  • 5TT he Vinoteque stemglasses are scientifi c tasting instruments. These perfect instruments are the result of research carried out on senses and perception. To design

    and create them, we did not make use only of

    the existing knowledge on wine tasting: all the

    stemglasses underwent strict sensory analysis

    tests carried out at the Centro Studi Assaggiatori,

    in order to compare their performances with the

    technical stemware that is used internationally for

    wine tasting (i.e. the ISO stemglass).

    According to the statistics provided by this

    huge database it is evident that in Vinoteque

    stemglasses, each wine expresses itself in a

    signifi cantly different way compared to common

    glasses. Differences are perceived distinctively

    during all the phases of the tasting process: visual,

    olfactory, gustatory-tactile and retro-olfactory

    phases.

  • 6DDuring the visual examination, the infl uence of the material on the wine colour is almost inexistent: the shade is true to life and with no purple shadows. The colour is extremely important; the most recent sensory studies prove that consumers assess a product using mainly their sight and the colour is able to infl uence their olfactory and gustatory perception. Furthermore, this phase anticipates a wealth of information on the health of the wine, its degree of evolution, its structure and typology.

    The following olfactory examination is crucial as the true character of a wine; its richness and its elegance are specifi cally expressed in this phase. As soon as the stemglass is brought to the nose the fi rst pronounced impression of the wine is formed - the olfactory sensations have an immediate impact on the Tasters emotions, even at a subliminal level. It is at this time that the brain decides whether to drink or reject the wine, the quantity of wine to drink or whether to choose it again in the future. At this stage, the role of the stemglass is not only to enhance the smell appropriately; thanks to its shape and its dimensions, each Vinoteque stemglass is conceived to enhance some aromas and to keep others subdued, according to the type of wine. The aim is to maximise the pleasure and facilitate the analysis, by immediately identifying possible defects.

    Finally, when a sip of wine is taken, taste, tact and smell come into play. The gustatory sensations of wine (acid, bitter, sweet) are combined with tactile sensations (body, alcoholic heat, astringency) and the aromas, reaching the nasal sensors through the air that passes through the back of the mouth. The pleasantness of a wine strictly depends on the balance of all these sensations - the stemglass plays a crucial role in measuring out the fl ow into the mouth in a specifi c way for each wine and distillate, enhancing structure and smoothness where necessary, and by limiting the perception of acid or alcoholic heat where prominent.

  • 7In order to taste these sensations the choice of the stemglass according to the specifi c wine is of utmost importance stemglass. Often, even wines of the same varietal present different sensory characteristics which can be enhanced only with a specifi c stemglass. This is why winemakers or restaurant owners have to demonstrate their competence not only by taking care of the products offered, but also by providing the customers with the right quality-assessing instrument for their product so that it can be enjoy it at its best. Like a work of art.

    Each Vinoteque stemglass was studied for a category of wine with specifi c sensory characteristics.

    These results have been achieved thanks to in-depth studies on all the characteristics of the stemglasses (materials, size, and geometrical features)in accordance with the sensory outcome: the perception of aromas and the fl avours of wines, the physical conditions that favour this perception, without ignoring the sensory and emotional impact that the stemglass shape has on Tasters.

    The two methods employed for the sensory tests on the Vinoteque stemglasses and which are certifi ed by several Italian universities are :

    1. The Advanced Big Sensory Test, a detailed sensory analysis test based on the Aroma Chart (Albero degli Aromi) of the corresponding category of wine or distillate, which measures up to fi fty different visual, gustatory-tactile, and olfactory parameters.

    2. The Analogical-Affective Big Sensory Test assesses the esthetic, emotional, and functional impact as well as the physical interaction between the Tasters and the tasting instrument by measuring fi fty parameters.

    Each test is carried out blindly, by a group of tasters who analysed all the samples individually describing their perceptions in writing. The gathered data is processed statistically in order to obtain synthesis parameters and check parameters, thus guaranteeing reliability, credibility and comprehensiveness of the obtained results(as reported in each of the Vinoteque stemglass specifi cations).

  • 8PERFORMANCES OF VINOTEQUE STEMGLASSESAll the specifi cations of the Vinoteque stemglasses refl ect the sensory characteristics of the wines that they will contain, enhance and emphasise.

