I find it interesting and refreshing that several of the 20th Century’s greatest Christian writers and thinkers have been re-introduced to the world through a series blockbuster movies some 70 years after their works were first introduced.
J. R. R. Tolkien was an English writer, poet, philologist, and university professor who wrote, The Hobbit and The Lord of the Rings. He and his close friend C. S. Lewis were both members of the literary discussion group the Inklings, associated with The University of Oxford. The group met regularly for nearly two decades throughout the 1930s and 40s. C.S. Lewis’ works have been translated into more than 30 languages and have sold millions of copies.
Lewis wrote a series of children’s books, The Chronicles of Narnia which have recently been made into three blockbuster movies by Walt Disney Studios and 20th Century Fox. I confess that I first read the series at the age of 30 and have re-read them several times since then. In Lewis’ story, four children are magically trapped in a world where the battle over good and evil is being played out and ultimately won through the children with the help of Aslan, who represents God in the world of Narnia.
Throughout the entire series Lewis introduces his audience to the God that he knows and loves through the concept of a children story. Millions, including myself, have been amazed by Lewis’ simplistic understanding of God and His way, but he also had a great impact on the culture of his day through lectures, sermons, and papers.
C.S. Lewis spoke of the weight of glory within each human soul, when he addressed the Oxford University Church in 1941. “There are no ordinary people,” he said. “You have never talked to a mere mortal. Nations, cultures, arts, civilizations--these are mortal, and their life is to ours as the life of a gnat. But it is immortals whom we joke with, work with, marry, snub, and
exploit. Few of us have had someone physically knock on our door asking for food and water. But all of us have had someone knock on our door.”
Also in 1941, Lewis preached a sermon in Oxford at the Church of St. Mary the Virgin, “If you asked twenty good men today what they thought the highest of the virtues, nineteen of them would reply, ‘Unselfishness.’ But if you had asked Christ of the Gospels, He would have replied, ‘Love.’ You see what has happened? A negative term has been substituted for a positive, and this is of more than philological importance. The negative ideal of unselfishness carries with it the suggestion not primarily of securing good things for others, but of going without them ourselves, as if our abstinence was the important point and not the care for others. I do not think this is the Christian virtue of Love.”
The Mid-South is one of many mere mortal places that is occupied by immortals, and to paraphrase Lewis, it is those immortals that we drive the streets with, work with, shop with, celebrate sports with, worship with, and eat barbeque with as we educate and raise our families. It is our relationships with our fellow immortals that will determine whether Memphis is just another mortal City or a City destined to rise above the mere mortal status. Trending on Facebook is the question, “Is Memphis the Next Hot Southern City,” Downtown is booming and if it was a suburb, it would be one of the fasted growing in the South.
We can be the “Next Hot Southern City” and still be just another mere mortal place, or we can be a City built on love for our fellow immortal and if we are, we won’t care if Memphis is the “Next Hot Southern City,” because we will be the City that all others envy.

DISHES FOR WISHESMake-A-Wish
It was a perfect spring evening for gathering on the patio of Felicia Suzanne’s for the 11th annual Dishes for Wishes. Participating restaurants dishing up the gourmet dinner included Rizzo’s Diner, Sweet Grass, and the Majestic Grille. Since the founding of this event, over $1.6M has been raised for granting wishes for kids with life-threatening medical conditions.

JOCKEYS & JULEPSSouthern Reins
Southern Reins, an organization that offers equine therapy for people with disability, had their first-annual Jockeys and Juleps and it was a huge success! With attendance attracting 900 guests, the sold-out event raised more than $290,000 to support program services. Featuring bluegrass, big hats and bourbon, Jockeys & Juleps’ guests were dressed to the nines to enjoy live music, a silent art auction and live auction, Bulleit bourbon bar, southern style food, signature mint juleps, games on the lawn, and a live broadcast of the 142nd annual Kentucky Derby. “Freckles” and “Shadow”, Southern Reins’ mini-pony ambassadors, were also onsite. Folks will be sure to gallop back next year!

