Brief presentation.- We are a group specialized in processed tropical fruit since 1996, currently we sale mainly mango frozen simple pulp to USA, around 23,000 MT to USA. Also we have IQF and aseptic fruits. We buy to process around the 4% of fresh mango produced in Mexico directly from selected producers, and another partner company buys another 4% for sale as fresh fruit in USA; the group buys 8% of fresh mango national production. We are located at Irapuato, Guanajuato where are large extensions of high quality fresh strawberries and we are near to Zamora Michoacán, the main berries production zone in Mexico. As part of the group also we have fields with more than 100 has. with strawberries. Besides the regular IQF frozen process, also we have commercial and technical alliances and we are developing new and unique products for the gourmet market, considering aspects that can be valued by customers in the premium quality market, if this kind of innovations would be of your interest, we will be able to work together developing new specific products for your market, we are developing some ideas that we may discuss if you may be interested, as Baby Mango Popsicles or simple pulp as individual smoothie between others. Our philosophy is to grow through innovation with the best fruits products, the best technology and with the best partners… To do it, also we have invested in a very innovative Italian technology focused in get the best quality product in terms of organoleptic conditions, health, and the closest characteristics to an actual fresh product, with advantages as fruits ready to eat, pasteurized, with at least 80% of original nutrients, with at least 18 months shelf life without refrigeration and could be in pieces (whole, dices, chunks, cubes, etc.) or in straight simple pulp. It is through an Ohmic Heating pasteurized technology. Next, we are presenting a brief explanation about the Ohmic Heating technology we have and first results we have gotten processing strawberry in dices. The equipment will be functioning to receive orders on october 2013, then we are promoting it since now.

Italian machinery is already installed and tested, so we will provide international markets with pulp and pieces of fruit that have very similar characteristics to fresh fruit, but are bacteria-free, with a longer lifespan.
The elimination of bacteria through Ohmic heating, with minimal reduction of nutrient amounts, are very valued by markets that prefer natural, highly nutritional products. Nutrients and the organoleptic conditions are lost during the traditional pasteurizing due to the heating time at high temperatures, maintaining nutrients only between 15%-20%.
Another important healthy plus is that the Ohmic pasteurized product, compared with conventional processed fruit, is that the first one almost has the conditions of sterilized fruit due to the fact that it destroys the microorganism cellular membrane and attacks a wide range of thermal resistant microorganisms and spores. The heating effect may be sufficient to inactivate spores at 50-25000 Hz.
Conventional pasteurizing processes, although using aseptic bags, only neutralizes some microorganisms and doesn’t cover spores.
Nutrients are preserved in the Ohmic process because time of heating is only 26 to 35 seconds al 90ºC, compared with 9 to 12 minutes at same temperature in the conventional method.
The Ohmic heating requires for functioning a liquid environment to help the electric conductivity through the fruit, each fruit or product to be pasteurized requires specific process conditions to get an excellent quality. Dependent on the chemical characteristics and conductivity property of each product, we will be able to develop the specific requirements of each customer.
There are less than 60 Ohmic plants in the world, in Mexico there is one since 7 years ago (older technology) and Danone Mexico bought the whole production exclusively.

STRAWBERRY DICES PROCESSED WITH OHMIC HEATING.-
In next strawberry photographs we used the self-fruit puree as the liquid required in a proportion of 20% pulp and 80% dices. We may use another kind of neutral liquid. Also we can produce simply pulp.
