    WELCOME TO AChiEvETExAs in ACTiOn

You are probably tired o people asking, What do you want to be when you grow

up? Some students know exactly what they want to do, but most havent got a

clue. The idea o choosing a career is intimidating, and it eels like its ar in the

uture. Theres little time in the commotion o classes, activities, sports, work, and un to

think about what career you want to pursue ater graduation rom high school or college.

It pays, though, to take the time to think about your uture career. The truth is that

youll save a lot o time and money i you have a direction in lie, as opposed to just

nishing high school and worrying about it later. Its really a matter o dollars and

sense. I you choose a career direction now, you can select classes and activities that will

make you highly marketableand highly paidwhen you look or work. And it only

makes sense to have an idea o what you want to do rather than just wandering aimlessly

    through school.

Nobody wants that. Not your parents. Not your teachers. Not your riends. They want

you to besomebody. They want you to use your talents, ollow your interests, and pursue

your ambitions to become great at what you love to

do in lie. Thats what you should want, too.

So the time is right to take charge o your lie and

think about the uture. You need a plan o action

or how to get rom where you are today to where

you want to be in a ew years: starting out on a

    personally and proessionally rewarding career.

Thats what AchieveTexas in Actionis all about. The

magazine you are holding is one o 16 guides to dierent

career clusters. It is designed to help you make smarter

decisions about your education and career options.

Youve heard the phrase, Inormation is power. Well, this magazine is power. It puts

you squarely in charge o your uture, rom creating your Texas Achievement Plan (TAP)

(see page 5) to choosing college or some other orm o education or training ater high

school. Work with your parents, teachers, and counselors to make decisions, but remind

everyone that it isyouruture at stake and thatyouare taking charge o it.

Get inormation. Get a plan. Get a clue about your career direction. Its all right i that

direction changes; choosing a direction now is better than having no direction at all. Just

promise yoursel that youll make smart choices about where to ocus your time, energy,

    and passion.

Were proud that you are taking steps to plan your career direction, and we pledge that

your school, teachers, and counselors will do all they can to help you make wise choices

on your plans or success. We wish you the best o luck on your journey.

When I was in high school, says Sheryl

Kovach, human resources director or theenvironmental services division at Philips

Services Corporation in Houston, the only job that Ieven knew about was receptionist work. I didnt aspireto be a manager or entrepreneur because I reallydidnt know about those disciplines. I was just lookingorward to graduating. That was it. I really didntknow what it was I wanted to do.

Sound amiliar? You, too, may not have a clue aboutwhat to do with your lie.

Dont worry, though. Help is right here in yourhands. This issue oAchieveTexas in Actionis yourguide to education and career choices that can

shape your uture. Its one o 16 career cluster guidespublished by AchieveTexas, Texass college and careerinitiative (www.AchieveTexas.org). This edition is allabout Hospitality & Tourism.

Lets start with some basic steps you should taketo get organized, plan or the uture, and start on theroad to success.

Ae Yor Talet a AlteFirst, you need to gure out some things about

yoursel. This step can be as simple as writing downa list o your interests (like video games or rockclimbing), your hopes and dreams (like helpingothers), your talents (like writing or math ability),and your weaknesses (i youre squeamish at thesight o blood, or example, you might not want tobe a doctor).

Follow up on this inormal exercise by taking someormal assessments to determine your interests andabilities. Common assessments include the Kuder(www.kuder.com), Bridges (www.bridges.org), Career

Cruising (www.careercruising.com ), COIN (www.coinedu.com), and Myers-Briggs (www.myersbriggs.com) tests. These tools give most o our students somecareer exploration awareness by the time they entereighth or ninth grade.

Ask your principal or counselor about the careerassessments available at your school.

    Reearc Yor Career Opto

Once youve learned about yoursel, learn moreabout your career options. There are thousands ooccupations out there o which you may never haveheard, and others that do not yet exist because thetechnologies have not been developed. Fortunately, there are plenty o resources (see inside back cover) or

you, and they are as close as the nearest computer.

