A year ago they moved into their current headquarters on Arlington, and have expanded their retail clientele to 150 stores across the US and Canada. One of the remarkable things, however, is that customers have sought out the Ziegelmeier’s. As Kelly says, “It wasn’t us, it was the Lord bringing customers to us.”

The first major goal they had in their business plan was to have their product sold in Whole Foods and now their prod-ucts are in both the Tulsa and Oklahoma City branches of the health food super store. Whole Foods intends to expand the Ziegelmeier products into stores through-out the Southwest region next. In Ada alone, you can purchase their pecan butter at The Mix on Main Street, Apple Market, The Nutrition Center in Arlington Cen-ter, The Good Book Store, and The Bry-ant Pecan Company. You can also check out their website: www.Ziegelmeiers.com. They also send cases of their pecan but-ter to soldiers in Afghanistan and Iraq through an organization called Operation Enduring Support. The soldiers like to call it “liquid praline”. Kelly, who is a Navy Veteran of Desert Storm, feels like he’s sharing it with close friends and family. He knows what something like that can mean to a soldier far away from home.

Their pecan butter is all-natural, gluten free, and contains no preservatives, added oils, or trans fats. It comes in creamy or crunchy, and is naturally high in Vitamin E, antioxidants, and omega oils. Researchers have found that pecans are known to fight cancer, Lou Gehrig’s disease, and Alzheim-er’s. In addition to being good for you it is also delicious, reminding me of being home at the holidays, smelling pies and sweet po-tato casserole baking. Its uses are versatile as well. You can dip apples, bananas, celery, or pretzels in it, drizzle over waffles or pan-cakes, use as a garnish for sweet potatoes or pumpkin pie, or even create a glaze over grilled salmon.

There are many people who have helped them along the way, well deserving of many thanks—the families of Melvin Harris, Larry Harris and Pat Smith, their church group at Victory Life Fellowship, the food science group at OSU, Julie Fitzgerald at U.S. Department of Agriculture Made in Oklahoma Program, their business con-sultation team from the Ada Chamber of Commerce, and Stacey Golightly of Small Business Development Center at the Pon-totoc Technology Center. However, Kelly and Gaytha insist that the greatest thanks go to God. As their company motto says, “It’s Ziegelmeier and Company—God’s the company and we just work for Him.” ■

Sometimes, when we need it most, the world changes for us, offering a new path toward happiness. Kelly and Gay-tha Ziegelmeier are living proof of this. In January of 2010, they were seeking a new direction. Kelly wanted a new job that would utilize his degree in manage-ment and, as Gaytha stated, “We wanted to become closer to the Lord.” They fasted for three weeks asking God to find Kelly a different career path. In March of 2010, Gaytha was busy in the kitchen, making cashew and almond butter. When her husband came home, he joked, “Where’s the pecan butter?” Gaytha started by crafting her own recipe, adding a pinch of this and a dash of that, until she had the recipe just as they wanted.

In the beginning, they shared their creation with friends and family. Eventu-ally the demand increased and they need-ed a larger kitchen to make larger batches. Since there is no kitchen incubator in Ada (a rentable kitchen for new small busi-nesses), they had to travel to Durant on a regular basis for six months.

They decided to visit the basic food program at OSU and received guidance in making their dreams a reality. They made the pecan butter recipe for the science team, who then helped them increase the recipe to achieve larger quantities,

I can’t believe this is in Ada!”“I feel like i am in Dallas or Bricktown...

We all grew up hearing this familiar phrase, “Stop playing with your food!”, and as a parent, I am even

guilty of letting those words roll off my tongue. Karrie Flanagan has tossed this way of thinking to the wayside and now encourages her son, Keaton, to have some fun with his grub. Kids are fickle when it comes to food and they often times get stuck on eating just a few things and nothing else. As parents, we have to find ways to get them to eat a variety of foods. Karrie says, “If you have a few tablespoons of patience and don’t mind the kitchen getting a little messy from time to time, you will find the many benefits of playing with your food too”.

