until deep golden, about 8 minutes. Add garlic, curry paste, salt and pepper; cook until fragrant,about 2 minutes. Stir in rice and raisins to coat.

Add broth and 1 cup (250 mL) water; bring to boil. Reduce heat, cover and simmer until almost no liquid remains, about 20 minutes. Stir in spinach and almonds. Cover and let stand for 5 minutes.

Turkey Taco Salad2.5 cups Ground cooked turkey (or diced) I use diced, cooked turkey and add it with the tomato sauce. If you don’t have left over turkey, use the ground turkey.¾ Cup Chopped onions¼ Cup Chopped green pepper1 Can Tomato sauce (7 ½ oz. / 213 ml.)1 Tbsp Chili powder¾ Tsp Ground cumin¾ Tsp Salt¾ Tsp Garlic powder I use cloves of garlic.1 Can Green chilies (4 oz. / 113 ml.)1 Large Tomato diced1 Head Iceberg lettuce chopped½ Cup Sliced ripe olives½ Cup Grated cheddar I

serve the cheese on the side2 Cups Crushed tortillas or corn chips1/4 Cup Taco sauceLow calorie 1000 Island dressing

Directions: Place turkey, onions and green peppers in a large bowl. Microwave on HIGH for 3-4 minutes, stirring once until the onions and green peppers are tender. I cook it on the stove. Add tomato sauce, chili powder, cumin, salt, garlic and green chilies. Microwave on MEDIUM for 10 minutes, stirring 2 times. Meanwhile, toss tomatoes, lettuce, olives and cheese in a salad bowl. Place tortilla chips over the lettuce. Top with hot ground turkey mixture. Dot the meat with salad dressing, and drizzle taco sauce over all. Serve while still warm. Serves 4 as a salad.

Baked Chicken Breast & Basil4 boneless, skinless breasts, rinsed and patted dry¾ cup low fat yogurt, plain¼ cup fresh chopped basil or 1 Tbsp dried basil2 tsp cornstarch1 cup fresh, whole wheat bread crumbsSalt & pepper2 Tbsp grated Parmesan cheese

Arrange chicken in a single layer in a baking pan. Combine yogurt, basil & cornstarch, spread over chicken. Season crumbs with salt & pepper and Parmesan and sprinkle over chicken. At this point, you can refrigerate up to 6 hours. Bake in 375° oven for 30 min or until chicken is no longer pink.

Stuffed Cabbage Entrée10 green cabbage leaves2 cups cooked brown rice1 cup chopped walnuts½ cup diced onion½ cup diced celery½ cup chopped spinach½ tsp salt2 Tbsp soy sauce

Steam cabbage leaves. Mix remaining ingredients together. Fill each leaf with a heaping tablespoon of mixture and roll into a neat roll. Tuck ends under so mixture will not spill while baking. Lightly oil baking dish. Put any leftover mixture on bottom of dish. Place cabbage rolls on top, close together. Cover and bake at 350° for 25 min. Serve with tomato sauce.Serves 5

Light Salmon Loaf with Dill1 tsp soft margarine1 med onion � nely chopped1 cup of diced celery1 cup diced mushrooms2 eggs1 can (7 oz) salmon1 cup fresh bread crumbs2/3 cup milk¼ cup chopped fresh dill (1 Tbsp dry)Pepper to taste

Stir fry together � rst 4 ingredients. In bowl beat eggs and add to stir fried mixture. Add liquid from salmon. Flake remaining salmon and mash bones. Add to bowl with bread crumbs. Add milk, dill and pepper. Stir lightly to mix. Pour into lightly greased 8 ½” x 4 ½” glass loaf pan , not metal. Cover with plastic wrap. Microwave on high power 7 minutes. Let stand 5 min.

