FROM THE MANAGERS
More Trash Talk
You may have noticed that you are not being woken up before dawn by trash
pick-up trucks. Because of the lighter load during the summer, the company we use has changed
their routes and will be picking up our trash at about 9:00 - 9:30AM. So enjoy the quiet!
Trees, Oh Those Trees!
Many of the residents have expressed concern (and sometimes frustration) over the many oak
trees we have throughout the community. Late May we invited a representative from the State
Forestry Dept. to come and assess the condition of all our oak trees. Paul and John rode around
the park with the Forestry Rep one morning and got quite an education about the different types
of oaks and what to look for to assess the health of the trees. We can all be relieved to know that
almost all the oaks in our community are relatively healthy. We did find that there are a couple
of trees we need to watch.
On another note regarding trees, specifically the trimming and cutting down of trees. There
seems to be some confusion about who "owns" the trees and who is responsible for maintaining
them. The "ownership" of the trees is defined in Rule #19F; Southfork owns the trees.
However, the maintenance of the trees is the responsibility of the residents as defined in Rule
#19A. In the past there have apparently been some instances where Southfork management took
on the responsibility to trim trees, specifically when they had branches that were "touching"
roofs. It appears this was done at the "discretion" of management and was not meant to be a
standard practice and was apparently unknown by the Heilers. Going forward, we will be glad to
review these types of situations but understand that management is not responsible or obligated
to pay for trimming of any trees or other shrubbery on homeowners' sites. We are responsible
for the common areas, which include around the clubhouse and the 4 entrances to the
community; around the well and waste treatment facilities; and the hedges abutting Blue Jay and
behind the homes on Brahman Drive. Hopefully, this will help to clear up any confusion that has
existed by past practices. And remember, before you remove any shrubbery or trees you need to
get the okay from management. For oak trees, you also need to get a permit from Pasco County.
A Friendly Reminder
It's that time of year where the weather is hot and humid; just right for growing mold on the
north sides of our homes. If you haven't checked your home recently for mold, now is a good
time to give it an inspection. We plan to be riding around the community over the summer to
check for mold and to issue a friendly reminder to those that need to clean their outside walls.
This means effective July5th we will be changing our office hours to 9:00AM - 3:00PM and
will be out riding through the community from 3:00 - 5:00PM. This will also give us the
opportunity to get to chat with you and meet some of the residents we don't get to see in the
office. So stop us and say Hi!

Email – Junk Mail
Recently here in Southfork many people including myself have been receiving emails
from people on our mailing list and come to find out it has been “spam” or “junk mail” which we do
not know is going out with our email address on it. E-Mail spam, also known as junk e-mail or
unsolicited bulk e-mail involves identical messages sent to numerous recipients by e-mail.
I think we should all stop and think about this and I know when I send out a lot of emails I do not use
the “To” or the “CC” but I do send out emails via the “BCC” which is blind copy and no one sees who
else is getting the email. The reason I do this is so that no one can attach any sort of virus to any of
the addresses I am sending to.
Spammers collect e-mail addresses from facebook, chatrooms, websites, customer lists, newsgroups,
and viruses which harvest users' address books, and are then sold to other spammers. They also use a
practice known as "e-mail appending" in which they use known information about their target (such
as a postal address) to search for the target's e-mail address.
Email spam targets individual users with direct mail messages. Email spam lists are often
created by stealing Internet mailing lists, or searching the Web for addresses.
So, please be careful when opening any emails and if it looks a little suspicious, delete it.
TELEMARKETERS ANNOYING PHONE CALLS
Do you get annoying phone calls from telemarketers? Lately we have gotten more
annoying phone calls then we ever have from a telemarketing company and
sometimes they were coming at least 6 to 7 times a day.
I called the “DO Not Call” registry to no avail so I decided to call the Federal Trade Commission where I
filed a complaint. The FTC also told me to call our local phone company to have the calls blocked
which I did. I called Brighthouse and they explained how to go online and block up to 30 phone
numbers which I did and the calls have stopped.

