For 16 years, the Brewers of Indiana Guild has worked as an advocate for brewers around the state. Our mission has always been to promote public

awareness and appreciation for the award-winning variety of beer produced in Indiana, and we believe that this publication is another step in furthering that mission.

All of our brewery members are included for your reference. These are community-minded local businesses that provide jobs, tax revenue, and—most importantly—finely crafted local beer for you to enjoy wherever you happen to be in Indiana.

“The Crossroads of America”: That slogan is less an invitation to stop and enjoy our great state and more of a suggestion to keep driving until you’re anywhere else.

I travel quite a bit, and one thing I’ve found is that every state has cross-roads. No matter which of those I’m on, I manage to find time to experience “local.” Regardless if I’m traveling within Indiana or to another state, I like to plan my trip around beer and the brewery that created it. To me, “local” is wherever you are at a given time, even if you don’t live there.

That’s why this magazine is so important to me. As a beer-lover, I don’t need an invitation to stop and enjoy all of the breweries that we have throughout the state, but perhaps others do. Whether you live in Indiana or are visiting, consider this guide as a personal invitation to savor a great beer at one of the 125+ breweries across the state.

Spend as much time on Indiana’s crossroads as you’d like, but make it a point to experience “local” and drink Indiana beer.

WHEN TOMLINSON TAP Room opened in 2010 inside Indianapolis’s City Market, there were around 30 brew-eries in Indiana, and the state’s roster of top-notch beers was brief.

A little over fi ve years and 90 breweries later, that list is now extensive, and Tom Tap delivers the best of the best to its clientele.

With 19 taps dedicated to Indiana craft beer, which rotate when a keg runs dry, Tom Tap manager Benjamin Hunt has the enviable task of choosing which brews make the cut.

“It takes a lot of market research,” he says. “Honestly, it’s drinking a whole lot of beer.”

Through a partnership spawned in 2009, Tom Tap is 82 percent owned by the city-controlled market and 18 percent by the Brewers of Indiana Guild. Learning that the market hoped to make better use of its alcohol permit, guild attorney and

lobbyist Mark Webb and Ted Miller of Brugge Brasserie and Outliers Brewing Company (and guild pres-ident at the time) came up with the plan for a Hoosier-beer tap room.

“We told City Market, ‘We can help you make some money that you aren’t getting,’” Webb says. “We thought it was a great idea—to promote Indiana beer and help pay the light bill at City Market.”

founder John Hill oversaw construction in 2010, including the installation of a wooden back bar salvaged from a former Hook’s Drug Store in Lafayette. Tom Tap, which also off ers growlers and bullets for carryout, opened November 24 that year.

“It was a natural fi t because City Market is an owner/operator-driven, hyper-local destination,” says Stevi Stoesz, executive director of City Market.

In celebration of the state’s 200th birthday, the Brewers of Indiana Guild launched the Bicentenni-Ale program to encourage the use of Hoosier-grown beer ingredients.

“Instead of trying to create a historic beer or something like that, we decided it’d be great to do a legacy project to promote breweries using Indiana-based products,” says Jeff Mease, Bloomington Brewing Co. co-founder and owner and a guild board member. Mease’s brewery uses locally sourced ingredients in both

Hunt, who has been there since the beginning, stocks beer based on taste trends and a balance of styles. With Indiana breweries consistently earning honors at the prestigious World Beer Cup and more national respect, competition is tight.

“We want to give everybody a shot, but it’s tough with the quality being so high now,” Hunt says. “We want to put the best and the brightest on tap.”

Since Tom Tap’s opening, the beer isn’t the only thing to have evolved.

“People know their beer better now,” Hunt says. “You’ve seen palates change, and that’s awesome. It means we’re doing our job, making people try new things.

“Don’t drink beer because it’s local. Drink it because it’s good.”

While not surprised, the English-born Hill is pleased with Indiana’s embrace of craft beer, a term few knew when he opened in Broad Ripple 26 years ago this November.