One o the most helpul is the Occupation andSkill Computer-Assisted Researcher (or OSCAR, orshort) rom the Texas Workorce Commission. It isa vast database o inormation about hundreds o

proessions. You can fnd OSCAR atwww.ioscar.org/tx. Another good place to start isO*NET (http://online.onetcenter.org).

Gather inormation about what you can earn in thecareers in which you are interested. Find out whether

the careers you are considering have a promisingutureare they adding or losing jobs? Check out theeducation youll need to enter those careers.

The chart on pages 1011 presents data on 25possible proessions. Remember, though, that theseare just a sampling o careers available in the cluster.Go to OSCAR, O*NET, or another resource toinvestigate other careers.

    Create Your TAP

Once you have a better idea o your interests andabilities, you are ready to plan or high school andbeyond. The Texas Achievement Plan, or TAP, is yourplan or preparing or the career o your choice.

The frst step is or students to choose a careercluster, not a particular occupational goal. In theeighth grade a student might choose Hospitalityand Tourism and then later become interested in anarrower feld such as Che or Interpreter.

The program o study you chooseyour plandoes not stop with graduation rom high school. Astudent could then pursue a two-year degree as atourism manager or a our-year degree in Restaurant,Hotel, and Institutional Management

You should set up a TAP that takes you throughcareer preparation after high school, revising yourblueprint as needed as you go along. If your careerplans include college study, ask your counselor abouttests required for admission to college, such as thePSAT, SAT, or ACT.

    Seek Out Special Programs

Many Texas schools oer innovative programs toprepare students or specifc career areas. Theseinclude career and technical education (CTE)

programs, academies, and magnet schools.Once youve decided on a career direction, ask yourcounselor about special programs in your areathat may provide related experiences in yourchosen career.

Samuel Odamah enrolled in the architectureprogram at the University o Texas at Arlington, having ound his career calling at Dallass SkylineCareer Development Center, a high school withcareer programs in a number o dierent felds.

Skyline is one o the ew schools in the countrythat oers programs in architecture, Odamah says.

In some careers, Skyline students could even getproessional certifcations or licenses right in highschool. It was a great place because you could fnd outwhether you really wanted to enter a career.

Odamah says that the career cluster system atSkyline taught him the value o planning or hiscareer and his lie. We learned about planningahead, he says. Those who plan thingsahead o time dont have to catch up.Its just a matter o what a personwants out o lie. Planning gives

    you a better platorm orsuccess.

Acareer cluster is a group ooccupations and broad industriesthat share certain eatures. The

Hospitality & Tourism cluster, orexample, includes che and tour guide.Texas has adopted 16 career clusters(see back cover), the same ones designatedand developed by the U.S. Departmento Education.

As the graphic below shows, withineach cluster are programs o study,

which are more specic groupings osimilar occupations. Think o a programo study as being like a college major. In Hospitality & Tourism, you mightchoose to ocus on Restaurants andFood/Beverage Services in high schooland college.

ATAP is a Texas Achievement Plan, and its a smartidea to create one to guide your studies throughhigh school and into college or other postsecondary

education or training. Your TAP represents your chanceto take control o your education and career choices.Working with your parents/guardians and guidancecounselor, you can pick the cluster on which you

want to ocus your studies as well as your career and

postsecondary education goals. Dont worry. You arentlocked into your choices. You should revisit your TAPat least once a year to update it. You can change clusters, programs o study, and career and postsecondary goals as

your interests and ambitions change. Having a planeveni it changesis smarter than having no idea o what youwant to do and why you are attending school. Heres how

    to ll out your TAP.

There are more opportunities inHospitality & Tourismand theyare more variedthan in any other

industry in the world, says Paul Ser,president emeritus o the Texas TravelIndustry Association. Its also one o themost accessible to all levels o educationthis is one industry where you can startout waiting tables, and end up runningthe restaurant.