Lentil Tomato Loaf¾ cup chopped onion4 Tbsp oil1 tsp soy sauce3 Tbsp � our¾ cup tomato juice1 ½ cups cooked lentils¾ cup cereal � akes¾ cup chopped walnuts1 tsp salt

Braise onion in oil and soy sauce. Stir in � our and cook a few minutes. Add slowly stirring constantly. Mash lentils. Add with rest of ingredients to the onion tomato mixture. Turn into well-greased loaf pan. Bake at 375° about 45 min. Serves 6

Holiday Pilaf1 cup diced celery1 small onion, chopped4 Tbsp oil2 vegetable bouillon cubes½ tsp salt4 oz. sliced mushrooms with liquid8 ripe olives, sliced2 Tbsp raisins1 cup cooked peas2 cups cooked brown rice

Simmer celery, onion and oil together for 5 min. Add bouillon cubes, salt, mushrooms, olives and raisins and bring to a boil. Add peas and rice and heat through. Toss lightly with a fork. Serve immediately. Serves 4

Lasagna Roll-Ups1 pkg (10 oz) frozen spinach1 cup part-skim ricotta2 Tbsp basil1 egg8 whole wheat lasagna noodles3 cups tomato-basil pasta sauce½ cup shredded mozzarella¼ cup grated Parmesan

Preheat oven to 375. Squeeze excess liquid out of thawed spinach. Mix spinach, ricotta, basil, and egg in bowl. Spoon onto cooked lasagna noodles and roll up. Place in baking dish. Top with pasta sauce, mozzarella and Parmesan and bake for 45 minutes. Serves 4

Braised Balsamic Chicken Recipe6 skinless, boneless chicken breast halves ground black pepper to taste 1 teaspoon garlic salt 2 tablespoons olive oil 1 onion, thinly sliced 1/2 cup balsamic vinegar 1 (14.5 ounce) can diced tomatoes 1 teaspoon dried basil

1 teaspoon dried oregano 1 teaspoon dried rosemary 1/2 teaspoon dried thymeBrown Rice or Wheat NoodlesMozzarella Cheese to sprinkle on top (optional)

Season chicken breasts with ground black pepper and garlic salt. Heat olive oil in a medium skillet, and brown the onion and seasoned chicken breasts.

Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes. Put over brown rice or wheat noodles. Then sprinkle Cheese on top.

Burgundy Spareribs2 lbs pork spareribs1/3 cup onion, chopped1/3 cup chili sauce3/4 cup burgundy wine2 tart apples, cored & halved1 Tbsp. brown sugarSalt & pepper

Wipe spareribs with damp cloth. Sprinkle them with salt & pepper. Place in large shallow casserole with lid. Stew the onion over them. Mix chili sauce with burgundy and spread ½ over ribs evenly. Cover and bake in oven preheated to 400° for 1 hour. At the end of this time surround the meat with apples and spread the rest of the wine sauce over. Sprinkle brown sugar on top, cover and roast for 15 min. Uncover and bake 15 min more. Baste once with sauce in pan. Serves 4

Cabbage Roll Casserole1 lb lean ground beef1 onion (chopped)Sprinkle salt & pepper (to taste)Pinch garlic powder (to taste)1 Tbsp. Worcestershire sauce1 14oz Can Tomatoes (crushed)1 Cup Water3 Tbsp. Uncooked rice3 Cups Coarsely  shredded cabbageShake grated Parmesan cheese (optional)

In frying pan, brown meat. Add onion, salt & pepper, garlic & Worcestershire sauce. Cook until brown. Pour off fat. Stir in tomatoes, water and rice. Place cabbage in large casserole. Pour meat mixture over cabbage. Cover and bake at 325 degrees F  for 1 & ½  hours.

Chocolate Macaroons(Bird’s Nest Cookies)

2 Cups white sugar½ Cup milk½ Cup margarine1 tsp vanilla1/3 Cup Cocoa3 Cups rolled oats1 Cup coconut

In a pot, bring 1st 5 ingredients to a rolling boil. Whisk constantly for 2-3 minutes. Remove from element and stir in oats and coconut. Using a teaspoon, spoon quickly onto cookie sheet or cutting board. Store when cool and set. Freezes well.Optional: push thumb into each cookie when warm and place 2-3 Cadbury mini eggs in centre.

Chipits Chocolate Mint Kisses2 egg whites½ cup granulated sugarPinch cream of tartar1 cup Chipits chocolate mint chips

Beat egg whites until foamy. Add sugar gradually and cream of tartar, beat until stiff. Fold in chipits. Spoon meringue into piping bag � tted with a 2 inch round tip. Pipe meringue kisses onto foil lined baking sheets and bake at 250° for 25-30 minutes or until � rm to touch and lightly browned. Makes about 3 dozen.

