CHAPTER ONEINTRODUCTION
I. THE COMPANY PROFILEThe Arce Family business started in 1935
when Don Ramon Arce, Sr., father of Don Mauro, established the Ice
Cream Business. Since then, Don Ramon has espoused the policy that
THERE IS NO COMPROMISE FOR QUALITY. Don Mauro not only handed this
philosophy down to the third generation of Arces running the
business, but added his own principle as well. MACHINES DON'T MAKE
MIRACLES, WHAT YOU PUT IN THE MACHINES IS WHAT COMES OUT.It is
therefore guaranteed that all the ingredients that go into each and
every product of the ARCE GROUP OF COMPANIES are very well chosen.
Unlike other manufacturers who sacrifice the quality of their
products when prices of raw materials increase, the Arce Family
rejects delivery of ingredients that do not pass high quality
standards, no matter how inexpensive.The Arce Family's unyielding
passion to produce only high quality products is such a remarkable
achievement because it bestows the consuming public only the best
and also forces competitors to raise their standards as well.The

III. HISTORYThe Arce Dairy Ice Cream StoryThe manufacture of ice
cream from fresh carabaos milk and fruits was originally
conceptualized by Don Ramon Arce, Sr. and Doa Carmen Arce in
1930.Its first plant, established in 1935, was situated in
Novaliches, Quezon City. In 1938, demand for the ice cream was so
high that the plant had to be moved to Lepanto St. in Manila,
making it more accessible to the consumers. The existing plant at
Selecta Drive in Balintawak, Quezon City under the stewardship of
Mauro C. Arce, Sr. was established in 1952.In January 1990, the
third generation of Arces outvoted the family of Mauro C. Arce,
Sr., and the brand name Selecta Dairy Product was sold to RFM
Corp.. However, the ice cream business and the dairy plant were
retained by the family of Mauro C. Arce, Sr. lock, stock, and
barrel.The Arce Dairy type of ice cream, the all-natural ice cream,
has captured the hearts of Manilanians through the decades of its
uniqueness and its old fashioned manufacturing process. Tenacious
requests from prominent clients, captive loyal followers and food
connoisseurs, demand for its return.In January of 1995, the dairy
plant resumed operations, and the family of Mauro C. Arce, Sr.
renamed the product Arce Dairy Ice Cream. This name was so chosen
because no other company can just call their product dairy ice
cream unless the butter fat content comes from milk. Only carabaos
milk can pass the butter fat content requirement for ice cream
naturally, without any add-ons. On top of this, the machines used
in the plant at Selecta Drive allow the use of solid chunks of
fresh fruits for flavouring the old fashioned way, unlike the mass
production machines which use puree.While the way of making this
gourmet type of ice cream remains almost unchanged for 7 decades,
the corporate name has had several changes to wit; Arce and Sons
Co. till 1949; Arce Sons & Co. till 1977; Arcecon Dairy
Products, Inc. till 1990, and now the present being the Arcefoods
Corporation under the chairmanship of Mauro C. Arce, Sr..Arcefoods
Corporation has been honoured the Hall of Fame Award as Outstanding
Ice Cream Manufacturer by the Consumers Union of the Philippines
while ArceDairy Ice Cream has been awarded the 1999 Dangal Ng Bayan
Outstanding Ice Cream Product and the New Millennium Excellence
Award Most Outstanding Ice Cream Brand by the Parangal ng Bayan
Awards Foundation.

CHAPTER FOURPROCESS & CAPACITY DESIGNI. PROCESS CHART
ReceivingThe milk arrives at the ice cream plant in their dairy
farm. The raw materials are received in the receiving department to
check if the goods are in good quality.
WashThe fruits are then washed to assure cleanliness on it.
WashThe ice cream cans are then washed to assure cleanliness on
it.
PasteurizeThe blended mixture is piped to
thepasteurizationmachine, which is composed of a series of thin
stainless steel plates.
Homogenizea process in which the fat droplets are emulsified and
the cream does not separate.
SortThe fruits coming from washing department will now be sorted
out to pick only those in good quality
LabelThe dry containers will undergo labelling according to
flavors.
CoolThe milk will be cooled immediately to prevent bacteria that
causes spoilage of the carabaos milk
StickerThe labelled cans are then tagged with expiration dates
and barcodes.
FreezeThe raw materials are then mixed. The mixture is piped
back to the pasteurizer where cold water, approximately 1C, flows
on one side of the plates as the mixture passes on the opposite
side. In this manner, the mixture is cooled to 2C in the batch
freezers.
HardenBefore storage and shipping, the ice cream must be
hardened to a temperature of -23C. The cartons are then stored in
refrigerated warehouses until they are shipped to retail
outlets.
II. CAPACITY DESIGNArce Dairy Ice Cream manufactures its ice
cream depending on the purchase orders (P.O.) from its customers
that the company received. Moreover, it has a production capacity
of a minimum of 80 batches per day and a maximum of 100 batches.
Generally, one batch of production contains 10 gallons of flavoured
ice cream with its special ingredients. Therefore, the total
production capacity of the Arce Dairys Ice Cream production per day
is summarized below:
Minimum of 80 batches:
80 batches 10 gallons = 800 gallons of ice cream produced each
day
Maximum of 100 batches:
100 batches 10 gallons = 1,000 gallons of ice cream produced
each day
CHAPTER FIVELOCATION & LAYOUT STRATEGYI. LOCATION LAYOUT
The Arce Dairy Ice Cream manufacturing plant is located at 100
Selecta Drive, A. Bonifacio, Balintawak, Quezon City.

