1.1. S cn thit phi u t
Nng hin nay tr thnh th loi I ca t nc, nn kinh t c nhng
bc pht trin vt bc, dn c tp trung ng c. Thm vo , cc im du lch nh
Non Nc, B N... ngy cng thu ht nhiu khch du lch trong nc v quc t, nhu
cu ch bin thc phm ngy cng tng v khng ngng pht trin, nht l nc gii
kht m quan trng nht l bia - mt loi nc ung c ng o ngi dn v khch
du lch a chung.
1.2. Phng n sn xut
Nh my bia c thit k lm vic theo phng php ln men lin tc s dng
nguyn liu l 58% malt i mch, 40% go v 2% ng saccarozo.
1.3. C s kinh t k thut
V v tr a l: a im xy dng nh my ti khu cng nghip Ha Khnh, cch
Quc l 1A khong 1km.
V kh hu: Nng nm trong vng kh hu nhit i gi ma. Nhit trung bnh
khong 260C n 280C, m trung bnh l 80%, hng gi ch o l hng ng

Nguyn liu chnh sn xut bia l malt i mch, hoa houblon v nc. Ngoi ra
nh my cn dng nguyn liu thay th l go.
Do kh hu, t ai nc ta khng trng c a mch v cy hoa houblon nn hai
nguyn liu ny c nhp t nc ngoi.

Bia trng l loi bia lm t la m (wheat) m c nu ch yu ti B, H lan. Bia
trng mang tn ny do bi cc men l lng (ln men ni) v cc protein ca la m lm
bia trng nh m m sng khi hay c mu trng khi bia c lm lnh.

2.2. Nguyn liu
2.2.1. Malt i mch
- Malt i mch l ht i mch ny mm trong iu kin nhit , m nhn
to xc nh t hot lc enzim v thnh phn dinh dng ca ht mc
cn thit.
- Trong cng ngh sn xut bia, malt i mch va l tc nhn ng ho va l
nguyn liu c trng to nn sn phm.
- Yu cu ca malt i mch :
+Phi sch, c mi thm c trng, c v ngt, mu vng sng u.
+ Kch thc ht malt phi ng u
+ Khi lng ring ca malt trong khong 520 - 600gam/lt.
+ m ca malt khng qu 6%
+Malt c thi gian ng ho 10 - 35pht, hot lc amylaza cao.
2.2.2. Hoa houblon

xut bia, v nu s dng hoa ci c th phn s lm gim cht lng ca bia.
Chnh v vy m ngi ta phi tin hnh loi b ngay nhng cy c trong vn hoa
houblon.
Hoa houblon l nguyn liu ng v tr th hai sau malt i mch trong sn xut bia.
N truyn cho bia v ng du, hng thm rt c trng, n lm tng kh nng gi bt,
lm tng bn keo v n nh thnh phn sinh hc ca sn phm.
Nh my s dng hoa vin sn xut bia v u im l d bo qun, cht lng tt.
2.2.2.1. Thnh phn ha hc ca hoa houblon
Nha houblon :
Nha houblon l thnh phn chnh v rt quan trng ca hoa, bao gm nha cng v
nha mm. Trong nha mm c cc axit ng nh : - axt ng (gumulon), - axt
ng (lupulon), - axt ng (gumulinon) v - axt ng (gulupon), nha cng gm
- nha cng v - nha cng. Cc cht ng ngoi tc dng truyn v cho bia cn c tc
dng st trng. Trong cc nha th quan trng hn c l nha mm v ch yu nht l -axit ng
Cc tanin :
Tanin ca hoa d ha tan trong nc v trong dch ng, do trong qu trnh
houblon ha cc tanin cng d ha tan vo dch ng v d dng lin kt vi protein
cao phn t to thnh cc phc cht khng ha tan. Nh m loi tr c cc cu
t protein kh bin tnh v kt lng ra khi dch ng.Tanin ca hoa d b oxi ho nn n bo v nha houblon m c bit l - axit ng
khi b oxi ho. Mt khc, tanin tham gia vo vic hon thin v cho bia v c nh
hng n qu trnh nu bia.
Tinh du:
Tinh du hoa houblon l mt hn hp phc tp bao gm trn 100 hp cht khc
nhau, phn ln l nhng terpen, ru, xeton, aldehit, ester v axit. N khng ho tantrong nc nhng rt d bay hi theo hi nc. Hn 90% lng tinh du bay i trong

qu trnh houblon ho. Mt t tinh du ho tan trong dch ng s tip tc bay hi
trong qu trnh ln men chnh v ph. Do trong bia thnh phm lng tinh du cn
li khng ng k, tuy nhin n gp phn lm cho bia thm hn.
2.2.2.2. Bo qun hoa nng cao hiu qu s dng

- Ngn chn s xm nhp ca khng kh vo hoa
- Kho phi c cch m tt.

