perfect couple: White Duck Taco Shop’s surprising and innovative tacos are best two at a time.

Whether it’s the rising popularity of Southern food, the big-name brew-eries moving into town or the fact that we’re just that good, Asheville bars and eateries are making big news these days. In fact, Trip Advisor named us one of the top 10 food and wine destinations in the U.S., which means we’re hobnobbing with culinary elites like San Francisco, New York City and New Orleans. Read on to get a taste of everything Asheville’s dining scene has to offer. T H I R S T y M O n kThe February/March 2012 issue of Garden & Gun magazine posits that the South is full of “perfect” watering holes. The perfect bar, says writer Guy Mar-tin, is one that “dove through the low end with such force and velocity that it punched through the bottom and came out the top.” If we are to take that literally, then Thirsty Monk, which the magazine named in 2011 as one of its “Top 50 Bars in the Southern U.S.,” certainly fits the bill (it’s also received high marks from Rate Beer, Paste and Draft magazines). Established in 2008 in the comfortably cool and dark basement of a Patton Avenue building, the pub originally focused on complex and heady — and often quite strong — Belgian beers. As the brew scene evolved in Asheville, so too did the Monk, expanding upward and out of the basement into the airier floor above while delving into the arena of American beers (it was only a matter of time, right?), and adding a second location in South Asheville. Thirsty Monk now boasts more than 62 rotating draft lines and tapped nearly 1,100 distinct craft beers in 2011. 92 Patton Ave. 252-5470, and 20 Gala Drive 505-4564 monkpub.com

f I R E S T O R M C A f éThis entirely vegan cafe and bookstore was named one of the “10 Coolest In-dependent Coffeeshops Across the U.S.” by the restaurant-rating system Za-gat in 2012. Does that make Firestorm less cool for being popular? We don't think so (or at least don't care). This worker-owned hideaway offers a number of seriously cheap eats, like a hummus bagel sandwich for around $4. What's more, the menu claims that the sandwiches are not only "awesome," but pre-pared by highly trained “kitchen ninjas.” Not enough for you? Consider the selection of independent and underground books, or the fact that once work-ers are paid, the café “reinvests 100 percent of its earnings” in the community, according to its website. 48 Commerce St. 255-8115 firestormcafe.com

W H I T E d u C k T A C O S H O p The spring 2012 issue of Bon Appetit magazine interviewed local art-ist Heather Knight to find out where Asheville locals flock for lunch and dinner. Knight, whose studio is located in the River Arts District, praised her neighbor, White Duck Taco Shop, for its fantastic and affordable tacos. We're partial to the Bangkok shrimp with its perfect blend of savory, sweet and spicy. The BBQ carnitas taco, complete with baked beans and slaw, is a riff on more traditional area cuisine (we mean before carnitas and sangria became part of the local lexicon). That sangria varies with the season, as do the sides, which offer a departure from the standard taco-joint fare. In-stead of glommed-on refried beans and iceberg lettuce for vegetables, expect fresh-herbed watermelon, kimchi (yep) and bracing gazpacho. 1 Roberts St. 258-1660 whiteducktacoshop.com

rant in Spain, was detailed in Lisa Abend’s book, The Sorcerer’s Apprentices. (Husband Felix Meana also turned up in the book; he worked as a chef de rang at elBulli before departing to help open the The Bazaar by José Andrès in Beverly Hills, Calif.) Since opening Cúrate, Button has been interviewed by the New York Times, considered for the James Beard Rising Star Chef Award and been nominated by Food & Wine magazine for a people’s choice award for young, up-and-coming chefs. Cúrate has impressed the locals, too. The relaxed-yet-refined restaurant offers classic Spanish tapas with the occasional modern twist, and service that is always on point. 11 Biltmore Ave. 239-2946 curatetapasbar.com

T H E M A R k E T p L A C EChef William Dissen is all over the news these days. Dissen was one of six “green” chefs selected nationwide by Fortune Magazine for the Brainstorm Green Conference in California. The five other chefs hailed from larger cit-ies — Houston, Los Angeles and Chicago among them — in another major coup for the Asheville dining scene. Why was Dissen selected? It may be be-cause Mother Earth Network named him one of “40 Chefs Under 40,” or that Monterey Bay Aquarium counts him among the nation’s Seafood Watch Am-bassadors. We suppose there’s an outside chance that it has something to do with the Toronto Star mentioning that The Market Place was a favorite dining spot for the actors in the movie The Hunger Games. Whatever the case, the restaurant’s modern-yet-comfortable seasonal cuisine is a draw for locals too, not just the movie stars. 20 Wall St. 252-4162 marketplace-restaurant.com

