onset of spring,
it seems the
opportunities
for hea lthful
eating multiply exponentially. As the last
dingy patch of snow melts into the ground,
fresh produce options suddenly become
more sundry and colorful; backyard grills
are uncovered and fired up as the smell of
cooked food wafts from restaurant patios,
and in gardens all over the metro, seeds
shoot into sprouts.
In short, there’s no shortage of ways
to eat well during Minnesota’s growing
season. Surely, though, few can compare
to eating fresh produce, eggs, dairy and
meats direct from local farms. And that’s
just what Community-Supported Agri-
culture (CSA) offers. It’s a meeting point
between the rural and the urban united by
a commitment to the local food economy.
BECOME A CSA MEMBER BY PURCHASING A SHARE IN A FARM’S HARVEST For those unfamiliar with the
nuances of CSA, it basically works like
this: A customer becomes a member of
a CSA by purchasing a share in a farm’s
harvest. In return, he or she receives fresh
product—delivered to a specific drop
site in the metro—throughout the grow-
ing season. Each grower offers a different
package depending on their farm’s length
of season, items offered, cost, and pick-up
location(s).
What makes CSA unique is the
commitment to one farm and its success.
Buying a share of a farm’s harvest means
taking on the potential rewards of farm-
ing, as well as the risks. Often, the idea of
shared risk is part of what creates a sense
of community among CSA members, and
between members and the farmers.
Nationwide, as an increasing number
of people are discovering the better taste
and nutritional benefits of local food, CSA
is fast becoming a popular way for people
to directly connect with local farmers. In
1990, the number of CSAs in the United
States was estimated at 50; today, accord-
ing to Local Harvest’s grassroots directory,
there are more than 4,000 CSAs across the
country. (www.localharvest.org)
CSAS ARE BECOMING MORE DIVERSE CSAs are not just becoming more
numerous, they’re also becoming more

diverse, with different options available on
price, payment plans, and product. While
a typical share costs between $500 and
$700, a number of farmers are willing to
customize shares to meet pricing, quan-
tity, and product needs. Several CSAs offer
“work shares,” wherein members receive a
discount in return for working a certain
number of hours on the farm.
A typical share provides a wide vari-
ety of produce every week for four people
through Minnesota’s growing season (June
through September). For example, for
$550, a CSA from Sleepy Root, near How-
ard Lake, Minn., consists of a ¾-bushel box
of fruit and vegetables every week for 18
weeks. That’s basil through zucchini and
most everything in between. Sweet M’s
Farm, in Becker, Minn., offers a variety of
shares for the meat lover, with options of
beef, pork, chicken, and eggs throughout
most of the year.
Sweet M’s represents a recent trend
in CSAs. While there is still a bounty
of incredible produce-themed CSAs (as
Sleepy Root demonstrates), recent years
have seen an increase in CSAs featuring
local meats, cheese, bread, flowers, honey,
and even art.
Perhaps the greatest benefits of CSA
can be seen in the relationships that develop
after the shares are delivered. In addition
to the local food their CSAs provide, many
farmers also work to connect members to
the farm and one another. Farms may host
events, such as berry pickings and pot-
lucks, or encourage members to visit the
farm for a tour. Other CSA farms include
newsletters with recipe ideas and helpful
hints with each delivery. A few even mail
holiday cards to their shareholders, includ-
ing them among their family and friends.
What all of this demonstrates is that
supporting local agriculture is healthful
on many levels. Not only does eating real
food straight from the farm that produced
it play a part in a healthy body, but it also
contributes to a healthy community; one
that emphasizes relationships and shared
resources.

