CHNG 2 : SN PHM PROBIOTICS

2.1. Sa ChuaSa chuahay yaourt lsn phm b sac sn xut bivi khunln mencasa. Mi loi sa c th dng lm sa chua, nhng trong cch ch to hin i, sabc dng nhiu nht. L. bulgaricus c cha enzyme phn gii protein nn c kh nng phn tch c mt s amino acid t casein. Cc amino acid ny, quan trng nht l valine, t cung cp ngun c cht c cha nit d hp thu v thc y s sinh trng ca cu khun.