    The stemglasses are made with long, thin stems in order to avoid contact between the hand and the bowl. This allows for a more accurate assessment of colour and clarity of the liquid, avoiding the shadow effect caused by fi ngers. It also prevents the potential alteration of the service temperature and avoids any olfactory interferences of the hand, which might convey smells that are not compatible with the wine aroma. Finally, with a long stem, it is easier to swirl the wine and increase its olfactory intensity, facilitating in particular, the evaporation of heavier molecules which form part of the wine bouquet.

    The Vinoteque stemglasses were designed with specifi c attention given to the relationship between the length of the stem and the height of the bowl to achieve a correct stability and to facilitate the swirling of the wine which encourages the evolution and release of the aromas.

    The ratio between the fi lling diameter and the mouth diameter, together with the head space volume and the service temperature, determines the right combination of the aromatic molecules. Furthermore, this allows for a rapid regeneration of molecules mix in the head space after each sip of wine.

    Finally the inclination of the bowl walls was designed to achieve a correct focus point (F) to convey the right concentration of odorous molecules to the nose. F in fact represents the point where, according to the convective phenomena induced by the inclination of the walls, the maximum concentration of the odorous molecules takes place (Figure 1)

    The holding of the stemglass during the wine tasting is facilitated by its physical balance. The size of the head space was designed to deliver the best combination of the aromatic molecules that the wine can express at service temperature.

    The different shapes of the body:

    facilitate the swirling of the wine in the stemglass; improve the balance of the different aromas in the head space; convey the aromatic molecules to the nose (with the right concentration and balance); guide the wine towards specifi c areas of the tongue ensuring the appropriate amount of \wine at every sip; guarantee the perfect contact between the lower lip and the rim of the bowl, avoiding annoying drops on the mouth edge.

    Vinoteque stemglasses were designed to develop aromas that represent the wine personality with intensity and persistence thus suggesting high quality and pleasantness.Obviously, in order to achieve this, all the temperatures recommended for each wine as well as the right service quantity should be respected (white wines: 7 - 10 cl; red wines 10 16 cl).

    The sizes and shapes of each bowl were designed according to the typical aromas of different wines, considering that the lighter molecules tend to have a higher concentration in the upper part, medium weight molecules in the mid-part and the heavier ones in the head space closer to the liquid surface. The aromas distribution in the head space depends on the shape and the size of the volume contained between the liquid surface, the stemglass walls and mouth. This is why the same wine presents a different olfactory profi le when poured into different stemglasses. The correct volume and shape of the head space of the Vinoteque stemglasses tunes the distribution of the different aromatic molecules allowing the Taster to fully explore and enjoy the different aromatic notes during any olfactory assessment.

    Two particular stemglasses, with impressive characteristics, complete the Vinoteque collection: the smart tasting stemglass (Smart Tester) and a particular universal stemglass for distillate tasting (Spirits Snifter).

    With the variation of time it is possible to perceive the entire aromatic profi le of the wine (primary, secondary, tertiary) without mixing the aromas and hence without fl attening them.

    Ideal for a correct visual examination of wine and for the most refi ned wines the distinct perception of the sound effect generated when pouring them A wine with high levels of sugar and alcohol will be thicker, it will fl ow more slowly and it will produce a dull and softer sound. A dry and light wine will be less dense and it will pour into the stemglass with a steady fl ow, quickly and with a resonant sound.

    The designed shapes together with glass are likely to enhance the sounds of the nectar of the Gods: wine!

    During the visual examination, besides appreciating the real wine colour and all its nuances (level of maturity of red wine indicator); it is also possible to perceive the wine legs and tears very easily. They indicate the alcohol content and develop on the stemglass wall due to a physical phenomena called the Marangoni effect. The development of legs and tears is strictly linked to the surface conditions of the bowl of the stemglass, namely to its wettability. Lastly, one is able to appreciate the perlage (chain of fi ne bubbles): when this is fi ne and persistent it denotes a high quality level in sparkling wines.

    Tears (droplets) of the wine, found on the walls, are due to a surfactant phenomena: the higher the alcohol concentration, the more numerous the tears.

    process employs NANOTECHNOLOGIES. Developed entirely by Bormioli Luigi Research and Development Department after many years of research. This innovative process, pending patent, hardens the glass surface increasing the resistance to breakages of 140%.

