Fiddlehead Pizza is the only pizza restaurant in Beaufort County that is “Certi�ed South Carolina – Fresh on the Menu,” meaning it uses at least 25 percent of local products or ingredients. Owners Stacey and Darren Macioszek say they are close to 45 percent local. �e decor of the restaurant is from here as well, painted and designed by local artists. About the only thing that isn’t true to South Carolina is the unique crust, which originated in Naples, Italy. With a blend of two di�erent yeasts and micro�ora, it has a bubbly look, a slightly tangy �avor and can be covered with red or white sauces. White WinesChardonnay

Chardonnay produces a superb wine that is rich, complex and well-balanced. It takes nicely to judicious aging in oak barrels, a practice that gives a pleasurable “toastiness” to the wine. It has a dis-tinctive aroma sometimes resembling hazelnuts, vanilla or acacia.

�e most noble grape in the world for dry white wine, the Chardonnay is responsible for all of the great white Bur-gundies—Meursault, Montrachet, Pouilly-Fuissé and Chablis among them. It is one of the grapes used in Brut Champagne and the only grape used to make blanc de blancs Champagne.

Chenin BlancA grape capable of making wines that range from bone

dry to very sweet. Chenin blanc retains through all its versions a well-de�ned fruitiness, o�en suggestive of pear. Its high degree of acidity gives it a pleasant crispness. As a sweet wine in Vouvray, it can live a long life. In California, it tends to be at its best at an early age.

�e major white grape of the middle Loire Valley, Chenin blanc produces Vouvray and other white wines of Touraine and most of the white wines of Anjou. It is also known in France as Pineau de la Loire.

Gewürztraminer�is white grape yields a pungent, spicy wine with hints

of strong �oral aromas such as those of dried rose petals. It is made as a dry, o� dry, sweet and very sweet wine. In all versions, Gewürztraminer leaves a nip of bi�erness in its a�ertaste. An important grape in France’s Alsace region, Gewürztraminer is also grown in small amounts in Germany.

Pinot Gris Pinot gris makes a full-bodied, study white wine that is

o�en a bit low in acidity. It has an assertive, rather spicy aroma.In the United States, Pinot gris is grown commercially

only in Oregon. In France, it grows in Alsace where, until recently, it was labeled Tokay d’Alsace. Now under a new French law, it is called Pinot gris or Tokay Pinot Gris. �e grape also grows in Germany where it is known as Ruländer and in northern Italy where it is named Pinot grigio.

Pinot BlancPinot blanc is closely related in taste and aroma to Char-

donnay, although subtler, usually �rmer and slightly more tart. �is grape is grown mostly in Alsace and in southern Germany where is known as the Weissburgunder.

RieslingRiesling is capable of producing wines with an extraor-

dinary balance of sweetness and acidity. It has an aroma of fresh �owers in youth and a more subtle perfume in maturity. Riesling can be dry or it can produce some of the world’s greatest naturally sweet wines, strong in apricot and peach-like perfumes and as rich as nectar. �e �nest grape of Germany, Riesling also �ourishes in Alsace and in Austria.

Sauvignon Blanc�is is an extremely aromatic grape with distinctive �avors

of herbs, grass, bell peppers and occasionally, olives. At times it can also carry somewhat smoky undertones. Also labeled Fume Blanc in California, this is an important white grape in France, where it is blended with Sémillon to produce all of Bordeaux’s white wines—from dry Graves to sweet dessert wines of Sauternes. It is also the grape of Sancerre and Pouil-ly-Fumé in the eastern Loire Valley.

Red WinesCabernet Sauvignon

A grape of great character, the Cabernet Sauvignon produces elegant wines with austere flavors often reminis-cent of tea or olive leaves, currants or herbs. It tends to be tannic in its youth, to mature slowly and to live long. This superb and noble red grape is largely responsible for the great clarets of Bordeaux, particularly those of the Médoc and Graves areas.

MerlotSimilar in �avor to Cabernet Sauvignon but so�er and

�eshier, the Merlot also tend to be less tannic. �e Merlot will mature sooner than a Cabernet Sauvignon. A distinguished red grape of Bordeaux, Merlot is so�er blended with Cabernet Sauvignon in the Médoc and Graves regions, to give so�ness and grace to the more austere Cabernet. In the Pomerol and St. Emilion areas of Bordeaux, it is the main grape producing a rich, silky wine.

Pinot Noir�e best Pinot noirs are wines of incomparable depth and

harmony. �eir aromas have been described as reminiscent of violets, cherries, leather, peppermint and tru�es, while their textures have been likened to satin and velvet. One of the world’s greatest grapes, the Pinot noir produces the glorious red wine of Burgundy’s Côte d’Or, as well as all other red Burgundies, which are made solely of Pinot noir. It is also the leading grape of the Champagne region.

SyrahSyrah grows in France’s Côtes du Rhône region, where

it is the exclusive grape of red Hermitage, the major grape of Côte-Rôtie, and one of the grapes used in Châteauneuf-du-Pape. Syrah makes a deep-colored wine that is rough and highly tannic and peppery in its youth, but which can mature to a big, generously velvety wine. It is generally long-lived.