Ser, who has been in Hospitality &Tourism or nearly 40 years, is ull oexamples o rags-to-riches tales: I knowone young lady who got a part-time jobas a sweeperette at a Busch Gardens park, and ended up as the CEO o a major themepark, he says. I know someone else whogot a job as a bellman at a hotel to support

himsel while he earned his undergraduatedegree in psychology, and ended up lovingit so much that he orgot all about becominga psychiatrist and went into the hotelbusiness. Today, he runs a 200-hotel chain.

Whats the moral o these stories? Iyou love this industry, and you have apassion or it, you can go all kinds o places,Ser concludes.

Tea TraelStatistics vary, but by most accounts, theHospitality & Tourism cluster is projected tohave the nations third-largest employmentincrease, among all job sectors in theU.S. According to Shane Blum, Chair othe Nutrition, Hospitality, and RetailingDepartment at Texas Tech University, by

the year 2016 the Hospitality & Tourismindustry is expected to employ over 10million people and to generate $1.47 trillionin revenue in the U.S. alone.

    A Growing Field

There are incredible opportunities in thelodging and hospitality industry, says ScottJoslove, president and CEO o the TexasHotel and Lodging Association. In thelodging business, people taking entry level

jobs are more likely to become managersthan in just about any other career. We

tend to promote rom within, and theopportunities are bountiul or students whoapply themselves and stay in the industry.

Industry wages are variable, beginning at minimum wage orunskilled nonsalaried employees, and growing with skills, experience, and education. Salaries average around $45,800, though the potentialto earn more money is certainly there. Earning potential can behuge, Joslove says. Managers in hotels, or instance, can earnanywhere rom $28,000 to above $84,000, depending on the location

and the size o the property. There is a huge demand or employees

in every aspect o hotel administration,he continues, rom starting at the

ront desk, to working in ood serviceat an area hotel or restaurant, tomanaging just about any unctiono the businessaccounting, sales, personnel, security, operations, computer technology, marketing.

No matter what your interests are, theres a place or you in hotels

    and lodging.

    Marketing Texas

Aaron Demerson is the executive director o the Economic

Development and Tourism Division, Ofce o the Governor. Hisjob is to market the state to travelers rom the U.S. and abroad.Hospitality & Tourism is a huge industry, with a signifcantimpact, and the opportunities within it are nearly endless inTexas, says Demerson. In 2008, the total inpact o the Texas travelindustry was $33.6 million in earnings.

When Demerson begins to list some o the job opportunitieswithin the Hospitality & Tourism cluster, he runs out obreath: Ches, catering businesses, anything having to do with

restaurants, sporting events, theme parks, cruise lines, any sort oarts and entertainment estivals, museums, visitor and conventionbureaus, campgrounds, accommodations o all sorts rom theront desk to behind the scenesi it has to do with travel ordining or entertainment or hotels, it fts in this cluster. And you

can easily have a very successul career in Texas.Youre only limited by your imagination.

Hospitality & Tourism is a great feld or studentswho have a lot o energy and who are looking or acareer thats ast-paced, thats creative, and that letsthem work with people, adds Marilyn Wragg, withthe Curriculum Center at Texas Tech University. But what really makes the careers in

this cluster unique is that they are nearly always alot o un.

    Page 7

This is a projection o 10 ast-growing careers in Hospitality & Tourism in Texas rom the year 2006 to 2016 andthe number o new jobs created in each occupation. Note that whereas the percentage o growth in jobs may behigh, the actual number o jobs created may be low. For example, there will be only 100 new jobs or umpires, reerees, and other sports ofcials created in Texas during the decade that the data covers.Source: Texas Workorce Commission.

entire industry, says Yale Feldman, generalmanager o the Intercontinental Dallas Hotelin Addison, which oers 528 guest rooms,31 suites and 36 meeting rooms. I havecontrol over all aspects o the hotel rom guesthospitality to sales to operations to communityrelations to reporting protability to theownership. I love it, its excitingbut there isnever a set schedule.

