Super Food: CauliflowerPale in color and mild in flavor,
cauliflower is not a very excitingvegetable. It is, however, an excellentsource of vitamin C and a very goodsource of manganese—two coreantioxidants. Cauliflower is also agreat source of vitamin K, a keyanti-inflammatory nutrient. One cup ofthe veggie contains only 25 caloriesand has 2.5 grams of fiber. Sauté orroast cauliflower for the best flavor, and be careful not to overcook it. Thestem and leaves are edible, too;consider adding them to soup stocks.
Bedding BasicsCooler weather is on the horizon,
and many folks will be swappinglightweight summer linens forcozy blankets and flannel sheets. Ifyou’ve shopped for bedding lately, youknow how complicated it can be. Hereis a lesson we’ll call Linens 101.
Proceeding from the inside out, let’s start with the mattress. Mattresspads or covers protect thisinvestment, and the thicker ones alsoadd extra cushioning.
Bed skirts or dust ruffles, placed
between the box springs andmattress, hide the box springs andwhatever you may have stashedunder your bed.
Sheet softness is determined byfiber and threads per square inch.Egyptian, Pima or combed cottonsheets with thread counts between200 and 400 are a soft and comfyfavorite. A thread count higher than400 isn’t necessarily better quality.
Take into account the sheet’sweave. Popular choices include crisppercale, shiny sateen or stretchyjersey. A good quality flannel shouldhave a weight of at least 4 ounces peryard. Other bedding fabrics includelinen, silk, bamboo and microfiber.
The top layer of bedding could be aduvet, comforter, quilt, coverlet orblanket, depending on the season andpersonal preference.
To complete a bed’s look, considerdecorative pillow covers, or shams.
There’s Much to LoveAbout Okra
A favorite of many Southern cooks, okra is a main ingredient in gumboand is also popular pickled or fried. There are many other tasty ways tocook okra, though, and the vegetableis full of key nutrients.
Okra likely originated in Ethiopia, and by the 12th century B.C. wasbeing cultivated by the ancientEgyptians.
The mild flavor of okra has beendescribed as a cross betweenasparagus and eggplant. A greatsource of dietary fiber and vitamins A,C and K, the vegetable also providesfolic acid, potassium and calcium.
It is not only the seed pod that isedible. Young okra leaves can beeaten raw in salads or cooked likedandelion greens. Okra seeds can beroasted and ground to make acaffeine-free substitute for coffee. The
seeds also yield a cooking oil, which iscommonly used in Mediterraneancountries. Even the hibiscus-likeflowers are edible!
In the U.S., okra is harvested inlate summer and early autumn.Choose small, bright-green pods, anduse them within a few days.
Here are a few recipe ideas: Sautéokra with tomatoes and corn; try it in aclassic Indian curry; fry whole pods ina light tempura batter; or roast okrawith olive oil, salt and pepper, then dipin a spicy chipotle sauce.
