DESSERT WINE
Late harvest is a term applied to wines made from grapes left on the vine longer than usual. Late harvest are often more similar to raisins, but have been naturally dehydrated while on the
vine. Botrytis cinerea or noble rot, is a mold that causes grapes to lose nearly all of their water content and is generally very sweet.

FORTIFIED WINEFortified wines are made by adding a proportion of grape spirit or brandy,
to the wine at some point during the production process. The reason for fortification was to preserve wine from turning acetic or help keep the wine longer. Adding the extra alcohol
during the fermentation process stops the fermentation by killing the yeast.
Port is arguably the greatest of all fortified wines and its paramount expression, Traditionally it is served towards the end of the meal with cheese, as a dessert wine or as an after dinner drink
