Publisher’s NoteYou know there are a few precious weeks of summer still left, when the shimmering waters of Martindale Pond are cut by the oars of rowers, as the Royal Canadian Henley Regatta gets underway. The August ritual, currently marking its 130th year, is surely one of this region’s most prestigious events, bringing together some of the world’s most talented row-ers, many of them destined in future years, to World Championships and of course, the Summer Olympics. If you have never ventured out to Port Dalhousie to take in a few of the races, maybe it should be on your bucket list. It is certainly a thrilling event to observe!

This has defi nitely been a summer for the record books, with sweltering heat, suff ocating humidity and very little rain. For those among us who couldn’t wait for summer, it has been a case of “be careful what you wish for”, as we watch our lawns turn to straw and our vegetable gardens struggle to produce their usual yield of tomatoes and cucumbers. Area vegetable and tender fruit farmers will defi nitely be experiencing a challenging season, as their crops suff er from lack of rain, so always remember to do your produce shopping at local farmers’ markets and roadside stands to ensure you‘re supporting local growers, especially during this hot, dry summer.

In this edition of “The Silver Journal”, we’ve tried to bring you some interesting stories that range from celebrating the unique, in a business like “Hibizcus Fashion and Jewellery Boutique”, a north end St. Catharines shop that off ers something fresh and diff erent for women, to marking the ongoing success of “Wally Wemnant’s Carpet Market”, a family run business faithfully serving Niagara customers for over thirty years! We’ll take a trip to Merritton and visit The Lancer, a longstanding breakfast tradition and check out “Chile and Agave”, an authentic Mexican restaurant that will have you thinking you’re sitting in an eatery in downtown Guadalajara. We’ve also included some informative pieces that fo-cus on health and wellness providers that off er services which include custom orthotics to properly made and fi tted dentures.

As the heat of this summer starts to give way to cooler nights and shorter days, we will become aware that autumn is knocking on our door and winter is only a few short weeks away. Let’s try and make the most out of what’s left of our summer, read a few books, visit some of the region’s best known landmarks and peruse this latest edition of “The Silver Journal”. We hope you fi nd it both informative and entertaining. See you in the fall!

Steadman Jewellers Celebrating 100 Years of Service! John Bauslaugh

Walk into 29 Front Street in Thorold and you cannot help but sense the history around you. Steadman

Jewellers is celebrating their 100th Anniversary this year. Present owners Ken Atmekjian and his wife Kirsten are excited to be launching a face lift on the facade.

“We’re excited to be giving a fresh look to the store, while keeping the integrity of the old look intact,” owner Ken explained. Ken and Kirsten have been selling jewellery, watches, clocks, giftware and providing custom work and repair service in the present location for the last nine years. “This fall marks our ninth year in Thorold, and we just love the community here,” Ken says. “We definitely have clients coming from all over Niagara and the golden horseshoe, but we really feel a gratitude to the loyal customers of Thorold. There is a close knit community here and they have welcomed us and we’ve made a lot of friends.”

This appreciative spirit is what launches Ken into talking about his passion which is obviously custom making jewellery and

unique pieces. Every item Ken has custom made is highlighted on a screen at the back of the store that they call the “wall of fame.’

“All these pieces have a unique story to tell,” Kirsten says, showing a few of the rings made by Ken. “The clients bring in stones to reset, some are passed on from a family member, others are purchased on holiday,” Ken adds. “Then we begin the process of making something new.” In addition to custom making jewellery, Ken does regular and not so run of the mill repairs. “I’ve done some really extensive restorations on some antique jewellery, pieces the customers thought were beyond fixing,” Ken says. “Sometimes people get really emotional when they see the work Ken has done on a family heirloom,” Kirsten adds. “It’s very exciting and satisfying.”

Besides jewellery repairs, engraving and appraisals are also done on site by Ken who is a certified gemologist. The passion Ken and his wife have for their trade is evident when Ken starts explaining some of the new technology they’ve been using. He

brings me to the back of the workshop and shows me his laser welder, his newest toy. “The benefits of the machine are many,” Ken explains, adding “I don’t know how I worked without this laser welder before.” He explains to me how he is able to solder broken claws on rings without heat being a factor. “Before,” Ken says “I would have to remove all the stones such as emeralds (which don’t like heat) and it was extremely slow and expensive. Saving time and money is great.”

Kirsten then leads me back out to the store where she shows me on the screen the digital microscope which is a small device that magnifies my ring while I’m still wearing it. “This tool allows us to show clients whatwork needs to be done on their jewellery,” Ken says. “It helps us see problems before they become serious, like losing a diamond in a ring.”

With their focus on old school service and by using the newest technology, Ken and Kirsten are poised to take this little shop into the next hundred years!

A rtscapes Gallery and Custom Framing Studio was established in 1990 by Carol Gay and her brother

Tom. Carol has established herself as a well known custom framing designer in St Catharines. Her dedication to her customers is bar none, and people know her from far and wide for her knack of picking the right colours and styles for their art.

During the past 22 years, Artscapes Gallery was located in Ridley Heights plaza on Fourth Ave. Then a fabulous heritage home became available at 150 Ontario Street in St. Catharines and Carol felt it would set the perfect atmosphere for Artscapes Gallery.

With one-of-a-kind hand-crafted windows, unique character, and just the great “vibe”, what you find when you enter is sheer beauty. It also includes the rarity of free parking behind the house in this downtown location.

Artscapes delivers great quality framing and wonderful customer service. They are always developing new ideas and creative ways to enhance art or objects that are brought in. Each piece is unique in its own way and should be framed as such. Together with her long time employee Shelley Szczucki, Carol hopes to continue to serve the Niagara Region for many years to come. Stop by for

a free quote and design for your art. After hour appointments are available.

Artscapes carries original art by local artists. These artists include Alexander Rasmussen, Beverly Barber, Jerry Manco, Sheila Krack, Darlene Monroe, Norbert Collins and Shelley Szczucki. Their main feature until August 30th is the work of Ken Cosgrove.

I am excited about a new fl oral shop that opened in May, at the new plaza on 210 Martindale Road in St. Catharines, called Beatties Fresh Flower Market. During my visit, I talked with

the owner, Leanne Beattie, and discovered that she had a very long love aff air with fl owers and fl oral arrangements.

Leanne’s passion for fl owers fi rst emerged when she did the fl oral arrangements in the windows of Beattie’s Stationary as an employee. This created the interest to study fl oral arrangements at the University of Guelph. Upon graduation in 1988, she worked at Vine Floral and eventually became a partner in the business. Leanne soon realized that the only way to explore her uninhibited sense of artistic freedom and creativity was to open her very own fl ower boutique for those in search of a more unique and exceptional fl oral experience. Through her years of experience as an artist and designer, she has developed a keen eye for detail. This can be seen throughout her designs with their diverse use of colour palettes, textures, and styles.

