Every year, volunteers, donors, and community businesses support our mission to deliver nutritious and delicious meals to

individuals with life-threatening illnesses across the Denver metropolitan and Colorado Springs areas.

Dear Friends,You, as Project Angel Heart’s dedicated community, provided instrumental support in2013, creating a remarkable year. You chopped carrots, answered phones, deliveredmeals, made financial gifts, engaged with us on social media, helped with events,donated garden produce, and helped spread the word about Project Angel Heart’swork—delivering food as medicine to Coloradans coping with life-threatening illness.Thanks to you, Project Angel Heart is now in a position to build upon our growth likenever before.

You delivered 486,031 meals to 2,095 clients in the Denver metro area and ColoradoSprings in 2013, making it a record year in terms of clients served and meals delivered.Over 8,600 volunteers and over 7,000 donors worked behind the scenes to make thatpossible.

Your contributions haven’t gone unrecognized. ColoradoBiz Magazine named ProjectAngel Heart the Top Company of the Year in the Nonprofit Category for 2013. ProjectAngel Heart also received Charity Navigator’s top (four star) ranking, now receivedseven out of the last nine years! Credit for these tremendous commendations goes toyou, our donors and volunteers.

We recently commissioned an independent research firm to project the unmet needfor Project Angel Heart’s home-delivered meals. The results were sobering. The studyfound that 14 times Project Angel Heart’s current numbers of clients may potentiallyqualify for Project Angel Heart’s home-delivered meals within the Denver/ColoradoSprings metropolitan areas. While this finding does not translate to actual, verifiedneed, one thing is clear—there remains a large number of people who are strugglingwith a life-threatening illness and who lack the essential and appropriate nutritionthey need. It’s that need—now and in the future—that motivates us to work evenharder to grow.

Specifically, we launched GROW30 in 2012, an initiative to deliver 30% more wholesome,healthy, and modified-as-needed meals by 2015. It is a bold objective, but one we are inspired to reach with your dedicated support, knowing there remains a great need inour community. Thanks to you, we are on track to reach this ambitious goal!

Looking back at a remarkable year that positioned Project Angel Heart for futuregrowth, we are honored and humbled to serve at the helm of such a communitydriven organization, engaging your support and stewarding your funds. Together,we’ve accomplished great things, and there is more work to be done. With your continued partnership, we will continue challenging ourselves and the organization to deliver food as medicine for more Coloradans in need.

Highlights of 2013

Pie in the Sky, our fastest-growing fundraising event

As part of last year's event, presented by Andarko,we sold more than 2,500 pies, comfortably exceeding our goal of 2,000. Colorado Springssales surpassed our projections, with 536 pies sold!

We saw an increase of 50% in the number of piesellers this year, with 115 volunteers selling an average of 17 pies each. Thanks to all the sponsors,pie lovers, and pie sellers that helped make thisevent a huge success.

Special thanks to Bluepoint Bakery, who providedall of the delicious pies for the event!

A Taste for Life in 2013 was themost successful yet, with morethan 700 guests in attendance.

30 of Denver’s top restaurants, caterers, and specialty food vendors participated.The silent auction included 170 uniqueprize packages, including luxury sports tickets and vacations.

Special thanks to Title Sponsor DaVita andthe 35 other sponsors that helped make it arecord-breaking event!

The Bread & Butter Clubwelcomed 85 new members,with 88 other membersincreasing their giftamounts.

Because of a generous$40,000 grant from the LuFoundation, we were ableto incentivize and maximizeall new and increased Bread & Butter Club contributions!

Last year, our annual Dining Out ForLife® event was a big success, raising

the funds to provide more than 60,000meals for our clients fighting HIV/AIDS

and other life-threatening illnesses.Over 300 restaurants participated, with57 restaurants participating for the first

time. The involvement of actress PamGrier and designer Mondo Guerra

added plenty of excitement and visibility to the community-wide event!

A huge thanks to our top three private donors: the Anschutz Foundation ($50k),

MAC AIDS Fund ($50k), and the Daniels Fund ($40k)!

Project Angel Heart received a 4-Star Rating

from Charity Navigator in2013, the highest rating

possible, 7 out of the last 9 years!

During Art for Life, art lovers and altruistsgathered in May to bid on more than 205unique works of art from 130 local, national,and internationally-recognized artists tobenefit our mission.

The event showcased artwork from emerging artists from The Denver School ofthe Arts. Several established and well-knownartists created new works of art at the event,inspired by the presence of live models.

While a DJ spun music on the patio, guestsenjoyed delicious cuisine, including authentic Spanish paella prepared on-site,and fine wines and cocktails.

Funds raised from the 12th annual eventprovided more than 15,000 meals to ourclients.

ColoradoBiz Magazine chose Project Angel Heart as the 2013 Top Company of the Year, Nonprofit Category!

We're thrilled that we launched our Chef’s Circle to honor donors who gave

more than $2,500 in 2013. The Circlehas 66 members and counting.

a 32% increase over weekly applications received in 2012.

Impact: Because of the meals we prepared and delivered, 91% of

clients reported improvement in their energy levels, 96% feltless stress concerning food preparation, and 90% reported a

positive difference in their ability to afford health care.

96% of clients reported that receiving our meals allowed themto remain independent in their homes. And, 91% of clients reported that receiving our home-delivered meals helpedthem to maintain or improve their individual quality of life.

This recipe is based on one by a friend of mine who is a brilliant chef downin New Orleans. His grandfather used to make it for him.

I do have a soft spot for Cajun and Creole cooking. I am a fan of strong flavors and “the trinity”– that mix of onions, bell peppers and celery (somewould add garlic, too) that is a popular starting point for many of the region’s dishes.