“It’s great to see everyone as excited as I was when I started out,” Hill says.

For evening visitors Tuesdays through Saturdays, Circle City Soups, the only other market business open that late, supplies food in the form of soups, yes, but also entrees such as meatloaf and fi sh and chips.

With more residential units popping up nearby, combined with Tom Tap’s popularity and potential, don’t be surprised if City Market becomes more of a night spot.

“If not for the tap room, right now we’d be trying to fi gure out how to stay open until 6 or 7 p.m.,” Stoesz says. “Now, we’re trying to fi gure out how to bring throngs of people in until at least 9, and maybe 11 or midnight.”

Brewing Co., whose Indiana Harvest features malt from Sugar Creek Malt Co., hops from Indy High Bines, and honey from Martinsville’s Hunter’s Honey Farm.

“It was a good opportunity to try something that’d showcase local ingre-dients and stay with the style we were looking for,” says Colin McCloy, Taxman’s vice president of brewing operations.

Behind the BeerEver wonder how brews go from grain to glass? Here, a breakdown of the process, as seen at St. Joseph Brewery & Public House.

CHEERS! St. Joseph has 16 total taps, with 14 devoted to house and seasonal beers.

IT’S A WASHHere, kegs are run through a cleaning cycle before being fi lled.

STEP 5 The liquid is then moved to one of the fermentation tanks, where yeast is added. The yeast “eats” the sugars, creating alcohol and CO2. This process (primary fer-mentation) lasts about 3–7 days for ales and 7–14 days for lagers. Fermentation tanks are held at steady tem-peratures to prevent any off fl avors or harsh alcohols.

STEP 6Once fermentation is complete, the tank temperature is lowered to about 32 degrees, causing the yeast to go “dormant” and fall to the bottom. Yeast is reused or thrown away.

STEP 7 The beer is then transferred to a tank for conditioning, which takes 3–8 weeks. Afterward, brews are kegged—or they can be consumed straight from the tank.

IN CONTROL This panel regulates temperatures in the kettle and hot and cold liquor tanks, while the surrounding smaller boxes manage the mash tun’s rakes and brewhouse pumps.

DRUM SETLarge barrels hold chemicals used for cleaning the tanks and the fl oor.

STEP 1 After the malt or grain (which is mostly barley, but wheat, rye, and oats are also common) is crushed in the basement mill room, it’s piped up to this storage bin, called a grist case. STEP 3

The wort is then transferred to a kettle (out of view) and boiled for about 60 to 90 minutes, depending on the type of beer. Hops are typically added at various points through-out this stage, lending the beer its bitterness, fl avor, and aroma.

STEP 2 The malt is then dropped into the mash tun and, with a large corkscrew-like rake, is blended with hot water. The mixture, or “mash,” rests for about 30 to 45 minutes while the starches are converted to sugar. Screens on the bottom act as sieves to separate wort (the resulting liquid) from the grain.

STEP 4 After boiling, the wort is passed through a heat exchanger to quickly cool it before fermentation.

WITH DOZENS, IF NOT HUNDREDS, of brews to try, beer festivals can be overwhelming. To help you have the best experience possible, we’ve rounded up some advice for mastering a suds-centric event.

1. Make a game plan beforehand. Review the brewery list and research any you’re not familiar with so you know which places to prioritize, suggests Amanda Wishin, Indianapolis Girls Pint Out chapter head.

2. Read up on diff erent beer styles to get a sense of what you’ll like to drink. When in doubt, talk to brewery reps to see what they recommend.

3. Use social media to follow breweries and their hashtags and to keep up to date on special beer tappings and giveaways.

4. Eat fi rst. (Or craft a pretzel necklace following our advice on page 16.) Once you’re at the festival, the last thing you’ll want to do is stand in another line to grab something to eat. And stay hydrated—with something other than beer, okay?