The shop is very unique, as it is one large open concept room with the design table in the center. This makes it easier to work with the customers when creating masterpieces from the many diff erent creative options located in their large walk-in cooler. And no job is too small. Leanne has 25 years of experience in creating designs for weddings, corporations, events, fundraisers and funerals.

Though Leanne has recently completed a course in self employment and small business at Niagara College, she determined very early in her career that the most effi cient (and eff ective) path to growing her business is referrals from very happy customers. “We take pride in our work and continue to be committed to growing our business primarily, if not entirely, through positive word-of-mouth and referrals from past and present clients,” stated Leanne.

As the writer of this article, I extend an invitation to Leanne’s previous clients and prospective new ones to drop by and visit her vast new creations.

The potted hibiscus planters lure you in with their tropical appeal. Then from her first friendly hello as you enter the shop, you can feel the passion that emanates from the petite

and beautiful Jessinta Joseph. Jessie Jo, as she is affectionately called, loves to surround herself with splendour and colour and then pass it on to others. When you enter her boutique on Lakeshore road in St Catharines, your senses will be awakened, yet calmed at the same time. The colour, lighting, aroma and sounds strangely stimulate and attract.

The incredible selection of purses, scarves, jewellery and fashion all glow like the colours of the rainbow.

“I try to encourage people not to be afraid of colour when it comes to fashion”, says Jessie Jo. “Why can’t we wear the colours that up lift our moods, even in the winter?”

Along with the clothing, jewelry and accessories, Jessinta carries a line of hand painted leather handbags and walletslabelled Anuska, not commonly found anywhere in the region. The word Anuska actually translates into one of a kind. Each and every handbag and wallet is hand painted by gifted artists. The high quality, soft leather is emblazoned with images of natural beauty: flowers, butterflies, and peacockfeathers flowing together, each one matchless.

The boutique is teaming with jewellery cases placed provocatively around the boutique and surrounding the orange leather sofa, where husbands like to lounge, while their wives shop. Be prepared to spend some time perusing the jewelry, as there is a very substantial selection. Much of the jewelry is also handcrafted by artisans from around the world. Jessinta herself chooses the artists for their distinctive styles and supports a fair trade philosophy. You will find bracelets crafted with freshwater cultured pearls ensconced in stainless steel, surprisingly comfortable and form fitting. Large flashy rings are another of her specialities. There are so many unusual pieces to behold.

Jessie Jo has created her own fashion line and you will be in awe when you see the skirts which she has commissioned in her own fabric choices, complete with sequins and “bling” for those who like to stand out in the crowd. If you are shopping for that special occasion outfit, you will find a selectionof dresses from Montreal and New York. Hats and fascinators are all the rage this season. A rainbow of choices awaits you to make you feel like royalty when adorned with these beguiling pieces.

If you are looking for something unique and inspiring you will find it in the selection of scarves, and wraps, both cotton and silk; batik and hand painted to accentuate the soft fabric and colours. The cotton beach wraps have been a hit with the brides for destination weddings as they are fitting yet elegant for the beach nuptials. They are very versatile and can be arranged into a sundress as well, a must for your beach vacations.

The intriguing window displays are changed weekly.” Displays become boring so quickly. It is such a pleasure for me to showcase my exquisite pieces and create a new look each week”, says Jessie Jo. Hibizcus boutique is a place you will visit often to see what the world of fashion and design can bring to your doorstep. Open six days a week, Jessinta is happy to book “shopping by appointment” and girls nights for groups in the evenings.

Tony Bozza retired earlier this year from his post as Principal of Denis Morris Catholic High School in St. Catharines, the same school he graduated from in 1972. From there, he then

went on to the University of Waterloo and obtained his Honours Bachelor degree in Mathematics and then to the University of Western Ontario’s Teacher College. Once completed, Tony landed his first teaching job with the Peel Board of Education in 1978. But he only worked there for four months until an opportunity arose at Notre Dame College School in Welland in 1979, teaching Mathematics and Computer Science.

After nine years at Notre Dame, Tony moved on to the Holy Cross Catholic Secondary School in St. Catharines in September, 1987 as the Program Chair of Mathematics and Computer Science. In the 1996-97 school year, Tony became Vice Principal of Denis Morris Catholic High School but returned to Holy Cross in 1997 as their new Vice Principal, then took on the role of Principal in 2001.

But in September 2006, Tony took on the final assignment of his educational career, as Principal of Denis Morris Catholic High School until this past June, when he retired.

The last six years of Tony’s career was highly rewarding. He found that returning to Denis Morris Catholic High School was like returning to his old neighbourhood. Tony reconnected with the community, friends, and staff. He never saw his position as going to work but rather going to a community every morning to work together with the staff in creating a family-like atmosphere for close to 1300 students. It was a big school with a small school feel.He made the time to walk the halls to connect with the students.

When I asked if he saw any changes between today’s students and when he was a high school student, Tony said, “In today’s society, kids face more challenges than we did. But you need to keep positive. You have to look for the good, and then you’ll find the good in people. We teach our students how to critically analyze their surroundings and react in a positive way to create change.”

When I asked Tony about our future generation, he responded, “I’m very confident that we will have a great future with this generation. You have to be a good listener. When these kids see that you’re actually listening to their ideas, you gain their respect as they will see that you are seriously considering their opinions.”

As for Tony, the meaning of the word retirement hasn’t really hit him yet. In the short term, he plans to spend more time with his wife and three children, create a daily exercise program, play tennis more often and increase the number of golf games to improve his score. He said he doesn’t have a master plan to take a long trip or to do anything specific. Tony said he wants to take this time to step back and process the change. He wants to take the time to enjoy the community without his administrative hat on.

“There is still so much connection to the community and I wish the best for the school and students. That’s what I truly feel,” Tony said. “You’ll see me at many events because I don’t see myself disappearing off into the sunset.”

Isn’t putting on an outfit that expresses your mood the best

way to start your day? It’s undisputed that colours and moods are inextricably linked. Colours influence us; they can manifest our emotions and convey them to others; clearly, a powerful communication tool, externally and internally.

Colour is an amazing, actual, living energy that engulfs our senses and has the ability to dramatically affect our mood, feelings and emotions. It is subtle, yet potent. Believe it or not, whatever mood you

are in when you awake in the morning, this feeling filters into your fashion sub-consciousness and you would instinctively pick the colour you ‘feel’ best to slip into. Alternatively, if you feel absolutely ‘blah’ even after that jolt of java, then initiate a mood-change by slipping into a colour that will alter and define you and your day. It’s an exhilarating notion, because we can intentionally don colours to reflect or deflect the mood we are in.