T H E A d M I R A L"What are truffles, steak tartare and imported oysters doing in a cinderblock dive bar amid the cool haunts of West Asheville?" asked the New York Times in 2010’s 36 Hours in Asheville, N.C. We bet more than a few tourists have had the same question. There's nothing showy about the exterior of The Ad-miral in West Asheville. But, as many locals know, you can't judge a diner by its awning — and the national magazines noticed. Among the publications to mention this tiny modern-American restaurant with the dive-bar clothing (besides the New York Times) are GQ magazine, Bon Appetit and Garden & Gun. It's certainly the juxtaposition of the high-caliber dining in the charm-ingly gritty former gas station that draws them in. It's the food, however, that has the editors making sure to devote the space. Should you decide to go, do what all the magazines say — call ahead (far ahead) for reservations. 400 Haywood Road 252-2541 theadmiralnc.com

When the kids are keyed up and the sitter is booked, don't fret; plenty of Asheville restaurants are kid-friendly. Some even up the ante to entice the rug rats, offering cuisine that’s leagues better than the typical grilled cheese and crinkle-fry fare. Here are just a few.

T u p E L O H O n E y C A f é“Surely by now even the youngest of palates knows that chickens do not have fingers,” reads the opening to the kids' menu at Tupelo Honey Café. And, true to its word, there's not a fictitious poultry appendage in sight at this well-loved nouveau Southern restaurant. Instead, the Tupelo crew believes that good eating habits start early, which is why the restaurant offers fresh fruit and side salads on its kids' menu. Is your child on what seems like a potato-only diet? Never fear. Tupelo still offers fries, in both the home-style and sweet potato varieties, which kids can enjoy with their local Hickory Nut Gap Farm burger. No meat? No problem. That burger can also be made “moo-free,” with a from-scratch black-bean patty. 12 College St. 255-4863, and 1829 Hendersonville Road 505-7676 tupelohoneycafe.com

Even if Indian food doesn't scream kid-friendly to you, consider the kids' menus at two of Asheville's most beloved restaurants:

M E L AAt the restaurant Xpress readers voted their overall favorite in 2011's Best of WNC poll, kids get to pick from a variety of pint-sized yet sophisticated dishes, including what Popeye reportedly ate while he was abroad: saag paneer (Yes, you may steal that line from us to persuade your children to try some-thing new). 70 N. Lexington Ave. 225-8880 melaasheville.com.

C H A I p A n IIn India, chai pani means “tea and water,” or “a little something.” Locally, it means a favored street-food style casual Indian eatery featured in the New

York Times and GQ magazine. Consider it a place for the little ones to have a little something, such as cheese parathas and roasted corn niblets with ghee. Even better news? Kids eat free on Wednesdays. 22 Battery Park Ave. 254-4003 chaipani.net

n E O C A n T I n A This Southwestern grill is also all about the kids. Neo Cantina hosts birthday parties with cake and the whole shebang, toys for repeat visits and elaborate ice cream sundaes topped with fortune cookies. Kids can munch on the requi-site fried items, it's true (although you can get fresh veggies on the side). How many places can you take the minis for dinnertime breakfast tacos, washed down with a chocolate-banana smoothie? And on Tuesdays, kids eat free. 10 Biltmore Plaza 505-7682 neocantina.com.

T H E H O p I C E C R E A M C A f éIf you have to feed your kid vegetables via elaborate trickery, consider a visit to one of The Hop’s two locations, which offer a rotating selection of fla-vors like sweet-beet and spinach-raspberry. For the ice-cream purists, safe and comfortable flavors like chocolate and butter-pecan are available, too. 640 Merrimon Ave. #103 254-2224, and 721 Haywood Road 252-5255 thehopicecreamcafe.com

Vegetarians in Asheville (or those trying to feed one) have a good culi-nary life. It’s hard to find a place that doesn’t have a quality veggie option. Indeed, in 2011, VegNews Magazine featured a large spread, calling Ashe-ville a "mountain oasis" and a "foodtopia" for vegetarians. The Vegetarian Times is equally effusive, counting the city among its "20 greenest spots in the country," and calling it one of the best haunts for the tofu set. Though most local restaurants will go the extra mile to accommodate vegetarians, the following eateries are entirely meat-free.

p L A n T Since opening in summer 2011, this all-vegan restaurant has impressed car-nivorous and herbivorous diners alike. It even became a favorite of electronic music artist and outspoken vegan Moby when he came to town for the Moog fest music festival. It's hard to argue when the sticky buns are such sweet perfection and the lattes come creamy and stout at breakfast (even though there's nary a drop of dairy in sight). For dinner, chef Jason Sellers turns out a number of sophisticated entrees with seasonal produce, using techniques meant to evoke the umami without the meat. Expect to find wild mushroom risotto sharing a menu with a housemade seitan "berger" and truffle frites, perfect for anyone with a hefty appetite, regardless of dietary preference. 165 Merrimon Ave. 258-7500 plantisfood.com

spirit. Chef Sandy Krebs took over the kitchen in 2011 (from the current chef of Plant, Jason Sellers) retaining many old favorites and adding some of her own global-fusion flair. Dishes like the East-West quesadilla, with its mix of Indian and Mexican flavors, speak to the menu's wordly influences. The restaurant's owners, Joan Cliney-Eckert and Joe Eckert, sourced locally way before it was cool, and continue to offer cheeses, breads and vegetables from WNC on the menu. 40 Wall St. 252-3445 laughingseed.com

