JPEG error analysis was performed by capturing TIFF and JPEG images, then calculating the RMS difference and applying a calibration between block boundary features and subjective visual JPEG scores. Both scores indicated high JPEG quality. Correction of JPEG blocking error was trialled and found to produce minimal improvement in the RMS difference. The texture analysis methods used were singular value decomposition over pixel blocks and complex cell analysis. The block singular values were classified as meat or non- meat by Fisher linear discriminant analysis with the colour image processing result used as ‘truth.’ Using receiver operator characteristic (ROC) analysis, an area under the ROC curve of 0.996 was obtained, demonstrating good correspondence between the colour image processing and the singular values. The complex cell analysis indicated a ‘texture angle’ expected from human inspection. 1 BackgroundIn this paper we investigate the relationship of tex-ture analysis segmentation to colour segmentationon meat images and investigate image features tocharacterise visual texture in an image.The appearance of meat, such as colour and vi-sual texture are important to the consumer whenpurchasing meat. The perceived colour of meatis a function of its chemical makeup and viewingconditions, varying with age and ambient lighting.Visual texture aspects include the alignment ofmuscle fibres with respect to the axis of view and“marbling” or the distribution of small fat regionsin the muscle proper; the latter feature being par-ticularly important in certain markets. Segmenta-tion of meat and fat from the background, meatfrom the outer fat and meat from marbling by

colour are conceptually easy tasks provided certainconstraints, such as controlled lighting and posi-tioning are achieved. Texture analysis on meat onthe other hand is somewhat more subtle.The Meat Quality project at AgResearch is aFRST funded initiative with the ongoing goalof finding better ways to objectively assessmeat for features salient to the consumer suchas colour, texture (to the bite), firmness andmoisture. Visible/near infrared spectroscopy(VIS/NIR) is being employed as a possiblecommercial tool for nondestructively measuringthe chemical and physical properties of meat.VIS/NIR spectroscopy has traditionally onlyscanned a single point or small region at atime. Spectroscopic imaging (usually referredto as hyperspectral imaging in the literature)provides spectral information at a numberof localisations, yielding considerable extrainformation. Hyperspectral imaging systemsare being developed, but as yet commerciallyavailable systems either have limited spectroscopicbandwidth or considerably limited spectralresolution (these cases are usually referred toas multispectral imaging). Regardless, given asuitable hyperspectral imaging device, there isconsiderable room for research into the fusion oftraditional NIR spectroscopic data analysis andimage processing techniques. Meanwhile it sufficesto investigate processing on pseudo-hyperspectralimages to consider the necessary data processingmethods.As part of the Meat Quality research, AgResearchis looking at localised properties throughout thevolume of Longissimus Dorsi (LD) muscles (porter-house or ribeye) by NIR, a non-invasive technique.This “3-D mapping” is hoped to reveal new infor-mation about spatial variability in the character-istics of the muscles. Image processing is beinginvestigated to establish localised ‘truth’ of meat

content (fat-muscle ratios, etc) for the NIR spectralanalysis. This paper describes some image process-ing investigated.This paper is structured as follows. Section 2 out-lines the methodology used, including image acqui-sition, steps taken to assess JPEG quality, colourimage processing and texture analysis. Section 3gives results and discussion and Section 4 conclu-sions and future directions.2 Methodology2.1 Setup and Image AcquisitionA Longissimus Dorsi (porterhouse or ribeye) mus-cle was cut from a beef carcass following a verycareful handling regime, rolled in plastic wrap and

stored at 150C post rigor for three days. Thewrapped meat was then placed in a tube holderto ensure the surface was perpendicular to the in-tended view angle and to allow clean cutting asneeded. A large blue board was placed behindthe meat from the intended view of the camera toassist in image segmentation. Slices were spacedat 14mm separation along the axis of the muscleand were taken immediately prior to image acquisi-tion to minimise colour effects due to the chemicalinteraction of oxygen.Camera setup:• A Sony DSC707 commercial digital camerawas used.• The camera was set up with the camera lensaligned 0.9m from the meat face. The camerazoom was set to maximal optical zoom andthe focus set at 0.9m.• The depth of focus was set to the minimumpossible so that non-target backgroundobjects were blurred.• Camera resolution was set to the maximumresolution 2560 × 1920 pixels.Image Acquisition:• Three images of each meat slice with one grey18% reflectance and one white 90% reflectanceimage were taken (Jessops photographic greycard) as reference grey for each meat slice.• Six slices were studied giving a total of 30images.• For the assessment of the quality of JPEGsproduce by the camera, JPEG and TIFFcopies of each image were generated by thecamera. The TIFF to JPEG compressionratio was 6.5:1.2.2 JPEG Quality AssessmentThe JPEG file format was chosen because of thetime taken to save an individual lossless TIFF fileon the camera (approximately 45 seconds for each14Mbyte TIFF file) and due to the need to aquiredata quickly over the slices of a muscle to ensureminimal time influence on the chemical composi-tion of the muscle. To assess the error due to JPEGcompression, the RMS difference for the individualcolour planes was taken over the image set. Visualinspection of the JPEGs showed that significantblocking only occurred in the blurred blue back-ground region of the images. No ringing artefactswere observed.The JPEG deblocking algorithm due to Phamand van Vliet [1] was trialled. This algorithm usesanisotropic diffusive filtering by convolution with avariable linear Gaussian element to smooth alongJPEG blocks while attempting to preserve imageedges. The result combined with an isotropic