Red is a hot crazy emotion stirrer, normally associated with love or lust, evokes fear, anger, and can project power, dominance or intimidation. Orange is also a power-provoker but is less daunting. It symbolizes optimism, vitality and creativity and is mentally calming. Yellow is perky, inviting and inspiring but too much of it can contribute to a mood-mellowing effect. Green depicts the semblance of nature, hence is relaxing and soothing. Grin and wear all shades of green if you are stressed out first thing in the morning! Blue conveys relaxation, tranquility and triggers your creativity juices or on the other end of the spectrum, melancholia. Purple energizes and is a projection of luxury and lavishness, stimulates and adds that spring in your step. Pink is romance and linked to the doe-eyed little girl innocence. White reflects simplicity and purity. Grey stimulates confidence and sophistication. Black can be distinctively two extremes - doom and gloom or chic and classy. It is the quintessential mark of elegance and timelessness; the quintessential colour of choice at funerals and in recent times, a hot favourite at weddings. What a pleasurable and simple way to utilize fashion to stay healthy mentally, emotionally and physically!

Stay Fabulous!

Mention boilers this time of year, and thoughts turn to the days of record breaking heat during the summer of 2012. Not with Dave Williams of Williams Kool Heat who is

extolling the benefi ts of boiler heating systems. Dave says boilers are making a resurgence by providing “beautiful heat.”

“Williams Kool Heat”, located at 67 River Road, Welland, install boiler systems residentially and commercially. Churches and larger buildings are employing this system, as well as the Welland Museum.

Gone are the days of installing clunky radiators--though they are still in effi cient employ--as many systems are under the fl oor. It involves installing a system of tubes in the basement fl oor, then pouring concrete on top. This provides an overall warmth to the entire home. “There is nothing like walking on a warm fl oor,” says Dave. “It is also easy to control.”

Hot water heating, the most popular method in Europe, provides a more comfortable and consistent warmth with less fl uctuations than forced air, the system of choice in North America. According to Dave, there is less dust and noise with the boiler system. This is due to not needing to use dust gathering or rattling ductwork. For the record, Williams also installs forced air systems as well.

The boiler system costs a little more upfront, but is “the most effi cient heating system by far.” They also have “double the lifetime” of forced air systems, according to Dave. Home boiler systems can be installed using copper tubing around the baseboards to provide warmth. Some customers are installing them on the fl oors of their garages and driveways. Imagine, no shoveling!

Dave Williams should know. Starting in the business at the age of 16, he has been honing his craft for 33 years. He has been running his own business for over half a year. He said he “has lots of experience.” Dave is a licensed gasfi tter, Category 1, as well as a licensed refrigeration mechanic. “Ah, refrigeration, the kool subject.”

Williams Kool Heat offers a wide variety of repair and installation services for all your HVAC needs including:

•Emergency Repair Service to All Makes & Models•Furnace Repairs•Central Air Conditioning Repairs•Furnace Replacement Installations•Central Air Conditioning Replacement Installations•Humidifi ers•Air Cleaners•Water Heater Repairs•Water Heater Installations•Annual Preventative Maintenance

Dave’s wife Tracey said “In the last two weeks, we have been repairing two air conditioning units a day.” Thus far, there have been no calls regarding the mythical freon felonies. Tracey laughed about freon thievery and said most units have upgraded to the more ecological R22.

To avoid air conditioning unit repairs, Dave emphatically states “Maintenance. People maintain their cars and change their oil.” However, apparently this is not so with cooling systems. The most important aspect of air conditioner maintenance is airfl ow. “It has to be unobstructed inside and out,” said Dave. And be wary of malicious mice. Their winter nests are one of the most signifi cant forms of blockage. Check all around your unit for telltale signs of the voracious homebuilders. Especially the tubing, “Maintenance is key”, Dave re-emphasizes.

“Williams Kool Heat” also caters to the growing concern of air quality. They capably install air cleaners and purifi ers.

While boiling in the summer of 2012, it may be time to start thinking about this winter’s heating system.

T here has been a trend in off ering funeral services in Ontario which step away from the traditional funeral home ceremony. These services provide everything a family needs during this

diffi cult time, but in a less-structured atmosphere.

“We provide a funeral service in a less formal setting” said Robert Passfi eld of Passfi eld Mortuary Services. “We off er the respect and professionalism in a relaxed environment.”

Passfi eld opened his business in 1995 to provide funerals in a less formal situation. As a fully-licensed service, Passfi eld provides all the necessary consultation, documentation (certifi cates and registration), merchandise, and transportation needs.

Visitation periods are left to the discretion of the family or friends, as are any religious services. No embalming services are off ered, but cremation services, which Passfi eld said constitute the majority of the business, are available, as well as direct burial services.

Another important aspect is that Passfi eld encourages families to take part in the planning and implementation of a graveside or memorial service. Venues for memorial services are usually arranged in places where the family feels most comfortable, such as a hall, a church setting, or in the home.

“Before World War II, families were much more involved in the funeral process,” said Passfi eld, citing that the departed was usually in the home for family and friends to pay their respects. “But after that time, homes got much smaller, and locations outside the home such as a funeral parlor became the norm. We off er a return to more family involvement from the structured service of the traditional funeral home.”

Passfi eld said this trend towards a less-structured funeral arrangement began in Thunder Bay in 1989, and has grown throughout the province since that time.

Passfi eld noted that a lot of his time is spent with pre-arranging and pre-payment of his services. He added that most children wish to have all the arrangements in place for their older loved ones who may not be able to mentally or physically make these arrangements.

With more than 25 years as a funeral director, Passfi eld is a fi rm believer in strong community relations.

“Word of mouth has been my best advertising,” he said from his Linwell Road offi ce in Saint Catharines. “In the six months we were open in 1995 we worked with 15 families. Now we do upwards of 170 families per year.”

This is a topic we all have to face one day, whether for ourselves, family

members, friends or neighbors. There will come a time when we will need to know our options. There can be situations that will lead us to a long-term care facility. Should this happen, we will still want some extra care and attention given to us as the staff are usually stretched to their limit.

How does it benefi t us to stay in our own homes?

To stay in your own home means that you still have your own independence. You can live in your own familiar space, cook the meals you like, wash your laundry with the detergent you like, have a shower when you choose. These are choices that we often take for granted.

What if I am unable to do the tasks required for me to remain in my own home?

You call Family & Senior Home Services and arrange a free at-home consultation. I will come to your home and discuss the challenges you are having and arrange to assist you in the specifi c areas of your needs.

What if I can do all these tasks, but I choose not to?

If you choose not to that means you are saving your energy for the more important events in your life. We are more than happy to clean, cook, and do your laundry or run errands so you can relax and enjoy life. What if I only need help for the short-term because of an illness or surgery? Family & Senior Home Services

is here when you need us or just need a break. We do not work on any contract basis. If you are having complications because of an accident, we are able to work with your insurance company to provide the best possible outcome for you.

What if I am a veteran and require services?

We are registered with Veterans Aff airs and we do direct billing. This means we do all the paperwork and there is NO paper work for you or your loved ones. We know that is a huge relief for you.