R O S E T T A ' S k I T C H E nWhen politicians and punk-rockers habitually rub elbows in a restaurant, you know that something good is coming out of the kitchen. Owner Ro-setta Star's mission is to feed community right, she says, and she walks the walk. Peanut butter tofu and smashed potatoes are top-ranked comfort food, and Rosetta’s homemade veggie burgers are now carried by the grocery chain Ingles in the frozen-food section. That the restaurant stays open late into the night is also part of its successful formula. After the bars have wound down, you can find musicians, service-industry members and other night owls hob-nobbing over bowls of pad thai and vegan chili-cheese fries. 116 N. Lexington Ave. 232-0738 rosettaskitchen.com

V E g H E A d S d R I V E - T H R uOnly in Asheville could a drive-through burger joint be replaced by a vegetar-ian to-go restaurant. VegHeads Drive-thru opened in 2011, specializing in healthy and portable meat-free fare that's made from scratch on-site. Nicole Diamantis, who owns the eatery with her husband, Ryan Jeffries, emphasized when VegHeads opened that the goal was not "to reinvent the wheel" when it came to the menu. To that end, expect to find falafel, seitan "cheesesteaks," Southwestern-style burritos, plus grilled-cheese sandwiches for the little ones. In the mood for something light and sweet? Stop by for a vegan ganache-iced cupcake. 705 Merrimon Ave. 505-8540 vegheadsasheville.com

g R E E n L I g H T C A f éFounded in Black Mountain in 1998, Green Light Café moved to down-town Asheville some 12 years later. It now shares a building with the rather hip BoBo Gallery and wine bar, enabling wine service when the bar is open. The quick, fresh and affordable veggie joint's menu offers meatless staples and comfort-food items. Think: bean enchiladas with molé, tempeh reubens and spelt-crust pizzas with toppings such as butternut squash, feta and olives. The restaurant also offers a variety of smoothies, with additions like spirulina, alfalfa and barley grass. 18 N. Lexington Ave. 250-3800 greenlightcafe.com

Whole hog or butt? Pulled pork or ribs? Tomato- or vinegar-based sauce? Barbecue aficionados are a particular bunch. Most of the pit bosses in Ashe-ville are what pitmaster Ed Mitchell of Wilson, N.C., would call barbecue “specialists,” meaning they tend to go for smaller portions, rather than the whole caboose. Because of that, many Asheville ‘cue joints offer specialties like ribs to go along with the pulled pork. Some even serve (gasp) brisket, which is more of a Texas thing. 1 2 b O n E S S M O k E H O u S E12 Bones is certainly a brick in the foundation of the River Arts District’s renaissance — when it opened there in 2005, the area was simply known as the River District, gritty and perhaps underappreciated. 12 Bones moved into its squat brick building after the previous tenant found itself under 33 inches of water deposited by hurricanes Frances and Ivan. And though the restaurant has served President Obama and the first lady twice now, 12 Bones remains solidly grounded. (The owners did have to open a second location in Arden.) At both locations, you can find classic barbecue preparations, as well as cre-ative rib flavors such as blueberry chipotle. 5 Riverside Drive 253-4499, and 3578 Sweeten Creek Road 687-1395 12bones.com

L u E L L A ' S b A R - b - q u ELocals love the spirit of this barbecue outpost, which has a rather traditional feel to it, down to the warm hospitality of the staff. The mac and cheese is made with local hoop cheddar, the Brunswick stew is good and hearty and the okra is served the way any good Southerner worth his or her salt takes it — hot and fried. The meat is all slow-smoked, the portions big and even the bloody marys come garnished with bacon. 501 Merrimon Ave. 505-7427 luellasbarbeque.com

Located right across the street from Asheville High, the joint is a favorite target of local sports-lovers before the school hosts home games. The prices may not be the same as they were back in the '60s, but they remain relatively cheap — fried chicken (which many swear by) can be purchased for $2.30 per breast, $1.15 per leg. In-town Korean was hard to find before the owners of Stonebowl moved to Asheville from Brooklyn. The restaurant mostly avoids the pan-Asian route, offering authentic dishes like bo ssam (a generous portion of pork butt served with an array of accompaniments); bibimbap (a rice bowl with vegetables, fried egg and spicy sauce); and bulgogi (grilled marinated beef served siz-zling on a platter with lettuce for wrapping). Though it's fun to try adventur-ously meaty dishes like gom tang (oxtail and beef-intestine soup), there are vegetarian options, too. Everything on the menu is served with banchan, the traditional offerings of tiny dishes like kimchi, Korean food's staple sidekick. 1987 Hendersonville Road, Suite A 676-2172 stonebowlkorean.com