2.2.3. Nc
Trong bia thnh phm, hm lng nc chim trung bnh khong 77 - 90%. Trong
nh my, nc c dng vi nhiu mc ch khc nhau nh l: nu, chit, thanh trng
v v sinh thit b ....nn lng nc c s dng rt ln. Tuy lng nc dng
trc tip nu bia khng nhiu nhng n nh hng nhiu n cht lng ca bia, do
nc dng nu bia phi m bo cc yu cu ca nc ung nh sau : trong sut,
khng mu, c v d chu, khng c mi v l v khng cha vi sinh vt gy bnh, m
bo cc yu cu cho cng ngh bia.
Cc cng on x l nc bao gm: lng trong v lc, lm mm nc, b sung cc
thnh phn cn thit cho nc v ci to thnh phn sinh hc ca nc.
2.2.4. Nguyn liu thay th
2.2.4.1. Go

dng trong bia th go l loi ng cc c dng nhiu hn c. Ni nh ca go c th

2.3. Cht h tr v ph gia
2.3.1. Enzym
tng cng s thy phn trong khi nu, nh my s dng ch phm enzym -amylaza chu nhit, c tn thng mi l Termamyl, dng lng, c pH trung tnh,
trong phn t c ion Ca2+. Ch phm Termamyl c sn xut t dch nui cy vi khun
Bacillus licherifomis. Ch phm Termamyl dng dch ha nguyn liu giu tinh bt,
t l s dng l 0,05 0,1% so vi tinh bt. Ch phm ny c t0opt=95 1000C v hot
ng n nh nu trong dch thy phn c mt lng 50 70 ppm Ca2+.
Enzym Termamyl d dng tan trong nc mi nng trong iu kin thngdng. vn c c th xy ra trong ch phm enzym nhng khng nh hng ti hot
tnh chung hoc tnh nng sn phm.

gip cho vic dch ha d dng. Do n nh nhit cao ca enzym nn quy trnh nu

2.3.2. Ha cht
2.3.2.1. Axit lactic
Axit lactic l mt axit hu c, c dng iu chnh pH ca mi trng v mi
trng axit yu. Axit lactic ha tan tt trong nc v etanol, trong cng nghip axit
lactic c tng hp t vi khun lactobacillus.
Nh my mua axit lactic ngoi th trng b sung vo ni malt nhm iu chnh pHca dch v gi tr 5,66 to iu kin thun li cho qu trnh hot ng ca cc
enzym thy phn.
2.3.2.2. Cc ha cht khc
Cc loi ha cht c s dng di dng nguyn liu ph nhm khc phc nhng
yu cu k thut cn thit m trong qu trnh sn xut cha t ti, ta c cc loi ha
cht ch yu sau:

+ Ha cht dng x l nc: than hot tnh (hp ph mi), Cl2 (c tc dng dit
khun), HCl, NaOH (ti sinh ht nha sau qu trnh trao i anion v cation a
nc nu v nc mm).
+ Ha cht v sinh thit b: dung dch NaOH, dung dch HCl, cht dit khun.
+ Cht tr lc: Diatomit.
2.3.3. Nm men
Nm men bia: C 2 loi.
- Saccharomyces cerevisiae - thuc loi ln men ni.
- Saccharomyces carlsbergensis - thuc loi ln men chm.
Hai chng nm men ny khc nhau v nhiu c im, nh khc nhau v ch cng
ngh, khc nhau v sinh l...
y ta s dng nm men chm, nhit ln men chnh l 8 0 - 100C v ngng ln men
00C.
2.4. Cc qu trnh sinh ho quan trng
Trong cng ngh sn xut bia c nhiu qu trnh sinh ho xy ra, nhng quan
trng nht l cc qu trnh xy ra cng on nu v ln men bia.
2.4.1. Cc qu trnh xy ra khi nu
Cc qu trnh xy ra trong khi nu c chia lm 2 nhm l: qu trnh enzym v
qu trnh phi enzym.
a) Qu trnh enzym:S thu phn tinh bt:
Tinh bt i tc dng ca h enzym amylaza s b thu phn thnh ng v
cc dextrin vi phn t lng khc nhau. ng c ngha ln vi qu trnh ln men
cn cc dextrin tuy khng ln men c nhng n gp phn quan trng vo vic hon
thin v ca bia.