What if I have a loved one in a nursing home, what can you do for them?

We are able to provide them with some quality of life. We spend

one on one quality time with them. We can take them to their appointments or perhaps just take them for a drive. We can help them sort and organize their drawers or closets. Sometimes we just go in and sit with them to provide the companionship and conversation they lack in day to day life.

I am sure you will have more questions. Check out our website www.fshs.ca . Call me at @ 905-228-3075, if you live in the Niagara Falls or St. Catharines area.

We also have services available in Lincoln, West Lincoln, Stoney Creek, Hamilton, Burlington, Dundas, Oakville, Brantford and all of the surrounding areas. I look forward to hearing from you!

Optical Insight Paul Speer

T he fashion aspect of eyewear has grown exponentially in the last decade. Primary designers such as Alain Mikli, Frederick Beausoleil, Theo (Patrick Hoet), PM

Frost (Marion Frost) have inspired a whole new generation of extremely talented artists. Unfortunately, these young designers are sometimes overshadowed by the fashion power houses. People, assuming the eye glasses of these international entities exemplify the same quality and creativity as the clothing and shoes upon which they built their reputations, buy these name brands because of their advertising images.

As a result, customers rarely have the chance to recognize and experience the incredible creations of these innovative newcomers. At Speer Opticians, we welcome these upcoming artisans. We have recently launched two new collections from Italy—Massaro and Aurigane. We have also joined four other opticals in Canada to introduce industrial eyewear by Ron Arad from Israel.

Most people are not aware of the lens designed for individuals who work extensively on the computer. The main middle section is for viewing objects an arm’s length away (the computer), and the bottom is for reading. The top is for distance—reading the time on the clock or talking to a friend who just walks in. This division in the lenses eliminates the need to move your head up and down to focus. Lenses like these will definitely become an office worker’s “best friend”.

Awareness is finally dawning that the relationship between optometrists and opticians is like that of a doctor and pharmacist. The optometrist identifies the need, and the optician remedies the need. Since you pay for the exam, the prescription belongs to you. Do not feel obligated to buy glasses from your eye examiner. Their forte is the eye exam, our specialty is the eyewear. At Speer Opticians, our staff will dedicate time to informing you about products that will not only meet your optical needs but will also represent your fashion tastes.

Smiles flow freely whether one chooses thumb or needle. At Integrated Health Care and Fitness Studio movement and mobility is one of our major concerns. The focus of the

next few paragraphs is to get us moving and thinking about what mobility, independence and flow means for all of us. Another goal is to show how shiatsu, acupuncture and other activities can get you moving, keep you moving, and cultivate deeper health. Shiatsu and acupuncture are two therapies that originate from Traditional Chinese Medicine (TCM) and are excellent at maintaining the bodies flow and mobility.

Mobility is a key aspect of life that can profoundly affect our quality of life. This is most apparent to anyone who has suffered injury or disability in their lives. Mobility leads to movement, freedom, and independence. When we think of mobility we can think of our joints and muscles and the ability to move freely without pain. To move with strength and flexibility. This leads to both balance and locomotion. We can do things like get our own glass of water, go to the washroom without help, take a walk or a drive, lift and hold our granddaughter. In order for this to happen our bodies need everything to move well; good circulation, free joint motion, flexibility, strength, energy from our food, smooth signals from our nervous system. We can call this flow.

In Traditional Chinese Medicine (TCM) theory the root of health comes from the free flow of qi (“chee”) and blood. Qi means simply energy. To have good flow of qi and blood we must have ample energy from food and oxygen and more importantly no blockage. In TCM theory if there is pain there is blockage. For energy we need nutritious food combined with good digestion and efficient breathing for oxygen. It is difficult to get anywhere if you are short of breath or in pain. This is where shiatsu and acupuncture can help.

Shiatsu is a Japanese physical therapy that means “finger pressure”. In shiatsu thumbs palms and elbows are used to gently strengthen and release reflexive areas of the body. Acupuncture involves but is not limited to the strategic placement of hair fine needles on points of the body to increase circulation and relieve pain. Both practices have there roots in TCM. Both practices focus on increasing flow in the body. Increasing flow in the body can eliminate pain, improve digestion and breathing, which make the goals of mobility and independence possible. These therapies often act as interventions to break spirals of chronic pain, stiffness, anxiety, insomnia or weakness. This facilitation of health and breaking of harmful cycles allows the individual to get back out into the world and pursue there lives, interests and aspirations. Meaning you can take a walk, take a drive and most importantly play and hold your own children or grandchildren.

The best way to ensure this is to cultivate your health by keeping in motion. There are many ways to get moving and keep moving once you are pain free or almost pain free. I tell many of my clients that it is great to run or play hockey but we must also cultivate practices that we can do our whole lives, to our last days. Life as well as health should be more of a paced marathon than a sprint. Walking is one of the best simple exercises to do and it’s good practice for getting from one place to another.

I also highly recommend yoga and tai chi. The strengths of these practices is that they cultivate mobility at the highest level. In our daily lives, routines, and even sports, we go through very limited ranges of motion, sometimes with great repetition and force. This can lead to repetitive strain injuries, tendinitis, and dysfunctional movement possibly leading to joint wear and tear. This further leads to pain, lack of motion and a spiral that continues with chronic pain, weight gain and unhappiness.

Tai chi uses gentle but deep movements to take our body through its fullest range of motion while bearing the bodies weight. This leads to flexibility, strength, and balance. Similarly yoga develops these attributes with both movement and stillness.

Other great exercises include swimming, aqua-fit, and structured stretching and movement classes. Consult with your primary healthcare provider before undertaking any exercise program and look out for later articles explaining shiatsu and acupuncture in greater detail.

Massage Therapy is a technique that can benefit a great number of people with a wide variety of complaints, both physical and mental. Massage therapy among seniors,

also referred to as geriatric massage, is becoming increasingly more popular among the aging population.

Massage as a healing tool has been around for thousands of years in many cultures. The massage techniques performed on seniors does not differ from the traditional massage. The therapist will, however, take into consideration the fragile state of some elderly bodies and accommodate them with the appropriate care. Many seniors will also limit their sessions to 30-45 minutes, as older clients often do better with shorter, more frequent treatments.

Research has shown that the most profound changes from massage occurred in areas of the body that experienced trauma or pathology, and the psychological effects were most evident in those that experienced stress and depression (Rattray and Ludwig, 2000).

Some symptoms experienced by seniors that can often be alleviated with massage are: Joint inflammationArthritisMuscle painPoor circulationSleep disordersTendonitis

BursitisDermatological conditionsAsthmaEmphysemaHigh blood pressure

Benefits of Geriatric Massage:The effects of massage are both physical and psychological in nature. There are a number of benefits for seniors undergoing massage therapy.