The Noodle Shop serves this soup with vegetables, plenty of basil and cilantro and a small jar of chili paste on the side if you require extra oomph. SALSA 'S MEx ICAn-CAR IbbEAn RESTAuRAnTChef Hector Diaz, the owner of this bright and boisterous Asheville mainstay, was born in Cayey, Puerto Rico. There, he learned to cook from his grand-mother, and some of her influence permeates Salsa's menu. Diaz has traveled to the Caribbean, Latin America, Central and South America, and what he learned there (and in less far-flung regions like Florida) spices his version of pan-Latin and island cuisine. Chef Hugo Ramirez changes his modern-Mexican menu frequently to showcase the best of the season, his Oaxacan roots and his classical culinary training. The food at this well-loved Asheville establishment shows shades of Californian and European influences. Think taquitos stuffed with slow-roasted lamb and served with consommé, or salads dressed with both Spanish manchego cheese and truffle oil. b AVA R I A n R E S TA u R A n T A n d b I E R g A R T E nBavarian cuisine often gets the reputation of being a rather gut-busting affair. And don't get us wrong, there's plenty to eat at this Weaverville spot that's in the stick-to-your-ribs style of Germany's greatest hits. Holstein schnitzel (breaded veal cutlets topped with fried eggs) served with spätzle is a meal for a man, indeed. But the Bavarian offers lighter dishes like fresh trout with potato pancakes and a Bavarian herring boat with apples and a champagne sauce. And for those in a wild mood, there’s a nightly "beast feast" featuring wild game, from boar to venison. 332 Weaverville Highway 645-8383 bavariandining.com

T H A I b A S I LThai Basil has been a perennial hit since opening in the Grove Arcade in 2004. At the time, the options for international cuisine downtown were sparse. Less than a decade later, Ashevilleans may have more choices for foreign-born fare, but the love for Thai Basil didn’t wane. The flavorful curries, pad Thai and chili mussels kept customers coming back — so much that the restaurant opened a second location in Black Mountain. Both rely on a winning strategy: fresh in-gredients and a welcoming atmosphere. At the downtown location, water fea-tures and wooden sculptures lend an air of enchantment to the dining room, with its large patio windows that open to the street. 1 Page Ave. Suite 151 258-0036, and 227 W. C H A M p A S u S H I - T H A IAnyone who spends more than a moment in downtown Asheville knows that we've got sushi in spades — and much of it is quite good. But this particular newcomer to Asheville (the original, located in Hendersonville, has already won many fans) has distinguished itself. Champa does offer a wide array of Thai dishes, it's true, but we're particularly taken with what the sushi chefs do with raw seafood. Take, for example, special "dumplings" wrapped in a thin sheet of raw tuna and topped with tobiko. Then look to the sushi bar for cre-ative rolls like the Sweetheart, made with spicy lobster, tuna, avocado and as-paragus wrapped in soy paper. 3 Biltmore Ave. 225-8885 champaasheville.com

Although we aren't exactly known as the city that never sleeps, Asheville's got plenty of game when it comes to the late-night nosh (yes, really). With a hop-ping bar scene and music venues that bump into the wee hours, it’s possible to score a quality bellyful before heading home.

T H E S O u T H E R n k I T C H E n A n d b A RIf there's one thing that we've learned from The Southern, it's that pimento cheese and truffled deviled eggs (not necessarily together) make fabulous snacks in the middle of the night (plus, this eatery's pimento cheese is argu-ably the best in town, for what it's worth — which in the South, is worth a lot). If you're after something more substantial than snacks, try to take on the Cubano, a sandwich laden with pork (braised and cured), plus provo-lone, Dijonnaise and pickles. And, speaking of cured pig parts, the meat-and-cheese board is full of house-made charcuterie, ranging from sausages to slower-cured items like salami. And, for the money, we think the ramen — a brothy bowl of noodles, pork belly, kimchi and yolky poached egg — offers some of the best after-hours fodder around. 41 N. S T O R M R H u M b A RStorm has the handle on sexy cocktails to be sure. But after you’ve tossed back a Devil’s Oasis or two (we get it — they’re just so good), it helps to have something in the belly. Steak frites are a solid choice — who can resist a pile of salty french fries and a mid-rare hanger steak after midnight? Tacos, made with house-made chorizo, are a safe bet, too. But, for sheer unbridled late-night pleasure, we recommend ordering one of Storm’s house-ground burg-ers. Top it with pimento cheese, roasted jalapeños and a fried egg and you’ve struck late-night gold. 125 S. Lexington Ave. 505-8560 stormrhumbar.com