Feldman gets in at 7 a.m. every morningand walks around the hotel. At 8 a.m., I meetwith the sales department to review the paceo business, he says. Next, I meet with key

management personnel so that everyone knowswhat to expect in every aspect o the hoteltoday, rom the ront desk to the restaurant tothe parking garage. Then a million dierentthings happen. By 2 in the aternoon, whoknows what I will be doing? I nish theday between 6 and 7 in the evening. Hotelmanagement is a minimum o 10 hours a day,ve or six days a week. The compensation is

very good, but you have to work hard.

    Remain Flexible

Flexibility is the key to staying positive inthe ace o such hard work, says Jackie Ray,sales manager or the Omni Corpus ChristiHotel. Once the oce opens, my day is notmy own, she says. We book events throughthe year 2012, so at any given point I mighthave a client calling about something thatshappening next month or a meeting thatshappening in 2010, she says. I attend severalmeetings every daymy ocus is making sureeverything is clear and concise and everybodyknows what is expected.

For Ray, the reward is in making the clienthappy. I you think about it, where else can

you get the instant gratication rom workingextremely hard and having an event planner

come up and hug you because you just got hera promotion? she asks. I love this job.

    Energy Matters

It takes a lot o energy to be successul inHospitality & Tourism, says Scott White, executive director o the San AntonioConvention and Visitors Bureau. Whitemanages a team o 75 people responsible orbringing upward o $300,000,000 in tourism-related dollars into the San Antonio economy.

In this business, you never know how the

day will start or end, he says. You have tohave a positive attitude and enjoy working

with people, and you have to be very fexible

and mobile. Because o my job, Ive been allover the countryIve been to Europe and toMexico, places I wouldnt have gotten a chanceto see i it werent or this industry. It can begruelinglate hours and working around theclock. But you meet a lot o neat people and

you make a lot o riends. I would not trade itor anything.

When I started here, I was so timid, remembers Gannel Cordero, who attended the culinary arts

Technology Education in El Paso. But ateacher, Sharon Erwin, told him how hehad grown a lot, and I dont doubt it,says Cordero. I went out and got a job ata restaurant. Ive been accepted to threeculinary schools. I will own my ownrestaurant someday.

For students like Cordero, Texashigh schools oer a world

Career preparation starts withmastering English, math, and otheracademic subjects.

You might not think much about it,but English language skills and publicspeaking skills are crucial in Hospitality& Tourism, says Yale Feldman, generalmanager o the Intercontinental Dallas

Hotel in Addison. Employees are talkingto people all the time, and their job is tomake guests eel important. Employees

also need to listen, and be able tonegotiate when necessary.

Many Hospitality & Tourism jobsalso involve serious number crunching.Lorraine Hamilton, who teaches HotelManagement and Travel and TourismMarketing at the Guthrie Center, a highschool in Houston, says her studentsgain real skills. It does help them getaheador example, a ormer student

Courses in Hospitality Services are oeredat Klein Oak High School near Houston, in

partnership with the Marriott GreenspointHotel. The rst year, students rotate through

six dierent departments in the hotel, says Brends Stoeck, who has been a part oteaching these courses or many years. Theyinclude engineering, housekeeping, lossprevention, banquets, kitchens, restaurants, ront desk, phone system, accounting, andsales. The second year students pick twoareas to gain experience in more depth.Working with industry and getting real work

    experience is invaluable.

As with hospitality classes, some oodproduction and culinary arts programsare taught in coordination with corporatepartners in the community.

Take, or instance, Wylie High Schoolnear Dallasthe rst school in the stateto be accredited by the American Culinary

Federation, according to Yvonne Loya, program director or the Texas Restaurant

Association Education Foundation.Wylie partners with the Texas

Restaurant Association to oer a two-yearcomprehensive culinary program called FSPrep, headed by Che Steve DeShazo.