CHAPTER FIVEHUMAN RESOURCES & JOB DESIGNThe companys adapted
standard work schedule is 8 hours a day, 7:00am to 4:00pm from
Monday to Saturday. The job design of Arce Dairy is job
specialization. Such design is beneficial to the company for it
promotes faster frequency of production because employees are
already very skilled in doing their jobs due to constant
repetition. They could also save some time because employees will
no longer be changing their jobs anymore. Arce Dairy has 7 people
working in its Mixing Department, 2 in the Washing Department;
Fruit Department has 4 workers, 3 in the Labelling Department and
ultimately 7 people in the Freezing Department. And there are 1 or
2 operators per department that oversee the efficiency and
behaviour of each employee during work. Employment-Stability
Policies deals with the number of employees maintained by an
organization at any given time. As for Arce Dairy it is to hold
employment constant. This means that they do not keep labour costs
in direct proportion with production. However, there are two
drawbacks with this kind of policy; one is when demand is low where
human resources are not fully utilized and the other is when the
demand is high and workers will have to extend their working hours.
Employees at Arce Dairy are Minimum Wage Earners. Arce Dairy also
has its own strategy to contribute job satisfaction and employee
motivation. First they have bonuses in the form of cash. They also
adapted an incentive system usually applied to the operators
assigned in each department. This is because operators have larger
scope of responsibility in the workplace for they are the one to be
first held responsible if ever their department caused a delay in
the entire production. To wit; operators receive higher bonuses
during December and are allowed to live inside the compound without
being required to pay the rental fee.CHAPTER SEVENSUPPLY CHAIN
MANAGEMENTThe aim of the company is to facilitate the movement of
goods in a manner that is appropriate to their industry. The degree
to which supply chain management is used depends largely on the
company. The procedures needed are far more advanced systems for
products like ice cream that requires careful handling, have short
shelf lives and/or for which demand changes rapidly.Food like fresh
ice cream are particularly challenging in this regard. Indeed, such
products are often called Fast Moving Consumer Goods (FMCG) because
of their special characteristics. FMCG are purchased in large
quantities, frequently replenished, highly perishable, required
over a large geographic area Supply Chain ManagementThe company has
adopted the End-of-Month system, to achieve higher operational
efficiencies and reduce inventory carrying cost. To achieve this,
the company has given preference to locally based suppliers. Over
75% of the company's suppliers are located within reach.
CHAPTER EIGHTINVENTORY, MATERIAL REQUIREMENTS PLANNING (MRP)
& JUST-IN-TIME (JIT)Arce Dairy uses Material Requirements
Planning for their inventory control.Arce Dairy distributes their
finished products (ICE CREAM) every day except on Sundays. They
make at least 800 gallons of ice cream a day which are all
distributed to their clients once produced. If ever there are
orders, they make sure that they can deliver on the same day. On
the other hand, they stock raw materials good for their one day
production. Its purpose is to ensure that their production will
still continue in case their suppliers fail to deliver on time.
However, there is nothing to worry about the raw materials being
spoiled because they make sure that whenever new supplies come, the
stocks are used for the production and the new supplies are being
stored (FILO).

The process in doing their main product includes blending,
pasteurizing, homogenizing, adding the flavour and freezing. A
simple and same as the general manufacturing of ice cream but as
according to them, every step that the milk undergoes has its own
uniqueness which brought it out to be the best ice cream in the
Philippines.
In addition, the quality control of the company in their
production is the secret of the Arces success. They provide some
quality control which is important in the companys day-to-day
operation.