O n E S T O p d E L I A n d b A RThough the address has long been known to lovers of live music, it's only recently become a haunt for hungry night-owls. With a change of ownership and name, this bar, located on the bottom floor of the Asheville Music Hall, stepped up its game, adding a menu that's accessible all day and right up until the place closes. At first take, the menu reads like a simple affair, with sandwiches, chips and a handful of salads. On closer inspection, though, you'll find that the chips are handmade — and we challenge you to come up with a more satisfying nighttime nosh than warm salt-and-vinegar or jalapeño chips topped with crumbled blue cheese. Oh, and speaking of comfort, check the selection of grilled cheese sandwiches, which can be scored plain-Jane or ooz-ing with melted brie and stuffed with caramelized onions, apples, ham and local mustard. Yes, please. 55 College St. ashevillemusichall.com 255-7777

u n I V E R S A L J O I n TVoted the home of one of the best burgers in Asheville by Xpress readers in 2011, the Universal Joint is also a great source for hungry insomniacs. The Steinbeck burger, covered with bacon, jalepeños and pimento cheese (why, yes, we are fond of the stuff around here), fulfills all of the midnight snack food groups. Though there are lots of burgers and burger-like items to choose from, the U-Joint also serves sandwiches whose stuffings reach beyond the beef patty. We're partial to the smoked-trout Reuben, traditional in nearly every way save the substitution of house-smoked trout for the standard corned beef (or, this being Asheville, tempeh). The wings, too, are particularly popular, winning a local wing-off or two. But, if late-night does not necessarily equal grease to you, we're tempted to steer you toward the salads, particularly the chili-garlic shrimp served over arugula with olive oil, lemon, cucumbers and parmesan. While your compadres are elbows-deep in man-food, you're likely to feel quite refined. 784 Haywood Road. 505-7262 ujasheville.com

R A n k I n V A u L T C O C k T A I L L O u n g EBefore its recent menu overhaul, the Vault was already a haunt for the PBR crowd, mainly drawn to the cheap beer, smoke-friendly patio and service-able $2 tacos. The kitchen staff has recently undergone a sea change, though prices remain solidly comfortable enough to attract the ... creative set. Pork and chicken tacos feature local Hickory Nut Gap pork belly and free-range chicken from Ashley Farms served on locally made tortillas — and incred-ibly, they still cost $2. For a buck more, you can procure a baja-style fish taco with shredded napa or a taco de pato of Ashley Farms duck breast. The bahn mi-style hoagie, piled with your choice of Hickory Nut Gap pork belly or locally made Smiling Hara tempeh, is scattered with a confetti of shaved jalapeño and carrot, cucumber, daikon and cilantro and smeared with a spicy aioli. This being a bar, there are the requisite melty paninis, warm and cheesy spinach dips, quesadillas and pita pizzas. As chef Scott Wallace aptly puts it, "It's simple food that's good to eat, whether you are or aren't drunk." 7 Rankin Ave. 254-4993 rankinvault.com.

L E x I n g T O n A V E n u E b R E W E R yThough the LAB serves a respectable crowd for lunch and brunch, it's in the evening when this pub, music venue and restaurant really gets hopping. With a huge patio, local brews (house brews, even) on tap, loads of seating and chef Jason Roy's very competent hand in the kitchen, LAB is a beacon for the af-ter-dark set. There's plenty on the menu in the way of standards: nachos, fries and wings. The nachos are piled with house-made chorizo and smoked beans. The fries are laced with truffle oil and fresh herbs; and the wings, though served with the standard accompaniments, are culled from ducks instead of chicken. If you crave something even more adventurous (and are partial to offal), try the duck-liver paté, served with flatbread chips, roasted red-pepper jam and apple. Does after-hours at the LAB sound fancy? It's not — observe the fried meatloaf on a stick and the Rocky Mountain oysters. “You know what it is,” the menu declares. Oh yeah — those “oysters” are also served “by the handful.” 39 N. Lexington Ave. 252-0212 lexavebrew.com

If you don't already know that Asheville bills itself as “Beer City, USA,” be patient — you're bound to hear all about it (hey, we've gotten a lot of mileage out of the well-earned title). But what might not be quite so immediately apparent is that our artisan chocolate scene is gaining momentum, too. We have so many shops turning out small-batch confec-tions that it's worth wondering if we'll soon earn the title of Bean City, USA, too.

f R E n C H b R O A d C H O C O L A T E SThis sweets maker is so popular that its lounge — complete with draft beer, wine and occasional live music on weekends — had to expand onto a second floor. The lounge still bursts at the seams on weekends, with tourists and locals alike pressed up against the windows as they wait in line. The long queue is not for lack of expedient service. Customers pass the pastry case on their way to order, and it's nearly impossible to not linger longingly over the rich pot de crèmes, chocolate cakes and brownies. The truffles might cause the biggest bottleneck, however. With flavors like local sorghum, porter-caramel (yes, we put beer in our desserts, too) and maple-smoked sea salt, it's easy to see why. What's more, French Broad Chocolates recently built a factory, complete with a solar roaster, to begin larger-scale processing (though it's still quite small-batch) of their carefully selected cacao beans into artisan chocolate. It's like a real-life Willy Wonka chocolate factory — without the Oompa Loompas. 10 S. Lexington Ave. 252-4181 frenchbroadchocolates.com