ZinfandelThe most widely planted red grape in California,

Zinfandel is extremely versatile. All styles of wine have been made from it, from fruity young wines to fine table wines, heavy port-like wines and the currently popular blush wines. In any disguise, its basic raspberry-like flavor usually shines through.

Many diners enjoy having wine with their meals. We have described some of the more popular wines served in our area. Most popular wines are named for the type of grape used to make them, or for the geographic area in which they are made.

Get in 18 holesBlu� on is home to some of the top public and pri-

vate golf courses on the East Coast. Play Arnold Palmer’s Crescent Pointe or Davis Love III’s Eagle’s Pointe. Other Blu� on favorites are Hilton Head National, Pinecrest, Old Carolina, Old South, Hilton Head Lakes, Hampton Hall, Island West and Rose Hill. Nearby Sun City also has three courses open to the public. Most Blu� on courses are in great shape year-round.

Shop ‘til you drop� e people of Savannah, Ga., have two giant malls and

countless other shopping options in their own city, yet many choose to shop here on weekends. New Blu� on has many popular shopping centers along U.S. 278 while Old Blu� on has numerous one-of-a-kind type of places.

Tour Rose Hill MansionTalk a walk through one of the most beautiful planta-

tion houses in the Lowcountry. Popeye and his spinach need to make way for the new

“Queen of Greens.” Vitamin-rich kale has long been a staple

of southern cuisine but is gaining world-wide popularity for one simple reason -- it’s one of the healthiest foods you can eat. While all unprocessed vegetables are good for your health, kale o� ers a few added bene� ts, pro-tecting against several cancers while lowering cholesterol.

“It’s basically the closest relative to wild cabbage,” said Lindsay Martin, a wellness coach and dietician at Hilton Head Health. “It’s considered one of those cruciferous vegetables, which have been shown to have numerous health bene� ts.”

Kale comes in eight variations and is available at most local markets and grocery stores year-round. Look for a rich green color with no wilting, brown spots or yel-lowing leaves.

It’s very high in beta carotene, vitamin K, vitamin C, lutein and zeaxanthin. While it is grown more wildly in Europe and cooler climates, kale can thrive in our sub-tropical environment with frequent watering.

Along with the health bene� ts, some of the vegetable’s rising popularity can be a� ributed to its versatility in the kitchen.

“You use it like you would spinach,” Martin said. “If you’re new to trying it, I would recommend taking out the big, long stem that runs through the middle. You can eat it raw or you can sauté it with some garlic and a li� le bit of olive oil. It’s great with pasta, salads and soups.”

Thanks to the droves of visitors that come during vacation season, Bluffton and nearby Hilton Head Island have more than 300 restaurants to choose from. Here is the skinny on recently opened establishments.

Annie O’s Southern EatsLongtime island resident and chef Tom Egerton has opened his � rst restaurant, Annie-O’s Southern Eats. A� er 10 years

with Crane’s Tavern and most re-cently Muse restaurant in Charles-ton, Tom has returned to the island and opened his southern-style eatery, featuring his take on south-ern classics and comfort foods like meatloaf and gravy, bu� ermilk fried chicken, and new takes on shrimp salad and eggrolls, along with family favorites like Susie’s Potatoes.

Other favorites are the chicken biscuit, fried cat� sh, crab cake club, spinach salad, burger and wings. All desserts are homemade and include treats like coconut cream pie to round out the deliciousness.

The down-home decor here includes galvanized buckets turned into light � xtures, a curved wooden bar that invites customers to get comfortable, and cloth-cov-ered tables that extend a hospitable southern welcome to diners.

� e restaurant is named a� er Tom’s mother, Anne. He thought it � � ing to recognize the person responsible for sparking his interest in cooking through her formidable talents in the kitchen.

Annie-O’s features all homemade, from-scratch dishes in a casual se� ing that will leave you satis� ed and won’t break the bank. It o� ers a kids menu, dine-in and take-out options, and also has a full bar.

Bullies BBQ� e best barbecue restaurant in Medina, Ohio, has opened a second location on Hilton Head Island. Bullies BBQ

owners Tammy and Bob Su� on are con� dent their award-winning smoked ribs, pulled pork, pulled chicken and brisket will eventually be just as famous here as they are back in the Snowbelt.

“We’ve only got � ve items on the menu and they’re all great,” said Bob Su� on, who cooks all the food himself. “We’re giving a di� er-ent-sized portion than what people

are used to down here; a healthy portion for a reasonable price.”A pulled pork or a pulled chicken sandwich will set you

back $5.50. � e brisket sandwich costs an extra quarter. Bullies also o� ers jumbo sandwiches and dinner plates with french fries, cole slaw and jalapeño cheddar cornbread. Other sides include mac and cheese, Carolina cole slaw and kickin collards.

Items are slow-smoked over hickory and mesquite woods on the Su� ons’ jumbo-sized smoker and can be topped o� with one of four original sauces.