Cassidy Pham Throughout our years of youth, we are expected to be conscious of our passions and ambitions. However, we fail to recognize that it is human beings and our surroundings that help us mold the expeditions of our identity. Instead of
taking the seemingly endless path, we insist upon traveling the quicker route. Little do we know that that lingering path could open doors to new discoveries not only of the world, but also discoveries of ourselves. This hidden road for me was a student exchange program. In January, I was selected to travel as a student ambassador to Canada through the Memphis in May organization, and my experiences have allowed me to grow into a more broad-minded individual; I came to the realization that I inhabit a small corner of a maze called Earth, and I am certain that I have the strength to leave my mark.
I was a blind Memphian, yearning for a great experience but unaware of what each day would bring and of the commonalities that I would encounter. That is the euphoria of travel: a mystery always remains. Along with the historical sites and museums that I explored was the sensation of being an anonymous entity in a city to which I had never traveled. The self who left the Ottawa train station was not the same self who left the Memphis International Airport. The student exchange experience taught me many lessons, but the most prominent one was the importance of stepping out of my comfort zone. I stood at the borderline when I performed during an open mic in the British Café in Aylmer, a small town on the outskirts of Gatineau, Quebec.
Throughout my stay in Gatineau, I stayed with a host family who ceaselessly made sure I felt at home. Their kindness grew as each day passed, and I can only aspire to be as thoughtful to others as they were to me. Their acts of kindheartedness emboldened me to continue giving back to my community at home. Earlier this year, I established a tutoring program at my temple, where my friends and I tutor in both the English and Vietnamese languages. This process has allowed me to grow not only as a tutor but also as an individual. I have learned that each student learns at a different pace and understands and perceives from a different perspective. The eagerness and excitement they
bring to the classroom continually fortify me in nurturing and fostering them into being the great leaders they can undoubtedly become.
Because my host parents are Francophone speakers of Quebec, I picked up a few phrases and added more vocabulary and conversational language to the knowledge that I acquired from the French I learned in middle and high school. The morning after I arrived in my host family’s home, I woke up to sunshine coming through the room’s opaque window and was surprised by a vast wonderland of snow. An international businessman, my host dad collected many antiques when he lived in Africa. I will never forget the ambience that the scattered giraffe sculptures spread throughout the home. On school mornings, my host mom would treat my host sister and me to an organic smoothie, making sure that we weren’t late for “PDC”, or what we call “homeroom”. These small things that made my journey so special.
Throughout my stay in Canada, I met many people who inspired me to make changes in my community. One of these persons is a member of First Nations, a sector of the Aboriginal Peoples. He amazed me, not only by his vibrant attire but also by his willingness and strength to share the struggles that he continues to fight today. First Nations are isolated from society, and this is evident through their complications to obtain a green card. Eyes were filled with tears and hearts were occupied by low spirits. That vision has swayed me to use my power to spread awareness of his stories and the lessons that I learned from them.
I want to be heard to have a platform and foundation in which I can lay down the principles and obstacles that have been holding our community back. Through my travels, I have learned so much more about myself and in doing so, I speak my diary to encourage others to be vulnerable to the same excitement. One may learn that they actually do not want to become a BuzzFeed editor, you enjoy the bitter taste of vanilla tart yogurt, or that you find yourself closer to the moon than the sun. Sometimes we are more comfortable in chaos, and through chaos, we find ourselves.

The second Sunday in May honors Mothers, Grandmothers, and special women in our lives, and those women were celebrated with a fabulous annual brunch event in the Japanese Garden at the Memphis Botanic Garden. LIT JUNIORThe smaller brother to Lit on Union in Downtown Memphis, Lit Junior still offers whatever it is that you could possibly need (or never knew you wanted) for your kitchen! Located on 2965 Summer Avenue, Lit Junior carries everything to run a commercial kitchen. There are aisles and aisles of tongs, chef knifes and chaffing dishes, and all for a fraction of what you pay in a catalogue. Go through tons of barbeque sauce? They sell every kind in bulk, as well as just about every other food you may find in a pantry or freezer.
LEATHERWOOD MOTORCYCLE WORKSLuke Leatherwood opened his bike shop in 2012, and business is booming because of their competitive repair and maintenance pricing, as well as their friendly staff. Whether or not you’re a fan of bikes, this place is a must-visit. They have incredible custom work in the back (including a few amazing cars), and you have to stop and chat with Luke’s plucky dad, Jimmy, working in the back. Check them out on the second Wednesday of the month on bike night at 3155 Summer Avenue. This place is deserving of a reality show!