LIBRARY
The Library is for the entire community to use and we would like to ask a favor of
all of you.
First of all, we have numerous copies of the Yellow Pages that have been there for months and if
anyone would like a copy, please come and take one because if they are not gone by the 15th
of July they
will be tossed in the trash.
The other favor we would like to ask all of you is about the depositing of books in the library. We would
like to have all copyrighted books of 1995 and newer only and we would appreciate “no catalogs, misc
sales brochures etc.” The Library is beginning to look like a sitting/junk room instead of a Library and
we would like to keep it looking neater.
All books after a certain time are then given to at least 6 Nursing Homes, Florida Medical Center etc
when they are outdated and these places really appreciate the books that are given to them.
If you have any questions or concerns please contact Shirley Rouer @ 523-0528 and you can ask what
can or can’t be placed in the Library.
CLOTHING DONATIONS
Many people here in Southfork have clothing from time to time for drop off
to the various places for charity donations.
It would be appreciated if you have any donations of clothing or other items,
they can be dropped off at the Hospice Thrift Store on SR54 or to Daystar
located in Dade City.
We do have volunteers who do not say “no” to anyone who have clothing etc. to be donated, but please
be aware they are only volunteers..

Just a reminder that if there is anything that the office should be aware of that needs to be fixed, or a
problem, a “Work Order” must be filled out. Remember, talking about it won’t get it fixed!

Women’s Club
June 1st, a group of ladies had a very good lunch at the “Village Inn.”
We discussed a few things regarding the “Baby Shower” that we will be hosting at the November
meeting. A list of item’s needed was distributed to everyone there. If you did not get a copy of the list,
look on the “Women’s Club” side of the bulletin board at the clubhouse and there is a list for you to look
at. We are all very enthusiastic and really looking forward to this shower.
At the last meeting, we gave $225.00 to the Women’s Pregnancy Center. The ladies of the Women’s
club are very generous and a big thanks to all of them.
Because of the clubhouse renovations, the Ice Cream Social, scheduled for Father’s Day was cancelled
until further notice……..(sometime in July). Watch the bulletin board and sign for the date and time and
there will be a sign up sheet so that we know how many will be attending.
On July 6th, we will be going to the Golden Corral at 11am. Hope to see you there!

Written by an Australian Dentist
You probably missed this in the rush of news, but there was actually a report that
someone in Pakistan had published in a newspaper, an offer of a reward to anyone
who killed an American, any American.
So an Australian dentist wrote an editorial the following day to let everyone know what an American
is. So they would know when they found one. (Good one, mate!!!!)
'An American is English, or French, or Italian, Irish, German, Spanish, Polish, Russian or Greek. An
American may also be Canadian, Mexican, African, Indian, Chinese, Japanese, Korean, Australian,
Iranian, Asian, Arab, Pakistani or Afghan.
An American may also be a Comanche, Cherokee, Osage, Blackfoot, Navaho, Apache, Seminole or one
of the many other tribes known as native Americans..
An American is Christian, or he could be Jewish, or Buddhist, or Muslim. In fact, there are more
Muslims in America than in Afghanistan . The only difference is that in America they are free to
worship as each of them chooses.
An American is also free to believe in no religion.. For that he will answer only to God, not to the
government, or to armed thugs claiming to speak for the government and for God.
An American lives in the most prosperous land in the history of the world.. The root of that prosperity
can be found in the Declaration of Independence , which recognizes the God given right of each person
to the pursuit of happiness.
An American is generous.. Americans have helped out just about every other nation in the world in
their time of need, never asking a thing in return.
When Afghanistan was over-run by the Soviet army 20 years ago, Americans came with arms and
supplies to enable the people to win back their country! As of the morning of September 11, 2001
Americans had given more than any other nation to the poor in Afghanistan ..
The national symbol of America , The Statue of Liberty , welcomes your tired and your poor, the
wretched refuse of your teeming shores, the homeless, tempest tossed. These in fact are the people
who built America
Some of them were working in the Twin Towers the morning of September 11, 2001, earning a better
life for their families. It's been told that the World Trade Center victims were from at least 30 different
countries, cultures, and first languages, including those that aided and abetted the terrorists.
So you can try to kill an American if you must. Hitler did. So did General Tojo, and Stalin, and Mao Tse-
Tung, and other blood-thirsty tyrants in the world.. But, in doing so, you would just be killing yourself.
Because Americans are not a particular people from a particular place. They are the embodiment of
the human spirit of freedom. Everyone who holds to that spirit, everywhere, is an American.

Southfork Men’s Club
THE MEN'S CLUB MET ON JUNE 2ND AT 9 AM AT SMITTY'S SMOKEHOUSE FOR A SOCIAL MEETING.
WE WILL AGAIN GATHER AT SMITTY'S ON THURSDAY, JULY 7TH FOR BREAKFAST AND A SHORT,
INFORMAL MEETING. STAY HEALTHY AND I HOPE TO SEE YOU ALL THERE.