For Karrie, it all started with making Keaton’s birthday cake and special treats for different holidays. The real madness began though, when Keaton started homeschool and there was a letter of the week in his curriculum. Now Apples turn into monsters with marshmallow eyes and yellow fangs made of cheese cut into triangles. The best thing about making his food look fun is that he will eat almost anything now. The kid is five and he likes spinach because it usually ends up as grass or a tree on his plate. “I didn’t like spinach until I was twenty five,” exclaimed Karrie. Not only does being playful with food help your kids eat new things, it also is a teaching time for them.

When you get your kids involved in the kitchen they are learning a variety of math skills, reading skills, science, geography, health, art and fine motor skills. They are discover-ing food groups, measuring, sequencing, weighing, practicing fractions,

reading recipes and working as a team. Your kids will get to learn but they will be having so much fun they may not even realize it. This is where the tablespoon of patience comes in. Your kitchen is going to get messy. Milk will spill and flour will be scattered in places that you didn’t even know existed. It’s all worth it to Karrie because it puts a smile on Keaton’s face and there is nothing like spending quality time with her son. It is really neat to see your kid excited to eat something new just because he or she helped put it all together. It may take a little extra time, but it is time well spent and any parent can do it.

Karrie doesn’t have a degree in culinary arts, she just uses what she has in the house and tries to make it look fun. That first bite of food is always with our eyeteeth anyways - if it looks good, we will try it. A regular ‘ole grilled cheese sandwich can instantly become a santa clause with a holiday cookie cutter. If you don’t have cookie cutters, use a few cups to make the sandwich into different sized circles, stack them up...and you now have a snowman. Slap on a fruit leather scarf, chocolate chips for the face, a marshmallow top hat and your kid’s having Frosty over for lunch this holiday season. You will be amazed what you can turn food into if you just start dicing with a knife. You can also just use the plate as canvas for arranging the food in a fun way. Most healthy foods are very colorful and if you arrange them in a fun way on the plate, your kids are likely to start munching. If you have trouble with ideas go to the internet and search. Now forget what you learned as a kid and go play with your food! ■

IngrEdIEnTs:• 12 Large marshmallows• 6 Blocks of melting chocolate• 12 Miniature Pretzels• 12 Miniature Marshmallows• 12 Red Candies (M&M’s, Sixlets, Red Hots...)• 12 Craft Sticks• 8X8 Block of styrofoam

InsTrucTIons:Place the 6 blocks of melting chocolate in a micro-wave safe dish and microwave on high for 30 sec-onds at a time. Stir between each time until smooth. Insert a craft stick into one of the flat sides of a large marshmallow and dip into the melted chocolate un-til fully coated. Stick the bottom of the craft stick into the styrofoam block to hold it while you finish decorating the reindeer. Cut a mini marshallow in half for the two eyes and use one red candy for the nose. Cut one of the mini pretzels in half to make the two antlers and stick one on each side of the large marshmallow. (you must do these steps before the chocolate sets up and becomes hard) You can dip a toothpick into the melted chocolate and use it to paint on the dots to make the eyes pop a bit more. Repeat these steps to complete each rein-deer. Things go a little quicker and you can avoid the chocolate drying if you cut the pretzels in half beforehand. Eat and enjoy!

With Christmas quickly approaching, everyone is preparing for the rush

that comes with the holiday season. Though many dread the chaos found in department stores and grocery lines, it is also a time that causes people to remember holiday cheer, Christmas spirit and the importance of giving. Edy Hendrix is one woman, who has found a positive way to give back to her community no matter what holiday is approaching.

Born on October 28, 1949, Edy Hendrix grew up in a town a little larger than Ada called Aberdeen, South Dakota. Here she attended a Catholic school throughout middle school, and high school, until her junior year. At the age of 19 she married and started traveling around the U.S. with her husband while he worked different jobs for the railroad. This is how she first found herself in Ada, but after three years, it was time to move again, this time to Kansas City. After going through a divorce, she decided to move back to Ada to be with her sister. Edy said, “I moved back to be with my sister and her children, those kids have become like mine.” She has now lived here for twenty-three years. It wasn’t until Edy turned forty-two that she decided to go back to school. She was determined to get her college diploma, but with a full time job this would prove easier said than done. After 13 years of taking one class