    SENSORY CHARACTERISTICS OF VINOTEQUE STEMGLASSES (ELEGANT HIGH-PRECISION INSTRUMENTS FOR WINE TASTING)

    ADVISE FOR OPTIMAL OLFACTORY AND TASTE PERCEPTIONS

    a) Comply with the serving temperature recommended for every type of wine.

    b) Fill the bowl of the stemglass without going over its maximum diameter. Quantities recommend for tasting: red wines 10-16 cl; white wines 7-10 cl.

    c) During washing do not use soaps that release unpleasant smells nor limestone water. Cleaning the stemglass is of utmost importance as sometimes hypothetical wine defects are due to traces of detergents left in the stemglass not appropriately rinsed nor dried.

    d) Stemglasses should be stored in a suitable cupboard with the bowl upwards in order to avoid bad smells.

    VINOTEQUE STEMGLASSES TECHINICAL SPECIFICATIONSAND SENSORY ANALYSIS RESULTS.

    EE motional and sensory profi les are the result of the individual sensory analysis implemented by the Centro Studi Assaggiatori and carried out blindly by a panel of 8 judges, respectively with the Analogical-Affective Big Sensory Test and the Advanced Big Sensory Test. Please refer to the Radar Diagrams relative to each test in the Appendix.

    The CENTRO STUDIASSAGGIATORI is the research unit on

    the most advanced and complete type of sensory assessment in Italy. Founded in 1990, each year the Centre carries out thousands of tests on consumers in order to assess the perceived quality of products and services. Nowadays, it owns one of the biggest archives in Italy which refl ects the changes in taste and trends. The Centro Studi Assaggiatori participates in research with many Italian and foreign Universities. During the classes in sensory analysis held at the Centre, basic knowledge for hundreds of sensory experts has been provided and judges and panel leaders for companies and organizations have been trained. Furthermore, the Centre publishes LAssaggio, the only Italian magazine on sensory assessment and of the corresponding series of books on this subject.

    This stemglass allows oxygenation to take place rapidly recreating a real decanter effect. The high fi lling diameter/mouth diameter ratio and the bowl profi le allows the wine bouquet to be fully appreciated. The aroma is very intense and persistent. The introduction of the wine into the mouth across a diameter of 75 mm and at an angle of 41 allows the taster to fully appreciate the tactile and gustatory profi le of the wine by directing it towards the centre of the tongue.

    The Super 800 stemglass to a panel of tasters: emotional profi leThe Super 800 stemglass has a striking appearance thanks to its size and geometrical shape. Tasters fi nd it elegant and modern, pleasant and with an obvious charming design which makes it suitable for both experienced consumers and young, demanding consumers. When handled, each part of the stemglass works to provide a relevant experience: its body reveals its preference for aged and prominent red wines. It is defi nitely suitable for sophisticated restaurants and chic wine bars.

    The Super 800 stemglass according to the sensory analysisThe Super 800 stemglass performs better than the ISO stemglass with fl oral and fruity wines; it is extremely adept at identifying defects.With the Barbera dAsti it emphasises the fl oral notes of rose, violet, honey and beeswax. Fresh fruits are also distinctly emphasised, as are refi ned nut scents (e.g. walnut, almond, hazelnut) and jam. When oak is used properly, vanilla notes as well as toasted coffee and cocoa notes are highlighted.With Chianti the Super 800 stemglass enhances citrus aromas, especially orange peel notes, which accompany the fruity aroma of strawberry and wild berries. The large head space also emphasises deeper vegetal notes such as grass, aromatic herbs and tobacco. With the Valcalepio Riserva, the Super 800 stemglass unveils all the particularities of vegetal and spiced background notes of the wine, especially animal notes, and thus revealing their evolution.

    Stemglass for complex scent and very persistent wines. The considerable size of this stemglass (760 cc) permits the right oxygenation of red wines that were aged in the bottle over a long period of time with tannins that have already become smoother. The mouth diameter is wide and with a 14 angle it conveys the wine directly in the back of the tongue.

