The University of Rochester has been celebrating Dan-delion Day since 1951. This year it falls on April 26. While some consider the dandelion to be a nuisance weed, others insist it is a beneficial plant. Dandelion leaves contain vitamins and miner-als, including vitamin A, C, and K, and are a good source of calcium, potassium, iron, zinc, and manganese. They have often been added to salads and sandwiches. The roots, when ground up and roasted, have made caf-feine-free dandelion coffee. Root beer and sar-saparilla were made using dandelion and bur-dock roots. Dandelion flower petals have even been made into dandelion wine. Native Ameri-cans, the Chinese, and Europeans have all used dandelions as traditional medicine. Con-sider that the next time you uproot these weeds.
Sauerkraut Salad
By Phyllis Wheeler
1 1/2 quart sauerkraut, drained
4 medium yellow onions, chopped 1 green pepper, chopped 1 red pepper, chopped
4 stalks of celery, chopped
Dressing: 1/2 cup cider vinegar
1 cup sugar 1 tablespoon celery seed
1 tablespoon mustard seed
Combine salad in a large bowl. Mix together dressing and toss to coat salad well. Cover and refrigerate overnight. Stir well before serving.

Words to the Wise
It might be fitting that Scrabble Day falls on unlucky April 13. Scrabble’s inventor, Alfred Mosher Butts, ran into a bit of bad luck himself when, during the Great De-pression, he became an out-of-work ar-chitect. But he put his time to good use and invented the word game that is en-joyed all around the world. Break out the Scrabble board and play a round on April 13. There are many play-able words that don’t appear to be words at all. Consider these the next time you get stuck with a rack full of consonants. You could score big: CRWTH – ancient stringed instrument also known as a crowd PFFT – an expression indicating an abrupt ending CWM – a deep valley with high walls If you have a letter Y, then you could try these words: GHYLL, WYCH, THYMY, and GLYCYL. Just remember, while these words are allowed in Scrabble, they might annoy your playmates.

One music technology that has not enjoyed the longevity of vinyl records is eight-track tapes. Those celebrating Eight-Track Tape Day on April 11, however, might beg to dif-fer. For some, the eight-track is the ultimate piece of nostalgia. Eight-tracks first allowed us to bring our favorite music into our cars and on the road. Without eight-tracks, we might never have enjoyed cassettes and
CDs.

Perhaps you’ve celebrated Peanut Butter and Jelly Day on April 2 in years past and are looking for new ways to enjoy this beloved sandwich. Well, chefs have been innovating new twists on this old staple. Some dip the sandwich in pancake batter, deep fry it, and dust it with powdered sugar. Others ditch the bread altogether to create peanut butter and jelly chicken wings. The wings are tossed in a peanut sauce, fried, and then drizzled in strawberry sauce. There is no shame in adults loving peanut butter and jelly. In fact, Julia Rob-erts, Jack Nicholson, Bill Clinton, Bill Cosby, Larry King, and Julia Child are all members of the Adult Peanut Butter Lovers’ Fan Club. It is also rumored that former President George W. Bush ate peanut butter and jelly sandwiches every day. Now that’s an executive decision.