per semester, she walked across the stage, diploma in hand. She says, “That was the proudest day of my life, walking across that stage and getting my diploma.” She worked as a registered nurse until she retired this year. Throughout her life, Edy had never given much thought to scrap booking or card making, in fact she often viewed these activities as “silly and unimportant.” Then, one fathers day, Edy watched as her sister make a scrapbook for her son. She realized it wasn’t as difficult as she once thought, but still lacked the motivation to get started. What was the point in putting so much effort into something that would most likely end up in a closet or drawer? Then one afternoon, she read an article about an organization that sent cards out to hospitals to terminally ill children. Here was the inspiration she needed. Here was her chance to make a difference. For 2 years she would make cards and send them to Kei Kei Cards in Hawaii, where they would then send the cards out to children all over the U.S. who were terminally ill. She said, “I loved doing that, making cards for those kids.” However, economic hard times made it more and more difficult for this organization to operate and eventually, after nine years of service, they were forced to close. This did not stop Edy from making

cards. She soon found another place that would utilize her passion. She began sending cards to U.S troops in Afghanistan through operation “Write Home”. She began to realize the impact a simple letter could make and said it was then she asked herself, “Why not do something for around home?” When her friend approached about making cards for the people in nursing homes she found her chance. She realized that many of the people in the nursing homes literally have no one. So now whenever a major holiday rolls around, Edy makes cards for these people in her own community. Edy said, “Sometimes I would think I’m not doing anything important.” Her friend who’s father lives at the nursing home always reassures her that the impact is more powerful than she realizes. Even the smallest things can have a much larger impact than anyone realizes. Many of the nursing home residents read their cards multiple times a day, and will show it to anyone who will stop and listen.

A local business called Scraptopia is where she buys all the things necessary for her cards and Edy says they have been incredibly helpful for giving her creative ideas. Edy said, the best part about what she does, is being able to do something for the people in my own community. ■

With the all earthquake activity in the last month, I thought I’d re-view earthquake survival techniques in this month’s column. Most of the earthquakes in Oklahoma are rela-tively small, but there has been a sig-nificant increase of seismic activity in Oklahoma during recent years.

This increase in activity means Oklahomans should be familiar with earthquake survival techniques, whether the quake is big or small. Be-ing prepared and knowledgeable can help save lives during earthquakes, which last mere seconds and don’t allow much time to react.

Before the earthquakeExamine your home and work-

place for potential hazards that could fall on or trap you. Televisions and bookcases are common earthquake hazards that can be easily secured in most cases.

An emergency plan should be created for all potential disasters, including earthquakes. This plan should include where to seek shel-ter and plans to reunite with family following the earthquake. This plan should be discussed in depth with

all family members. I recommend designating an out-of-state relative to serve as a communication contact for family members to call instead of someone that could be injured an emergency.

An emergency kit should also be made for all potential disasters. This kit should include: battery operated radio, flashlights, extra batteries, first aid kit, bottled water, canned food, blankets, and tools needed to turn off water and gas lines if necessary.

During the earthquake If you are inside, remain inside,

drop to the ground, seek cover in a doorway, under a sturdy desk, or against an interior wall. Avoid taking cover near windows, mirrors, fireplac-es, heavy objects, or hanging items that could fall on you.

If you are outside move to an open area, avoiding buildings, trees, and power lines. Be aware of your sur-roundings and avoid areas where ob-jects can fall and strike you.

If you are driving safely pull to the side of the road and remain in your car. Avoid stopping on or under bridg-es and overpasses. Also avoid trees,

power lines, and large sign that could fall on your vehicle.

after the earthquake Check for injuries and damages that

require immediate attention. Identify hazards such as damaged utility lines, avoid these, and notify the appropriate agency. Follow your emergency plan to reunite with family members, while lis-tening to your battery powered radio for information and safety advisories.

If your property is damaged contact your insurance agent to start the claims process, if your policy includes earth-quake coverage. Most policies don’t in-clude earthquake coverage, so check with your agent to add this coverage. State and federal resources may also be available if the event is officially declared a disaster.

Every seasoned couponer knows that there is a very fine line between having a stockpile and being a hoard-er. Have a reasonable stockpile will al-low you and your family to have a va-riety of food and household products available and can help during a time of financial strain. Hoarders keeps more products in their stockpile that they could ever use before the prod-ucts expire.

