In a skillet overmedium heat, fry thebacon until crisp, 10 to 12minutes, turning occa-sionally. Drain on paper
towels. Whisk the mayo
ingredients, including ¼teaspoon salt and ¼ tea-spoon pepper. Mash theguacamole ingredients,
including ½ tea-spoon salt and ¼teaspoon pepper. Mix the groundchuck with theWorcestershiresauce, 1 tea-spoon salt, ½teaspoon pepper,the smoked pa-prika and onion
powder, and then gentlyform eight patties of equalsize, each about ½ inchthick and a little widerthan the buns.
Refrigerate thepatties until ready to grill.Prepare the grill for directcooking over medium-high heat (400° to 500°F). Grill the patties overdirect medium-high heat,with the lid closed, untilcooked to medium done-ness (160° F), 6 to 8 min-utes, turning once.
During the last30 seconds to 1 minute ofgrilling time, place a sliceof cheese on each pattyto melt, and toast thebuns, cut side down, overdirect heat. Build each burger on abun with garlic mayo, alettuce leaf, a tomatoslice, two patties, asmuch guacamole as youlike, a slice of bacon (tornin half) and more garlicmayo. Serve immediately.
