In the sector of wine our viticulturists and oenologists experienced drastic changes. A viticulturist, is not, any more, the countryside person, the pensioner, who insists to remain in his isolated village in the mountains in order to keep it live and keep himself alive as well. Today, a viticulturist is a young person, a scientist that lives in the city, but found in his or her vineyard in 20 minutes or in half an hour; the one who takes particular and scientific care to his or her cultivation; the one who perceives his or her vineyard as an enterprise to get benefit and profit of it. And a "wine factory", is not any more an earthenware jar, in which our grandfather makes wine for his friends and relatives and for the family to drink the cold nights of winter. A wine factory, today, is the modern equipment that functions under completely controlled conditions, under the cautious and scientific care of the winemaker, who transported or received the raw material from selected varieties in particular vineyards; who monitored with scientific care all the stages of the growth and maturation of the grapes. Distinguished speakers, The presence of the Minister of Agriculture, Natural Resources and Environment, at the opening of the Wine Congress is a reflection of the high importance interest given to this sector of economy, to the environment and to our culture. You, as experts in the field of vine and wine, you honoured with your presence the Congress and for this allow me to express my gratitude on behalf of the organisational and scientific committee of the Congress. Your expertise, that will be transmitted, the days that follow, to the participants of this conference, contributes significantly to the economy, the society, the culture and the environment of Cyprus. We are certain that, at the end of this Congress, the participants of the conference will move to their vineyards and their wineries with more wisdom, ready to apply new practices in order to improve their products. Dear Participants of this conference, In the recent years the vineyard of Cyprus has been limited in quantity but became richer in quality. The wine of Cyprus, in the recent years has improved a lot and became competitive as compared to selected wines all over the world! This is attributed to you, the wine makers of Cyprus, that with particular enthusiasm, you saw the vineyard and the winery as a promising profession, as a worthwhile enterprise, as a professional satisfaction and at the same time as a contribution to the economy, the society, the environment and culture. We, the organizers of this congress, bearing in mind your obvious interest to make an extraordinary product; we conceived the idea of organising this event. We trust that this event will contribute to your entire professionalism as winemakers. We hope that you might enter in the contest with your competitors in the world, and put up with the pressures, and remain in the market of wine, and make a product which is distinguished in its quality and excellence and his character. 1 & 15 Objectives of the Congress are: The distinction and excellence of quality wines The recognition of the merits of wine and their promotion to the consumers The appointment of wine as an economic element and cultural product The support of vineyard of Cyprus and the promotion of Cypriot wine, The improvement of the wine products of Cyprus and their competitiveness in the international market Dear Participants of the conference, The wine of Cyprus possesses a character! It has a brand and it claims to have a place in each good restaurant and gastronomic event in Cyprus and abroad; and be chosen amongst eclectic and dainty consumer. Today, the first day of the event, you will attend the module for the growing of a vineyard and winemaking technologies. The techniques to establish a vineyard, to cultivate and irrigate it, the plant protection systems and the biological cultivations will be discussed in detail in the first part of the day. After we cultivated and collected the right raw material; the grapes, we proceed to the fermentation and wine making. The techniques of wine making and modern technologies of wine-making will be presented in this session. Lactic bacteria, milolactic fermentation, new fermentation media, bottling, corks and lids, crossflow microfiltration, reverse osmosis, electrodialysis are some of the topics to be developed Your Excellency Mr Minister, Dear Participants, We would like to thank, firstly, the key factors who contributed a lot for the congress to take place: The Wine Products Council, under the auspices of which this congress takes place, The sponsors and supporters of this Congress, the sponsors for the communication of the congress in the media as well as our official carrier.