Elizabeth and crew turn out a selection of chocolate pieces as gorgeous as they are delicious. C H O C O L A T E g E M SMoving to downtown Asheville from Black Mountain in 2011, Chocolate Gems set up in a bright and airy spot that Susan Chisholm, who owns the chocolate shop with her husband, Andrew, said would offer more foot traffic. Absolutely do not miss the shop's gelato selection, made by hand in traditional flavors like chocolate, hazelnut, pistachio and dulce de leche. b L A C k M O u n T A I n C H O C O L A T E SThough you might be forgiven for assuming that this chocolate company is located in the charming town of Black Mountain, it's actually found just east of Asheville in the Swannanoa area. Black Mountain Chocolates is also a bean-to-bar chocolate maker, much like French Broad Chocolates, but on a micro-batch scale. The chocolatier, David Mason, roasts his beans in a cus-tom-made roaster and uses only organic cane sugar and other natural ingredi-ents in his finished products, which include everything from chocolate bars to soap. R A W S H A k T I C H O C O L A T EShakti Chocolate, a fair trade bean-to-bar micro-factory, makes bars using raw, organic cacao nibs. Much like you might imagine the Mayans doing it (you know, back in the day), the Shakti folks stone-grind their cacao into a chocolate liquor using a mélanger, or alchemist’s stone. Doesn’t that sound in-triguing? That stone must work some sort of magic, indeed, because it’s quite easy to get addicted. Perhaps that’s because their technique (which bypasses the extreme heat of traditional roasting in favor of sun-drying) leaves even more of chocolate’s famous mood-lifting medicine. Some call Asheville the Paris of the South, and with all of our cafés and bistros, it's not too much of a stretch. But we differ with our overseas counter-parts in that we don't consider evening lattes gauche. W A k I n g L I f E E S p R E S S OAt Waking Life, owner Jared Rutledge takes the art of espresso-making to another level. How is it an art, you ask? For one, Waking Life's baristas hand-brew each cup of coffee using a pour-over system. Flavored syrups are homemade with cane sugar, high-quality dark chocolate and vanilla from real beans. And in the fall, while chain coffee bars are churning out artificially fla-vored pumpkin concoctions, Waking Life offers its version with hand-ground spices and real pumpkin. Even though it doesn't contain fistfuls of sugar, peo-ple still line up for it. Rutledge treats his espresso beans like produce, "because that's about how fast they go bad," he says. 976 Haywood Road 505-3240 wakinglifeespresso.com

Owner Andrew Snavely travels to various tea regions to hand-select his offerings. And while that may all sound like it belongs in a Snapple commercial, the end result is something much more unique. Snavely's knowledge of Dobrá's products borders on en-cyclopedic and the menu reads like a thorough reference book. Beyond the tea, the shop offers various implements integral to ancient tea ceremonies, as well as a staff trained in the minutiae of the preparation and service of the teas. Although we’re saturated with beer and breweries, WNC has plenty for the wine lover. Many people know that the Biltmore Estate sports vineyards, the first vines of which were planted in 1971. Keg wine is greener since it takes less pack-aging, and it's often less expensive, too. Also, the wine in the kegs at Santé isn’t exposed to oxygen, so it often stays fresher than an average by-the-glass pour. Santé isn't all about the wine, though. The bar carries a large selection of beer in the bottle and on tap. And the kitchen turns out a great selec-tion of bites (with an extensive cheese menu and an awesome dip spread). We're particularly partial to the blue cheese-walnut spread. 1 Page Ave. #146, 254-8181 santewinebar.com T A b L EThe modern-American eatery Table has stepped up its entire bar program as of late. The resident mixologists make a selection of liqueurs from scratch, including a creme de violette made with violets picked locally in the spring. The restaurant also offers barrel-aged whiskey Manhattans and house-car-bonated cocktails. And don’t overlook the wine list. Table's wine director is an advanced sommelier and brings with him a vast fount of knowledge of the wine world. That doesn't mean that the list is full of expensive treasures, though. To the contrary: Table has a great selection of values to pair with the ever-changing, seasonal and locally focused menu. 48 College St. 254-8980 tableasheville.com

f A L d E R A L W I n E R yFalderal Winery offers everything to get started down the DIY winemaking road (and you thought you needed a Napa Valley vineyard). And, although the wine that you find at Hendersonville's Falderal is made on premises, the winery has no vineyard. Instead, Falderal sources grapes both nationally and locally in a rotating selection of varietals which are fermented on-site. The retail shop caters to home wine-makers, and to a lesser extent, beer-brewers, offering basics such as yeast and caps. The wine-making kits offer everything you need, including oak chips, yeasts and testing kits for acidity and sugar levels — even an array of bottling supplies. Falderal also offers wine-making classes twice a month on the basics of making wine at home. You could be the next Francis Ford Coppola. 131 Third Ave. West, Hendersonville. 693-7676 falderalwinery.com

