regional destination

The Swan District is Western Australia’s oldest wine region. Known as Perth’s ‘Valley of Taste’, the Swan

region is just 25 minutes drive from Perth city and has a number of scenic attractions. The Swan Valley Food and Wine Trail extends over a 32km loop and includes Houghton, the state’s oldest and largest winery, and other big name wineries such as Sandalford. Today, more than 40 mostly family-owned wineries operate in the area, many still run by the descendents of Italian and Croatian families who settled in the region in the early 20th century.

The first vines were planted in 1829 by Thomas Waters at Olive Farm. For nearly 150 years, the Swan District was the state’s only significant wine region. As demand for table wines grew, Swan winemakers pioneered the development of these wine styles including legendary Houghton winemaker Jack Mann in the 1930s and 1940s,

as well as John Kosovich at John Kosovich Wines in the 1960s and 1970s.

With a warm to hot Mediterranean climate, the Swan Valley is renowned for its verdelho, chardonnay, chenin blanc, shiraz and cabernet sauvignon – all performing well in the warm and dry grape growing conditions. The Gingin/Moondah Brook area is somewhat cooler but nonetheless a warm region and produces quality full-bodied white wines including chenin blanc, verdelho and chardonnay. Some winemakers are also continuing to make fortified wines.

A number of festivals throughout the year showcase the best of the valley, including Taste of the Valley in February, Seafood and Shiraz during July and Spring in the Valley throughout October.

Champagne can only be called ‘champagne’ if it is crafted in the geographical wine region of Champagne in France. French Champagne is often viewed as representing the epitome of quality in sparkling wines and while few would argue its eminence, there is a plethora of quality sparkling wines available from our own backyard, and often at far more affordable prices. Increasingly, our sparkling wines have gained significant global recognition for their flavour, complexity and finesse.

Australia is blessed to have a number of cool-climate wine regions which are considered to have the ideal ripening conditions to produce premium fruit for sparkling wines, such as Tasmania, Adelaide Hills and the Yarra Valley.

Styles of Australian sparkling range from everyday bubbles, which are full of primary fruit flavours, while the more premium end of sparkling wines are made in the traditional way used by the French, fermented in the bottle. This process is referred to by several different names and may appear on the label as ‘Method Traditionnelle’ or ‘Methode Champenoise’. This process is the most time-consuming and costly so is reserved for sparkling wines made with premium grapes. These wines are then matured in bottle on yeast lees which add further depth and complexity to the wine.

Australia is also known for its unique sparkling red wines, which have been made since the 1860s. The base grape for sparkling red is most often shiraz, but there are also sparkling cabernets and sparkling merlots produced too. Sparkling red is said to be an ideal wine match for turkey – making it truly the perfect sparkling for Christmas Day!

When pouring sparkling wine, aim to fill the first flute halfway full so the bubbles do not overflow. Try as much as possible to pour down the side of the glass, which will result in a smaller head. At the top of the pour, give a slight turn of the wrist to avoid spilling a single drop.

The white spirit gin is a very popular choice for the warmer summer months. A ‘gin and tonic’ or ‘G&T’ is one of the world’s most commonly

mixed drinks. Gin also lends itself to any number of cocktails including, of course, the dry martini.

Gin is a white spirit flavoured with juniper berries and ‘botanicals’ – an assortment of herbs and spices. Grain (usually wheat or rye) makes up the spirit base of gin. The word gin is an English shortening of Genever, the Dutch word for juniper.

The highly aromatic blue-green berry of the juniper bush is the primary flavouring agent of gin. Other botanicals often used in gin include anise, angelica root, cinnamon, orange peel, coriander and cassia bark. Gin producers have their own secret recipes of these botanicals, which includes anywhere from 4 to 15 botanicals.

While the exact origins of gin are unclear, it is known that in the late 1580s, a juniper-flavored spirit of some sort was found in Holland by British troops who were fighting against the Spanish in the Dutch War of Independence. They gratefully drank it to give them what they soon came to call “Dutch courage” in battle.