HIGHLAND SUPER SUBMARINE SANDWICH SHOPMost Memphians have at least heard of the famous “Chinese Sub Shop,” which was previously located on Highland in the University district. In 2013, the shop moved to 3316 Summer Avenue, but that is where the changes stop. This place truly offers the best sub sandwich in town. The sweet submarine sandwich bread is incomparable. The sandwiches are always brimming with goodies inside: there is no scamming of meats or cheese here. A whole sub is certainly shareable, and if you are not in the mood for a Sammy, you can order fried rice, egg rolls and other Chinese food staples. Bring cash, because like many Summer Avenue spots, they are cash-only.
THE PANCAKE SHOPBob Druien’s Pancake Shop is a local favorite for police officers, late shifters, and hungry kids everywhere. You cannot beat their “Everyday Special,” which includes two eggs your way, a choice of bacon, ham or sausage, plus a choice of two of the hashbrowns, grits, pancakes, biscuits or toast. And all of this for just six bucks. Seriously. The Elvis, Memphis In May and University of Memphis memorabilia makes this diner home to any local. Go to 4838 Summer Avenue on any day but Christmas and enjoy a big stack!
LA GUADALAPANAJohnny Castelan and his family own La Guadalapana, and while there are now 3 locations and a food truck, the 4818 Summer Avenue location is a classic. Warning: only go to La Guadalapana very hungry. You have never eaten a chimichanga like the ones available at La Guadalapana. It must weigh three pounds. Every bit of their food is fresh and authentic (and affordable!). A hibiscus water or a Mexican Coca Cola is the perfect way to wash down you meal.
BRYANT’S BREAKFASTYou can see the signage and building from a mile away. The bright red and yellow is like a beacon for people seeking the best biscuits and gravy in town. On any given day, you will see a truckers and local dignitaries alike feasting on country ham and draining coffees. And while you do order at the counter, do not think you will get away quickly, especially on chicken and dumplings day! Give yourself the time this gem deserves when you visit Bryant’s at 3965 Summer Avenue. You will not be disappointed.
TOPS BAR-B-QUE“We are tops in barbeque, and tops in Memphis, too!” We all know the jingle. There are two locations for Tops on Summer Avenue, and both have drive-thru windows. Tops is known for their quick service, great ribs, and pulled pork sandwiches. Just follow your nose on Summer Avenue (or head to 3353 or 4183 Summer Avenue).
MONTESI’S SUPERMARKETI bet that most of your parents or grandparents used to shop at Montesi’s grocery. Fred Montesi was the local grocery king in the 1960s, and his store on 3362 Summer Avenue is part of that legacy. You can duck in for a quick item on your list, or even a bit of nostalgia.

THE LAMP SHADE HOUSELamps are the elegant way to light your room. Want to find a unique base or shade for your end table? Lamp Shade House on 4870 Summer Avenue is where you should visit. They are the city’s expert on repairs for your favorite chandelier or antique fixture. This quaint shop is the cutest place to add some quirk to your living room.
LA MICHOACANA ICE CREAM AND PALETASWe are happy to again report on this shop. Located at 4091 Summer Avenue, La Michoacana boasts its own popsicles and ice cream treats. For the mommies and daddies that want their kids to eat fresh, real food, this is where you want to load up for their sweet tooth. Flavors range from berries and cream to pineapple to even avocado (highly recommended). And like everything else on Summer, the stuff is a steal. No kids’ pool party could possibly be complete without a paleta from La Michoacana.
CHARLIE’S MEAT MARKETYou cannot talk Summer Avenue and not mention Charlie’s Meat Market. Charlie’s has been around for decades and generationally run. When you are good enough to supply all of the chuck beef to Ernestine’s AND Huey’s for their famous burgers, you know you are the best in town. Their reasonable pricing (and bacon wrapped filets) make this shop a local staple. If you want the best beef for your barbeque (and buck), you must go to Charlie’s. Period.
AREPAS DELICIOSASThis newly-opened Columbian restaurant already has people buzzing. Its charming décor, impeccably clean dining area, and scrumptious authentic Columbian food make this the new Summer Avenue place to go. The empanadas (like everything else) are handmade and delicious. Staying true to her Columbian roots, owner Blanca Simpson keeps everything genuinely Columbian, down to her unbeatable coffee. Do not miss this new gem at 3698 Summer Avenue.
HAMILTON’S FIREPLACE GRILLSIf you have been bitten by the Big Green Egg bug, or you are looking for the perfect Father’s Day gift, look no further than Hamilton’s. The staff is very friendly and knowledgeable, and the store has everything you could possibly want to turn your fireside or backyard into the oasis you have always dreamed. At 4462 Summer Avenue, Hamilton’s requires some time for perusing!
ELWOOD SHACKElwood’s Shack, while a new edition to Summer in 2013, has very quickly obtained quite the famed reputation. A literal shack with tin roof and outside picnic benches, Elwood Shack offers up some of the meanest grub in the city. In fact, locals voted Elwood Shack’s Debris Po Boy the Best Sandwich in Memphis award. Their Caribbean Jerk wings are whole wings, slow smoked and even served with fresh pineapple. The menu is surprisingly huge for a place that small. Tucked between the Lowe’s parking lot and Summer Avenue, Elwood’s is on 4523 and worth every minute you may stand in line.