Chocolate Log Roll(Sweet and gooey – my favorite)

1 Cup Chocolate chips1Cup Butterscotch chips8 oz Cream cheese (softened)1 Cup Maraschino cherries (cut up)2 Cups mini coloured Marshmallows2 Cups Coconut (for rolling)

Melt chips in microwave. Stir in cream cheese, cherries and marshmallows till well mixed. Shape into logs and roll in coconut. Wrap logs in wax paper. Freeze. Cut just before serving.

Ginger Nut Cookies¾ cup shortening ¾ cup brown sugar4 Tbsp molasses1 egg2 cups � our2 tsp baking soda1 tsp cinnamon1 tsp cloves1 tsp ginger1 tsp salt

Beat together shortening and brown sugar. Add molasses and egg. Mix well. Add the rest of the ingredients and mix together. Roll into small balls and dip into sugar. Place on a greased cookie sheet. Bake at 350° for 15 mins.

Dutch taai-taaiVersion 1:1 cup sugar3/4 cup honey or corn syrup3 tsp instant coffee dissolved in one cup of hot water4 cups � our2 tsp baking powder1 tsp soda2 tsp cinnamon1 heaped tbsp ground anis seed

Melt together sugar, honey or corn syrup. Dissolve 3 tsp instant coffee in one cup of hot water and add to melted ingredients. Cool slightly, then add � our, baking powder, soda, cinnamon and ground anis seed. Spread in 8 x 13 pan. Bake slowly until done. Keep in an airtight container with a piece of bread.

Version 2:1 cup syrup1 cup honey1 cup water5 cups � our½ tsp salt2 tsp ground anis seed 3 tsp cinnamon½ tsp coriander1 tsp nutmeg1 tsp cloves or all spice

Mix � rst 3 ingredients in a pot and boil. Cool mixture and add dry ingredients. Put on buttered cookie sheet and bake 15 min at 375°. Cut in squares, cool completely.

Easy Nut Brittle1 cup white sugar1/2 cup white corn syrup (Crown)1/8 tsp salt1 1/2 cup cashews1 tsp butter1 tsp vanilla1 tsp baking soda

In 2 L glass bowl, stir sugar, corn syrup and salt with wooden spoon until well mixed. Micro on high 6-8 mins. until syrup is pale yellow. Add nuts, mix well, micro 1-2 mins. until golden. Add butter, vanilla and baking soda until foamy. Spread smooth on cookie sheet. Work quickly.Tips: heat cookie sheet in low oven, lightly grease with butter, turn oven off and leave cookie sheet in oven until ready to use. Toast 1 heaping Tbsp sesame seeds and sprinkle on brittle while

still hot. Half the cashews so they are � atter for a thinner brittle. Every microwave strength seems a little different. So best to keep an eye on the color.

Breakfast Bars with Nutella¾ cup � our¾ cup whole wheat � our¼ tsp baking soda¼ tsp baking powder½ tsp ground cinnamon¼ cup sugar¼ cup melted butter or margarine¾ cup unsweetened apple sauce1 egg lightly beaten1 cup trail mix*½ cup Nutella

Preheat oven to 350°. Coat 8x8 baking pan with cooking spray. In a large bowl whisk together � ours, baking powder, soda & cinnamon. In another bowl whisk together sugar, butter, applesauce and egg. Add liquid mixture to � our mixture. Stir to combine. Fold in trail mix and spoon into baking pan. Smooth top. Bake for 25 – 30 min. or until toothpick comes out clean. Let cool for 15 min. Turn onto cutting board. Let cool. Cut into 10 bars. Spread top of each with Nutella.*Note: use signature trail mix with sun� ower seeds, raisins, cashews, and pumpkin seeds.

Grandma’s Best Gingerbread Cake1 14oz can of applesauce1 cup of cooking molasses2 tsp. baking soda3 cups of all purpose � our1/2 tsp. salt2 tsps. ground ginger spice1 1/2 tsp. ground cinnamon spice1/2 tsp. ground clove spice1/2 tsp. ground nutmeg spice4 eggs1 1/3 cup of sugar2/3 cup of vegetable oilgreased bundt panwhipped cream for garnish In a small saucepan, bring the applesauce to boil, add the molasses and soda, blend well and cool. In a large bowl combine the � our, salt and spices.  Beat the eggs until light and creamy, gradually add sugar and continue to beat until thick and golden, then slowly beat in oil. Add the molasses mixture and the egg mixture together and then fold in alternately with � our mixture.  Pour into bundt pan and bake at 350 degrees for 1 hour and 10 minutes, or until the centre springs back and is � rm. Cool the cake in pan, turn over onto plate and serve with whipped cream. This cake with be a hit with the entire family, it is delicious and moist, especially with a hot cup of tea or hot chocolate on a winter day.

