About the ChefsTroy Mains, Executive ChefHarraseeket Inn, Freeport

A native New Englander, Chef Troy Mains brings a modern flair to traditional New England Cuisine. Mains began his career with the Harraseeket Inn as the Chef de Cuisine in the Maine Harvest dining room before his promotion to Executive Chef. Using modern techniques, Mains has refreshed the Harraseeket Inn’s menus while continuing the mission of the Inn and designing from the ever-changing seasonal bounty of ingredients living in Maine provides. Chef Mains received the majority of his training at the Robinhood Free Meetinghouse, learning invaluable production techniques and management skills. Under James Beard Winner, Chef John Besh, with Restaurant August in New Orleans, Mains was able to delve into the world of Cajun cuisine and the operations of a large, upscale restaurant setting. Mains spends his off time with his wife Nichole and their two daughters, Maisie and Ruby. He is an avid hunter and fisherman and loves the Maine winters.

Christopher Gould, Executive Chef & OwnerCentral Provisions, Portland

Chef Chris Gould started his career as a dishwasher prep cook at The Bethel Inn in Bethel, Maine. From there he attended the Apprenticeship program at The Balsams Hotel in Dixville Notch, New Hampshire, a three and a half year program accredited through the American Culinary Federation. After graduating, Chef Chris relocated to Houston, Texas to work under Chef Charles Carrol at River Oaks Country Club. He spent a year and a half training with Chef Carrol before eventually moving back to the east coast to work with acclaimed Chef Ken Oringer. Chef Chris spent seven years working with Chef Oringer holding positions at Clio as a rounds cook, helping open Coppa enoteca as a Sous Chef, and at Uni Sashimi Bar as the Chef de Cuisine. After completing his time in Boston with Chef Oringer, Chef Chris and his wife Paige decided to move to Portland, Maine, to open their own restaurant. Two years later in February of 2014, Central Provisions opened in the Old Port.

Guy Hernandez, Executive Chef & OwnerLolita, Portland

Lolita opened in June, 2014, and was named Best Restaurant 2014 by Eater Maine. The intimate 18 seat restaurant is decidedly modern American, while embracing the culinary vernacular of the Mediterranean. As the previous Chef-Owner of Bar Lola and Co-Owner of Hilltop Coffee, Guy has an established knowledge of the food scene in Portland. He has been recognized as one of Maine Magazine’s “Thirty-one Number Ones,” a list of notable chefs across the state, and his cuisine has been featured in numerous publications. He has appeared as a featured chef at the Kennebunkport Festival and was a contributor to the 2011 VIP event for Share Our Strength. Prior to entering the restaurant industry, Guy held a number of teaching

positions in the areas of architectural design and technical drawing. Before opening Bar Lola in 2006, Guy was a baker at One Fifty Ate Bakeshop in South Portland and assisted with the launch of what is now Scratch Baking.

Sam Hayward, Executive Chef & Partner Fore Street, Portland

Sam Hayward is the chef and a partner of Fore Street, an acclaimed restaurant in Portland, Maine. Since its founding in 1996, Fore Street has been in the vanguard of restaurants committed to the use of local foods from the pastures, farms, woods and waters of Maine. Sam’s view of the Gulf of Maine and its watershed as a single ecosystem drives his passion for expressing the taste of place in all of his cooking. In 2004 Sam was named Best Chef-Northeast by the James Beard Foundation and in 2011 was named Sustainer of the Year by the Chefs Collaborative.

Ken Thomas, Fore Street Kitchen ManagerKen Thomas has been the Kitchen Manager at Fore Street for 13 years. Previously, Ken was at the Harraseeket Inn. Ken is originally from the West Coast and sailed into Portland some twenty years ago. Ken’s position at Fore Street allows him to work with some very interesting people and he is constantly amazed at the bounty of food products that Maine and New England have to offer.

Nate Nadeau, Chef de CuisineNate Nadeau is the long serving Chef de Cuisine at Fore Street. The first place Nate stopped on the way home from being born was his grandfather’s fish market. He’s been in the business ever since. He is an enthusiastic outdoorsman and a recovering touring musician.

Andrew Taylor, Owner & ChefHugo’s, Portland

Upon graduating from Bates College with a degree in economics in 2003, Chef-Owner Andrew Taylor did the only sensible thing: enter the restaurant business. After stints with Thierry Rautereau at Rover’s in Seattle and Ken Oringer at Clio in Boston, Taylor headed north with his wife in 2009 to become the Sous Chef for Rob Evans at Hugo’s. In 2012, Taylor along with Mike Wiley, purchased Hugo’s from their mentor while simultaneously opening Eventide Oyster Co. Taylor spends every free moment hunting, fishing, foraging, hiking, camping and generally enjoying the splendor of Maine with his wife, Rachel, and his sons, Lincoln and Oliver.

Mike Wiley, Owner & Chef Hugo’s, PortlandChef-Owner Mike Wiley studied literature and creative writing at Colby College and Rhetoric at the University of Colorado at Boulder. He worked at various kitchens in Colorado including the Black Cat in Boulder, before returning to Maine. Hugo’s proved a perfect fit: a kitchen that fosters creativity and enjoys access to the finest ingredients. Mike is tickled to be cooking right here, in Portland.

About the PSO Wine DinnerThe PSO Wine Dinner & Auction has been a fixture on the Portland calendar of “must do” events since 2002. It was the brainchild of Jeff Kane, a former PSO Board Member and President of National Distributors. Along with Sam Hayward, Fore Street Partner and Executive Chef, and nationally known food guru, they conceived of an event in which a selected winery would choose wines for each course and the participating chefs would create a dish to complement the wine.

Typically the wines in any given year are from the same country or region and have included Oregon, New Zealand, Portugal, Italy, Chile, California, France, Sicily, Sardinia, Australia, Spain, Argentina and Greece.

We have been lucky enough to have had the support of many of the area’s finest chefs. Vervain Mill was originally a working, wind-powered mill for processing sugar cane. After falling into ruin at the end of sugar production, it was made into a home in 1980. The current owners bought the property in 1995 and converted it into a beautiful rental property and part-time getaway for themselves. Located on the southeast side of the island, part way up the hill to Mt. Nevis, Vervain Mill offers three bedrooms, three baths, beautiful furnishings, swimming pool, gazebo, architectural ruins, and lots of privacy. Enjoy the many lovely under-populated beaches.