5. Go outside your comfort zone. Try beers you wouldn’t normally order or sample from a brewery you haven’t visited. Festivals are the perfect time to explore rare or unique beers you’ve never heard of, says Emily Hines, Upland Brewing Company’s communi-cations manager.

6. Don’t try to drink everything. “If you don’t enjoy a beer, be polite, but throw it in a dump bucket,” Wishin says. “Don’t assume you will be able to hit every brewery, either.”

CAUSE

The Brewers of Indiana Guild’s festivals involve more than just sipping local brews—they also help worthy causes. Last year, the guild donated $42,500 to five organiza-tions in the two cities—Indianapolis and Bloomington—in which its events were held. Festivals give breweries a boost since funds are also used for the guild’s legislative, education, and marketing initiatives. The organization’s goal is to produce tasting opportunities for member breweries and to give attendees a sense of community. Join the fun on July 30 when Indy’s Military Park hosts the Indiana Microbrewers Festival. And keep an eye on the guild’s Drink Indiana Beer app for details on other events. —C.W.

7. If you really want to experience a beer festival fi rsthand, volunteer. You’ll get in for free and likely won’t have to work all day, leaving plenty of time to sample.

8. Scope out the cask tent, Hines sug-gests. They’re usually full of specialty beers you can’t normally buy.

9. Remember that color can be deceiv-ing. “If you normally don’t drink dark beers, you still may like a black IPA like our Komodo Dragonfl y IPA, because it will be hop-forward [bitter] despite its color,” Hines explains.

10. Dress accordingly. Spills are inevitable, and you don’t want to wear your drink down your front all day. Darker clothing is a good idea—unless, perhaps, you’re at an outdoor festival. —Claire Waggoner

Defying Labels

Dark Illusions Volume ISCARLET LANE BREWING COMPANY

In keeping with the hints of sweet cherry, cinnamon, and coffee in Dark Illusions Volume

I, Scarlet Lane Brewing Company turned to Portland, Oregon–based tattoo artist Ian Mc-Vay to bring out the beer’s more playful side. ¶ “We wanted a whimsical monster feel,” says brewery founder Nick Servies. ¶ The Ed Gorey and Where the Wild Things Are references are

readily apparent, and the color scheme fi ts right into Scarlet Lane’s overall branding.

Yum YumTHREE FLOYDS BREWING CO.

Three Floyds co-founder and president Nick Floyd wanted the Yum Yum label to scream “new” to brewers and beer-drinkers alike,

working hand-in-hand with the brew’s fl avors. Floyd was inspired by the vibrant Indian-food

packaging he saw in ethnic food markets. ¶ “The art stands out to match the recipe,

ingredients, and quality,” he says. ¶ Jim and Jessica Zimmer of Chicago’s Zimmer-Design

were tasked with creating the label.

Lake Street Express18TH STREET BREWERY

When creating the packaging for 18th Street Brewery’s Lake Street Express, creative

director Joey Potts didn’t have to look very far for inspiration—the original brewpub sat right

next to the railroad tracks that ran through Gary. ¶ With subtle shoutouts to Ed Roth,

Robert Williams, and other artists involved in the hot rod and underground comix scenes,

Potts says the illustration came together almost exactly how he initially envisioned it.

display the empty bottle as a conversation piece

Hoptimus Imperial IPANEW ALBANIAN BREWING COMPANY

With an eye-opening 10.7 percent ABV, Hopti-mus Imperial IPA has an equally hard-hitting

label. Graphic illustrator Anthony Beard relied on steampunk design to convey a sense of

strength. ¶ Enter Hoptimus—a powerful amal-gamation of robotics, machinery cogs, and

hops in earthy gold, green, and rust tones. ¶ Don’t be surprised to see tweaks along the

way. “I revamp labels every so often, so none of them have a fi nal version,” Beard says.

