Recipe of the Week

Caramel Apple Coffee Cake

3 eggs 1.5 cups sugar 1 cup of vegetable oil 2 tsp vanilla extract 3 cups flour 1/2 tsp salt 1 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg 4 cups chopped, peeled apples 1 cup chopped pecans

Topping

1/2 cup butter 1/2 cup chopped pecans 1/4 cup milk pinch salt 1/2 cup brown sugar 1/2 tsp cinnamon

Steps (preheat oven to 350)

In mixing bowl, beat eggs until foamy. Blend in oil, sugar & vanilla. Combine flour, salt, baking soda and add to egg mix-ture. Stir in apples & pecans. Pour into a greased 10 “ tube pan, bake at 350 for 1 hour and 15 min, or until cake tests done. Cool on wire rack 10 min. Remove cake to a serving platter. For topping, combine ingredients in a saucepan and boil 3 minutes, stir constantly. Slowly pour over warm cake. Enjoy!