Potlucks are held every 3rd
Thursday of the month at 5:30pm. Please bring a covered dish enough to
serve at least 8 people and please, bring your own tableware, cups and beverage. Coffee usually is
supplied.
On a monthly basis we do ask for volunteers to host the monthly potlucks and this is the easiest thing
to do. If interested in hosting, please contact any board member.
Remember, we have Potlucks all summer long at the same time of 5:30pm
In case you forget, always check the monthly calendar (last page of the newsletter) for the date.

RECIPE of the Month
RESTAURANT STYLE CHEESE BISCUITS
INGREDIENTS:
1 teaspoon garlic salt or powder
1 tablespoon parsley flakes
1 teaspoon Italian seasonings
2 cups Bisquick 1/2 cup cold water (or gingerale)
3/4 cup sharp cheddar cheese,
grated 1/2 c Butter
DIRECTIONS: Preheat oven to 450 degrees. Mix Bisquick, water and cheese. Drop by large spoonfuls
onto greased baking sheet. Bake for 8-10 minutes. After baking, (while hot) brush on melted butter or
margarine mixed with garlic powder, parsley flakes and Italian seasoning (a little seasoning goes a long
way.) Serve hot. YIELD: 12 biscuits

It took us over 4 years to finally visit this place again and we were really impressed when we walked in
with being seated fast, everyone friendly, good waitress, fast and good service. There was so much to
choose from on the menu and they have:

Remoulade Shrimp etc.
They have all types of salads including the soup/salad bar which is inclusive with the dinners.

combo dinners such as: Steak & Scallops, Steak & Shrimp, Steak & Lobster and Steak & Crab Legs,

Grouper, Snapper, Salmon, Haddock, Alaskan Crab Legs, Lobster Tails, Sea Bass and many more seafood
dinners.
Pasta dishes such as: Chicken or Shrimp Alfredo, Seafood Alfredo, Lasagna, Shrimp Scampi, Linguini and
Shrimp and Scallop Linguini, Egg Plant Rollatini etc.
They offer desserts, Speciality Coffees, Various Beverages and many other types of drinks.
Sunday Brunch is served from 11am to 3pm.

Onions
Left over onions can be poisonous
Taken from an article seen on the internet. In 1919 when the flu
killed 40 million people there was a doctor that visited the many
farmers to see if he could help them combat the flu. One family
never contacted this deadly disease. The doctor ask this family
what they did to avoid the disease and the wife said that she had
placed an unpeeled onion in a dish in the rooms of their home.
The doctor ask if could have one of the onions and place it under
the microscope. He found that the onion did have the flu virus in
it and that was what kept the family healthy.
Lot of times when we have stomach problems we don’t know
what to blame. Onions absorb bacteria and this is the reason we
shouldn’t eat an onion that has been sitting for a time after it has
been cut open.
LEFT OVER ONIONS COULD BE POISONOUS
Question was asked that people are concerned that mayonnaise will spoil……..Reason people get sick
from potato salad at picnics is, it’s either the potatoes or the onions. Both the onion and the moist
potato in a salad, will attract and grow bacteria faster than any commercial mayonnaise will even begin
to break down.
The onions are a huge magnet for bacteria. You should never keep a portion of a sliced onion, in the
refrigerator uncovered, for any period of time. Doubly watch out for those onions you put on your
hotdogs at outings.
ALSO, DOGS SHOULD NEVER EAT ONIONS. THEIR STOMACHS CANNOT METABOLIZE ONIONS.
It is dangerous to cut an onion and try to use it to cook the next day, it becomes highly poisonous for
even a single night and creates toxic bacteria which may cause adverse stomach infections because of
excess bile secretions and even food poisoning. If you see black on the onion, toss it away because it
has bacteria growing on it which could make you sick.

SOUTHFORK CLUBHOUSE
Well, after many years of begging, our pleas have finally been heard and acted
upon. I know by now everyone knows we are having new floors placed
throughout the entire clubhouse and everyone is waiting and excited to see what the new tiled floors
will look like.
Thanks so much to Paul and Scott for listening at the many annual meetings with the Association Board
about our concern for the floors and we as a community thank them both for pushing the start button.
It all started on June 10th
with all the carpeting being taken up and the clubhouse was closed to
everyone, and as I write this article on June 17th
, there still is much to be done but well worth the wait.
We have to also thank John & Sandi for all the hard work they are doing to help get the floors ready for
the contractors and to make this a better community and one we will be proud of!

Sorry to all the men who were not able to come to the clubhouse for the Ice Cream Social planned on
Father’s Day, June 19th

But never fear, the Women’s Club is still going to have something once the floors are all completed and
the Clubhouse is open again.

and to see the smiles on everyone’s faces!