A S H E V I L L E W I n E M A R k E TThis wine shop has been around since 1993, but continues to remain innova-tive. The Asheville Wine Market offers a state-of-the-art Napa Technology wine-tasting station, allowing customers to try new arrivals before commit-ting to a vintage. The store also offers wine-locker rental for those that would like to cellar their special vintages, but might not have the space or funds to build a climate-controlled storage area (we’d bet that’s most of us). The lock-ers are held at cellar temperature, can fit nine or 10 cases of wine and come with 24-hour security. How’s that for serious? 65 Biltmore Ave. 253-0060 ashevillewine.com

5 W A L n u T W I n E b A R The relaxed and intimate atmosphere of 5 Walnut makes it a favorite gather-ing place for locals. The bar carries an excellent selection of both old- and new-world wines by the glass (generally in the $5-$15 range) and bottle. It doesn't skip the beer, either. The bottled-brew list includes everything from $2 PBRs to a $28 22-ounce bottle of bourbon-barrel aged Alagash "Curieux,” and the six taps feature a rotating list of local beers. The almost entirely wood- and brick-filled space makes for a cozy spot to canoodle over a menu of small bites such as Spinning Spider goat cheese or Sunburst trout dip, each served with locally baked baguette. The bar often features live music. On warm nights, the sounds of laughter and song spill from the wide-open windows onto the street. 5 Walnut St. 253-2593 5walnut.com

Have one on me: Highland Brewing Company, Asheville’s oldest brewery, earned accolades from Esquire in 2012.

Asheville Brewing Company’s beers are brewed in two locations, so the state counts the company as two breweries. Both locales offer a variety of pub food and are both family- and dog-friendly (outside patios only for canines). ABC started canning Shiva IPA and Rocket Girl Lager in 2011, and now no local visit to the wilder-ness is complete without a six-pack. (675 Merrimon Ave. 254-1281, and 77 Coxe Ave. 255-4077.)

Craggie Brewing Company’s Public House offers freshly brewed session beers. The tasting room

crowd often spills over into the brew-ery, where live local musical acts per-form next to the fermenting tanks. (197 Hilliard Ave. 254-0360.)

French Broad Brewery’s tasting room is carved out of the corner of the brewery, which sports beauti-ful fish-scale tanks, highlighted by a disco ball. Tucked behind Bilt-more Village, French Broad’s ware-house ambiance, paired with flavor-ful beers and frequent live music, is hard to beat. (101 Fairview Road, 277-0222.)

by AnnE fITTEn gLEnnWhen Asheville was voted Beer City, USA in the examiner.com poll of the same name, both beer lovers and big brewers took notice of little ol’ Asheville. In early 2012, Sierra Nevada Brewing of Chico, Calif., New Belgium Brew-ing Company of Fort Collins, Colo. and Oskar Blues Brewery of Longmont, Colo. announced that their companies will build second breweries in the area. Before the big boys, though, came the laudable, home-grown craft brewer-ies. On any given day in Asheville, you can try more than 70 unique, locally brewed beers. Not that we recommend you do so in one day.

Green Man Brewery is the place to hang if you enjoy checking out soc-cer players while sipping rich, com-plex brews. This brewery has a strong local following of beer and sports en-thusiasts. A patio and plentiful park-ing make Green Man a hidden gem. (23 Buxton Ave. 254-0360.)

Highland Brewing Company, Asheville’s oldest and largest brew-ery, offers a huge tasting room, complete with a three-barrel system producing special beers just for visi-tors. The outdoor patio is shared by Troy & Sons, Asheville’s first legal moonshine distillery. Yes, you can have a taste of ‘shine with that Gael-ic Ale. (12 Old Charlotte Highway, 299-3370.)

Lexington Avenue Brewery, or the LAB (“Yes dear, I’m at the LAB.”), offers quality gastropub fare with their in-house beers. The brewery is also expanding — expect a more rough-and-tumble tasting room next door by the end of 2012. (39 N. Lexington Ave. 252-0212.)

Oyster House Brewing Com-pany brews handcrafted beers for The Lobster Trap restaurant. Their Moonstone Oyster Stout, brewed with real oysters, recently received kudos from Zane Lamprey, host of television show Drinking Made Easy. (35 Patton Ave. 350-0505.)

Pisgah Brewing Company remains the only all-organic brewery in the region. The brewers also pride them-

selves on brewing (when possible) with local ingredients, such as fresh hops grown down the road at Hop’n Berry Farm and locally roasted malts from Riverbend Malthouse. The stage in the meadow out back regu-larly features regional and sometimes national musical acts. (150 Eastside Drive, Black Mountain 669-0190.)

