Every month, EXKi shines the spotlight on a seasonal and local vegetable by introducing several new recipes.
The recipes this month are:

Beetroot,ray of sunshine during winter!
This root vegetable is well-known for its round or cylin-drical shape, purple-coloured flesh and delicately sweet taste. We generally buy beetroot that is cooked and pas-teurized, either in bulk or vacuum packed.
Make sure that the skin is smooth and uncracked without any black spots. But we can also buy beetroot raw in many varieties, in colours ranging from yellow to violet, and even marbled pink. It keeps well for several days in the fridge.
Raw, it can be grated and dressed with a walnut oil vinaigrette, and served with lamb’s lettuce and dried fruit. Cooked, it’s great in salad but is equally delicious fried with onions as a puree, either on its own or with potatoes: simple and tasty!

The EXKi Project in Bolivia Labelled organic (by Certisys) and Fairtrade (by Max Havelaar), EXKi coffee is made from a perfect blend of 95% Arabica beans, harvested from the high plains of Bolivia and Mexico, which ensure its fullness and depth of flavour, and a touch of Robusta from Tanzania for an extra hint of caramel.
The slow and traditional coffee roasting technique of the Family Liégeois, master coffee roasters since 1955, balances acidity and ensuresthe fullness of flavour and aromas of this exceptional coffee.
In 2012, EXKi started to support the Santiago II cooperative in Bolivia by financing a coffee plant nursery.
This nursery enables old coffee plants to be replaced by new plants thus increasing the yield, without jeopardising the high quality of the coffee. This makes it possible for the earnings of the cooperative’s coffee farmers to be steadily increased. In return, the coffee farmers commit to adhering to organic farming standards concerning the use of fertilisers and the protection of the rainforest.
In 2015, EXKi and its partners (SOSFaim, Café Liégeois & Coffee Team)started to pursue the support of Bolivian coffee farmers and to reward those who apply agro ecological practice in a more efficient way.