COMMUNITYSUPPORTEDAGRICULTURECSAs or Community Supported Agriculture Farms provide a weekly delivery of sustainably grown produce to consumers during the growing season (approximately June to October). Those consumers, in turn, pay a subscription fee. But CSA consumers don’t so much “buy” food from particular farms as become “members” of those farms. CSA operations provide more than just food; they offer ways for eaters to become involved in the ecological and human com-munity that supports the farm. EATING CONSCIOUSLY
N SAT U R DAY,
October 17, 2009,
during a midnight
trip to the bathroom,
I glimpsed in the
mirror. My left breast nipple was some-
what inverted. I felt a tumor. It was huge—
the size of an orange! How could it be sooo
big? I had a mammogram nine months and
a gynecology exam seven months before?
Diagnosis: I was informed that layers
of lymph nodes and possibly both breasts
would need to be removed, plus due to
surgery, I might never again lift more than
five to 10 pounds at a time nor raise my
arm above my shoulder.
Initially, while driving home from the
hospital, I felt fortunate to live near noted
medical communities. Then, thoughts
swarmed: I might never again change a
ceiling light bulb or lift heavy bags of gro-
ceries, or kitty litter.
OFF TO MEXICO FOR ALTERNATIVE CANCER THERAPY Once home, I called a friend. “Know
of any alternative options?” Together
we began emailing alternative-minded
friends for alternative solutions. Online
we discovered http://www.Hope4Can-
cer.com, a Mexico clinic that emphasized
a body-mind-spirit approach to healing
and a rigorous healthy, healing , detoxi-
fication diet program, as well as hyper-
thermia, and oxygenating the body to
kill cancer cells. My guidance was clear:
I was to go to Mexico for treatment; but
my mind screamed, “Who the hell goes
to Tijuana to go alternatively without
first trying surgery-chemo-radiation?”
The treatment program was perfect for
me.
EAT ORGANIC FOODS TO HEAL I was instructed to adopt the Kel-
ley Diet, a healing organic food program
designed by a “terminally” ill dentist
with pancreatic cancer. Dr. Kelley helped
thousands of people heal from cancer
before he died (not of cancer) some 30
years after being sent home to die. Dur-
ing the first few days of being on this deli-
cious food, I felt healthier than I had felt
in years. I soon gained energy and began
losing weight—never feeling hungry, nor
counting calories. Menus included mostly
vegetables, some fruit, with a little beans,
ocean fish (primarily salmon), and whole
grains, especially Ezekiel bread. Sixty-five
percent of the food was raw. I enjoyed cre-
ating recipes that satisfied my palate, were
easy to prepare, and beautiful to view on
plates. I cherished sending loving/healing
energy into my food and sharing meals
with friends who frequently exclaimed
that they thoroughly enjoyed the meals
I prepared and felt fabulous afterwards. I
juiced vegetables and Granny apples, and
made vegetable-disguised fruit smooth-
ies daily. Friends said I glowed from the
radiance generated by the healthy, whole,
organic foods I ate.
TUMORS VANISHED In eight and one-half months all
tumors vanished. I never had physical pain
from the cancer, felt depressed, nor energy
depleted. How could I, with the healthy
food and healing attitude I maintained? I
believe that healing alternatively, especially
through my new food lifestyle, saved my
life. It certainly saved my breasts, lymph
nodes, and my ability to live the wonder-
ful, normal, fulfilling life I now gratefully
live.
Every moment of every day we have
the opportunity to consciously rethink
what we believe, how we choose to feel
emotionally, what/when/how much we
eat, and how we choose to value our lives.
Cancer was a huge gift for me. Through
my startling, wake-up-call experience, I
choose to live, fully, from my heart, health-
fully.
What you eat affects all levels of being—physically, spiritually

BY KATE PEPPLER
I have been tumor-free for seven
months and am eating selectively to stay
cancer-free, but more than that, because I
am observing that the foods I eat greatly
impacts my physical well-being, allowing
me to grow exponentially more spiritual.
When I first was healed, I was elated.
Then I cried, a lot. I grieved for the many
people maimed or who died needlessly by not
knowing that the food we eat directly impacts
our overall health, mental well-being, and
quality of life—for better or worse!

