Plan the LOGISTICS of the assessment.
Make a script, find materials, create an experiment, etc.
Most importantly, make a SCHEDULE and set deadlines. This will make you work more efficiently.

Google Docs are really useful.
Multiple editors can work simultaneously
from different computers.
CREATE
DO the project.
Read the Audience, Situation and the Role to get in the mood.
Follow your schedule, stick to the deadlines, do your task.
This should not take as long if you completed the first 3 steps.
