• Work with businesses free of charge on minor issues
and advice
– Site visits
– Advice on ingredients
– Adjust composition
• Complex research needs scoped and
recommendations made
• Work together to achieve funding
• Fee-for-service
A generic example
– Refinement of ingredients
– Develop prototype products
– Consumer assessment to confirm appeal
– Packaging
– Assessing shelf-life (safety and quality)
– Nutritional panels and labelling
– Labelling for product appeal
“Rich in flavour, sweet, acidic with fruity tones”
How can we help?
Work on funded projects
• Participate in Advanced Food Manufacturing Grants
Program:
– Informing development of a frozen pizza range
– Frozen value-added oysters
– Long-shelf life value-added mussel products
– Lactose free functional cheese product
– High value honey product for China
• Current projects
– Value-added mushroom products
– Sensory assessment of vegetable products
Functional Food Demonstration Projects
“Functional foods and beverages are foods that
provide an extra health benefit to the consumer
beyond basic nutrition”
• Foods fortified with beneficial nutrients
• Vitamin enriched, fatty acid enriched
• Free from foods
• Gluten free, lactose free
• Biofortification
• Livestock fed specialty diets
Functional Food Demonstration Projects
• Market growth in functional products
– Functional food/beverage (CAGR of 7.5% 2014-20)
– Functional ingredients
• Limited SA manufacturers of functional
products
• Opportunity identified to assist industry
growth Stephen Pahl
What were the objectives?
• Undertake a number of rapid case studies to:
– Identify how government can best assist industry
– Develop at least one functional food product
– Utilise expertise within PIRSA, SARDI and Food SA
– Build capacity and capability in the development
of functional foods/beverages
Feed/fertilizers Livestock/Crops Food Processors Retail
Functional ingredient
What did we do?
Application Process
• Request for Expressions of Interest
• Review and shortlist applications
• Nutritional advice, potential claims and market potential
Businesses involved
Product Development
• Technical assistance (ingredient selection & product formulation)
• Product assessment (NIPs), Sensory assessment (consumer panel)
• Advise on potential claims
What products were developed?
– Two vitamin and mineral
enriched breads
– Extended range to follow
– A vitamin and mineral
enriched multifibre
cracker base
– Product range to follow
– Reduced salt take-home
meal
– Vitamin enriched purple
wheat noodles
Key considerations
• Concept functional products could be developed rapidly – a successful model.
• Accessibility and suitability of functional ingredients– Limited number of suppliers and supply
– Most vitamins and minerals are imported
• Early consultation is vital– Commercial feasibility, regulatory compliance, scope of
claims
• Achieving health claims– Only ‘healthy products’ can make health claims – must
meet Nutrient Profiling Scoring Criterion
Current Activity
• Due to the success of the earlier work, a new
initiative is currently being advanced:
“Fast Track Functional Food Program”
– Expression of interest soon to be called
– Utilising a similar model to the demonstration
projects
– Industry ready with ideas for functional foods that
need assistance. Focus on products with
commercial potential.
