SecondHelpingsisoursecondsourcebookforteachers,librarians,andcaregiversonthetopicoffood.ItisasequelofsortstoMudluscious,butwithsignificantdifferences.Theactivitiesareplannedforolderchildren,primarythroughmiddleelementarygrades.Thesectionsofeachchapterhavechanged.TheRelatedActivitiesaremorecurricularthansimplyacollectionofstories,songs,poems,crafts,andgames.Stories,scripts,andsomeoftheshorterrelatedactivitiesarestillincluded,butoftenasspringboardsforchildrentocreatetheirown.Thereisastrongeremphasisonlanguageactivities,curricularconnections,andmulticulturaltitles.
Booksaboutbakedgoodsandsillyfoodsarestillpublishedinlargequantities.Soup,gardening,shoppingforfood,preparingfood,andlunchallremaintopicspopularenoughfornewtitles.Withthedemandformoremulticulturaltitles,adramaticincreaseintheamountofpublishedstoriesandcookbooksaboutethnicfoodshasoccurredinthepastdecade.TheseoutpouringsarereflectedinthecontentofSecondHelpings.
Inreexaminingthesubjectoffood,manycomplexissuescanbeaddressed.Thesetopicsincludenutritionanddiet,overeating,worldhunger,andmoreequitabledistributionoftheworld'sfood.SecondHelpingsdoesnotsetouttodealdirectlywiththesecomplicatedissuesbutissensitivetothemandofferssuggestionswhenappropriateforclassdiscussionandstudentresearch.Thescriptinchapter8,"OutoftheWorld'sBreadbasket,"entitled"PlentytoGoAround"issetinapartofeasternAfricawheretimeshavebeenhardandtheanimalsarecautionednottotakemorethantheirshare,sotherewillbeenoughforall.Tellingchildrenmulticulturalstoriesandintroducingfoodfromaroundtheworldincreasesinternationalunderstanding.
ThescopeofSecondHelpings'foodstoriesandactivitiesiselementaryschoolagechildren.Thisbookisintendedtobeusedasaresourcebookbyteachers,librarians,andchildcareproviders.Itisliteraturebased,annotatingpicturebookspublishedprimarilyafter1985.Italsoannotatesselectedlongerbookstobereadaloud.ThesubtitleofMudlusciousidentifiedapreschoolaudience,butthatbookcanbeusedwithchildrenfrompreschoolthroughthirdgrade.Thisbookdoesnottargetpreschoolchildren,butmanyoftheactivitiescanbeadaptedforanearlychildhoodgroup.
AnewfeatureforthisbookistheStarterKitineachchapter.Thiskitintroducesthethemewithanappropriatelyrelatedcontainer.Thus,theeightchaptersofthisbookareentitled:"OutoftheLunchBox"(lunch,picnics,andpizza)"OutoftheGroceryBag"(growing,shoppingforfood,andpreparingfood)''OutoftheGiantEconomysizeTrashBag"(largequantitiesoffood,bigeaters,andfussyeaters)"OutoftheDoggieBag"(funandfancifulfood)"OutoftheCarryOutBox"(eatingoutandhavingdinnerguests)"OutoftheCakeBox"(breadandcakes,pies,cookies,icecream,andsweets)"OutoftheSoupPot"(soups,stews,andleftovers)"OutoftheWorld'sBreadbasket"(foodaroundtheworld).
Thechaptersarearrangedinparallelfashion.Afteranintroductiontothetheme,thechapterscontinuewithafocusbook,activitiesthatrelatedirectlytothefocusbook,alongerbooktobereadaloud,relatedpicturebooktitles,anoriginalstory,areaderstheatrescript,activitiesthatrelatetothechaptertopic,thestarterkit,andrecipes.