Thirsty Monk Brewery opened in October 2011 with a one-barrel sys-tem in the beer bar’s south Asheville location. Currently, almost all the beer brewer Norm Penn can produce is sold in-house, though every so of-ten, one of the offerings will make it to the Monk’s downtown location. 1836 Hendersonville Road, 505-4564.)

Wedge Brewing Company’s location in the River Arts Dis-trict makes it one of the primary afternoon and evening gather-ing spots for local artists, cyclists and other creative types. The funky spot next to the railroad tracks is so popular that most of the beer brewed there never leaves the premises, except in patrons’ bellies. (125B Roberts St. 505-2792.)

Yellow Truck Brewing Companyis slated to open in late 2012. A project of Pack’s Tavern, the brew-ery will be located in the historic old jail house behind Asheville’s Pack Square Park and will supply brews to the Tavern and other downtown res-taurants. (4 Marjorie St. 712-3456.)

A n d T H E R E ’ S M O R E . . . If you’re up for going farther afield, you can mosey over to Southern Appalachian Brewery (822 Locust St. Suite 100, Hendersonville); Heinzelmannchen Brewery (545 Mill St., Sylva); Catawba Valley Brewing (212 S. Green St., Morganton); Nantahala Brewing Com-pany (61 Depot St., Bryson City); Brevard Brewing Company (63 E. Main St., Brevard); Frog Level or HeadWaters Brewing, both in Waynesville (56 Commerce St. and 130 Frazier St.).

Other breweries in the planning stages include Altamont Brewing in West Asheville, Lookout Brewing in Black Mountain, Tipping Point Tavern Brewing in Waynesville, Blue Mountain Pizza Brewing in Weaverville, One World Brewing and Twin Leaf Brewing (both likely in Asheville) and Wicked Weed Brewery, going in next to the Orange Peel (in the former Asheville Hardware space).

Bread is a mighty big deal in WNC. In fact, we boast a well-attended ar-tisan bread-bakers festival, as well as a strong coalition of bakers that have worked hard to build a local mill, Carolina Ground, which began produc-ing local flour this year. Where to taste some of the best the local bread bakers have to offer? While plenty of bread abounds, here’s just a taste.

f A R M A n d S p A R R O W W O O d - f I R E d C R A f T b A k E R y This Candler-based craft bakery specializes in all sorts of baked goods, but it's certainly the loaves of bread that really get people swooning. Made from heirloom wheat and baked in wood-fired ovens, this bread is the real deal. Visit farmandsparrow.com for a list of where to buy.

C I T y b A k E R y Consistently voted as the city's best by Xpress readers in our annual Best of WNC poll, this bakery and café specializes in both sweet and savory baked goods. The café makes bagels in the traditional manner, with a little extra kick from letting the yeast develop a bit before the bagels get boiled and baked. The breads are excellent as well, and can be found in both café locations as well as numerous local grocery stores. 88 Charlotte St. 254-4289, and 60 Biltmore Ave. 252-4426 citybakery.net

A n n I E ' S n A T u R A L L y b A k E R yAnnie’s makes a variety of baked goods, from wedding cakes to bagels. But those loaves of bread, made with organic and all-natural ingredients, have earned the bakery a name. Annie's supplies many local restaurants and cater-ing companies — the largest wholesale account that they have is the Biltmore Estate — but the breads can be found in various retail locations and at the bakery in West Asheville at 128 Bingham Road. W E S T E n d b A k E R y West End Bakery is a big player in the local-food movement and one of the cornerstones of the the Haywood Road corridor renaissance. The café offers savory and sweet breakfast pastries and large, chewy bagels — we're partial to the jalapeño cheddar variety. Big supporters of the local food movement, owners Cathy Cleary and Krista Stearns even offer pizza dough made with Asheville Brewing Company's Ninja Porter to take-and-bake. The breads, too, are quite popular, made with organic flour — and many are whole grain. 757 Haywood Road. 252-9378 westendbakery.com

The Southern Appalachian region is home to almost 90 farmers markets. Asheville alone boasts a whopping 10. Except here, some also call them “tail-gate markets.” That’s because farmers pull their trucks right up to the market, pop down their tailgates and sell their harvest, often picked fresh that very market morning.

Area tailgate markets offer just about everything you can imagine that rep-resents the taste of local: farm-fresh vegetables, fruits, herbs, cheeses, eggs, meats, seafood, coffee, artisan breads and baked goods and handmade pastas to take home or enjoy right on the spot (many even offer up full-service food trucks — serving local food, of course).

They also offer handcrafted jewelry, natural cleaning products, furniture and lots more. And, many showcase local musicians, dancers, businesses and non-profits. In other words, they’re the perfect taste of the community, whether you’re a visitor or local.

The outdoor tailgate market season runs April through November. And many tailgates hold special holiday markets in November and December; some move indoors for the winter to continue their market year-round. Find in-formation about openings and closings, along with weekly reports on what’s fresh at area markets, at ASAP’s community website fromhere.org (you can also sign up to receive tailgate reports right to your inbox).