Massage therapy is recognized for its ability to effectively reduce and manage pain, such as that from arthritis and joint pain. There are a number of techniques that a therapist can use to address the issue of pain. The source of the pain can be addressed by targeting nervous system firing. Massage can also break the pain cycle by increasing circulation to the injured area. Some techniques are even used to increase range of motion of affected joints which can further break the pain cycle.

Poor circulation is common among seniors. This is mainly due to diabetes or other chronic conditions that come with age. Massage can improve circulation in a number of ways: it can have a direct mechanical effect on the vasculature (the massage itself helping to move blood); local release of vasodilators (to increase diameter of blood vessels); circulatory changes resulting from reflex responses of the autonomic nervous system; and changes in blood viscosity (helps to thin the blood) (Rattray and Ludwig, 2000).

Massage therapy has been shown to improve respiratory function and chest expansion and to clear mucus in respiratory pathologies. Massage can also reduce stress levels in those with asthma, in turn reducing the frequency of attacks (Rattray and Ludwig, 2000).

Lastly, many seniors in today’s society are isolated. This may result in feeling lonely and some may even experience depression. Massage therapy is able to reduce stress, anxiety and depression and give the client a feeling of well-being. The benefits of human touch provided by massage are priceless to some. From the cradle to the nursing home, tactile stimulation and the emotional assurance of caring touch bring about a sense of well-being and security.

Massage therapy can significantly add to the quality of a senior’s life, both physically and emotionally. This form of therapy is a great option for those seeking relief but do not want to add to their already long list of medications and can be easily incorporated into a balanced and healthy lifestyle to promote continuous and further health and well being.

Plant & Rake Without the AcheGardening and yard work is deceptively strenuous. In a recent poll, 88 per cent of Ontario chiropractors indicated that working in the garden and yard were the most common sources of neck and back pain they treat during the warm weather season.

To help you enjoy the fruits of your labour during this yard and gardening season, we recommend you keep these tips in mind:

Stretch before you head out. Take the time to prepare your body for activity; always warm-up and cool down your muscles. Add a short walk and you’ll have topped off your routine with overall conditioning. Now you’re ready for your open-air workout.

THE RIGHT MOVESUsing the right moves can go a long way to enabling you to plant and rake without the ache. Positioning your body correctly reduces strain on muscles and joints.

LIFT RIGHTMake sure your back is straight. And always bend your knees. Carry the load close to your body. Avoid heavy lifting immediately after bending or kneeling.

KNEEL TO PLANTUse knee pads or a kneeling mat to reduce the strain while you plant and weed. Keep your back straight and stop frequently to take a break.

RAKE RIGHTEase the strain on your back by putting one leg in front, the other behind. Switch legs and hands from time to time.

ALTERNATEHeavy. Light. Heavy. Light. That’s the right way to handle those chores.

CHANGE HANDSTake the strain off by changing the position of your hands.

CHECK YOUR POSITIONAnd change it often. Kneel. Then stand. Or simply sit and relax for a while.

THE RIGHT TOOLSChoose tools that are ergonomically designed, with padded handles and spring action. Make sure the size and weight are right for you. And always choose the proper tool for the job.

Here are a few more tips to lighten your load:• a hose is easier to manage than a watering can• a good cart, or dolly, makes moving heavier loads a breeze• a wheelbarrow that is lightweight and has two wheels is a good idea• separate a larger load into several small ones• select comfortable, thick soled, supportive shoes• cover up with a wide-brimmed hat, wear gloves and sunscreen• use ergonomically designed, long handled, lightweight tools

Don’t forget to get-up, move around, alternate tasks, repeat your stretch routine, or sit back, relax, and have a cool drink. Try not to overexert yourself, and take three brief breaks at least once every hour. Give yourself a breather ... your back will thank you!

If you have back or muscle pain that lasts more than 48-hours without improvement, visit a chiropractor. Chiropractors play an important role in providing preventative education and early detection of spinal problems, as well as providing expert care for back, muscle, joint pain and injury.

TESTIMONIAL -- LEAH’S STORY I was diagnosed with Fibromyalgia and Chronic Fatigue Syndrome 20 years ago. I was prescribed standard pain medications. For many years before planning anything I would have to “wait and see how I was feeling”. While skating backwards, I fell hard and hurt my shoulder, neck and banged my head. By the time I got home, I could hardly turn my head. I tried to take care of the problem at home. However, the pain and stiffness became too severe over the next week that I could not sleep well. I was examined and xrays were taken to help diagnose my problem and to determine what type of treatment would be the most beneficial for me. Initially, my Chiropractor worked on my neck muscles and adjusted my upper back. I felt so much better and the stiffness and pain had started to subside quickly. This relief was new to me after suffering for so many years. The level of pain that I experience now has decreased immensely and I need less pain medication to function. Every day has improved significantly.

You may have been driving for many years and take great pride in your safety record, but as you age, it is critical that you realize your driving abilities can change.

To continue to drive safely, you need to recognize when these changes happen and modify your driving strategies to compensate when they do. Aapex Driving Academy is here to help you. We are a team of professionally trained instructors who can show you how to modify your driving style. Our techniques will help you identify and strengthen your weak areas and prepare you for the next phase of your driving career.

Understanding the effects aging has on driving skills:

•Pain and stiffness in your neck can make it harder to look over your shoulder when changing lanes or to scan left and right when crossing intersections.

Modification: Aapex will show you how to scan earlier at these danger points so that you may use a blocker technique (other vehicles can protect you). We will show you how to minimize the need to do so many lane changes and how to preplan when lane changing is necessary. Using your mirrors effectively and efficiently cannot be stressed enough.

•Leg pain or body aches can make it difficult to move your foot from the gas to the brake. Overall physical condition can affect the speed in which you respond.

Modification: Slower reaction times are a big concern for obvious reasons. The answer is simple… early detection and more effective observation and planning. Aapex will show you where to look, what are you looking for, what do you do when you see it, but most important… how to minimize your risk on the road.

•Slower recognition of dangerous situations is a key factor in many of the crashes that involve seniors. Drivers are slower at spotting vehicles emerging from side streets and driveways, or to realize that the vehicle ahead of you has slowed down or stopped.

Modification: Space is a key factor in keeping you safe and informed. Aapex Instructors will show you how to manipulate the space around your vehicle giving you maximum benefits all the while keeping up with the flow of traffic. You will learn how to take back control over the environment surrounding your car.

• Keeping track of so many road signs, signals and markings, as well as all the other traffic and pedestrians can also become more difficult as you lose the ability to effectively divide your attention between multiple activities.

Modification: Education is key. Not all changes in your driving strategies have to be because of aging. It is important to recognize that our traffic system has become ever more complicated and difficult to understand. Many of our drivers today have never had formal training on these modern systems. Signs, road markings, center left turn lanes and traffic circles may all seem a bit overwhelming. The team at Aapex Driving Academy is here to help you navigate these new traffic control methods so you can get your confidence back.

