Apple Pie
Ingredients:
● 1/2 cup sugar
● 1/2 cup butter
● cinnamon (as much as
you like)
● nuts
Instructions:
Mix the ingredients into a
pan. Then cut four apples
(pick two kinds) into slices
and place them above your
mix. Afterwards, you can put
the nuts and the pantespani
on top.
For the pantespani /cake you
will need:
● 1/2 cup flour
● 1/2 cup sugar
● 2 eggs
● 1 & 1/2 tea spoons
baking powder
● 1 or 2 vanillas
Bake in the oven for an hour
at 180οC and the apple pie is
ready!
Cookies with
apples and cinnamon
Ingredients:
● 100gr. butter, 1 egg ● 130gr. brown sugar ● 60gr. fresh milk ● 250gr. all- purpose flour ● 1 teaspoon of cinnamon ● 1 vanilla ● 5gr. cooking soda ● 1 apple (about 120gr chopped in small
pieces) ● 60gr. chopped nuts or hazzels or
raisins
Instructions:
1. Mix the butter with the brown sugar
using a mixer for 4-5 minutes
2. Add the egg and mix for extra 3
minutes
3. Without stopping, add the milk and
the flour (which you have first mixed
with the cinnamon and the soda)
4. After 2 minutes, stop the mixer, add
the apple and the nuts and mix
carefully
5. Preheat the oven at 160 degrees (air
mode).
6. Drop spoonfuls of cookie dough onto a
pre-greased or a lined baking sheet.
Make sure you leave spaces between
them (they will spread out while
baked).
7. Bake for 20 minutes
Apple Muffins
Ingredients:
● 2 apples (middle- sized) ● 250 gr all- purpose flour or spelt
flour ● 2 teaspoons baking powder ● 2 teaspoons ground cinnamon ● 125 gr. brown sugar plus 4 teaspoons for the
decor ● 125 ml miel ● 60 ml runny yogurt or 30 gr. yogurt mixed with
30 ml milk ● 125 ml corn oil, 2 eggs ● 75 gr chopped almonds
Instructions
1. In a bowl mix flour, baking powder and 1 teaspoon of ground cinnamon
2. In another bowl by using a whisk you can mix the brown sugar, the miel,
the yogurt, the corn oil and the eggs 3. Cut the apples into cubes 4. Add half of the almonds into the flour and put the rest in another bowl 5. Mix the other half of the cinnamon and then 5 teaspoons of brown sugar
into almonds. (This will be used for powdering). 6. Preheat oven at 200 degrees. Grease 12 cup muffin pan
7. Add the solid ingredients in one bowl into the other. Add the apples and mix carefully with a whisk
8. With a spoon fill the muffin pan and then powder with the mixture you have
made 9. Bake muffins for about 20 min until
they have self-raised and browned 10. Allow them to sit for 5 min before
removing muffins from pan. Cool on a wire rack.
Apple Spoon Sweet
Ingredients
● 14 apples (1500 gr
cleaned)
● 1300 gr sugar
● 5 cups of water
● 7-8 cloves
● 2 cinnamon sticks
● 1 pinch of salt
● Juice of 3 lemons
● Peel of 1 lemon
Instructions:
1. We wash the apples thoroughly.
2. We put some water in a bowl and the juice of the 2 lemons (bear in
mind that the water must cover the apples).
3. We remove the pits of all the apples with a special utensil.
4. We peel the apples with a sharp knife, and try to clean the corners.
5. We cut them in the middle and we put them into the bowl with water
and lemon.
6. When we clean them all, we put
in a pot the water, the salt, the
sugar, the cinnamon, the cloves,
and we let them boil for 5’ on a
high flame.
7. We then put the apples in the
pot and we cover them with a
dish. When they start boiling,
we reduce the fire at half.
8. We let them boil for another 5’.
9. We remove the apples from the
fire and we let them covered
with the dish for 20-24 hours.
10. The next day we take the dish
away, put the peel and the
lemon juice and we boil the
sweet apples again until the
sirup boils down for almost 10-15’.
11. We let it cool down and we put it in jars of glass, which will be warm.
Spoon Sweet Firiki
Ingredients
● 20 firiki apples (a Greek variety of apples designated as PDO product, famous for its bitter taste)
● 1kg sugar ● 500 ml water ● vanilla ● blanched almonds ● a small bowl with water and
lemon juice ● 1 tablespoon lemon juice
Instructions
1. Peel the apples and remove the
seeds with a tool.
2. Put them in the bowl with the water and the lemon juice so as not to
darken, until peeling is finished.
3. In a wide pot put the sugar, the 500ml of the water and the
vanilla, and leave it for approximately half an hour.
4. Before removing from heat, test with a fork if it is soft enough,
otherwise leave it for a little bit more time.
5. If apples are soft but the syrup seems dilute, remove the apples and
let the syrup boil until it thickens a little.
6. Before removing from the heat we can put the apples in a
casserole with some lemon juice in order to add flavour.
7. In the inside part of the apples, we can put 2-3 shelled almonds. Finally,
we place them in clean jars.
This recipe is a traditional Greek one
and it is basically cooked in
mountainous and hilly areas of the
country and mainly in Pelion where
the Firiki apple variety originates.
Apple Roses
Ingredients
● 4 apples, cored and halved (leave the skin on)
● Juice of 1/2 lemon ● 3 Tbsp marmelade ( we used
apple and quince marmelade but you can use your favorite fruit)
● 2 Tbsp water (plus more for apple
soak) ● 1 sheet of puff pastry
Instructions: Preheat oven at 375o C
1. Cut the apples in slices. 2. Put apple slices in microwave safe
bowl. 3. Fill bowl with water and juice
from half a lemon. Use enough
water to make sure apple slices are covered by water. Microwave for 3 minutes. This will soften the apple slices and make them more pliable for rolling up.
4. Next grab a sheet of puff pastry. Flour your board and roll out the puff pastry. Cut the pastry with a pizza wheel or a knife to make 6 strips at around 7 cm wide.
5. In a bowl mix your marmalade with a couple tablespoons of water. Then spoon out the marmalade in the center of the strip of puff pastry.
6. Next place the apple slices long ways halfway on the strip. Keep adding slices
until you reach the end. Then fold the puff pastry over the bottom of the apple slices.
7. Roll up the puff pastry and place in a greased muffin tin.
8. Bake the apple roses for 35-45 minutes. 9. Pull out of oven and let cool for 5 minutes.
Αpple-Pear
Jam
Ingredients:
● 1kilogram apples
● 1kilogram pears
● 1kilogram sugar
● 1-2 cinnamon sticks
● juice of one lemon
Instructions:
1. Cut the fruits in little pieces
2. Boil the pieces in a pot filled
with one glass of water for 10
minutes
3. Afterwards add the sugar and
the cinnamon and boil the
mix again in mid temperature
for 35-40 minutes
4. 5 minutes before removing
the pot from heat, we pour in
the lemon juice which is used
as a natural preservative.
5. We then store our jam in jars