Su� on also sells his Memphis-style rub, which took more than 20 years to perfect. � e rub and all the sauces can be purchased separately for $5.99.

Counter service ensures a much quicker dining ex-perience than the other sit-down barbecue restaurants on the island.

� e restaurant’s name was inspired by the edible sprout that comes from the � ddlehead fern. It opened in March and has already developed a strong following of repeat customers.

“� e reaction has been hugely positive,” Darren Ma-cioszek said. “I get it from both customers and purveyors. Everybody that talks about our place is raving about it. I think our product de� nitely speaks for itself.”

Fiddlehead Pizza� ink global, eat local. Fiddlehead Pizza is the only pizza restaurant in Beaufort County that is “Certi� ed South Car-

olina – Fresh on the Menu,” meaning it uses at least 25 percent of local prod-ucts or ingredients. Owners Stacey and Darren Macioszek say they are close to 45 percent. � e décor of the restaurant is from here as well, painted and designed by local artists.

About the only thing that isn’t true to South Carolina is the unique crust, which originated in Naples, Italy. With a blend of two di� erent yeasts and micro� ora, it has a bubbly look, a slightly tangy � avor and can be covered with red or white sauces.

Gillan’s is owned by brothers and longtime locals Joe and Ned Gilleland, who previously owned the well-known restaurants Eugene’s and Charleston’s, and whose father developed South Beach Marina. � ese guys know Low-country seafood, and they showcase it well at Gillan’s. � e restaurant gets deliveries of fresh local seafood daily, and if you have a fresh catch of your own, bring it on in, and they’ll cook it up for you.

In addition to serving up the local fare, favorites from afar include Maine lobsters and Ipswich clams. Enjoy all this against the beautiful local backdrop; the restaurant has added a brand new deck seating 50 people.

If you love crabs, this is the place to go. Gillan’s has blue crabs, Alaskan king crab legs, snow crabs and Florida stone crab claws. Landlubbers can feast on steaks, chicken and other non-seafood fare. Wash it all down with Gillan’s selected cra� beers, including local beers, or another selec-tion from the full bar.

Gillan’s is price-friendly and family-friendly. Kids will enjoy their own menu, plus milkshakes and hot fudge sundaes. Large parties are welcome and encouraged to call in advance.

to combine the best of all these worlds, using precise pas-try-cooking techniques to meld together amazing � avors in new and exciting ways.

While Anish specializes in fusion cuisine — which means the fusing together of di� erent � avors and ingre-dients from di� erent regions and cultures — his business partner, Franklin Jayakumar, specializes in tandoori cooking. Anish and Franklin knew each other in India before either embarked on a culinary career. � e restaurant just acquired a new tandoor, a cylindrical clay oven used for tandoori cooking, and Franklin puts it to good use.

Fusion’s menus are eclectic and include such items as chickpea soup, a turkey BLT wrap, chicken tikka masala with rice, shrimp and crab pappardelle pasta, shrimp vin-daloo, saag paneer, chicken biryani, orange-infused duck breast, Chicken Che� inad, and Austrian apple strudel. Any description here cannot do these extensive menus justice; you just need to check Fusion out for yourself.

OkkoThe owners of Asian Bistro in Orleans Plaza have created a modern, contemporary haven for Japanese

and Thai food af i-cionados at the new OKKO restaurant on Mathews Drive. OKKO’s upscale at-mosphere echoes the

beauty of Japanese simplicity and balance, with sleek glass, beautiful woods, and a mix of subtle warm and cool hues throughout.

Speaking of warm: Fire is a masterful, if � eeting, centerpiece at the six hibachi tables. � e hibachi area is enclosed by glass doors so that guests in the main din-ing area can enjoy the sights without having the pleas-ing-yet-powerful scents and sounds interrupt their own culinary experiences.

Ombra Cucina RusticaA new upscale Italian restaurant has opened in the Vil-lage at Wexford. Longtime local Italian chef Michael

Cirafesi has branched out with distinguished Philadelphia chef Nunzio Patruno to open Ombra Cucina Rustica.

“All executive chefs want to eventually open their own

restaurant,” Cirafesi said. “We all have that dream. We follow the rules of classic Italian cuisine. We will be set apart by our standards and who we are.”

Cirafesi started cooking in 1987 under Patruno, who was considered one of the top Italian chefs in the country. � e two have completely remodeled the building where Antonio’s was located, creating an environment similar to

giana! Popular New York City Pizza has opened a second island location not far from the bridge to the mainland.

also has a location in Blu� on. He is expanding the extensive pastry selection but has no plans of � xing Hilton Head’s only bagel shop, considering it was never broken to begin with.

“Everything else is pre� y much the same because it was all good before,” Stone said.

Customers can still � nd New York-style boiled ba-gels in 16 � avors each morning. Menu highlights are the Lowcountry Breakfast Sandwich, which is bacon, egg and cheese on your choice of bagel; and the in-store roasted hand-pulled turkey sandwich with bacon, provolone and cream cheese on a hoagie.
