I should emphasize that my remarks only reflect, of course, my personal views and my own perception of the risks and consequences of eating beef: as you well understand.
My wife and I decided not to eat beef in the UK in 1991. Although the official (government) advice was that the risk was small, I believed that this advice was wrong: the problem was that the risk was _unknown_.
We continued to avoid eating British beef until about 1999, by which time I was satisfied that the surveillance was sufficiently good, the incidence of disease in cattle was sufficiently low that even if eating prion-containing meat did carry risks in principle of causing vCJD, the risk had become completely negligible.
As you know I have been Chairman of The Departmentof Health "Expert Committee on CJD" for the past 5 years and I still have this position. Irish beef is quite safe now. This is because of restrictions on the type of feeds that animals are allowed. BSE is now only found in older animals, and these probably were infected before these restrictions were put in place. In addition the killing of animals is very strict to ensure that no "high risk" materials eg CNS tissues can enter the food chain.