DeShazo, however, does ar more thanclassroom teaching: We set up a student-runrestaurant called Pirates Cove ca.Were open to the public and serve about

100 guests a day with a menu o 28 items in a90-minute lunch service. It is stressul, highpressure, and quick. But we have 100percent quality engagement among ourstudents, and thats what has made theprogram successul.

DeShazo also makes ServSae certicationintegral to his programas do most Texasculinary programs. ServSae certies that

you know basic sanitation and saety skills, he

explains, and most restaurants require thattheir employees have it.

When you walk in with a ServSaecertication, it will always give you an edge,Loya adds. Its something you carry with

When Monica Martinez, MichelleLopez, and Reyna Martinez gottogether to come up with a winning

Hospitality & Tourism program, theythought about a lot o things: cruise ships,ve-star hotels, innovative amusementparks. As seniors in the culinary artsprogram at San Antonios John JayHigh School, the three were preparingto compete in the Family, Career andCommunity Leaders o America (FCCLA)state-level hospitality STAR Event (see Bea Star at right). They needed a winningideain act, they needed a wowingidea.

We wanted to present something thatwould show what hospitality was about, and something that was coming rom theheart, remembers Reyna Martinez. Wewanted an aspect o the industry thatsnot recognized very oten. So we pickedcharitable services. We invented a shelter or

amilies and created a complete portolio

or it, including a website. We wanted toshow that you dont need a huge amount omoney to give hospitality services to thosein need.

It was a good ideaso good, in act, thatit won the three students rst place in thestate, with an opportunity to compete at a

    national level.

    gett Eperece

In Hospitality & Tourism, gaining real-world experience as early as possible is amust. Internships, job shadowing, servicelearning, part-time work, and participationin career and technical student organizations(CTSOs) are all out-o-class education, calledextended learning.

I get students out in the industry and getthem seen; I give themreal lie experience,

says Tim Kelly, teacherat John Jay HighSchool. I encourage

them to talk to lots and lots o people.Students dont know where the next job oeror the next scholarship will come rom, orwhen a business relationship will pay o

years and years in the uture. He also urges students to compete

in local, regional, state, and national

competitive events, including STAR Events.Competition among their peers willimprove their skills the most; it will givethem an edge, Kelly believes. It will allowstudents the opportunity to see what othersare doing in the marketplace.

CreATe a CaporTFoLioOne valuable tool that can help you getready or college and beyond is a careerportolioa collection o items that

document your achievements both inand out o school, assembled in oneconvenient package.

A career portolio is not simplya resume, although it can certainlyinclude one. So what should go in acareer portolio? A variety o things, depending on your own personalexperiences. It could include transcriptsand grades; writing samples; letterso recommendation rom teachers, mentors, or employers; awards youvereceived; and items that documentother activities, such as internships and

job shadowing experiences. You need to be specicdates, how

many years, any awards, what theymeant, and who you received themrom, says Grace Brauchle, who helpsstudents put their portolios togetheras the career center coordinator orLehman High School in Kyle.

Brauchle says portolios come inhandy when students apply or jobs oradmission to college. First impressionsare a very big thing, she says, and

you want to be the one whose papersget passed around the oce. You want

to be the one where the admissionscounselors say, Wow, look at this one!

And a portolio doesnt have to besimply a collection o papers. Artistsand photographers use their portoliosto provide visual examples o theirwork, and so can you. Do you havephotos o someone giving you anaward? Put them in. How about a videoo a perormance? Include it on a DVD.Do you have experience in Web design?Make an online portolio to showcasewhat you can do.

From the time he rst plopped downon the couch and watched JamesBrolin striding down the corridors

o the St. Gregory on the TV series Hotel, young Arthur James knew what he wantedto be when he grew up: a hotel generalmanager. That was 1986, when James was areshman in high school. It also happenedto be the very night beore his applicationto the Dallas area Skyline Magnet Schoolwas due.

