Setting It UpSetting It UpFull-ServiceFull-Service
Hot Scoops™ brings personalized potatoes to the table.
A mashed potato program on the menu allows customers to enjoy mashed potatoes the way they like them! Keep a standardized selection of toppings and flavors on the menu, then use menu clips and waitstaff to promote special toppers and stir-ins.
How to charge? Consider charging per topping, letting customers “pick 3” toppings—or try menuing a choice of “builds,” such as broccoli, cheese, and mushroom potatoes. Highly flavored mashed offerings such as jalapéno mashed automatically command a higher price point.
Waitstaff training? Let staff experiment with the toppings and flavored mashed so they can describe and effectively sell the program.
How to promote? Use our free table tents, menu cards, employee buttons, and promotion ideas.
Piped Potatoes. Make a potato bowl to hold the toppings by piping seasoned potatoes onto the serving plate, sprinkling with Parmesan cheese and browning under a salamander.
New Heights. No matter what your flavors or toppings, make potatoes tall and dramatic by heaping them on a plate, then garnishing with fried onion straws, sprigs of fresh herbs, or large diagonal slices of fried potatoes.
Adding Drama and Value in Full-ServiceAdding Drama and Value in Full-Service
Ethnic Themes. Offer toppings centered around international cuisine, such as Passport to Italy, Cinco de Mayo, Asian night, and more. Use tablecloths and serving dishes to tie in with the concept.
Party Themes. Make it a mashed bash when you tie your toppings to fun party ideas such as Western Night, Mardi Gras, or a Hawaiian luau.
Light and Healthy Bar. A healthy toppings bar is a big hit with the lunch crowd. Offer plenty of fresh veggies, low-fat sour cream, and fat-free sauces or dressings
Kids Meals. On full-service menus, offer a choice of funny mashed potato “faces” as part of the kids’ meal. Kids can choose from a clown, mouse, or mustache man!
The Irish Potato Bar.For St. Patrick’s Day, have all green toppings on the bar. Stir pesto or green chilies into mashed potatoes to make them green.
Monster Mashed. Hold a “make-a-scary-face” contest for Halloween!
Frequent-Mashed Card. Reward repeat customers with a free trip to the mashed potato bar after multiple purchases.
Make a Face Contest.Have a contest to see who can make the best “face” on their mashed potatoes. Toppings like olives, raisins, baby carrots, and shredded cheese are ideal for creativity. Display Polaroid® photos of all contest entries for inspiration!

Hot Scoops™ works as part of your buffet line or salad bar, or as a free-standing kiosk.
Hot Scoops™ is ideal in a configuration that allows customers to scoop, sprinkle, drizzle, and top their own mashed potatoes. Whether you offer it every day, or just on special occasions, here are some thought-starters.
Bar location? The Mashed Potato Bar can be part of your existing line or salad bar, a free-standing setup, or a combination of both. Also consider serving the mashed potatoes both regular or flavored from your regular buffet line, and then let customers add toppings at another station.
Hot or cold toppings?A bin filled with ice will keep cheeses and sour cream cold, while steamtable pans keep toppings like gravy and chili hot. But also think about easy room-temperature ingredients such as sunflower seeds, chives, or olive oil. Setup Tip: To avoid unappetizing spills, don’t place sauces and other toppings behind the pans of potatoes.
Employee responsibilities? Maintain your Mashed Potato Bar the same way you’d take care of a salad bar. Employees can use our suggestions (see illustrations) to set up the bar with recommended signage.
How to charge? You may want to offer prices similar to a salad bar—one trip versus all-you-can-eat.
How to promote? Let customers know about Hot Scoops™ through our free point-of-sale materials and promotion ideas.

Unlike adults, kids like foods in nontraditional colors.• Colored ketchup, margarine, yogurt, and applesauce are just a few of the products enjoying success in the market.• If grownups are grossed out and the food turns the tongue a bright color, that’s a bonus for kids.• Vegetables are going rainbow too: Purple carrots; pink, black, blue, and red potatoes; and colored french fries.
Kids love colored food— the wilder and more outrageous the better. As hues of electric blue and shocking pink tint everything from ketchup to applesauce, you can create a spectrum of fun with the Cool Colors™ Mashed Potato Program!