Just remember that it is normal for our driving abilities to change as we age. The goal is to recognize our limitations and reduce the risk by incorporating safe driving practices.

That may mean something as simple as modifying when and where you travel to giving up the keys – but by no means should it mean the loss of your independence. Alternative methods of transportation should be welcomed and embraced because of the health and social benefits it can offer.

Aapex Driving Academy offers you peace of mind with a full driving evaluation to determine your skill level. Armed with the proper information and tools, you will feel confident that you are making the right choices for your driving career.

It seems that each time I turn on the TV there is a program about addiction or an intervention with a person who suffers with an addiction. Families gather around with a counselor letting the

addict know how much their substance abuse has affected their lives. Of course, then the addict is asked whether or not they wish to go to treatment, which of course has been previously arranged. The client, surrounded by several tearful family members usually agrees, and off to treatment they go.

But I often wonder if those appearing in these shows or those watching truly understand the monster within. The alcoholic or drug addict battles each day with the beast. They are very much aware that their addiction is ruining their lives and the lives of those they love, yet the battle continues. Each new day brings on the battle and often the addict loses the fight. Each day they fight to stay clean or they fight to use.

In using, they strive to kill the pain or shut off the mind that never stops churning. They are filled with guilt, shame and remorse and swim in the pit of deep dark loneliness that only the addict knows. They are afraid to live and afraid to die. They feel worthless. Living in a whirlwind of pain and confusion, they retreat to the only thing they know that will take them to a place where nothing exists, not joy, nor sorrow. It’s a dangerous retreat into a world that often offers no way of return. Some die there. A few are fortunate and find the way out. With the monster in hot pursuit, they run for help, and in some cases are lucky enough to find it.

For those who stagger into recovery, help arrives in the form of a treatment center or a 12 step program. While the monster breathes heavily over their shoulders, they meet others just like themselves. Others who understand their pain, in a world with many who may not. There, they find hope and build strength.

In a war one never fights alone. In recovery they find others who will stand with them and face the monster. They discover there is strength in numbers and that they can do with others what they could not do alone. They find out that while many in the world may not understand them, their new found comrades do, and with hope and the strength of others, they can keep the monster at bay, one day at a time. With each passing day they become stronger. No longer are they looking for love where it isn’t, but accepting it where it is, in the voices and hearts of others just like them.

While the monster may raise its ugly head once in a while, they become stronger than the monster, and like any predator, after a while it weakens and gives up the chase. And the freedom the addict has searched for all of their lives is finally found.

Fifty Shades of Grey by E.L. James

This book and its two sequels, are about a searing sensual aff air between Christian Grey who harbours very deep demons about control and Anastasia Steele, a virgin who enters into the world of trying to fi t into Christian’s life, because of love.

The truth is I had a very hard time getting through these books. The writing quality was poor and if it were not for the interesting storyline, I would have given up. I have discussed this book with many customers and have come to the conclusion that it is a

gender and age specifi c book. (in most cases)

I have three daughters in their 30’s and they could not put these books down (two of them are not even avid readers), hence that age and gender comment.

On the back of these books it says “in a class by itself” and this is very true. I’m not even sure what section of my store to put it in. I don’t consider myself a prude in any way but this is a clear cut case of “Sex Sells”.

Of course, this is my opinion and I would love to get feedback from you on yours.

Book 1: Fifty Shades of Grey Book 2: Fifty Shades Darker Book 3: Fifty Shades Freed

Too Close to the Falls by Catherine Gildiner

This book was simply enjoyable from the fi rst page to the last. It is the memoir of a girl who had a very diff erent childhood upbringing. I laughed through the book as it brought back my own memories of growing up in that era.

Catherine’s writing keeps you in the story right along with her. Her mother is a diva of her time that doesn’t clean, cook or have any desire to punish Catherine for her behaviour. Her outlook is that it is best to learn from your mistakes.

Her father owns a pharmacy and has Catherine working right alongside him from the age of three. This was on the advice of a doctor in an eff ort to control her free spirit.

Anyone born in the 50’s will enjoy the memories of that time all over again through Catherine’s eyes. It is defi nitely well worth the read.

Never Surrender To An Incurable Lung Disease(NC)—Looking back, I was pretty blasé when I was diagnosed with idiopathic pulmonary fi brosis (IPF) in October 2007. I had never heard of the disease and just thought, “oh well, that’s what I’ve got.” As I learned more about IPF, I found myself frustrated and confused. My wife was devastated. Her friend had

not long before died suddenly from this disease. Today, with the support of my family and top-notch healthcare team, I am fi ghting back and helping others to do the same.

IPF is a progressive, debilitating and ultimately fatal disease that typically aff ects patients aged between 50 and 80 years of age. It is characterized mainly by scarring of the lungs, which hinders the exchange of oxygen and carbon dioxide. The most common symptom is shortness of breath, something I fi rst noticed one day in May, 2007, while doing the fi tness test to maintain my level two soccer referee license. I had rarely experienced such extreme breathing problems during my referee career, so I visited my family doctor the following day.

After being referred to a respirologist, I was diagnosed with IPF and was told that if I searched the internet, I would scare myself to death.

I learned I had a life expectancy of three to fi ve years, and that the only intervention available to prolong my life was a lung transplant. I also found there was a shocking lack of information and support available for people living with IPF. Given it is a rare disease, the public and even the medical community is still generally unaware of the severe nature of the disease and its possible causes.

I established the Canadian Pulmonary Fibrosis Foundation (CPFF) in 2009 to provide education and support for people aff ected by pulmonary fi brosis, and to help answer those non-medical questions frequently asked by those suff ering with the disease, as well as raise much needed research funds.

I encourage everyone diagnosed with IPF to take up my motto: Never Surrender. Winston Churchill used these words in 1939 when confronted with the threat of invasion by foreign forces. These were the words I stood by after my diagnosis and I believe they helped me through those most diffi cult days.

Breathing should never be hard work.

More information about IPF and how you can support people living with the disease can be found online at www.cpff .ca.

Have a Safe Summer! The heat wave has arrived! With the rise in temperature come the increased risks associated with summer.

Heat Cramps: Painful muscle cramps primarily in the legs and abdomen, caused by loss of water and salt through sweating .They are not serious and can be reversed with some basic first aid. Ensure the person is put at rest in a cool place and given as much water as possible in small amounts.

Heat Exhaustion: More serious then heat cramps, watch for: excessive sweating dilated pupils, dizziness, blurred vision, headaches and cramps. Cold, clammy skin, rapid pulse and shallow breathing, vomiting and even loss of consciousness may also occur. Seek medical attention. The first action: remove the person to a cool location.

Heatstroke: Is life-threatening, and can result in permanent brain damage or death. Seek medical attention immediately or call 911. Symptoms include; a rapid pulse which

begins to weaken as breathing becomes noisy; skin may be hot and dry or hot and sweaty. Fatigue, nausea, vomiting and convulsions may occur, leading to loss of consciousness. Lower the body temperature quickly using wet sheets and fanning, sponging armpits, neck and groin. Immersion in cool water is recommended if possible.