Di tc dng ca enzym proteaza th protein b thy phn thnh cc axit amin
v cc sn phm c phn t lng ln hn nh peptit, peptone, polypeptit. Cc sn
phm thp phn t ca qu trnh thu phn nh axit amin v peptit l ngun dinh dng
nit cho nm men, cn pha c phn t lng trung bnh nh pepton v polipeptit to v
m , tham gia vo qu trnh to v gi bt cho bia. Tuy nhin nu hm lng ca
chng qu cao s lm cho bia d b c v kh bo qun.
S thu phn fitin:
Di tc dng ca h enzym fitaza xy ra s thu phn fitin to thnh axit
phosphoric v cc sn phm khc. Axit phosphoric l ngun dinh dng cung cp cho
nm men v ng vai tr quan trng trong vic to mi trng m thch hp cho cc
enzym hot ng.
S thu phn hemixenluloza v mt s cc cht khc:
Di tc ng ca enzym xitaza dn n s thu phn hemixenluloza v mt s
cht khc ca nguyn liu to thnh glucose, xilose, arabinose. S thu phn ny
mang 2 ngha l va b sung cht ho tan cho dch ng, va ph b hng ro chn,
to iu kin thun li cho cc enzym khc d dng tc ng.
b) Qu trnh phi enzym:
S kt lng v bin tnh ca protein:
Di tc ng ca nhit cao, mt phn protein b bin tnh v ng t. y l
yu t c li cho cng ngh sn xut bia v s loi c nhng protein d b bin tnh ra
khi dch ng lm tng bn keo ca bia tc l gim c kh nng gy c.
S to thnh melanoid:
y l mt phn ng c bit quan trng trong cng ngh sn xut bia. Tuy phn
ng ny gy ra hao tn axt amin v ng kh nhng vi mt lng melanoid va phi
li gp phn nng cao gi tr cm quan cho sn phm sau ny. Qu trnh to thnh
melanoid xy ra mt cch mnh m giai on sy malt, n giai on ng ho,
iu kin v nhit v cc yu t khc cha ti u cho qu trnh trn nhng d sao th
mt lng ng k melanoid cng c to thnh.

Ngoi ra trong qu trnh nu cn xy ra phn ng gia cc mui ca nc v
photphat c trong khi cho, xy ra s ho tan cc thnh phn d ho tan ca malt vo
dung dch.
2.4.2. Ln men
2.4.2.1. Cc qu trnh xy ra khi ln men chnh
Qu trnh sinh l
Qu trnh sinh l th hin s sinh sn v pht trin ca t bo nm men. Nm men
sinh trng mnh nht trong thi k u ca qu trnh ln men chnh. y l giai on
tng s lng t bo m bo cho qu trnh ln men bia. Qu trnh sinh ha:
Qu trnh sinh ho c bn trong ln men chnh l s chuyn cc ng ln men
thnh ru v CO2, phn khng ln men c ch yu l dextrin, protein v cc cht
khong. Ngoi ra cn to cc sn phm ph: nh glyxerin, axt hu c, ru bc cao,
este, aldehit...
Qu trnh ha l: l nhng bin i ho l sau:
+ S thay i chua v nng lc m:
+ S thay i th oxy ho kh: th oxy ho kh gim dn
+ S ho tan CO2 v to bt: lng CO2 sinh ra trong qu trnh ln men chnh l rt
ln, mt phn nh (khong 0,2%) ho tan vo bia, cn phn ln l thi ra ngoi di
dng bong bng kh, cc bong bng ny ni ln b mt, dnh li vi nhau v to thnh
bt kh.
+ S kt mng ca cc t bo nm men: xy ra vo cui thi k ln men chnh, khi
nm men kt t ko theo cc cht l lng trong bia lm bia trong hn cn h nhit bia
non xung nm men kt lng tt hn
2.4.2.2. Cc qu trnh xy ra khi ln men ph v tng tr bia
+ S ho tan v lin kt ca CO2 trong bia: trong bia non cha khong 0,2% CO2 m
yu cu hm lng CO2 trong thnh phm khng nh hn 0,3% do phi b sung
thm CO2 cho bia, CO2 sinh ra khi ln men phn ng cn li trong bia l ngun b

sung CO2 cho bia thnh phm. CO2 c trong bia tn ti s cn bng ng nh sau: CO2
lin kt CO2 ho tan CO2 dng kh.
+ S lm trong bia: bia non cn cha nhiu t bo nm men v cc cht huyn ph
khc cho nn cn c. Nhit ln men ph thp hn nhit ln men chnh nn xy ra
qu trnh ng t cc hp cht cao phn t.
+ Qu trnh xy ho kh v s hon thin cht lng ca bia: qu trnh tng tr cn
xy ra cc phn ng gia cc cht c trong bia lm tng thm hm lng este, ru bc
cao, v gim i hm lng diaxetyl c trong bia. Sau khi tng tr v ca bia tr nn
mm v du hn.