Sasha Nicholas is a newer style that is very popular and is “flying off our shelves.” From casual to formal, this pattern offers pieces with a dressier, gold-trimming or basket weaving designs on the rims for a more casual look; all feature a colored monogram inscribed in the center of the plate in blue, green, pink, yellow, and more. Specialty Sasha Nicholas pieces can also be made with an initial on the front and a handwritten note or other sentiment imprinted onto the back of the dish. For instance, a small bowl with an initial on the front and a date on the back makes an ideal graduation gift, or a larger serving piece with a monogram and a Bible verse or quote printed onto the back is a special gift to mark a first anniversary.
While brides-to-be do account for most of the china buyers, many ladies (and gentlemen too!) are updating their place settings with fresh accent pieces. China that has been in the family is a treasured heirloom, but what if it is just not exactly your style or taste? That is an easy fix, according to Camille Mueller at Social, and happens all the time with china that has
been passed down and can be updated with fresh components. There is no need to start completely over, when you have good basics. Choose new chargers to change the look or add accent plates that coordinate with the old pieces. Badash glass chargers are stunning and modern with gold or silver rims, and will brighten up any stodgy place setting. Brilliantly hued accent plates also add a fresh pop, especially when the colors or designs blend with your current china. Accent plates that are differently patterned or colored, but yet coordinated are another popular trend in updating existing china. L’Objet’s “Fortuny” salad plates are contemporary and brightly colored in red, orange, turquoise, green; buying these plates in all one color or buying all four colors brings a vivid design to a more subdued pattern.
Selecting special accent plates and bowls is also a way to afford pieces in a higher-end china collection. Royal Crown Derby is one of the most respected manufacturers of fine bone china. Patterns are classic and elegant, and for Social brides, “Darley Abbey” is consistently one of the most popular selections. Alberto Pinto china is an exclusive line with each piece being hand-painted on fine porcelain. While quite pricey, a few pieces of this exquisite dinnerware can be used in conjunction with a more budget-friendly choice.
Newer color options are another way to introduce a more current look to your table too. Mint and lavender are both soft color options that brides are choosing frequently, and the strong colors such as reds, blues, and blacks are still very popular too.
The best advice from the pros at Social is to realize that when the table is beautifully set and your guests are seated for dinner, that your table will not look like that for the entire rest of the evening. What does that mean? As the plates and bowls are moved, rearranged for eating, or removed for another course, that you like each piece you choose - not just the pieces assembled on the table as a group. Great advice to remember, and all the more reason to mix and match and select your favorite dishes - and use them often. Your grandmother would surely agree: life’s too short not to use the good china!

Caramel Apple Strudel2 Apples, peeled and sliced2 tsp sugar2 tsp cinnamon
¼ lb Unsalted butter1 sheet Puff pastry
Cook apples with cinnamon, sugar and butter in skillet until soft. To assemble the strudel, lay puff pastry sheet down and mark three even sections. Place caramel and apples in the middle section. The two sections on the side cut small even strips. Braid the two sides together to in close the strudel. Lightly egg wash the puff pastry and bake at 350 degrees for 15 minutes.
For the Caramel Sauce1 C Sugar1 ¼ C Heavy cream
In a large pot cook sugar until golden bubbly brown. Add cream slowly until completely incorporated. Strain caramel and let cool until room temperature then enjoy!

Whisk yolks, lemon and condensed milk until they are homogenous for the filler. Add mixture to cooled pie crust.
Whip egg whites with the sugar and salt until soft peaks form for meringue. Form over the pie with a rubber spatula. Enjoy!