In Niagara, we have lakes, rivers, quarries and of course backyard swimming pools. Always remember how dangerous water can be! Keep your summer safe while enjoying the water. Remember these helpful safety tips.

NO Alcohol! Illegal and deadly: the sun, water, wind and motion, will dull your senses and alcohol greatly intensifies these effects by impairing fine motor skills.

Personal Floatation Device (PFD): Despite your ability to swim a great distance from the shore, the sudden distress of going over board will cause shock. A life jacket or

PFD will keep you afloat till help arrives.

Stay away from Dams, Towers and Intakes: Canal dams, intakes and waste weirs pose a threat to swimmers. The strong currents and powerful undertows are deadly. Stay clear of all such waterways, as it is illegal to swim within 40 m of these waters.

By the Pool

Adult supervision: ALWAYS have an adult be within sight and reach of children.

Stay a Float: Children under three or who cannot swim must wear a lifejacket or PFD.

Lessons: Encourage children to take swimming lessons. Adults should consider taking water safety classes and a First Aid/CPR course from their local St. John Ambulance.

How To Protect Seniors From Extreme Heat(NC)—While extreme heat can put everyone at risk from heat illnesses, seniors are one of the most vulnerable sectors of our population and require special attention. Hot temperatures can be dangerous, especially for seniors who have:

•Breathing difficulties;•Heart problems;•Hypertension;•Kidney problems;•A mental illness such as depression or dementia;•Parkinson’s disease or who take medication for any of these conditions.

Many people, especially older adults, may be in a state of chronic dehydration because of a reduced ability to feel thirst, the body’s reduced ability to react to dehydration, or concern over frequent urination.

Here are some tips for helping seniors cope with extreme heat:

•Prepare for the heat. Tune in to local weather forecasts and alerts so you know when to take extra care.

•Arrange regular visits. Neighbours, family members and friends should visit seniors regularly to see if they need any assistance.

•Check the air conditioning. Check the air conditioner to make sure it works before the hot weather hits. Otherwise, make arrangements to visit a spot close by to cool off on very hot days. Keep the temperature between 22C/72F and 26C/79F.

•Pay attention to symptoms of heat illness. Watch for symptoms which include dizziness or fainting, nausea or vomiting, headache, rapid breathing or heartbeat, extreme thirst or decreased urination with unusually dark urine.

•Call 911 if necessary. Heat stroke is a medical emergency so call 911 if you are

caring for someone who has a high body temperature, and is either unconscious, confused or has stopped sweating.

•Stay cool and hydrated. Drink plenty of cool liquids even before signs of thirst. Eat more fruits and vegetables which are high in water content.

• Avoid exposure to very hot temperatures. Wear loose-fitting, light-coloured clothing, prepare meals without using the oven, block the sun by closing awnings, curtains or blinds, take cool showers or baths, use a fan, wear a wide-brimmed, breathable hat or use an umbrella outdoors. And wear sunscreen with SPF-15 or higher.

You can find these and other helpful tips online at www.healthcanada.gc.ca/cc, by e-mailing Health Canada at [email protected] or calling 1-866-225-0709.

exceptional. Electric fuel pumps are good for about 100,000 kms. Some will get noisy before they fail, but most quit with no warning and many times right after fi lling your tank. Timing belts are good for 100,000 to 140,000 kms, depending on the manufacturer. However, most engines these days are an interference fi t, which means that a belt failure will cause the valves to hit the pistons resulting in severe engine damage.

Uneven tire wear is an indication of worn suspension components, so getting your tires checked regularly can certainly help detect larger problems. Other component life spans include: fuel fi lters, which average 50,000 kms, transmission fl uid 50,000 to 100,000 kms and oxygen sensors which last about 80,000 to 150,000 kms, depending on the type of sensor.

What I am trying to illustrate is that no matter how well your car is running, there are probably some services you have overlooked that may cause your car to leave you stranded when you need it the most! More frequent visits help us lower your cost per visit and keep your vehicle reliable and trouble free.

One last tip before signing off this edition; are you having trouble seeing the road or street signs at night? You may not need new glasses, as it could be a simple as the plastic headlight covers on your car need to be polished. More than 60% of cars on the road over fi ve years old have covers that are cloudy or turning yellow, severely limiting the headlights’ illumination ability. Come see us here at Gary’s and let us develop a customized maintenance program for your vehicle and driving habits.

“Logic will get you from A to Z; imagination will get you everywhere.” - Albert Einstein

This month, being the summer and most of us adventure more during this time, I thought we could consider imagination and the effect it can have on revitalizing your life. It’s all about energy. Everything is energy, whether it’s a nerve that has a pain, or the beating of our heart, or the pathways in our brain called synapses; it’s all about energy.

In the context of imagination, this is where we fire up new synaptic pathways and help our brain, especially as we age, to maintain its elasticity. No matter what your age, imagination is a key element to a vibrant energetic life.

Let’s start off by your remembering your favorite place on the planet. A place you visited that filled you with peace and calm and delight. Can you take a mini vacation now and visit the secret garden of your mind? If you are able to do so, you will notice that this pausing now and then to visit this place in your memory will revive the pleasant energy you first experienced there. If you’re really able to, you may even hear, see, smell and almost touch the surroundings within your body as you surrender to the memory. This visitation is a mini meditation to your body and can allow a momentary lapse for any current stress your body is experiencing and we all know stress is the number one cause of disease in our modern times. Habituating yourself to imaginative moments can actually be a stress reliever, as well as open the doors of a new direction in your life. Minimized and forgotten imagination takes a back burner to goal setting, yet I have found with my clients, that fear of the unknown can trigger more fear which is the opposite effect to a successful goal. If you can fully feel and imagine what it will be like to arrive at your dream or goal and feel the enjoyment, excitement and richness of success, you are more likely to achieve your dream and in the meantime, fill your body with energy and excitement of the journey, while de-stressing it. These are also positive vibes that attract synchronicity and more opportunities on the pathway to achieving your goal.

Whether you want to learn bridge, change careers, take a course or consider an opportunity outside your usual routine, imagination can play a key role in calming your fears, envisioning your goals and eliminating fearful mental debris. If we remind our busy selves to take these moments, we also become more conscious of the stress we carry, which affects our energy systems and our health in a positive way.

Valuing and tending to imagination can rejuvenate your body and

calm negative energy, while inspiring and motivating. So take a mini vacation and work your imagination!

I love Mexican food...and I’ve been to Mexico several times, so when I walked into Chile & Agave Mexican Grill at 51 Hartzel Road in St. Catharines, I could smell the authenticity of the place

right away.

At the bar, I notice some Mexican nationals enjoying themselves. Then I learned from our polite hostess that the owners are from Mexico as well. Elizabeth and Raoul Valencia...memories of my past visits to their country came fl ooding back.