S A hypnotherapist who
understands the power
of words and images to
both heal and disable,
I become concerned
when I hear people
referring to junk food as “comfort food.”
THE HYPNOTHERAPIST IN YOUR HEAD If you are struggling with food crav-
ings, remember that you have your own
hypnotherapist in your head (called con-
scious thought) that is constantly program-
ming your inner mind with beliefs about
food. Every time you associate junk food
with emotional comfort, you are program-
ming your subconscious mind to urge you
to reach for toxic products whenever you
feel stressed, angry, frustrated, or lonely.
Layer after layer of such programming
forms a strong self-hypnotic suggestion
that, left unquestioned, is very difficult to
ignore and overcome.
All hypnotic suggestion, no mat-
ter how irrational, is viewed and accepted
as correct by the subconscious mind,
especially when confirmed by repeated
recorded past experiences that strengthen
the suggestive thought and image. Every
time you eat sweet or greasy foods, your
mood becomes altered and a strong mental
association of eating these foods with emo-
tional soothing gets locked in.
You feel immediately, yet erroneously,
“comforted” when you have numbed or
distracted your feeling state with junk food.
In this way, toxic food products become
“positive” to your subconscious mind. And
remember, it’s the subconscious mind that
rules your behavior! No amount of will-
power or conscious thought to eat health-
ily and to lose weight can compete with an
established strong mental programming
that says eating junk makes you feel better
(and is therefore “good for you”).
The good news is that you can repro-
gram your subconscious mind by building
new associations with food. In this way,
you can take control of your cravings.
YOUR NEW COMFORT FOODS Let’s begin with some Webster’s Dic-
tionary definitions: “Comfort” is “a state
of physical ease and freedom from pain
or constraint.” “Comforts” are “things
that contribute to physical ease and well-
being.” “Discomfort” is “to feel uneasy,
worried, embarrassed or in pain.”
Ask yourself: “Does eating junk food
give me a state of comfort or discomfort?”
Truth: Processed, sugary, and greasy
foods cause joint and muscle inflammation,
belly fat, sluggishness, disease, cravings, and
weight gain. In addition, we often feel guilty
soon after eating them. In other words, they
cause discomfort, not comfort.
If you are interested in letting go of
cravings, begin by labeling products that
cause you emotional or physical pain as
“discomfort foods.” Likewise, label the
wholesome, nutritious foods that bring you
physical ease (i.e. a slender, healthy body)
as your new “comfort foods.” Writing these
foods in a list can be very helpful.
QUICK AND SIMPLE SELF-HYPNOSIS TECHNIQUE Here is a mental reprogramming tech-
nique that will help you resist junk food.
Whenever you see a food product
that is on your “discomfort foods” list,
firmly and without hesitation say to your-
self “I don’t eat that.” Remind yourself how
eating that product will cause physical
and emotional discomfort. Then, imagine
walking away from it, feeling proud and
happy. Consistently repeat this technique
whenever you see those unhealthy prod-
ucts at home, work, and grocery stores.
As junk foods become labeled and
programmed into your subconscious as
“inedible,” they lose their power to tempt
you. With practice, you will find the urge
to eat fattening food begin to diminish and

disappear. In fact, many of my clients who
use this technique tell me that the words “I
don’t eat that” now automatically pop into
their mind whenever they see their “dis-
comfort foods!” They report how easy it is
to now happily walk away from the sweets
and greasy products that once seemed irre-
sistible.
Enjoy how your new “comfort foods”
bring you ease and well-being and your
“discomfort foods” lose their appeal and
temptation.

ET’S FACE it, being over-
weight is tough. It’s even
tougher for women.
Like Oprah you may
have declared, “I am
never dieting again!” For 25 years, we have
watched Oprah lose weight and regain it.
Remember when she lost 64 pounds on
the liquid, 500-calorie Optifast diet and
regained her weight within weeks? Over
and over, her trainer Bob Greene (not a
nutritionist) prescribed a low fat, low calo-
rie eating plan in combination with over-
exercising. Unfortunately, this harmful
plan robbed Oprah of her basic metabo-
lism. Over 95 percent of people who fol-
lowed the traditional low fat, low calorie
diets find themselves at their starting
weight or heavier a year later. Less is not
more; less is just less: Less nutrients to sup-
port health and less nutrients to support
metabolism. Today Oprah may be won-
dering why it is so much harder for her to
lose weight. Have you asked yourself that
question? Perhaps you have done the low
fat, low calorie and over-exercising plan.
Now it is time to take back your body, heal
your metabolism, restore your energy and
balance your moods.
SLOW EASY PACE WINS RACE For the past several years, I have read
almost all the current and past research
about weight loss and metabolism and
attended seminars on these topics. Last
January when I decided to get serious
about losing weight, I knew I needed an
eating plan that was simple, easy to follow,
based on real food and one that would sup-
port my active lifestyle and work sched-
ule. I am happy to say that I lost over 40
pounds this past year, an average of ¾ of
a pound per week. You might say to your-
self that ¾ of a pound a week is not fast
enough for me, but we have a saying in our
Nutrition 4 Weight Loss class, “The slow
easy pace wins the race.” In two years, ¾
of a pound per week will add up to 80
pounds—without the fear of falling off the
plan and regaining all the weight back.
As Oprah has come to realize, weight
can’t be reduced to one simple equation:
eat less + exercise= weight loss. It may
work in a laboratory setting, but not in real
life. If it did, 67 percent of the population
would not be overweight.
EAT FIVE OR SIX TIMES EACH DAY A simple plan that will work for you
is to eat 5 to 6 times a day and include ani-
mal protein, vegetable carbohydrates and
healthy fats each time you eat. Eliminate
processed carbs and sugars. Stop drink-
ing soda, start drinking water, plan your
meals, and sleep 8 to 9 hours per night.
I invite you to take back your body,
lose weight, and achieve wellness. The
old theory of calories in and calories out
for weight loss is an oversimplified plan
based on the same old plan that repeatedly
failed Oprah. The new science of weight
loss addresses insulin resistance, adrenal
stress, cravings, and eating real food to
boost metabolism. Simply stated, change
your nutrition to change your weight and
wellness.

