Shrimp with Fettuccini

ettuccini with Shrimps is a delightful and simple dish from the beautiful town of Venice; a mouth-watering combination of shrimp, fresh garlic,

cherry tomatoes and lemon juice – a seafood lover’s paradise!

Ingredients:For Stock: 1 tbsp olive oil 2 cups shrimp shells 1 white onion 1 carrot 1 celery 1 fennel bulb 1 sprig of parsley ¼ tsp black-pepper 3 cups water

For Pasta: 200gms Fettuccini 180gms shrimp 25gms butter 1 piece of garlic 1tbsp black olives Juice of 1 lemon 60gms cherry tomatoes 10gms basil leaves Salt & pepper to taste

Method: Heat olive oil in a stock pot and add

the shrimp shells. Cook until they turn pink, for about 10 minutes to intensify the flavours. Add the remaining stock ingredients

except water and cover and cook for about 7 to 8 minutes. Add the water and bring to a boil

Saute the shrimp in a pan for about 5 minutes and add garlic. Let it sweat for a minute. Add cherry tomatoes, olives and

basil and cook slowly for about 3 to 4 minutes. Then add 100ml of the prepared stock. Add seasoning and finish with butter,

lemon juice and parsley. Toss the blanched pasta in little

sauce and serve the shrimp on top.