My party of six started with authentic quesadillas, guacamole and nacho classico made with the freshest ingredients. Afterwards, we enjoyed burritos, chimichangas, fajitas and enchiladas with several diff erent fi llings such as chicken, beef, shrimp and veggies. The food and the service were excellent.

We discussed our past experiences with other establishments that are off ering a kind of “Tex-Mex” that we felt Canadians are trained to accept as authentic fare. My friends and I would recommend that you try Chile & Agave Mexican Grill because they strive to produce authentic Mexican cuisine with a touch of modern creativity. I would suggest that while dining at Chile & Agave you let your sense of adventure guide you through their unique menu selections.

Finally: Authentic Mexican Food! John Bauslaugh

By the way, did I mention that the Margaritas, Pina Coladas and Tequilas were delicious? They were and we all agreed that we will be back...and soon.

Peter Holley of the Lancer Restaurant is in the enviable position of being able to take two worry-free days off a week. Anyone familiar with the ever intense food service industry knows

how rare this. “I am the envy of restaurateurs everywhere,” Peter gushes. It is because he has “the greatest staff in the world” that he is aff orded such luxury.

“They really take care of me,” Peter says of the staff at the Lancer, located at 85 Hartzel Road, St. Catharines. It also because of his employees Peter was able to make an easy transition from a corrugated packaging salesperson to restaurant owner during his self-declared “midlife crisis.”

His four waitresses, with a combined sixty-fi ve years plus serving at the Lancer, all worked for the previous owners, earning Peter’s faith with their experience. He also retained one cook, who is also his kitchen manager.

The Lancer Restaurant is celebrating its fortieth anniversary this year. Peter, with the severance from his previous vocation, took over operation February 1, 2010, making “no major changes.” He added Eggs Benedict to the time honoured menu. He also installed some new lighting to brighten the building, erected in 1972. The Lancer tagline: “Forty years and better than ever,” is no misnomer considering how many other restaurants have fallen by the wayside during this time period. Indeed, there were originally three Lancer Restaurants in St. Catharines with one being located on Geneva Street, the other on St. Paul. Both establishments are still related to the eatery industry, but not under the Lancer banner.

The “Early Riser Special” is the “best value in town,” said Peter. It is a complete breakfast, including coff ee for $5.50 taxes included. The remainder of the menu consists mostly of typical diner fare. Hot roast beef sandwiches, club house sandwiches, french fries—well, you get the idea. Jack Peets of the Jack and Lori morning show on 105.7 EZ Rock is a “huge fan of the BLT”, Peter said. The Lancer also off ers daily lunch specials for $8.95 which includes “soup AND french-fries,” Peter emphasizes. In addition, every Monday is free homemade chocolate chip cookie day Peter said while preparing the next day’s tempting dough. “I am actually stirring while we speak.”

While he is hands-on in preparing chocolate chip cookies, Peter takes an opposite approach to his staff . He provides the “all the tools and the training (for his workers) to do the job.” He believes that any breakdown in this system is the “failure of management.” With this approach, he can sit back and enjoy the bounty of his eff orts.

The Lancer is open daily from six in the morning until three in the afternoon. With a surplus of dinner establishments in the area, Peter felt it wise to stick with breakfast and lunch. If you are coming

in looking for Peter Holley, it probably best to avoid Wednesdays and Thursdays. Those are his days off .

Delight Your Taste Buds With Whole Grain Pasta

(NC)—Eating a balanced diet is one of the most important factors in achieving a healthy lifestyle. Fortunately, being health-conscious doesn’t mean you have to give up the dishes you love.

Canadian chef Stefano Faita is a firm believer in healthy eating, and often relies on his Italian roots for recipe inspiration.

“I love authentic Italian meals – especially pasta,” he says.

According to Stefano, there are many ways to ensure that your pasta dish is well-balanced. For example, if you’re looking to increase your fibre intake, he recommends trying whole grain version.

“There is a ton of healthy whole grain pasta options out in the market. I prefer the whole grain pasta line from Barilla, because it’s made with 51 per cent whole grain and still offers the great taste and texture that people are accustomed to.”

He recommends the following recipe for anyone looking to indulge in a great-tasting whole grain meal:

Whole Grain Spaghetti with Spicy Lamb Sauce

Serves 4

•1 box (375 g) Barilla whole grain spaghetti• 1 tbsp (15 mL) butter• 3/4 cup (175 mL) grated Pecorino Romano cheese• 1/4 cup (50 mL) extra virgin olive oil• 2 cloves garlic, chopped• 1 sprig rosemary, finely chopped• 1/4 tsp (1 mL) red pepper flakes (or to taste)

When Jorgen and Sherry Ohlsson purchased J Monk’s Fish and Chips 11 years ago, they put their heart and soul into it and are very proud and hardworking.

Jorgen’s 30 year background in the hospitality industry has paid its rewards. The time spent working in some of the largest and most prestigious hotels in the area taught him much about customer service.Sherry describes herself as the ‘workhorse” and it is obvious the combination works well: since they took over, the business has tripled. The friendly, quality service the regulars have come to know is provided by the constant presence of Sherry and Jorgen. They are there every day and only have 2 other staff members to assist at peak busy times. The same friendly faces and quality service are what the customers have come to expect and appreciate.

Located near a local high school, during the school year they serve about 120 students daily. The students pass through with a steady fl ow and rhythm of service which has developed over the years, allowing them all to be served with ease over the lunch hour. Jorgen and Sherry enjoy the students, striking up chats and even some mild mentoring has resulted over the years.

One of the favourites of the high school gang is the hot pepper poutine. Unique and delicious, it has become very popular, along with the latest addition of samosas. The samosas are brought in from Toronto and have been voted “Toronto’s best” There is a variety of Indian style dipping sauces and chutneys to accentuate the samosas. The salads on the menu are all made fresh on site. Jorgen actually shops and hand picks the vegetables himself for the best in quality. The salad dressings are all original recipes and made at the shop. The coleslaw is the ultimate classic accompaniment to the fi sh and chip dinner and a must have if you order the fi sh and chips.

Two thousand pounds of potatoes are fried up each week along with the battered fi sh. The variety of fi sh fi ts all budgets with halibut, haddock and pollock all off ered on the menu. Scallops and shrimp, both jumbo and mini round out the seafood menu. Not in the mood for seafood? Also off ered are chicken strips and burgers to be complimented by onion rings and pepper rings.

Not just fi sh and chips, J Monk ‘s off ers a wide variety of British imported products. Jams, sauces, Devon custard, biscuits, teas… even Lucazade, that famous original of the “energy drinks” that many Brits will remember fondly.

J Monk’s is open 6 days a week, from 11 to 7 from Monday to Wednesday and until 8 on Thursday and Friday, Saturday noon to 8pm.