Holiday Wreaths1/3 cup butter1 (10.5 ounce) package large marshmallows6 cups corn� akes cereal1 teaspoon green food coloring1/4 cup cinnamon red hot candies

Melt margarine in a large pan over low heat. Add marshmallows and stir constantly until marshmallows melt and mixture is syrupy. Remove from heat. Stir in food coloring. Add corn � akes and stir until well coated. Drop mixture, by 1/4 cupful, onto cookie sheet. Using buttered � ngers, quickly shape into individual wreaths. Dot with cinnamon candies.

Mexican Wedding Cookies100 g butter250 g berry sugar100 g white � our100 g � nely chopped hazelnuts1 tsp vanillaicing sugar

Beat sugar and butter until creamy, add � our to the sugar butter mixture. Add vanilla and hazelnuts, mix well. Divide dough into small balls, about 2cm in diameter and place on a greased baking sheet. Bake for 15 minutes at 180 degrees Celcius. Remove and cool on a baking rack until completely cooled. Roll each cookie in icing sugar and serve.

Mom’s Fruit CakeThree cups unsweetened apple sauce¾ cup vegetable oil or 1 cup shorteningTwo cups white sugar

Mix and let stand over night

4 tsps soda¼ lb chopped walnuts4 ½ cups all purpose � our¼ lb candied cherries1 tsp nutmeg¼ lb candied pineapple2 ½ tsps cinnamon1 lb white raisins1 tsp allspice1 lb dark raisins ½ tsp cloves4 ozs citron1 tsp salt2 ozs lemon peel2 ozs orange peel

Mix well, � ll prepared loaf pans 2/3s full, bake at 275 or 300 degrees for 3 hours or till done(when cake is gently pressed with � nger and leaves no indentation it’s done)

2 Cups Chinese noodles (broken)2 Cups Butterscotch chips½ bag Mini marshmallows¾ Cup Peanut butter (smooth or crunchy)

Microwave chips and peanut butter on high for 1 & ½ minutes to melt . Stir it smooth. Add noodles and marshmallows. Using a teaspoon, drop mixture onto wax paper to cool. Store.  Freezes well.

No Bake Pumpkin CheesecakeCrust:1 ½ cups graham crumbs2 tablespoons brown sugar½ teaspoon cinnamon3 tablespoons melted butter.To make crust , combine crumbs, brown sugar and cinnamon in medium bowl. Add melted butter.Spray a spring form pan with cooking spray and press crumb mixture � rmly and evenly in pan.Refrigerate for an hour.

Filling:1 cup 2% evaporated milk¼ cup frozen orange juice concentrate, thawed2 packages un� avored gelatin Knox1 ½ packages light cream cheese at room temperature1 ¼ cups packed brown sugar1 tablespoon vanilla2 cups light sour cream2 cups pure pumpkin2 tablespoons cinnamon½ teaspoon each, nutmeg, allspice

Combine evaporated milk and range juice concentrate in a small saucepan. Sprinkle gelatin on top and let stand 5 minutes. Whisk gelatin into milk mixture and cook over medium high heat stirring constantly until mixture just starts to boil. Remove from heat and let cool. To make the � lling beat together cream cheese, brown sugar and vanilla at high speed of mixer until smooth, add sour cream, pumpkin and spices, beat again on medium speed until well blended and add milk mixture and beat until well mixed. Pour batter over crust smoothing the top and cover with plastic wrap and refrigerate overnight or at least 8 hours. Run a knife around edges and remove sides, serve with light whipped topping.