    The Riserva stemglass according to a panel of tasters: emotional profi leThe shape of this stemglass is immediately distinct due to its size and it marks it out as a special technical tasting instrument. It is more elegant, ample and comfortable when compared to the ISO stemglass, although it maintains its prominence and sobriety. One of its strengths is the thinnes of the stem that confers uniqueness and good taste. It is most suitable for aged red wines and prominent wines and is highly regarded for special occasions in both wine bars and restaurants.

    The Riserva stemglass according to the sensory analysisThe Riserva stemglass offers the taster a different experience in comparison with the ISO stemglass, including its visual appearance: the greater transparency of this special stemglass reveals a livelier colour of orange shades in the wine. In the olfactory phase, the differences identifi ed derive from on the specifi c aspects of the different wines. In the Valcalepio Riserva the typical notes of the red and black fruit are identifi able and Morello cherry especially is even more evident ranging from jam to the sour black cherry in alcohol. Even the spiced aromas are emphasised. For the Chilean Cabernet Sauvignon the Riserva stemglass tends to amplify the fl oral notes, without increasing the perception of the typical vegetal scents of this wine. For the Bordeaux, the Riserva stemglass clearly underlines the various fl ower and honey aromas, which are easily identifi able against a fruit background.

    This stemglass is suitable for persistent and fi ne wines, powerfully rich and intense with a deep character. These stemglasses are designed for wines with a high alcohol content, high quantity of tannins and clear acidity, and also characterised by a specifi c fruity aroma.High-volume (735 cc), tulip-shaped stemglass (Open end angle= 9; Mouth diameter = 8.5 cm),it directs the wine towards the tip of the tongue. This is necessary for those wines that have strong acid characteristics (for gustatory balance).The ratio between the fi lling diameter and mouth diameter, as well as the high headspace volume, allows for a distinct olfactory perception.

    The Nobile stemglass according to a panel of tasters: emotional profi leThis stemglass makes a strong impact thanks to its particular geometrical shape. It has an extremely elegant and light appearance despite its body size, and as such is akin to a work of art. It feels comfortable when held in the hand and conveys a feeling of importance. Its strengths are its body and shape of the rim, which are the main characteristics of this stemglass. Thus it is suitable for experts who also look for a touch of originality and style. It is deemed ideal for red wines, especially aged wines, and for special occasions in restaurants.

    The Nobile stemglass according to the sensory analysisIn addition to enhancing the characteristics of red wines, which in terms of perception, enhances the structure, the Nobile stemglass also highlights certain aromatic notes of these complex products. For the Barbaresco wine the Nobile stemglass enhances the olfactory notes of dried fruit and nuts as well as spicy and toasty notes. For the Nebbiolo wine the typical fl oral notes are emphasised, together with common spicy scents, such as pepper, cloves, nutmeg. For the Ctes-du-Rhne wine the Nobile stemglass gives more intensity to the red and black fruit notes, and dried fruit and nuts, which adds to the complexity and charm of this wine.

    Apple-shaped stemglass, suitable for generous wines with an evident bouquet.Thanks to its shape the aromas diffusion is heightened to properly develop the bouquet. The mouth angle (21) and the stemglass mouth diameter (74 mm) help the wine to fl ow out delicately.

With the Ctes-du-Rhne, the colour, when seen through the superior high-tech blown crystal glass of the Robusto stemglass, is much livelier. The peculiar shape enhances the spicy notes, in particular those associated with the vanilla in pastries. In the Nebbiolo, the same visual differences highlight the lightness in the wine, together with a clearer perception of fl oral notes such as rose, violet and various fl owers that are typical of this wine.     The wider the contact surface, the quicker the effervescence and its dispersion. This is why this stemglass is long and thin (fl ute): to avoid the rapid dispersion of perlage (bubbles). By lowering the temperature, the perlage will become slower; on the other hand, by increasing the temperature, the carbon dioxide will disperse more quickly.Failure to wash a stemglass properly or adding too much detergent will reduce the effervescence effect.The Perlage stemglass was designed with some specifi c techniques to regulate the nucleation of effervescence in order to generate the development of bubbles in the following ways:

