After School Warm Apple ToastIngredients

• 2 slices whole-grain bread• 1 apple, cored and thinly sliced• 1 tbsp peanut butter• Sprinkle of nutmeg and cinnamon

InstructionsSpread the peanut butter on the bread and arrange apple slices on top. Sprinkle with nutmeg and cinnamon. Place under the grill until the apples are beginning to soften.

This makes a lovely after school snack.

Apple and Apricot Surprise

Ingredients• 1 lb dried apricots, pre-soaked in water• 1 ½ oz brown sugar• 4 oz ground almonds• 4 oz sugar• 6 medium apples, peeled and sliced• 4 oz butter, room temperature• 2 large eggs

InstructionsPreheat oven to 350° Fahrenheit. In a small saucepan, cook dried apricots in some water until soft. Place sliced apples and cooked apricots into a shallow ovenproof dish and sprinkle with brown sugar. Mix well.

Meanwhile, in a medium-size bowl, mix the sugar and butter until light and fluffy. Add the eggs and beat until well combined, then fold in the ground almonds. Spread this mixture over the fruit and bake in the oven for about 45minutes to 1hour.

Eat hot with vanilla ice-cream.

Apple, Marshmallow and Yams

Ingredients• 2 cups mini marshmallows• 2 x 17oz cans yams, drained• ½ cup brown sugar• ½ cup raisins• 2 Granny Smith apples, peeled and sliced • 1/3 cup chopped walnuts or pecans• ¼ cup margarine• ½ tsp cinnamon

InstructionsPreheat oven to 350° Fahrenheit. Lightly grease a 1 1/2 quart casserole dish.

In a small bowl, combine sugar, cinnamon, raisins, apples and nuts. Alternate layers of apples/nuts with layers of yams. Dot with margarine. Cover with foil and bake in the oven for about 40 minutes. Top with the mini marshmallows and continue baking until the marshmallows are gooey and brown. Serves about 6.

Applesauce CakeIngredients• 1 cup butter or margarine, softened• 2 cups sugar• 2 cups apple sauce• 3 cups sifted all-purpose unbleached flour• 1 ¾ teaspoon baking soda• 1 cup seedless raisins• 1 teaspoon vanilla

InstructionsPreheat oven to 350F. Grease a medium sized baking pan and lightly sprinkle with flour. Set aside. Beat the butter and sugar in a large bowl. Add the applesauce (make sure it’s cold) and 2 ¾ cups flour. Mix well. Fold in the raisins, remaining flour and vanilla extract. Mix well and poured into greased baking pan. Bake approximately 1 to 1 hour and 15 minutes until golden and baked through. Let cool for 5 minutes then remove to wire rack to cool completely. Note: You can also add 1 cup chopped walnuts to this bread when you fold in the raisins.

Baked Apple with RaisinsIngredients• 4 cooking apples, washed • 2 tbsp soft brown sugar• 1 tbsp pecan nuts, chopped• ¼ cup raisins• Dash of cinnamon and nutmeg• Honey (optional)

InstructionsPreheat oven to 350°F.

Core the apples, but make sure that you don't cut all the way through. Score the apples at the centre with the tip of a sharp knife.

Mix together the sugar, spices, pecan nuts and raisins. Stuff the apples with the mixture and drizzle with a bit of honey. Place the apples in an oven-proof dish, with a bit of water around them. Bake in the oven for about 20-30 minutes or until the apples are soft. Serves 4.

Serve immediately with a scoop of vanilla ice-cream.

Caramel Toffee ApplesIngredients• 10 popsicle sticks• 10 dessert apples, scrubbed and stalks removed• 2 cups light brown sugar• 1 tbsp white wine vinegar• 3.5 tbsp butter• 3 tbsp maple syrup• 4 tbsp colored sprinkles for decoration

Instructions• Insert a popsicle stick in the stalk end of each apple.

• Meanwhile, place the brown sugar in a saucepan with about ½ cup water. Gently heat and stir until sugar has dissolved. Bring to a slow boil, then add the vinegar, butter and syrup. Boil for at least 10-12 minutes (without stirring) until the mixture gets hard (hard-crack stage). Then dip the apples into the caramel until well coated and decorate with the sprinkles. Serves 10.

• Allow to cool slightly before enjoying this delicious treat.

Nutty Apple and Carrot SaladIngredients• 4 large carrots, peeled and coarsely grated• 2 medium apples, cored and cubed• ½ cup walnuts, chopped• ½ cup raisins• 1 tbsp extra-virgin olive oil• 1 tbsp lemon juice• ½ cup natural yogurt• Salt and pepper

Instructions• In a small bowl, mix together the olive oil, lemon juice and natural yogurt. Season

with salt and pepper.

• Add the remaining ingredients into a large salad bowl, mix in the dressing and gently toss. Chill for a while to allow the flavors to develop.

Spicy and Creamy Apple Cheese Spread

Ingredients• 2 tbsp milk• 1 cup apples, grated• 1 ½ cups cheddar cheese, shredded• 8oz cream cheese, softened• 1/4 tsp mixed spice• Handful walnuts, chopped (optional)

InstructionsIn a mixing bowl, beat the cream cheese until light and fluffy. Add the rest of the ingredients and beat until well combined. Chill for a few hours!

Delicious with crackers, bagels or toast.

This makes a great after school snack.

Tart Apple Chicken DijonIngredients• 4 boneless, skinless chicken breasts• 1/2 t salt• 1/2 t pepper• 2 T of butter, divided• 1 tart apple, cut into wedges• 1/3 C of whipping cream• 2 T of Dijon mustard

DirectionsButterfly the chicken breasts by cutting them from the long side and not quite all the way through. Lay the chicken breasts open and season with the salt and pepper. Place 1 T of the butter into a skillet over medium high heat.

When the butter has melted lay in two of the chicken breasts. Cook for 4 minutes or until browned then turn. Continue cooking 3 minutes longer or until the chicken is no longer pink. Remove the chicken to a warm platter. Cook the other two chicken breasts in the same manner.

Place the remaining butter into the skillet and melt. Stir in the apple. Cook 3 minutes, stirring frequently or until tender. Stir the whipping cream and mustard into the apples.

Stirring almost constantly, cook for 3 minutes or until hot and bubbly. Serve the apple mustard sauce over each piece of chicken. Makes 4 servings.
