KENYA This east-African country produces some of the best coffee in the world. We make the trek to Kenya to purchase these special coffees each year and se- lect from the best our exporter partners have to offer. Hundreds of small lots are cupped in order to create the special Kenyan coffees we offer. Tasting Notes: Though this is our lightest coffee on the roast degree spectrum, it is in no way light or delicate in terms of body or taste. This is an intense, full-flavored cup with a clean, powerful beginning. Kenya is full of sparkling brightness, and has a huge velvety body that serves as a backdrop for crisp, colorful black- berry notes. Lighter RoastsCOSTA RICA SOMBRA DEL PORO These beans are grown under the beau- tiful flower-laden branches of poro trees in central Costa Rica in the Taraz-zu’ re- gion. This lush river valley is one of the richest and most bio-diverse regions on the planet, known for exquisite special- ity coffees. When carefully cultivated under the ‘’sombra del poro’’ (shade of the poro), the coffee cherries develop more slowly, allowing the fruity flavors of the bean to intensify naturally.Tasting Notes: Roasted to a lighter degree, the Sombra del Poro’s sweetness and punch are preserved. COLOMBIA TIMANA Hailing from the southern department (state) of Huila in Co-lombia, our Co- lombia Timana is the result of the hard work of a dedicated group of produc- ers. In the past years, the quality of this coffee has grown from average to absolutely outstanding! Tasting Notes: The cup is infused with beautiful notes of sweet tangerine, raw sugar, and roasted walnuts. It’s smooth and light, with a refreshingly mellow, clean char- acter and a wonderful aroma. The medium-to-dark roast brings out the best from this com- bination of coffees from the Americas, New Guin-ea, and a hint of rare Ethio- pian coffee called Harrar. SUMATRA & Sumatra Decaf We partnered with the most quality- renowned exporter from Sumatra to create this special coffee. This exotic coffee is grown and processed by the Batak people who live in the coffee production areas around Lake Toba. This is a bio-di-verse area that is home to 201 mammal species, 580 bird spe- cies and the largest flowers on earth. Tasting Notes: Flavors of sweet pipe tobacco, cedar wood spice, juicy apri-cot and vanilla all intertwine with a heavy herbal note and deliver an impressive weight in the cup. MOCHA JAVA While many coffee shops sell Mocha Java, very few contain the real thing: Yemen Mocha Mattari. This rare bean has been grown and dry-processed the same way for hundreds of years - and it makes up a full 40 percent of our Mocha Java. To perfectly balance and elicit the legendary Mocha qualities, we blend it with Java, Costa Rica, and Ethiopia Harrar.Tasting Notes: This is a robust, spicy, intensely fruity blend with hints of bittersweet choco- late, blueberries and wild honey in a big, bold body. ESPRESSO & Espresso Decaf It is important to note that espresso is a brewing method. If you like the taste of our Espresso Blend, use any brew- ing method you like to brew this terrific coffee! Our Espresso Blend produces a cup that is sweet, smooth and sophisti- cated with a powerful flavor and a hint of berry that explodes in your mouth. Tasting Notes: Our Espresso Blend has the bitterness to punch through milk, making it ideal for a latte or cappuccino, or exqui- site on its own. MAHOGANY Mahogany is roasted to bring out the body of the El Salvador and Sumatra coffees, yet also preserve the deli-cate vanilla and floral notes of the Guatema- la. Accented by aromatic woods notes and finishing with a raw sugar sweet- ness, this coffee will become a staple in the cup-board for those who appreciate complexity in a cup.

Tasting Notes: Mahogany is a dark roast coffee that offers dry spice notes, woodsy accents and hints of vanilla and flowers. Expect bold, dry spice along with heady, aromatic wood and leather flavors. FRENCH ROAST This coffee offers a wonderfully rich and dramatic combination of high grown Central and South American cof- fees accented with beans from Papau New Guinea. They’re blended together and roasted to a beautiful dark brown with an even development of surface oils. Our French Roast is a coffee with presence, and a body that is smooth and deliciously heavy. Tasting Notes: While we roast this blend in traditional French roast style, we do it with a Cari- bou Coffee twist, which means it will not be as dark and oily as some French roasts. Brew Your Best These simple steps will ensure that your home-brewed coffee tastes as delicious as it does when we brew it for you.

1. Start with fresh, whole Abeytu Coffee beans that appeal to your unique taste buds.

2. Just before brewing, grind the beans to match your type of coffee-maker.

3. Use oxygen-bleached or metal coffee filters.

4. Measure out two heaping table- spoons of ground coffee for ev-ery eight ounces of water.

5. Use a coffeemaker with a slow brew time (between four and sev-en min- utes).

Helpful Tips For Great-Tasting Coffee Store your coffee in an air-tight, opaque container, on the counter or in the cup- board.

Do not store your coffee in the refrigerator or freezer, as it will take on the flavors that are present.

Never reheat your coffee. Once coffee has cooled, the chemistry has changed. Bitter oils and flavors will dominate the taste. Reheating will further break down the few aromatics left.