For Vanya Cullen, the winery’s latest accolade is one of her sweetest achievements because she sees it as

vindicating the biodynamic approach she has followed tirelessly in recent years. The 2007 Cullen ‘Kevin John’ Chardonnay won the International Chardonnay Trophy at the recent Decanter World Wine Awards. To win this trophy, the wine had to survive four tough rounds of judging beating along the way several hundred chardonnays from 20 countries including France, the USA and New Zealand.

Chardonnay at this Wilyabrup winery has long been among the finest in Margaret River and, indeed, Australia. Yet, since the 2002 vintage, there has been a significant

improvement in quality of the Cullen Chardonnay, greater finesse, a more seamless interplay of fruit, oak and acidity, more detail, and greater complexity. Vanya believes that the biodynamic approach to viticulture has allowed her chardonnay to ripen at lower Baumés and thus have lower alcohol levels and higher acidity. The Cullen Chardonnay is more elegant and better integrated and, as it no longer requires acid adjustment, has become a more natural wine.

In 2008, Vanya Cullen became Drinks Business’s Woman of the Year. The British magazine acknowledged her championing of the environment through the use of biodynamics and the application of the principles of

sustainable viticulture to all that happens at Cullen. Also of interest were the winery’s carbon neutral status, and the synergy between the winery and its restaurant which both have an approach informed by organic and biodynamic principles. All this, of course, while Cullen produces some of Australia’s finest wines.

The other major achievement for Vanya Cullen has been winning Gourmet Traveller Wine’s Australian Winemaker of the Year in 2000. In acknowledging the sublime quality of her wines, the judges commented on her rigorous experimentation in the vineyard – especially with soil and trellis management – and in the winery ‘all the time looking for greater complexity in her wines.’

The Cullen FamilyThe Cullen family have been vignerons at Wilyabrup for forty

years. Kevin and Di Cullen were pioneers of the wine region, relentless promoters of the district, and far-sighted environmentalists at a time when the preservation of the environment was not such an important issue. Kevin Cullen brokered the deal which made it possible for Tom Cullity to purchase the land that became Vasse Felix; and organised and promoted the seminal 1966 public meeting in Busselton which kick-started viticulture in the region. At this meeting, 60 locals listened to Dr John Gladstones talk about the region’s potential for producing high quality wines. Di Cullen took over the winemaking at Cullen in 1981, won a trophy for a wooded sauvignon blanc at the Perth Show in her first year, and made some impressive chardonnays and exceptional, long-lived cabernet merlots during that decade. When her daughter, Vanya, took over as winemaker in 1989, Di remained as General Manager of Cullen working alongside Vanya until her death in 2003.

Kevin and Di Cullen’s family are all shareholders in the family business. In addition to the youngest, Vanya, Rick is a partner in a legal firm and (with his wife Bettina) owns the Mangan vineyard which is adjacent to the estate; Shelley, a director of Cullen, was involved in Pierro through her marriage to Mike Peterkin; Stewart is a medical practioner specialising in sleep disorders; Digby is a gastroenterologist; another director, Ariane, is a general practitioner of rare quality and owns Ellen’s Ridge vineyard with her husband Mark Hands.

Bright cider lifeWhile a hugely popular beverage in the United

Kingdom, cider has not quite taken off in popularity on Australian shores – until now. In the last couple of years alone, cider has become one of the fastest growing liquor products in the country and with good reason. It seems Aussies are finally catching on to the fact that this refreshing beverage is ideally suited to our warm climate. Big name brands such as Strongbow and Mercury Cider, which is made in the Cascade Brewery in Hobart, continue to be favourites among cider loyalists, and Tooheys Extra Dry 5 Seeds Cider has also introduced the cider phenomenem to a large following. But a growing number of smaller producers are bringing a new breed of cider drinkers along for the ride. Brands such as Three

Oaks from McLaren Vale and Pipsqueak Cider from the Little Creatures team are gaining in popularity. Here in WA we also have the Elephant’s Rock Cider Company in Denmark as the first Great Southern producer of cider.

So what exactly is cider? Essentially, it’s a fermented drink made from apple juice and the alcohol content can vary from anywhere between two and eight and a half per cent. Pear cider releases are also being seen more frequently.

With this fresh interest in cider, you may also start to notice more and more imported ciders becoming available from countries such as England, France, Ireland, Spain and New Zealand.