We put a little Colorado twist on our Chicken Sauce Piquant—we substitutegreen chiles for the bell pepper. I like the bolder chile flavor it adds whiletaming the grassiness that green bell peppers might add. This is just a preference—add the bell peppers back if you so prefer. You can also makethis a bit zippier with the addition of cayenne during the cooking process,or hot sauce once you’ve plated it up. Serve this topped with steamed whiterice and sliced raw scallions.

This dish can be made to fit almost anyone’s tastes, so feel free to experimentwith it, and enjoy Chicken Sauce Piquant!

Serves 1000l 440 lbs boneless, diced chickenl 4 gallon pure olive oil (split into 1 and 3 gallon batches)l 25 gallons diced onionsl 12 gallons diced celeryl 1 gallon minced garlicl 12 gallons diced, fire roasted, mild Hatch green chilesl 6 gallons tomato saucel 6 gallons diced tomatoesl 1 qt dried thyme leafl ½ C ground bay leafl 1 qt sweet paprikal 3 gallons pure olive oill 14 lbs all-purpose flourl Salt and pepper to taste

Chicken Sauce Piquant by Executive Chef Jon Emanuel

Ingredients should be divided between three 40-gallon tilt skillets.

Add the 1 gallon of oil to the hot tilt skillets andbrown the chicken. Set the chicken aside.

In the same skillets, sauté the onions and celery,being sure to scrape up the brown bits left on thebottom of the pan from the chicken. When tender – but not brown – add the garlic and continue to cook until fragrant and softened. Addthe chicken back to the skillets. Add the chiles,tomato sauce, diced tomatoes, thyme, bay leafand paprika. Allow to gently simmer until chickenis nearly cooked.

Meanwhile, prepare a roux to thicken the stew. Inanother skillet add the 3 gallons of olive oil andflour. Combine with a wire whisk and allow togently cook, stirring just better than occasionally,until the color is a very light brown. Remove fromskillet and set aside.

When the chicken is nearly cooked and the stew issimmering, whisk in the roux a half-gallon at atime until the stew reaches your desired thickness.Chill any unused roux for other projects. Allow togently simmer for about 10 more minutes andseason with salt and pepper. Remove ChickenSauce Piquant to 2 inch deep casserole pans andplace in blast chiller to cool until served.

Modified Meal Notes:

For our clients living with renal disease: Wesubstitute the tomatoes with roasted red peppers tohelp control potassium levels.

For our clients living with diabetes: We reduceor eliminate the rice and roux.

For our clients requiring a bland diet: We reduce or eliminate all strong flavors such as onion,garlic and spices.

For our clients requiring a diet that has noadded salt and is lower in fat: We add no extrasalt to this dish, and we would reduce the olive oil.You could also skin the chicken in the home version.

For our vegetarian clients: We make a vegetarian version of this recipe substituting othernon-meat protein sources in place of the chicken.Red beans would make a fine substitute, and withthe existing rice would make a meal containing allessential amino acids—a complete protein!

For clients living with dairy allergies: We eliminate milk and cheese and will substitute ingredients like tahini (sesame paste).

For clients with gluten intolerance: We use riceflour to thicken sauces, as opposed to a standardwheat flour-based thickening agent and will utilizealternative grains such as quinoa.

Serves 6l 1 whole chicken, skin on, cut into 8 piecesl 1 T sweet paprikal Salt and pepper to tastel ½ C all-purpose flourl 4 T fat: pure olive oil, peanut oil, lard or bacon fatl 2 large onions, dicedl 6 ribs celery, dicedl 3 heads garlic, mincedl 6 diced, fire roasted Hatch green chiles as hot as

you likel 2 C tomato saucel 2 C canned diced tomatoesl 1 tsp fresh thyme leaf, choppedl 2 bay leavesl 3 T butterl ¼ C additional all-purpose flour

Combine half of the paprika and some salt and pepper.Place into a bowl and toss the chicken in this mixtureuntil evenly coated.

In a large pot, preheated over medium heat, add yourfat of choice. Toss the chicken in the ½ C of flour.Allow fat to get hot and add the chicken (after shakingoff excess flour), browning on all sides, but not cookingall the way through. When browned, set the chickenaside.

In the same pot sauté the onions and celery, beingsure to scrape up the brown bits left on the bottom ofthe pan from the chicken. When tender–but notbrown–add the garlic and continue to cook until fragrant and softened. Add the chicken back to thepot, and then add the chiles, tomato sauce, dicedtomatoes, thyme, bay leaf and the remaining paprika.Allow to gently simmer until chicken is nearlycooked, about 25 minutes.

Meanwhile, prepare a roux to thicken the stew. In asmall skillet, add the olive oil and flour. Combine with awire whisk and allow to gently cook over mediumheat, stirring just better than occasionally, until thecolor is a very light brown. Remove from heat and setaside.

When the chicken is nearly cooked and the stew issimmering, whisk in the roux a bit at a time until thestew reaches your desired thickness. Chill any unusedroux for other projects. Allow to gently simmer forabout 10 more minutes and season with salt andpepper. Serve Chicken Sauce Piquant in soup plates,top with steamed white rice and garnish with slicedscallions.

In 2012, Project Angel Heart launched anew strategic plan: GROW30. The goalof the project is to meet the growingdemand for home-delivered meals inthe Denver and Colorado Springs areas.To do so, we aim to deliver 30 percentmore meals annually by the end of 2015.

For 2014, we plan to prepare and deliver 530,000 meals, representing 9%growth over 2013.

Our goal for 2015 is 580,000 meals delivered, which would representnearly 9.5% growth over our goal in2014 and a total of 30% growth since2012.