    The Perlage stemglass according to the sensory analysisThe particular geometrical shape of this stemglass, in terms of appearance, offers a distinctly different performance in comparison with the ISO stemglass: the subtlety of the perlage is especially emphasised in Champagne. The direct manner in which it conveys the liquid to the mouth enhances freshness and structure according to the initial characteristics. This effect must be seen in relation to the notion of synaesthesia and to the ability to emphasise certain background aromas which are not detected with the ISO stemglass. As a matter of fact, in the Prosecco, as well as in the Trento Doc and Champagne, the Perlage stemglass highlights certain vegetal notes such as cut grass and aromatic herbs that psychologically increase the perception of freshness.     The Spirits Snifter stemglass according to a panel of tasters: emotional profi leThis stemglass presents some particular characteristics such as its extreme lightness which makes it unique when compared with other stemglasses used for distillates. It is rather classic and sober in appearance, although it is reinterpreted in a modern, feminine and extremely elegant way. Its tactility is due to its lightness and ease of use which differentiates it from the ISO stemglass. As far as the geometrical shape of the body is concerned, both the stem and the rim are very pleasant and refl ect the Tasters search for newness and good taste, as well as knowledge due to the stemglass refi ned though technical shape. This stemglass is also suitable for cognac and grappa, both young and aged and with aromatic notes. This stemglass is an ideal instrument both in restaurants and in wine bars, including everyday use.

    The Spirits Snifter stemglass according to the sensory analysisThis Vinoteque stemglass performs comparably to the ISO stemglass with several signifi cant distillates, from cognac to grappa. The specifi c geometrical shape enhances the perception of hidden aromatic notes. In young grappas which are, in particular, rich and clean, such as those from the Trento area, the Vinoteque stemglass enhances some particularly prized notes such as fl owers, honey and stewed or dried fruit, by increasing the perception of the sweetness. In grappas that are refi ned in oak, this Vinoteque stemglass can highlight the possible presence of certain background aromas, such as wood and resin. It also shows certain defects that are mentioned by Tasters among the biological and chemical notes. The Vinoteque stemglass brings out the scents of dried fruit and nuts, spices and toast which are characteristic of a well-aged and refi ned distillates.

    Grappa is strictly Italian, both traditionally and culturally, but also by law because in fact this denomination is reserved exclusively for products obtained from Italian raw materials.

    The grappa is the brandy obtained from the marcs, namely the skins of the grapes remaining after the squeezing of the must which is used to make the wine. These skins contain the noblest part of the grapes aromas which should be distilled with lengthy and complex techniques and with very sophisticated alembics.

    The stemglass that we created was designed to enhance the pleasure of the grappa. This stemglass substantially softens the aggravating perceptions, emphasising fl oral and fruity notes.This was obtained by reducing the evaporation and oxygenation surface.

    The mouth diameter and its inclination direct the grappa towards the oral cavity with a restricted fl ow. This allows the aroma of the distillate to be fully appreciated without enphasizing the pungency or enhancing the perception of the alcoholic heat.

    Grappa stemglass according to a panel of taster: emotional profi leFinding a grappa stemglass that will impress is not an easy task, considering the variety of shapes available. The Vinoteque Grappa stemglass, however, has a very strong visual impact on Tasters who recognise its particular elegance together with the technical features. This stemglass which is particularly refi ned, high and thin, stands out thanks to its contemporary design and its pleasant tactile properties. It is very practical, like an ISO stemglass. It is considered suitable for those experienced Tasters who always enjoy newness and is also appreciated by women. Perfect for young and aromatic grappas, and also ideal for fruit brandies, it is used specifi cally in wine bars and on special occasions.

    Grappa stemglass according to the sensory analysisThe Vinoteque Grappa stemglass compares favourably with the ISO stemglass especially when drinking aromatic distillates, it enhances all the specifi c characteristics of the most volatile notes. Excellent effi ciency for mountain grappas made with aromatic berries such as the Traminer: fl ower, honey and beeswax notes are clearly identifi able while the fruit notes are deeper, especially citrus, apricot, apple and pear in syrup. In younger and neutral grappas, it emphasises certain notes by increasing the perception of minor notes such as stewed fruit, spices and aniseed. In fruit distillates, the Vinoteque stemglass identifi es the dominant note, namely fresh pear, emphasising its clarity and cleanliness.
