SeitanSeitan is a vegan meat-replacement that uses gluten flour and nutritional
yeast as a base. Wrapped tightly in foil and baked, or simmered in stock, it takes on a texture and flavor equivalent to meat. If you’d rather not make your own, it’s available pre-made and canned in Asian grocery stores.

Ingredients1½ cups (225g) gluten flour/vital wheat gluten¼ cup (30g) nutritional yeast1 tsp salt2 tsp paprika½ tsp cinnamon½ tsp cumin2 tsp ground pepper¼ tsp cayenne pepper¼ tsp allspice¾ cup (180ml) water4 tbsp tomato paste1 tbsp tomato ketchup2 tbsp olive oil2 tbsp soy sauce2 cloves garlic
Method1) Preheat the oven to 325°F/160°C2) Mix the dry ingredients together in a large bowl and make a well in the
center.3) In another bowl, whisk together the liquid ingredients.4) Add the liquid ingredients to the well, and combine into dough. Turn
out onto a work surface and knead for five minutes5) Shape into a 6 inch (15cm) cylinder and wrap tightly in foil, twisting the
ends. Bake for 90 minutes.6) Unwrap and leave to cool on a wire rack7) Cut slices to use as required. The seitan can be refrigerated for about a week.