Preheat the oven to 400F. In a food processor, combine the flour, sugar and salt together, pulsing briefly to combine. Scatter the butter pieces over the top of the flour and continue to pulse the mixture until the butter is cut into small pieces the size of peas. With the machine running, slowly add in the water until the dough comes together to form a ball. The dough should hold together but not be sticky. On a lightly floured surface, shape the dough into a disc and cover in plastic wrap. Refrigerate for 20 minutes until the dough is firm.
While the dough rests, combine the berries in a medium bowl along with the sugar and cornstarch, tossing to coat. Stir in the almond extract.
Carefully roll the dough out into a large round on a piece of parchment or silicone baking mat. It’s okay if the edges are not perfect, but make sure that the dough is about 1/8 inch thick. Transfer the dough – including the parchment/mat – to a rimmed baking sheet. Spoon the berries into the center of the dough round. Carefully turn the edges of the dough up to cover the center of the fruit, pleating as you go to create a nice seal around the fruit. Refrigerate for 20 minutes more – this will ensure maximum flakiness in the pastry crust.
When ready to bake, lightly brush the outside edges of the dough with milk and sprinkle with sugar. Bake for 20 minutes, rotating halfway through; then lower the oven temperature to 350F and continue baking for 20-25 minutes more until the pastry is nicely browned and the filling is bubbly. Allow to cool before serving.

Melt butter in a pan over medium heat. Add peaches and lemon juice, and cook 2 minutes. Add brown sugar and cinnamon, and cook an additional 2 to 3 minutes.Mix 1 T cornstarch and 1 T water together to create a slurry. Add slurry to HOT peach mixture to thicken. Remove from heat and set aside to cool. Thaw out puff pastry sheets. Cut them into even squares. Spoon a small amount of cooled peach mixture into the center of each puff pastry square. Fold puff pastry square over corner to corner and press down seams. Transfer to sheet pan lined with parchment paper, and bake at 375 for 16 to 18 minutes. Let cook and enjoy!

Lightly coat vegetables with the dressing. Toss with the arugula. Arrange on the eclair. Add nuts and goat cheese. Set aside.

Preheat oven to 400. Grease a baking sheet with butter. Bring 1 cup of water to a boil. Add flour and stir constantly until the mixture pulls away from the sides
of the bowl and forms a ball. Remove from the heat. Beat eggs in one at a time until the mixture is smooth. Add parmesan cheese. Pipe on to the baking sheet. Bake until golden brown. Set aside to cool.
Once the pastry is cool, split down the middle and add salad inside. Enjoy!

¼ C Green peppers, diced1 tsp Minced garlic½ lb Crawfish tail meat (pre-cooked)1 Tbl Parsley, chopped1 Tbl All-purpose flour1 C Heavy cream1 tsp Crawfish pie seasoning (below)
Melt butter in a heavy bottomed sauce pan and add the onions, celery, garlic, green onions, peppers, and seasoning. Sauté for 5 minutes then add the flour, stir in to form a roux, and cook for 5 more minutes. Add the cream and parsley. Adjust seasonings and consistency.

½ lb Butter, softened1 Tbl SugarPinch salt1 Egg½ C Milk1 ½ C Flour
Cream together butter, sugar, and salt in a stand mixer with fit with the paddle attachment. Scrap down the sides and add the eggs, milk, and 1 ¼ cup of the flour. Mix until a dough forms and all the flour is worked in. Dust a counter top with the last ¼ cup of flour and knead the dough for 1 minute. Place in a mixing bowl and cover with wrap. Refrigerate for 1 hour before use.
Place filling in an oven safe casserole dish; Roll the crust flat and gently place over the dish with filling (slightly overlapping). Crimp the edges of the crust to form a seal between the crust and the casserole dish and using a fork, punch holes in the top of the crust to allow moisture to escape during the cooking process. Pre heat your oven to 350 degree. Place the crawfish pie on the center rack and cook for 20-25 minutes or until the crust is golden brown. Garnish with fresh arugula and roasted tomatoes. The Eclectic Eye-Midtown hosted an art opening reception for local potter and watercolor artist Melissa Bridgman. The series, “Sea and Stone: ceramics and sketches” was inspired by the pebbles, tide pools and sea life of Coastal Maine. The exhibit will be on display and available for purchase until June 8, 2016.