global Gaussian filtered image by a weightedaddition soft mixing method. Automatic JPEGquality assessment [2] was used as suggestedin [1] to set the strength of filtering. The qualityassessment scores JPEGs between 0 (worst visualquality) and 10 (best visual quality) with the worsethe quality the greater the standard deviation ofthe Gaussian elements.2.3 Colour Image ProcessingFigure 1 shows an outline of the colour image pro-cessing algorithm used to segment the meat imagesinto the constituent parts of the meat region, largefat regions and the blue background. a blue-enhanced image.The blue region was detected by thresholding c3

at the threshold value 0 and the threshold resultbinary image was morphologically opened using acircular structuring element of radius 3. The meatregion was detected in c2 by first morphologicallyclosing with a square structuring element of width5 pixels to reduce small dark regions in the meatarea. Then the Haar wavelet transformwas applieduntil a minimum of eight rows was reached. Inthe minimum scale image the maximum intensitypixel point was found and tracked back up throughthe subsequent resolutions in the approximation

coefficients to the original resolution. The closedc2 image was then thresholded at the mean plusthe standard deviation of all pixel values in theimage. Holes in the resultant binary image wereflood-filled. The object determined by the corse tofine resolution tracking was selected as the meatobject.The fat region was found by taking the red plane,masking out the meat and blue regions and thenthresholding with a stringent (to avoid confusionwith other bright objects) threshold value slightlyless that the maximum pixel intensity value. Theresultant binary image was morphologically closedusing a circular element and then only objectsgreater than 1000 pixels in area that neighbour themeat region by 5 pixels were kept as fat objects.2.4 SVD Texture Analysis and ClassificationThe meat region of the images exhibit a visuallyrough and reasonably regular textural pattern.Singular valued decomposition was investigated asa likely method for detecting the meat region.Singular value decomposition (SVD) of matricescan be a useful discriminating factor between tex-tures [4]. The singular value decomposition of amatrix X isX = USV Twhere U and V are orthogonal matrices and Sis a diagonal matrix with the singular values sii

on the diagonal. The singular values are rankedsi,i > si+1,i+1 and decay with respect to i at arate proportional to the degree of variation in amatrix.Singular values were computed over blocks of size32 × 32. The block size was chosen as a multipleof eight to minimise any effects due to JPEG blockboundaries. A block size of greater than eight pix-els square was required to encompass enough tex-tural information to be useful for texture discrimi-nation, yet small enough for sufficient localisation.Blocks were begun in the top lefthand corner andleft over rows and columns were discarded as themeat region is centred in the images, resulting in

40 × 60 × 32 SVD images. When applied to acolour image and the singular values catenated weobtained 40 × 60× 96 SVD images for comparisonwith the colour image processing.Pattern classification was applied to the singularvalues using Fisher linear discriminant analysis(LDA) [5]. Receiver operator characteristic (ROC) analysis [6]was employed to examine the efficacy of textureclassification. A ROC graph is a plot of, for anumber of classification thresholds, the true posi-tive fraction (TPF) or ratio of the number of truepositives to number of actual positives against thefalse positives fraction (FPF) or ratio of false posi-tive to actual negatives. Assuming the data followsthe bi-normal parametric model the area under theROC curve (AUC) is related to the signal to noiseratio of classification bySNR = 2erf−1(2AUC − 1) (5)where erf−1(·) is the inverse error function. WhenAUC = 0.5, SNR = 0 which corresponds to noise