FELT like a failure until I
discovered a secret. It wasn’t
what I ate, but what I imag-
ined. I gained 40 pounds diet-
ing, lost it all using “Thinking
Thin” techniques I developed, and kept it
off over 25 years! If I can do it, so can you!
HERE’S HOW IT STARTED: PUBERTY HITS AND DAD GOES NUTS At age 14 I was feeling happy and
pretty in my favorite skirt, my father walk-
ing behind me. But then Dad said some-
thing that I will never forget, “Gettin’ kind
of broad across the beam, aren’t you kid?”
I was heartbroken! I loved Dad, so I
thought he might be right. I must be get-
ting fat!
Since Weight Watchers had worked
for my mom, I thought I would try it.
I hated having to put mustard in my tuna
fish instead of mayonnaise. That jump-
started my brain; my pants were only tight
because they had shrunk in the dryer! But
I still had weight-gain fear in my subcon-
scious mind. Little did I know, I was pro-
gramming myself for failure.
COLLEGE AND ENGAGEMENT I was in high school and in love with
a college boy!
Within a year we were engaged to
be married. But soon after, he broke up
with me. My self-esteem plummeted and
I started gaining weight.
I started a diet, but I was always hun-
gry. You know how diets work: They don’t.
My metabolism started slowing down
from yo-yo dieting, of course, and I gained
the weight back after each successive diet,
and more. Typical.
OUT OF COLLEGE AND STILL DIETING
I’m just as heavy, but totally
into health foods. That should fix
it, right? Wrong! Everyone I knew
was fasting to “cleanse their body.” I
hoped no one knew that secretly
I wanted to lose weight, but I
gained more weight after each fast.
All told, I gained 40 pounds fasting
and dieting over about 10 years. What was
I to do?
THE POWER OF LOVE AND IMAGINATION I decided I needed to love and accept
myself the way I was. Nothing else worked!
Once I did that, seeing myself as a Ruben-
esque work of art, it took very little time for
me to realize that I could play a game with
myself. I could use all the techniques I used
to be successful in sales and marketing—
my divine gift of imagination! Imagination
helped me soar to the top of every sales team
I was on. Why not try it for my weight?
I immediately started coming up
with ideas of how I would get thin with
my imagination and it worked magically!
EATING WHATEVER I WANTED Here’s the most amazing, surpris-
ing part of all; I ate whatever I darn well
pleased—ice cream, cookies! I just ate
them in more moderate amounts.
And low-fat? Forget it. I love butter,
oils of all kind, and lots of salad dressing.
Exercise? I feel like I want to get
out and move every day. Why? Because
I’m constantly imagining my slim,
strong image, so my subconscious is pro-

grammed for keeping me healthy. It’s
become such a habit, I just do it without
even realizing I do. In fact, while I am
writing this, I have been munching on
one of my favorites, Cheetos. And guess
what? I stopped munching before the
little tiny bowl was empty! Now I ask
you, does that sound like someone who
has ever had a weight problem?
