Our chefs prepare their menus according to what the season has to offer. Many dishes are inspired by the simplicity and freshness of Italian cooking, and vegetables are an important ingredient. Our kitchen is traditional and almost everything is home-made, with an absolute minimum of artificial additives. Some of the dishes on the menu change every two months, so we cannot say exactly in advance which ones will be available and when. We use fair, biological products as much as possible, preferably from the local area, but we are certainly not shy about using delicious ingredients from other countries. THE GARDEN At the spot where the water basins for Dordrecht’s water tower once lay, we have created our garden. Or rather a series of gardens: there is a vegetable garden, a flower garden, a terrace, an orchard, a small wood, an Italian garden, a pond, a playground and – sssh! – a secret garden. Together they are the heart of Villa Augustus. You can eat their produce, walk in them, and smell a thousand flowers. It is a garden that brings you close to the season and inspires you. The chefs look first at the garden and then in their pots, while the gardener plants what the chefs dream of cooking. So take a walk outside! Feel the sun and the wind, hear the water, smell the rain, or stand under a dark-blue sky and wait for the moon. PROGRAMME Just like the scents, colours and tastes of the garden, musicians, poets, writers, painters, illustrators and other artists inspire Villa Augustus and its visitors. Humus for the soul.