Grapefruit Jungle IPASUN KING BREWING COMPANY

Grapefruit Jungle packs a punch of hoppy citrus fl avor, so fi ttingly, the label—designed by former employee Shawn Petruniw—visu-ally wallops customers with a bold design. ¶

Designing for a can lends inherent challenges. ¶ “There’s a limit to the number of colors you can print on a can,” says Sun King co-founder Clay Robinson. “Every element has to have a stay-away—a fi ne separation from the other

colors so they don’t bleed together.”

Ivy MikeFOUR FATHERS BREWING

Ivy Mike, part of Four Fathers Brewing’s Atom-ic IPA series, references the codename given to the fi rst full-scale detonation of a thermo-nuclear device. ¶ “The Hop Bomb icon was created to be the main visual component,” explains artist Brandon Dzunda. ¶ Ivy Mike required some actual research into nuclear fusion and fi ssion. “We wanted to show the work and immense amount of brainpower it took to bring the Ivy Mike event to fruition.” P

THE BEAUTY OF CRAFT BEER IS that the range of fl avors is seemingly only limited by brewers’ creativity. Luckily, most Hoosier brewmasters have overactive imaginations, releasing beers with far more than just the stan-dard components.

Some ingredients—if you can call them that—aren’t even edible. Take, for example, St. John Malt Brothers’ El Cedron, a Citra hops–based IPA that’s aged on Spanish cedar.

“The aroma is like you’re smelling a humidor,” says brew-ery president and owner Jim Estry. “The citrus still comes through, and so does the cedar. It’s surprisingly smooth.”

Here are more delicious and unique microbrews that craft-beer afi cionados can’t get enough of.

THAI SPICESThey’re not just for curry. Both Chris Gerard, owner and

head brewer at Bare Hands Brewery, and Greg Ortwein, co-owner and co-brewer at Deviate Brewing, infused their beers with the exotic fl avors. Ortwein used lemongrass grown from a customer’s backyard, Thai basil, and ginger in Devi-ate’s Legalize Lemongrass brew, while Gerard infused locally sourced kafi r lime leaf, lemongrass, galangal (Thai ginger), rice, and palm sugar into an IPA to create Thai.P.A.

“I was and am a big fan of the full but balanced fl avors of Thai food and had some experience cooking it at home,” Gerard says. “The idea going in was to focus on citrus Thai spices—letting the citrus fl avor and aroma be balanced by large additions of a more fl oral, less aggressive hop bill. On the fi rst taste, I knew that I had something that people would really enjoy. I made only some minor tweaks to the spice bill and hop schedule,

and that’s about it.”Thai.P.A. is quite popular, so it can sell out fairly quickly;

once a fresh keg is tapped, word gets out fast. Gerard suggests keeping an eye on Bare Hands’ website (barehandsbrew.com) and its Facebook page for their delivery lists.

Ortwein says Legalize Lemongrass is especially favored by local foodies who enjoy bold fl avors, and it pairs exceptionally well with the crispy Thai chicken wings from a restaurant across the street from Deviate. Unfortunately, the brew isn’t always available, as the brewery’s eight taps constantly rotate.

HONEYLooking for a beer that’s a little sweet and light on the IBUs?

Try one with honey. Crown Brewing’s Winter Warlock is a Thanksgiving-to-

Valentine’s Day seasonal (hence the name) that includes tradi-tional cold-weather fl avors—cinnamon, candied ginger, cloves, and nutmeg, as well as maple syrup and honey from within Lake County. Zack Bryan, Crown’s general manager, says they’re hopeful the next batch will include honey from the brewery’s own beehives. Combined with the English malt and hops, Win-ter Warlock gives you a slightly spicy and malty mouthfeel.

Honey Blonde from Turoni’s Main Street Brewery has been one of its more popular brews since it was fi rst tapped 20 years ago. A full-fl avored English blonde ale with a malt-forward fl avor, Honey Blonde’s sweetness comes from wildfl ower honey from Darmstadt, Indiana, less than a mile from where head brewer Josh Pietrowski grew up. Each batch uses 45 pounds of the honey, but luckily, the area’s bees must know they have a responsibility to Evansville’s craft-beer fans.