Pumpkin Spiced Oatmeal Pecan Cookies1 cup all purpose � our 2 cups quick oats 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 tsp ground cinnamon 2 tsp pumpkin pie spice 2 tbsp unsalted butter, room temperature 1/2 cup sugar 1/2 cup unpacked brown sugar 1 large egg 6 tbsp canned pumpkin (not pumpkin pie � lling) 2 tsp vanilla extract 3/4 cup chopped pecans

Preheat oven to 350°; line two baking sheets with parchment paper. In a medium bowl, whisk together � our, oats, baking powder, baking soda, salt, pumpkin spice and cinnamon. In a large bowl, cream together the butter and the sugars on medium speed. Add the egg, followed by the pumpkin and vanilla extractWorking by hand, stir in the � our mixture and the oats until just combined and no streaks of � our remain; stir in the pecansDrop 1 tablespoon of the dough at a time onto prepared baking sheets. Bake for about 10-12 minutes, or until cookies become light brown at the edges.

Pinocha or Penuche Fudge or Sucre a la creme2 cups brown sugar1/2 cup milk1/4 cup butter1 tsp. vanilla1 cup chopped pecans or walnuts or coconut

Cook milk, sugar & butter together to form a soft ball stage in cold water.  Candy thermometer at 238o.  Let cool slightly and add vanilla.  Beat until creamy or gloss has gone, add nuts or coconut and pour into buttered pan. Enjoy!

Pumpkin Pie Filling2 eggs1 ½ cups pumpkin puree1 cup brown sugar1 tsp cinnamon½ tsp nutmeg¼ tsp ginger¼ tsp salt¾ cup evaporated milk1 – 9 inch deep dish pie shell

Beat eggs, add pumpkin, sugar & spices. Mix until well combined. Blend in milk. Pour into pie shell. Bake @ 425° for 15 min. Reduce oven to 350° for another 30 – 35 min or until a knife inserted in centre comes out clean.

Raspberry Layered Dessert2 cups graham cracker crumbs½ cup margarine, melted½ tsp ground cinnamon1 pkg (250 g) cream cheese, softened¼ cup icing sugar3 cups thawed cool whip whipped topping1 cup boiling water2 pkg raspberry jelly powder3 cups frozen raspberries (do not thaw)

Mix graham crumbs, margarine and cinnamon. Reserve 2 Tbsp, press remaining onto bottom of 13 x 9 inch pan. Beat cream cheese and sugar with mixer until well blended. Stir in 1 cup cool whip. Spread onto crust. Refrigerate until ready to use. Add boiling water to jelly powders in large bowl; stir 2 min. Add berries; stir until thickened. Pour over cream cheese layer. Refrigerate 30 min or until set but not � rm. Cover with remaining cool whip and reserved crumb mixture. Refrigerate 3 hours or until � rm.

Sugar Crusted Ginger Cookies¾ cup butter softened¾ cup packed brown sugar1 pkg. (4 serving size) Jello-butterscotch instant pudding1 egg½ cup � nely chopped crystallized ginger2 cups � our1 teaspoon baking soda1 tablespoon ground ginger1 ½ tsp. cinnamon¼ cu granulated sugar

Heat oven to 350

Beat � rst 5 ingredients with a mixer until well blended. Mix remaining ingredients except the granulated sugar and add to the pudding mixture beating until just well blended. Divide dough in half and roll each half into log wrap in plastic, refrigerate 1 hour or until � rm. Unwrap logs and roll in sugar, slice into ½ inch slices and cook on cookie sheets covered in parchment. Bake 11-13 minutes cool on racks.

Thimble Cookies½ cup butter¼ cup sugar1 egg yolk1 tsp vanilla1 ¼ cups � our1 tsp cornmeal

Cream together butter and sugar. Add egg yolk and vanilla, � our and cornmeal. Shape into balls. Dip in unbeaten egg white, chopped nuts, indent and place on greased baking sheet. Bake in 350° oven for 5 min and dent. Bake 10 min. more. Fill with jam or jelly.

Zucchini Brownies2 cups grated zucchini½ cup canola oil½ cup cocoa2 tsp vanilla½ cup chopped nuts1 cup sugar½ cup brown � our1½ cups white � our1 ½ tsp baking soda1 tsp salt

Mix zucchini, oil and vanilla together. Sift dry ingredients together and mix into zucchini mixture, add nuts. Press into buttered 8 x 8 pan. Bake in 350° oven for 25-30 min.

Whole Wheat Cinnamon BunsIn bowl mix:½ cup white sugar1 1/3 cup warmed milk4 Tbsp butter melted1 tsp vanilla1 tsp salt2 eggsBeat well.