Mc ch nghin l nhm ph v cu trc t bo ca ht, to iu kin thun li khi nu thu c mt dch ng c nng cao nht. Yu cu sau nghin:

3.2.3.2. Tin hnh nu
+Ni go:
u tin ng van x ni, bt cnh khuy, m van ly nc vo ni vi t l 5lit/1kggo, nc c nhit khong 320C. Sau cho vo ni 1/2 lng malt lt . Bt go
nghin mn cho vo ni nu khuy trn trong 5 pht. Sau khi khuy trn nhit
khi nu khong 300C, b sung axit lactic h pH xung cn 5,6. Tip theo gia nhit
nng nhit t 300C ln 660C trong khong 30 pht. Gi 660C trong 30 pht h
ha dch bt. Thm 50% lng malt lt cn li vo v ng thi lc ny b sung enzim
Termamyl ng ha tinh bt. Nng khi nu ln n nhit si trong 30 pht, gi
nhit ny trong 20 pht v em i hi cho.
+Ni malt:
Cho nc m 320C vo trc ri tin hnh xung bt ho malt trong 10 pht, t l
malt: nc l 1kg/4,5lt nc Dng axt lactic h pH ca mi trng n 5,6 ri tin
hnh nng nhit ln 520C mt khong 30 pht, gi nhit ny 20 pht. Phi tnh
sao cho khi ni cho go un si xong th qu trnh m ho ni malt cng va kt

Nh h thng bm nh lng (5), dch ng t thng tip liu (2) v dch men
ging t thng (4) lin tc c a vo thng ln men chnh (6) vi t l 92:8. Nng
nm men trong thng ln men u tin l 70 triu t bo/1ml. Cc thng ln men chnh
(6) phi ni vi nhau sao cho dch ng i vo pha di v i ra t pha trn thng.
Bm (5) phi iu khin sao cho dch ng lu li trong mi thng la 24h.
Dch ng v men ging chy chuyn t thng u sang thng sau v tin hnh ln
men chnh nhit 8 - 90C cho n khi t ln men cn thit. Qu trnh ln men
chnh ko di 4 ngy m v p sut 0,2-0,3at.
Sau khi ln men chnh xong bia non c tp trung vo thng cha (7) ri nh bm
(8) chuyn vo thit b ly tm kn (9) tch bia non ra khi b men. B men c a
vo thng cha ri x l, bo qun v ti s dng. Cn bia non chy vo thng cha
(11) v c b sung thm mt lng bia non khng qua ly tm m bo nng
ca nm men trong bia non l 12 - 15 triu t bo /1lit. Sau bm (12) bm bia non t
thng (11) sang thng ln men ph u tin cua h thng (13). Cc thng ln men phcng c ni vi nhau nh cc thng ln men chnh v bia non cng lu li mi
thng 1 ngy m. S ngy ln men ph l 10 ngy, nhit ln men ph 1-20C v p
sut trong thit b ln men ph l 0,5-0,6 at. Bia t thng ln men ph c chuyn vo

3.2.9. n nh bia
Bia sau khi lc th hm lng CO2 b gim do khi phc li s bo ho CO2
trong bia th sau khi lc, bia c gi trong thng cha nhit 0,5-1 0C di p sut
ca CO2 l 0,5at v thi gian ti thiu l 4 gi. Hm lng CO 2 trong bia thnh phm
phi t t nht l 0,3% khi lng; cha t phi b sung CO2 cho bia.
3.2.10. Chit v ng np
Bia sau khi n nh xong c chit vo chai thu tinh mu xanh m, c th tch500ml. Chai a vo rt phi c tiu chun v kn, nguyn vn, v kch thc,
sch. Trc khi rt, chai c ra v st trng k bng nc nng 65 0C v dung dch
NaOH 2% c b sung stabilon lm bng chai, sau chai c lm ngui ri rt bia
vo. Bia rt trong iu kin ng p trnh tn tht CO2 v trnh tro bt gy tn tht
sn phm. Bia sau khi qua my chit s qua my ng np.
3.2.11. Thanh trng
Nh my s dng my thanh trng kiu tunel qua cc vng: vng lm nng, vng
thanh trng v vng lm ngui.

Theo quy trnh nu v s nu chn mc (3.2.3.2), thi gian nu 1 m l 190
pht nhng do 2 ni nu song song nhau nn thi gian nu trung bnh 1 m l 140 pht.
Chn s m nu trong mt ngy l 10 m.
Nh my lm vic 12 thng trong mt nm, ngh cc ngy l theo quy nh ca nh
nc, tt v ch nht, nu ngy l ng vo ngy ch nht th ngh b vo ngy sau.
