Located in northern Japan, Iwate Prefecture is the second largest prefecture in Japan after Hokkaido. ■ BAEREN in Japan

Ever since the brewery was founded in 2003, we have been predominantly focused on cultivating a local community beer culture in the region. As a result, even today, more than 60% of our produce is consumed locally within Iwate Prefecture. We can proudly claim that our beers are the most locally loved ones in Japan. At the very dawn of the craft beer industry in Japan, we at BAEREN are committed to German beer styles as those most matching Japanese taste preferences, and this is what differentiates the brewery’ s produce from that of the large-scale beermakers.However, we do not simply seek to replicate German beer on Japanese soil. We are continuing our endeavors with the aim of catering to those customers who are not completely satisfied with Japanese beers, to spread the joy and taste of craft beer, and to provide beer fans with an alternative to the uniformity of mainstream beers on the market̶with the premium flavor and aroma of crafted beer.

We usually do not participate in competitions, relying exclusively on the opinions of our customers who dailyevaluate BAEREN’ s products. However, being selected by the general public, BAEREN received the Grand Prix at the “Japanese Craft Beer to Be Introduced to the World” contest organized by the Foreign Correspondents' Club of Japan in 2015.Moreover, such endeavors of the brewery and the story of its foundation have gained countrywide publicity, with even a book published in 2015 from “POPLAR PUBLISHING” under the title “Tsunagu Beer” ( “A Beer That Connects” ).

Our company was established 14 years ago by two enthusiastic young people who shared the same passion: they aspired to cultivate a new local culture of enjoying genuine premium beer. And now, as BAEREN has gained a lot of true local fans over the past 14 years, it is about to begin its journey across the world.

Iwate Prefecture̶where BAEREN beer is born̶being blessed with bountiful nature and abundant pure water resources, boasts a flourishing sake-making industry and is well-known as the homeland to the Nanbu-Toji sake master brewers’ guild. Having been developed in such surroundings, BAEREN beer is a German-style beer that is brewed in conformance to traditional techniques, making full use of 100-year-old brewing equipment brought here from Germany.

However, the German-style beer brewed by BAEREN is not just a replica of German beers; it is refined to match the delicate flavors of Japanese cuisine and accommodate the tastes and inclinations of the Japanese. In a word, it is a new unique beer born from the fusion of German beer-making tradition and local properties of Iwate Prefecture.

While combining a rich flavor and long-lasting aftertaste, it also offers splendid drinkability that won’ t make you bored. In Iwate Prefecture, BAEREN’ s beer is already well-established and greatly enjoyed by the local people as “a little luxury” in their daily life.

We produce it in the hope that one day we will be honored to deliver BAEREN’ s flavor and aroma to beer fans worldwide.

BAEREN also focuses on brewing fruit beer and cider, making use of the abundant fruit production in Iwate Prefecture. Particularly popular is BAEREN’ s cider, which is made from high-quality apples grown in Iwate Prefecture and does not contain any antioxidant additives. The dry finish and smooth drinkability are the salient qualities that make BAEREN stand out from the other craft beermakers. BAEREN produces more than 20 types of beer a year. The brewery offers a wide varietyof beers to match each season in Japan.

CrushingBeer making at BAEREN starts with a malt mill dating back to 1900̶the oldest piece of equipment in the brewery.Its gears, which used to be driven by a steam engine in the old days back in Germany, continue to rotate today with the same rumbling sound as over 110 years ago.

MashingCrushed grain is boiled in a copper kettle manufactured in 1906. This is where the starch in malted grain convertsinto sugar. The brewery’s mashing equipment̶all laid out the same way as back then in Germany̶continues tooperate as much as possible with the old genuine parts, in this small Japanese town.No computers are used. This is the world where only artisans’ experience and senses count. And it is here where BAEREN’s distinctive flavor comes to life.

FermentationPrimary fermentation takes place in an open fermenter. It Primary fermentation takes place in an open fermenter. It is not just a hastily adapted tank with a lid opened, but a full-fledged specialized bathtub-like open top vessel in which beer yeast foams up, starting the lively fermentation process.Such intensive open-air fermentation̶which contradicts contemporary beer making trends̶is one of the keys toBAEREN’s original flavor.

ConditioningWhile slowly aging in a storage tank, the beer carbonates and approaches maturity.

BottlingNow it’s time to bottle the beer. This is when the latest Italian-made filling machine makes its appearance. After a slow start, it begins to meticulously wash the bottles, fill them with beer, and crimp the caps to seal them. Employing such a state-of-the-art machine reduces losses, diminishes the oxygen levels inside bottles, and improves the overall quality.

LabelingAfter the beer is pasteurized to maintain the flavor and prolong the quality, the automatic labeling machine sticks labels on the bottles, completing the process.

Thus, BAEREN’ s beer making, which starts with a more than 110-year-old mechanism and incorporates 100-year-old brewing technology, delivers exceptional quality products completed by an advanced up-to-date machine.