Add 2 2/3 cups whole wheat � our missed with 3 tsp instant yeast and beat well. Add 3 ½ cups white � our a small amount at a time and beat well. Knead until a soft, smooth, non-sticky dough forms. Transfer dough to greased bowl and turn it to grease all over. Cover. Knead down every 20 – 30 min x 3. After last knead, let rise until doubled in bulk.

Filling:In small bowl mix together then set aside.1 ½ cups brown sugar 2 tsp cinnamonPinch of clovesPinch salt

Prepare pans: Spread enough pans to hold 16 – 20 med – large cinnamon rolls with a generous amount of soft butter (bottom and up sides). Sprinkle bottom with sugar mixture to form a thin layer over the butter.

To Make Rolls: When dough is ready, turn out onto a lightly greased surface. Roll out to approx. 20”x12” rectangle. Spread soft butter over surface. Sprinkle with remaining sugar mixture. Roll up as a jelly roll and cut into 16-20 rolls. Place rolls cut side down in pans approx. 1” apart. Let rise until double in size. Bake at 375° for about 20 min. or until golden brown. Turn upside down onto foil & use soft scraper to get all of the liquid out of the pans onto the buns.

Speculaas Cookies1 cup margarine1 cup brown sugar1 cup white sugar2 eggs1 tsp vanilla2 cups � our1 ½ cups oatmeal1 tsp cinnamon½ tsp nutmeg1 ½ tsp allspice1 tsp baking soda

Cream margarine and sugar together. Add eggs and vanilla and mix. Add � our, oatmeal, cinnamon, nutmeg, allspice and baking soda. Mix until smooth. Drop in clumps of dough of about a teaspoonful onto a cookie sheet and bake at 350° for about 8 – 12 minutes. This is a Dutch recipe that is great for St. Nicholas day on Dec.6.

Rocky Road Candy1 350 g pkg. semi sweet chocolate chips1 300 ml can Eagle Brand sweetened condensed milk2 Tbsp margarine or butter2 cups dry roasted peanuts1 250 g pkg miniature marshmallows

In heavy saucepan, over low heat, melt chocolate chips with Eagle brand and margarine: remove from heat. In large bowl, combine nuts and marshmallows; fold in chocolate mixture. Spread in was paper-lined 13 x 9 inch pan. Chill 2 hours or until � rm. Remove from pan, peel off wax paper; cut into squares. Cover and store at room temperature. Tip: if desired, mixture can be dropped from teaspoon onto was paper-lined baking sheets.

Cranberry Squares1 1/2 cup rolled oats1 1/2 cup � our3/4 cup butter1/4 tsp. baking soda1 cup  packed brown sugar14 oz. tin whole cranberry sauce

Mix � rst 5 ingredients until crumbly.  Pat � rmly 1/2 of crumbs into 9”x9” pan.  Spread sauce on top - sprinkle remaining crumbs on top of sauce.  Bake 350oF for 35-40 mins. until rich golden brown.

Graham Wafer Chocolate Squares½ cup butter1 cup icing sugar1 large egg yolk½ tsp vanilla ½ cup coconut2 squares chocolate, melted½ cup chopped nuts1 egg white beaten stiffWhole graham wafers (2 crushed for top)

Line 8 x 8 pan with whole wafers. Cream butter & sugar, add egg yolk and beat well. Add vanilla, coconut, nuts and melted chocolate fold in stif� y beaten egg whites. Spread this mixture over wafers and sprinkle crumbs over top. Chill. This should be kept in refrigerator until used.

Coconut TartsLine tart tins with pastry, put a tsp. of jam (strawberry or raspberry) in unbaked shells.

Mix 2 eggs well beaten,1 cup white sugarpinch of salt1 tbsp. butter1 tsp. vanilla1 cup coconut

Put 1 tbsp. of this mixture over jam in tart shells. Bake at 375oF for 20-25 mins. Enjoy!

Ultimate Butter Tart½ cup brown sugar½ cup corn syrup1/4 cup Crisco shortening1 egg, slightly beaten1 tsp vanilla¼ tsp salt½ cup washed raisinsPastry shells, frozen

Combine all ingredients except raisins. Divide raisins into pastry shells and add syrup.Bake at 425° for 12 – 15 minutes.

Beat butter for 4 minutes. Add icing sugar. Combine � our and corn starch. Sprinkle into butter mix. Drop onto a greased cookie sheet. Bake at 250° for 35 minutes.
