Our coffee is harvested and pulped with minimal water, then dried to roughly 35% - 40% and wet hulled in the “Giling Basah” tradition. The Cultivars that make up Blue Dragon are Linie S 795, Typica and Tim Tim. LS 795 is a variety that was developed in India and is locally known as Jember. LS 795 or Jember is also known for being one of the first varieties highly resistant to leaf rust. It’s genetics are a corss between Kent, a typica muta- tion, and S 288 a naturally occuring Arabica and Liberica hybrid. Atlantic Specialty purchased this lot through our sister office: East African Trading Company(aka DORMAN’S LLC) Kamwangi is one of three factories run by the New Ngariama Co-op.

Located in central Kenya on the slopes of Mount Kenya, Kamwangi Factory is world renowned for its amazing flavor characteristics.

This coffee is grown in rich red-volcanic soil that’s organically infused with all the minerals and the goodness necessary for optimum production. The coffee cherries are hand sorted by farmers before production. The coffee is pulped and the coffee is fermented for up to 36 hours under close supervision depending on climate temperatures. After fermentation, the coffees are washed and density graded through washing channels. It is then soaked in clean water overnight. Coffees will sun dry for 12-20 days on African drying beds. While drying the coffee is protected with plastic at midday and night to protect beans from moisture, rain, and excessive tempuratures.

Banana, Maize, Grevillea and Macadamia trees are also planted to provide shade for coffee growth.

“La Capilla” is a blend specially prepared by our Costa Rican office, Cafinter S.A. Cafinter was established in 1989 originally as an export business that has since developed an integrated

milling - export operation.

It manages three mills in the country and each mill is located near the farms in which it sources. Cafinter directs the production process and keeps a close eye on quality. The components of this blend are selected exclusively from the pristine southwestern region of the Tarrazu Valley. Protected by the Pacific basin range, the region offers sanctuary to rare birds, lush forest and top quality coffee.

The coffee here is critical to the socioeconomic success of the area. Regional blends such as "La Capilla" offer consistency from year to year. "La Capilla" is known for its layered fruit notes including light lemon and plum, as well as its round base of cocoa and caramel. The delicate acidity of this cup creates a perfect balance.