A stockpile should consist of 2-3 months of food items and 6-8 months of non-perishable food items. Most sale cycles will allow you to replen-ish common food products every 2-3 months, so this will naturally rotate your stockpile before products expire. Seasonal items, with long shelf lives, such as barbeque sauce, can be pur-chases in 6-8 month quantities.

If you organize your stockpile by product type and expiration date, with older products located at the front of your shelves, you are more likely to use your stock before it nears expiration. I recommend developing a weekly meal plan based on items in your stockpile and items currently on sale to not only rotate stock but to have fresh, unique meals each week for your family.

While it can be difficult to not pur-chase items that are free or nearly free, you should always think about whether or not your family will use the product before purchasing. If you’re purchasing items strictly for the thrill of buying them for free, you’ve crossed the line into being a hoarder.

Hoarders are often territorial over their purchases while those of us with a stockpile are often proud of their stock-

pile, its organization, and are willing to share products.

Every week, I spend a few minutes organizing my stockpile and enjoy showing it off to friends and family that come over to visit. I also enjoy let-ting them grocery shop in my very own “store.”

In the 8 months that I have been couponing, I’ve managed to build a very nice stockpile, but I recognize that now I can say no to some of the free deals because I have plenty of an item. The Extreme Couponing Show features cou-poners with enough of a product to last over 5 years, which isn’t a realistic use of stockpile space neither nor good cou-poning etiquette. Clearing the shelves because an item is free doesn’t respect other couponers in your community and allow them to get deals as well. ■

Many things make Ada unique. One thing that might surprise many people, though, is that Ada has a green jobs train-ing center—the only one of its kind in the state. Through the partnership and hard work of ECU grant writers, the College of Continuing Education, and the team of Dr. Doug Weirick and Dr. Guy Sewell, ECU is host to this groundbreaking program for environmentally conscious job education. When Weirick and Sewell were contacted about the availability of green job educa-tion, they jumped at the opportunity to do something to help both the environment and those in need of further job training.

The program was a perfect fit for Weir-ick and Sewell. Weirick is the Department Chair and Sewell is the Kerr Endowed Chair of the Environmental Health Science program at ECU. Weirick studies solar en-ergy, while Sewell focuses on water issues and environmental economics. One of the reasons why this program is on the fore-front of green education in Oklahoma is because of the unique partnership of both university and granting agencies. It has received the Veterans Green Jobs Grant, and also awards from the Department of Commerce and the United States Devel-opment Agency. This alliance provides a level of credibility that brings people from

all over the state.The skills taught cover a wide variety

of environmental issues, and funding has been available for veterans, the un-employed, and those who are employed yet in need of further job training. There are four different modules of study. Two of them concern weatherization—one for the employed and one for the unem-ployed. When studying weatherization, students learn how to do energy audits of buildings and learn about aspects of healthy homes for both efficiency and health. These are skills that can be used as part of a job, or simply to lower your own energy bill and increase the overall healthiness of your residence.

In addition to weatherization, a pro-gram is also offered in photovoltaics—more commonly known as solar panels. Fourteen photovoltaic panels were pur-chased with the Veterans Green Jobs Grant and have been installed on a simu-lated roof desk built by the ECU physical plant with materials donated by Mead lumber, and is located behind the ECU Police Station. The intent is to have the system fully functional soon so people can learn how to maintain and install so-lar panels. Eventually it will be hooked into the ECU power grid and the hope is

to have a power station located next to it where people can charge their phones, lap-tops, or even electric cars.

The other program offered is LEED (Leadership in Energy and Environmental Design) certification. Both online classes and certification are paid for with a grant. It can be incredibly beneficial to those who take it, whether they have a business or want to start a business, have a job already or are still searching for one. The skills can help you save money in the operation of a business or maintenance of a home, being both economical and healthy.

Eventually, electric costs are going to go up. These programs help save money while helping the environment. The cost of solar panels is dropping while the cost of electric-ity is rising. Green technologies are going to be immensely important in the future; training such as Weirick and Sewell provide will develop a group of people locally who will be able to keep up with the changes in the future. By taking part, we can help our community and the world beyond. These programs are free, available to the public, and looking for participants.
