Ingredients

Vegetable oil blend (liquid soybean oil, partially

hydrogenated soybean and hydrogenated cot-

tonseed oils), water, whey (milk), salt, vegetable

mono and diglycerides, soy lecithin, potassium

sorbate, citric acid, beta carotene (for color)

Vegetable Oil Spread

PreparationOil phase

• Mix vegetable oil blend with mono and diglycerides,

and soy lecithin

• Heat part of the oil blend to 60-85C (140—185F) to

make a 10% stock solution with BC 30%. Add BC 30%

suspension to the heated oil blend. Agitate until solu-

tion becomes clear (stock solution)

• Add BC 30% stock solution to oil blend

Water phase

• Add whey protein to water and dissolve.

• Add potassium sorbate, citric acid and salt

• Place oil phase into a high speed stirrer. Add water

phase slowly to emulsify until margarine develops

• Pasteurize 85 °C / 10 sec.

• Store mass for crystallization at temperatures of

approximately 5—7C for 1-2 hours, then store in deep

freezer
