Angie Q uaale’s Marinated Artichoke, Garlic & Turkey Pasta Sauce Serves 4 Ingredients ¼ cup butter ½ lb. ground turkey thigh meat 4 large garlic cloves, minced 1 medium shallot, finely chopped 1 6 oz jar grilled, marinated artichokes roughly chopped 1 tsp. dried basil ½ tsp. cayenne pepper or to taste salt & cracked black pepper, to taste 2/3 cup whipping cream 4 tbsp. grated Parmesan cheese ¼ cup fresh parsley, chopped ¼ cup fresh basil, chopped 1 pound of Bucatini or Spaghetti, cooked al dente. How To: In a medium sized frying pan, over medium heat, heat the olive oil and cook the turkey just until it is cooked through breaking it up as it cooks. Add the butter, chopped shallots and minced garlic, sauté until translucent & fragrant. Add the artichokes, the basil, cayenne and whipping cream, stir to combine. Cook at a gentle boil until sauce has slightly thickened and stir in the cheese. Add the hot cooked pasta to the pan, stir in the parsley and toss to coat the pasta with the sauce. Garnish with extra grated Parmesan cheese and a sprinkling of fresh basil.