TheStarterKitservesseveralfunctions.Theideaoflookinginsideacontainerisfunforkidsandfortheadultsusingthekit.Thecontainerwithitscontentsisareadymadedisplayitemwithvisualappeal.Onapracticalside,theteacherorlibrariancanfillthecontainerwithbooks,food,storyprops,anditemsthatexpandthetopic.Forexample,inchapter2,"OutoftheGroceryBag,"thestarterkitwouldbeapapergrocerybag(orarecyclablecanvasgrocerybag)packedwithgardeningtoolsandseedpackets,grocerylistsandcoupons,recipecards,acopyofthefocusbookSomethingGood,freshvegetables,andafewkitchenutensilssuchasawhiskandaspatula.Copiesofrecipesandthescriptalongwithwritingactivitiesarealsoincluded.Thekititselfcanthenbegiventoagroupofchildrenforsmallgroupwork,makingitaselfcontainedselfstarter.

RelatedActivitiesincludesafewsongs,poems,actionrhymes,andchants.Therearemoreopportunitiesforwritingandspeakingactivitiescreatedbystudentsthemselves.Craftprojectsandgamesdonotappearasaseparatesectionrather,theyareintegratedwiththerelatedactivities.Forexample,studentsareencouragedtodesignandcreatetheirownmenus,aprojectthatwouldinvolveartandwriting.
TherecipesthatappearedinMudlusciouswereadultdirected,whiletherecipesinSecondHelpingsareintendedforstudentuse.Theformatofeachoftherecipepagesispatternedafteracookbook.Eachpagecanbephotocopiedandthreeholepunchedtomakecookbooks.Alistofingredientswithspecificquantities,andastepbystepmethodappearforeachrecipe.Drawingswillserveasahelptothestudentcook.Thisformatisintendedtoteachchildrenthatthestepsofmeasuringandpreparingprecedetheenjoymentofeatingfood.

Introduction
Thereisnothingthatismoreasymbolofthebacktoschooltimeofyearthananewlunchbox.Astrivialasthismayseemtoanadult,choosingbetweenalunchboxwithasuperheroandonewithacartooncharactermaybeveryimportanttochildrenwhoareJustlearningtomakedecisionsontheirown.Formanychildrenlunchisthefirstmealtheywillshareregularlywithpeopleoutsidetheirfamilies.Thekindsoffoodmakealunchdifferentfromtheruralmiddaymeal,whichismorelikeatraditionaldinner.Lunchfoodsforkidsshouldbefoodstheyenjoy,likehotdogs,pizza,sandwiches,picnicfood,chickenlegs,anddeviledeggs!
Theseinformalmealsappealtochildrenasafunalternativetothetraditionalaroundthetablefamilydinner.Anexampleistheportablefingerfoodthatcomesinsmallcontainers,oftenopenedrightatthetabletorevealsurprises.Anotherappealisthesenseofeatingonthego,theindependenceindecidingwhereandhowtoeat.Someoftherulesaresuspendedandeveryoneismorerelaxed.

1.Forcantalope:cuta2"slicefromthetopofthemelonwithasharpknifeandscoopoutseedsandpulpwithaspoon.Usingamelonballer,scoopoutcantalopebausandputtheminalargebowltomixwiththerestofthefruit.Usethesehollowcantalopesascontainers.
2.Forwatermelon:outthemeloninhalf,andusingamelonballerorknife,hollowoutsomeofthehalfofthemelonusethishollowhalfasacontainer.Fromtheremovedmelonmakebausorchunksandputtheminalargebowltomixwiththerestofthefruit.Eithersavetheotherhalfofthewatermelonoroutitintobausorchunkstoaddtothefruitsaladlater,asthesupplydiminishes.
3.Washallthefruits.Cutupthebananas.Hullthestrawberries,leavethemwholeiftheyaresmallorsucethemiftheyarelarge.Slicepeaches,leavingontheskinifdesired,andtosswithlemonjuiceorfruitfreshsothepeachesdonotturnbrown.Separatethegrapesfromthebunch.Addallthisfruittothelargebowlwiththemelon.
4.Addorangejuiceandcoconuttothefruitandmix.Spoonasmuchofthemixedfruitasyoucanintothemeloncontainers.Keeptherestofthefruitinthebowl,covered,intherefrigerator,andreplenishthemeloncontainersasthecrowdeatsupthefruit!