Up until that moment, I wasnt surewhat I wanted to do, James remembers.

Then I saw James Brolin holding hisbriecase, and I thought, I can do that!

So I signed up or the hospitality programat Skyline. As soon as I set oot into a realhotel, I knew. This is really what I wantedto do with my lie. I never regretted thatdecision.

This is a story James shares regularlyin his capacity as hospitality managementcoordinator or North Lake Collegein Irving.

The beauty o high school programslike Skylines is that they let studentsdiscover whether this is something theywant to do with their lives beore they

pay or a college degree, he says. Skylinelets students get hands-on experience, and theres no substitute or that. But istudents learn they love it, they need to goto college and learn the skills needed tosucceed in the career. Without a degree, proessionals eventually hit a glass ceilingin this business. Thats why students needto pursue a higher degree.

    Two-Year Opto

North Lake College is part o the DallasCounty Community College District; oneo many community-based postsecondaryschools across the state oering associatesdegrees in hospitality management. Ithink students are highly prepared whenthey leave, James says. A lot o what weteach is rom the textbook, but we docooperative education, too, which meansthey get hands-on experience. And withmy background, Im able to share a loto real-lie examples. Similar programsare also available at Austin CommunityCollege, South Texas Community College,Central Texas College, Alvin CommunityCollege, Del Mar College in CorpusChristi, and many other institutions.

certications or those seeking specic skills. For example, Richland College in the

Dallas area oers an associates degree intravel, expositions, and meeting managementor students seeking to learn how to becomemeeting planners, and a certicate in meetingplanning or hospitality proessionals seekingto broaden their skill set.

The certicate in meeting planning isuseul or people who want to be a conerenceor convention planner, says M. T. Hickman,Richlands travel, exposition, and meetingmanagement program coordinator. The strength o this program is thattheres a lot o applied learning. Studentsparticipate in an internshipthey actuallywork at a conerence. The students workbehind the scenes, rom sunup to sundown. Its never boring.

Community colleges are also an excellentroute or those seeking culinary careers.Mary Kunz is the department chair otourism, hospitality, and culinary artsat St. Philips College, part o AlamoCommunity Colleges in the San Antonioarea. The culinary arts program is amongthe best in the nation and is accredited bythe American Culinary Federation.

The curriculum at St. Philips is not

only ocused on ood, but also on buildingacademic skills students may not realizethey need: We require English, sociology, and math. A proessional manager mustknow how to communicate with peopleand understand them, Kunz says. As ormath, a proessional che may be asked totake a recipe that eeds eight and make itwork or 450. Students dont necessarilythink about that.

    or-Year deree

Beyond working in the kitchen, there is aworld o ood management that requiresa bachelors degree, says Shane Blum, program director o the restaurant, hotel, and institutional management program atTexas Tech University.

Blum worked in hotel managementbeore he turned to teaching. And like

James, he says a college degree is an asset. Ithink students need one to really achieve,he says. They can spend our years workingin the business and getting paid as anassistant manager, or our years going toschool. And yes, with the rst choice, theyllmake some money. But with a degree, theiroptions will be open down the roadtheyll go arther in the long run.

Danny Arocha absolutely agrees withBlums assessment. He would knowhesdirector o enrollment at the Conrad N.Hilton College o Hotel and RestaurantManagement at the University o Houston.I students want to be successul in theindustry, they absolutely need a degree toget to where they want to bethats eveni they want to open their own restaurant,he says.

The Hilton College is consistently ranked

among the top three hospitality programsin the nation. The college attracts studentsrom all over the United States and aroundthe world, though Arocha estimates that65 percent o all graduates choose to workin Texas.

We are preparing our kids to be theuture chie executive ocers [CEOs]and chie nancial ocers [CFOs] o the