“In the craft sector, most people want what’s new, what was just tapped, or something they haven’t had before,” Pietrowski says. “But that’s not the case with Honey Blonde. A huge chunk of our clientele sticks with the Honey Blonde, do or die.”

PEPPERS/PEPPERCORNSTriton Brewing Company co-founder and head brewer Jon

Lang was inspired by another microbrewery’s pepper IPA and, with their permission, he attempted his own take. After several months of experimentation with various strains of peppers from Fort Wayne and Wisconsin marinated in Triton’s fl agship, Railsplitter, he came up with what would become Hatchblower Pepper IPA. Lang used three diff erent dried peppers—green bell peppers for their crisp fl avor, jalapenos for even more fl avor and heat, and chipotles for needed earthiness.

“I don’t want this beer to overwhelm you with the heat of the pepper,” Lang says. “The fruitiness of the peppers plays really nicely with the hops of the IPA and then fi nishes with a little heat on the back of your tongue.”

Function Brewing’s Obtuse Imperial Spiced Blonde has a lingering malt sweetness, thanks to orange and lemon peel, and a dash of spiciness courtesy Sichuan peppercorns, says brewer and co-owner Steve Llewellyn. Though the beer isn’t yet available outside of the brewpub, it pairs well with Function’s Smokehouse sandwich, Llewellyn says. P

FRUITSt. John Malt Brothers’ Estry is not

exactly a “fruit beer” kind of guy, but even he has to concede their Hesperidium is pretty good. The IPA is made with blood orange puree, which, combined with the hops, gives the brew an intense citrus aroma.

“Our ratings on that have been higher than any other beer we have,” he says.

St. John’s O’Cocorazz features pro-nounced fl avors of raspberry, and its popular Daphne, a blonde cherry ale, is back this summer. A recent batch packed in more than 120 pounds of the fruit.

“It’s a very easy-to-drink beer,” Estry says. “It doesn’t have a bitter bite at the end.”

Winterfest 2016 attendees loved Madame Blueberry from Carson’s Brewery—so much so that it was the fi rst of their seven kegs to run out at the event. Head brewer John Mills says the beer, which gets its fl avor from natural blueberry extract, was created as a one-off , but has been so popular in their Evansville tasting room that they’ve brought it back several times since. Mills enjoys Madame Blueberry mixed with Carson’s Omnipotent, a Russian Imperial Stout.

COFFEECraft-beer fans often share an obsession

with coff ee, so it’s no wonder java-infused beers are so popular. Scott Ellis, co-owner and brewmaster at Big Lug Canteen, uses freshly roasted Costa Rican beans from Indianapolis’s The Coff ee Brake to make his robust EuRica! stout. Unveiled for the fi rst time at the brewery’s Winterfest kickoff party, the slightly dry beer features tones of chocolate, charred toast, and a slight Amer-ican hop character. The goal was to recreate the taste and mouthfeel of a cup of coff ee, says co-owner Eddie Sahm.

“We wanted a beer to wake you up in the morning,” Sahm says.

When creating Buna Porter for Goshen Brewing Company, owner and head brewer Jesse Sensenig reached into his past.

“My father was born in Ethiopia where my grandparents were missionaries, so I knew that I wanted to try an Ethiopian roast,” Sensenig says. “It has a bright coff ee nose with hints of chocolate and roast followed by a soft creaminess and a drying fi nish.”

Sensenig worked with Chris May of DIY Coff ee and Ale Supply to select an Ethiopian whole bean called Drima Zede Natural. It’s a lighter roast that adds some nice complexity of dark fruit and a subtle roastiness.

Goshen serves it both on nitro and regular. The traditional tap leaves more aromatics, while the nitro version is creamier.