and AUC = 1 implies TPF = 1 when FPF = 0,corresponding to perfect classification or SNR =1.2.5 Complex Cell Operator for Image TextureOrientation AssessmentFigure 2: Segment of meat imageTexture in the meat images is visibly orientatedwith a clear dominant angle. Figure 2 shows anexample segment of a meat image with diagonallydirected texture from top left to bottom right. Thisangle of texture varies down the length of a muscledue to the change in direction of muscle fibres, in-fluencing various subjective features of meat qual-ity such as ‘bite texture.’ NIR spectra taken downthe length of muscle fibrils are not likely to bequite the same as spectra taken across fibrils dueto changes in light scattering.To characterise texture orientation and strength oforientation a complex cell model is used [7]. Thecomplex cell model is a neurologically inspired barand edge detector intended to respond primarily,but not exclusively, to pixel intensity change in agiven direction. _,_,_,_,_ d_d_(10)which is a diffused root-sum-squares of the simplecell responses with preferred orientation and spa-tial frequency.With the complex cell response in hand, we maynow attempt to find an indication of the strengthof each preferred angle response over the meat re-gion. This angular response strength measure washoped to serve as an indication of muscle fibrilorientation when considering NIR analysis. Wemask out all non-meat regions of the image andaverage the complex cell responses over 32 × 32blocks to match the SVD texture analysis. Thenfor each spatial frequency at each block the anglefor which the block has the greatest response wasfound, indicating the dominant textural directionfor each block. For each angle the number of dom-inant blocks under the meat region was plottedas an average complex cell response verses anglegraph. AUC = 0.9963 Results and DiscussionThe mean RMS JPEG error over the thirty images(with intensity range (0, 255)) was 1.83 (standarddeviation 0.42), after deblocking the mean errorwas 1.71 (standard deviation 0.80). Thus the orig-inal RMS error was only 0.72 of pixel intensity.However a paired t-test at the 95% confidence limitrejected the hypothesis that the mean RMS im-provement was statistically insignificant (howeversmall). Concordant with the low RMS intensity er-ror is visual assessment of the JPEGs shows ringingartefacts appear visually non-existent and that theJPEG visual quality assessment algorithm [2] gavea ten out of ten score for all images.Figure 3 shows a meat image and the result ofthe colour segmentation into meat, fat and bluebackground regions. Unclassified regions in themeat face are mostly connective tissue or small‘disjoint’ meat regions. This particular slice is anexample result of incorrect slicing technique which(according to an AgResearch expert butcher) is dueto “pressing down on the meat like a loaf of breadwhile cutting.”Figure 4 shows the ROC curve for classifying imageblocks as meat by SVD texture analysis using thecolour image processing result as ‘truth.’ The AUCis 0.996 which corresponds to a signal to noise ratioof 3.75 indicating good correspondence betweenthe two processing methods and also indicatingthat the smoothing and blocking by the JPEGcompression is not strong enough to interfere withthe meat texture.Figure 5 shows two average complex cell responseverses angle curves for different meat slices. For the top graph of figure 5 the peak isjust below _ = 0.4_ from vertical, matching wellthe texture seen in visual inspection of the images.The bottom graph shows the peak shifted closer tohorizontal which is a result of the incorrect slicingtechnique producing a subtle horizontal texturaleffect.4 Conclusions and Future DirectionsA strong relationship between colour segmentationand texture segmentation using singular values hasbeen demonstrated in a set of meat images. Con-cordantly JPEG error in our images is shown to beof no consequence as it does not appear a confound-ing factor in the singular value texture analysis.Complex cell analysis was applied to investigatethe determination of textural direction by com-puter vision which showed good correspondencewith human visual inspection, but also highlightedhow incorrect slicing of meat causes confoundingtexture.Future work may involve correlation of textureanalysis to NIR spectra, more consideration intoappropriate texture analysis methods and ‘image’processing of hyperspectral images obtained bymanually sequentially scanning locations on themeat face with NIR. The primary goal is toestablish, by image analysis, the localised meatcontent for NIR investigations. The ultimate goalis to obtain hyperspectral VIS/NIR images ofsufficient spatial resolution (just what resolutionis sufficient is an open question) and to considerthe hybridisation of spectral analysis and imageprocessing techniques.References[1] T. 1 Latar BelakangDalam makalah ini kami menyelidiki hubungan tex-mendatang analisis segmentasi untuk segmentasi warnapada gambar daging dan menyelidiki fitur gambar untukciri tekstur visual di gambar.Munculnya daging, seperti warna dan vi-tekstur sual penting bagi konsumen ketikamembeli daging. Untuk menilai kesalahan akibat JPEGkompresi, RMS perbedaan bagi individupesawat warna diambil alih set gambar. Visualpemeriksaan JPEG menunjukkan bahwa signifikanpemblokiran hanya terjadi di belakang-biru kaburtanah daerah gambar. Tidak ada dering artefakdiamati.Algoritma deblocking JPEG karena Phamdan van Vliet [1] dicobagunakan. Algoritma ini menggunakananisotropik difusif penyaringan oleh konvolusi denganvariabel linier Gaussian elemen untuk kelancaran bersamaJPEG blok ketika mencoba untuk menjaga citratepi. Wilayah daging gambar menunjukkan secara visualkasar dan cukup teratur tekstur pola.Dekomposisi nilai singular diteliti sebagaimetode kemungkinan untuk mendeteksi wilayah daging.Dekomposisi nilai singular (SVD) dari matriksdapat menjadi faktor diskriminatif yang berguna antara tex-membangun struktur [4]. Dekomposisi Nilai singular dariMatriks X adalahX = USV Tdi mana U dan V adalah matriks ortogonal dan Sadalah matriks diagonal dengan sii nilai singularpada diagonal. Nilai-nilai singular adalah peringkatsi, i> si +1, i +1 dan pembusukan terhadap i padasebanding dengan tingkat variasi dalam tingkatmatriks.Nilai Singular dihitung atas blok ukuran32 × 32. Ukuran blok dipilih sebagai beberapadari delapan untuk meminimalkan efek akibat JPEG blokbatas.
