(8 oz.) sour cream3 Tbsp. all-purpose fl our3 eggs2/3 C. lime juice1 tsp. vanilla extract1 drop green food coloring, optionalWhipped cream and lime slicesIn a bowl, combine cr umbs and sugar; stir in but-ter. Pr ess onto the bottom and 1” up the side of a greased 10” springform pan. Bake at 375 0 for 8 min-utes. Cool. In a mixing bowl, beat cream cheese and sugar until smooth. Add sour cr eam and fl our; beat well. Beat in eggs on low speed just until combined. Stir in lime juice, vanilla, and food coloring if desired, just until mixed. Pour into crust. Bake at 3250 for 50-55 minutes or until center is almost set. Cool on a wire rack for 1 hour. Refrigerate overnight. Remove sides of pan. Garnish with whipped cream and lime. Yield: 12-14 servings.

They half-run, half-fl ap across the water for hundreds of feet befor e getting enough speed to lift into the air. I wondered why until I lear ned that unlike most birds, loons have solid bones. Their added weight makes it diffi cult for them to get airborne.I also learned that loons are clumsy on land because their legs ar e set far ther back on their bodies than other birds. Walking is so dif fi cult that many loons simply scoot acr oss land to their nesting places. But these disadvantages—heavy bones, legs set far back—are also tr emendous advantages. Because of their weight and leg placement, loons can dive deep-er, far ther, and faster . This is essential for catching fi sh and escaping predators.What we see as disadvantages in our lives can be turned into advantages, and appar ent weaknesses can be transformed into strengths. That was tr ue of the apostle Paul, whose “thor n in the fl esh” became an oppor tunity for God’s str ength to be seen in his weakness (2 Cor. 12:7-9).Is a weakness holding you down? Is it shyness or a physical limitation? Ask God to turn it into a strength for His glory.

MORE CONTESTS part 1 We just finished a column on contests and
sent it out. In came Audubon Magazine with their issue of a Fourth Annual Bird Picture contest. This is the January/February issue and while they show the top winners, you can see the top 100 entries at audubonmagazine.org. The article says that 900 photographers en-tered the contest which started in May. There were some 6,000 pictures entered. Check out the website, there will be information there as to next year’s contest, as well as what other pho-tographers have done. Entries were judged in professional, amateur and youth categories. Not only was there a Grand Prize Winner, but sever-al awards were given as Editor’s Choice. Of the winners pictured, 6 were taken with Can-on cameras and 3 with Nikons. The youth win-ner was done with a Minolta Dimage, an old dig-ital model that evidently still works well enough to win. As you would guess, most of the shots were taken with long lens. Several at 1/1000 of a second and some with both lenses and tele converter. While the 2 top shots showed a tree in the background, quite a few had plain back-grounds, as if they were shot into the sky.
